This study was carried out to evaluate the fatty acid intakes of employees in employee feeding operations in Seoul and to provide prudent dietary guidelines with special concern on dietary fat. Four establishments were selected in large scale group and other four were selected as small scale group according to feeding numbers and food cost. Food intake was measured by substracting the leftover from the averaged portion amount. The leftover was measured by the modified aggregate selection plate waste measurement technique. The results were as follows : Employees from the large scale institution consumed more energy, protein, carbohydrate and niacin compared to those from the small scale institution(p<0.05). The mean calorie compositions of carbohydrate, protein and fat of all subjects were 66.7, 16.4 and 16.9%. The mean fat intake was 12.1g/lunch. Linoleic acid(C18:2 $\omega$6, 3.67g) was the most abundant fatty acid contained in the diet, followed by oleic acid (C18:1 $\omega$9, 3.53g) and palmitic acid(C16:0, 1.83g). The subjects consumed 5.2g polyunsaturated fatty acids(PUFA), 4.6g monounsaturated fatty acid(MUFA), 3.2g saturated fatty acid(SFA) per lunch per person. The average ratios of P/M/S and $\omega$6/$\omega$3 fatty acids were 1.6/1.5/1.0 and 8.5/1/0., respectively. the dietary $\omega$3 fatty acid status can be improved, even though the ratios found belong to the desirable range, by including $\omega$3 fatty acid rich-foods such as bean products and seafoods more frequently in the diet. Caution is needed for higher unsaturated nature of $\omega$3 series fatty acids to be prevented from peroxidation.
각종 CD와 여러 종류의 화합물, pH indicator, biostain, 아미노산, 천연배당체, 그리고 fatty acid 간의 inclusion complex 형성능을 비교하였다. Fatty acid가 각종 CD에 대한 포접형성능과 선택성 이 높아 CD 분리용 ligand로 적합함을 알았다. Fatty acid의 포접능과 선택성은 탄소쇄의 길이와 밀접한 상관관계를 나타내어 capric acid는 ${\alpha}$- CD와 palmitic acid는 ${\beta}$-CD와 높은 선택성을 보였다. Complex형성에 미치는 반융조건인 흔합 농도비, pH, ionic strength, 그리고 온도의 영향을 검토하였다. 적정 혼합 농도비는 CD가 50mM 그리고 lig and 인 fatty acid가 50mM 일 때 였으며 , 온도가 중 요한 형성조건으로 작용하였다. 포접되지 않은 CD 와 fatty acid가 포접 된 CD의 분자구조를 X-ray diffraction과 IR spectrum을 사용하여 비교 검토하였으며, DSC로 inclusion complex 형성반응의 ent thalpy의 변화값(${\gamma}H$)을 측정하여 발열반응임을 확인하였다.
Asterias amurensis (starfish) is a marine organism that is harmful to the fishing industry, but is also a potential source of functional materials. The present study was conducted to analyze the profiles of fatty acids extracted from A. amurensis tissues and their anti-inflammatory effects on RAW264.7 macrophage cells. In different tissues, the component ratios of saturated fatty acids, monounsaturated fatty acids, and polyunsaturated fatty acids differed; particularly, polyunsaturated fatty acids such as dihomo-gamma-linolenic acid (20:3n-6) and eicosapentaenoic acid (20:5n-3) were considerably different. In lipopolysaccharide-stimulated RAW264.7 cells, fatty acids from A. amurensis skin, gonads, and digestive glands exhibited anti-inflammatory activities by reducing nitric oxide production and inducing nitric oxide synthase gene expression. Asterias amurensis fatty acids effectively suppressed the expression of inflammatory cytokines such as tumor necrosis $factor-{\alpha}$, interleukin-$1{\beta}$, and interleukin-6 in lipopolysaccharide-stimulated cells. Cyclooxygenase-2 and prostaglandin $E_2$, which are critical inflammation biomarkers, were also significantly suppressed. Furthermore, A. amurensis fatty acids reduced the phosphorylation of nuclear $factor-{\kappa}B$ p-65, p38, extracellular signal-related kinase 1/2, and c-Jun N-terminal kinase, indicating that these fatty acids ameliorated inflammation through the nuclear $factor-{\kappa}B$ and mitogen-activated protein kinase pathways. These results provide insight into the anti-inflammatory mechanism of A. amurensis fatty acids on immune cells and suggest that the species is a potential source of anti-inflammatory molecules.
The purposes of this research were to assess dietary fatty acid patterns and to elucidate the relationship between the serum cholesterol levels and dietary fatty acid patterns, plasma fatty acid compositions, BMI (body mass index), and other lipid profile. The subjects were 151 adults aged 23 to 80 years, selected from the Outpatient Clinic and Cardiova-scular Department of the Seoul Municipal Hospital. Dietary data were obtained using three day food records. Sixteen dietary fatty acids were analyzed using Korean and US nutrient databases. The subjects were divided into three serum cholesterol levels: desirable (< 200 mg/dl, N = 44), borderline-risk ($\geq$ 200 - < 240 mg/dl, N = 35), and high-risk ($\geq$ 240 mg/dl, N = 72) groups. The high-risk group had higher BMI, waist, and waist to hip ratio (WHR) than the desirable and borderline-risk groups. Serum concentrations of triglyceride, LDL cholesterol and LDL/HDL cholesterol ratio were significantly higher in the high-risk group as compared to those in the other two groups. The serum cholesterol levels were highly correlated with BMI (r = 0.435), triglyceride (r = 0.425) and LDL/HDL cholesterol (r = 0.870) ratio. The highest fatty acid intake was from oleic acid (33 - 34% of total fatty acid intakes), which was followed by linoleic acid (27%), palmitic acid (19%), and stearic acid (7%). There was no correlation between the serum cholesterol levels and the dietary fatty acid intakes, polyunsaturateumonounsaturateusaturated fatty acids (P/M/S) and $\omega$6/$\omega$3 ratios. The correlation between plasma fatty acids such as myristic acid, oleic acid, linoleic acid, and docosahexaenoic acid and serum cholesterol levels was also weak. Ruspolia differens (Serville) (Orthoptera: Tettigoniidae) is a highly valued edible grasshopper species in Africa. However, the effects of plant diets on lipid content and fatty acid composition of R. differens are not well understood. We tested the effects of four diets on the total lipid content and fatty acid composition of R. differens. Sixth instar nymphs of R. differens were reared on one, and mixtures of two, three, and six natural plant inflorescences. Individuals collected from the field constituted a control treatment. We extracted lipids and analyzed the fatty acid methyl esters using gas chromatography-mass spectrometry. We analyzed if the total lipid content, body weight, and fatty acid composition differed among diets and between the sexes using two-way ANOVAs and a PERMANOVA model, respectively. The total lipid content and weight of R. differens did not differ among the diets. The nine common fatty acids were palmitic (mean across treatments, 26%), oleic (22%), palmitoleic (18%), linoleic (13%), stearic (7%), myristic (6%), myristoleic (4%), ${\alpha}$-linolenic (2%) and arachidic acid (1%). The composition of fatty acids and the proportion of essential fatty acids significantly differed among the diets. The proportion of essential fatty acids was highest in the control treatment (21%) but low in less diversified (one to three feed) diets (12-13%). This study demonstrates that the fatty acid composition in R. differens can be influenced through diet. Thus, with dietary manipulations, using local plants in Africa, it is possible to produce R. differens with preferred high quality essential fatty acids for human consumption.
There is a marked increase in geriatric disease, especially liver disease, due to the continuous increase in alcohol and fat consumption. Since the fatty liver, induced by alcohol or fat, is basically from abnormalities in the lipid metabolism, it is possible that fatty acid binding protein(FABP) which is related to the fatty acid metabolism may also be abnormal in these livers. FABP is a small molecular weight protein family present in cytosol in high concentration. It has been proposed as a fatty acid transfer protein and as a binding protein responsible for controlling intracellular free fatty acid concentration. In this research, we have examined the relationship between liver FABP and fatty liver induced by alcohol or high cholesterol diet. Rats were fed one of either semipurified liquid diets; control diet containing 65% carbohydrate, 20% protein, and 15% fat or high cholesterol diet containing 1%(w/w) cholesterol or alcohol diet containing 37% of alcohol instead of carbohydrate. After 5 weeks of feeding period, all rats received commercial chow diet for 5 weeks to examine recovery effect. Liver and blood samples were collected at 0, 1, 3, 5 and 10 weeks to analyze lipid compositions. FABP was purified from liver cytosol and injected to rabbit to obtain antiserum. Liver FABP amount was determined by SDS-PAGE and western blotting methods. Fatty acid binding capacity was determined by binding of 14Cpalmitate with the delipidated liver cytosol. Consumption of alcohol increased serum cholesterol, triglyceride concentration and decreased HDL-cholesterol concentration after 5 weeks. Serum apolipoprotein B concentration increased after 3 weeks and LDL-cholesterol and apolipoprotein A concentration changed after 1 week. Liver cholesterol and triglyceride concentration increased after 3 weeks. Consumption of high cholesterol diet changed liver and serum lipid composition after 3 weeks. Swiching to normal diet for 5 weeks did not normalize most of lipid composition in serum and liver except serum and liver except serum cholesterol, triglyceride and liver cholesterol. Liver cytosol FABP content and the fatty acid binding capacity decreased dramatically after 1 week with alcohol consumption. This results indicate that FABP content changes before the changes before the changes of blood or liver lipid composition, suggesting changes of FABP may cause development of the fatty liver induced by alcohol and can be used as an index of detecting a early development of fatty liver.
This study was designed to investigate the changes in energy substrates, glucose and non-esterified fatty acid(NEFA), and fatty acid compositions in serum, following physiolgical stress in rats fed diets containing various fatty acids. Forty two Sprague-Dawley strain male rats, weighing 108$\pm$2.1g, were fed 3 different experimental diets for 4 weeks. The diets were composed of 105 fat(w/w) of either corn oil(CO;18:2 n6:57%), plant perilla oil(PO;18:3 n3:59%), or tuna fish oil(FO;20:5 n3:17%%, 22:6 n3:19%). After 4 weeks of feeding, each group wa subdiveided into (a) control, (b) 2 min swim in ice-cold water. Animals wer decapitated 20min after commencing the swim; trunk blood, brain, liver and epididymal fat pad were obtained. The levels of serum corticosterone, glucose, NEFA, triglyceride, fatty acid compositions, brain serotonin and 5-hydroxyindoleacetic acid were determined. Basal levels of corticosterone na NEFA of serum were significantly lower in fish oil fed animals than those of any other oil fed animals. Compared to either perilla oil-fed or corn oil-fed rats, cold swim stress in fish oil fed rats produced significantly smaller NEFA and larger corticosterone responses. However, there was no significant difference in basal levels of serum glucose. Stress increased serum glucose levels slightly, and the amount of increment was larger in fish oil rats than those of any other oil fed rats than those of any other oil fed rats, although all the values were normal level. Dietary fats and stress did not affect serotonin metabolism. In additions, the composition of fatty acids in serum was significantly affected by the dietary compostion of fatty acids and stress. Stress induced decreases in monounsaturated fatty acid and non-polyunsaturated fatty acid concentration in either perilla oil fed or fish group, but did not in corn oil fed group. Stress resulted in changes in fatty acid metabolism similar to that associated with essential fatty acid(EFA) dificiency, when feeding animals n-3 fatty acids in diet. In conclusion, feeding fish oil was more effective to decrease NEFA in serum than feeding perilla oil or corn oil and improved lipid metabolism, when the rats were maintained in normal or exposed to stressful environment. However, the fact that feeding diet containing n-3 fatty acids decreased EFA status under stress suggests that the requirement of n-6 PUFA should be increased in these groups.
비알콜성 지방간은 심혈관계 질환, 당뇨병, 고혈압 및 신장질환의 발생에 있어 독립적인 위험인자에 해당하며, 최근에는 비알콜성 지방간에 대한 임상적 중요성이 증가하고 있다. 본 연구에서는 비알콜성 지방간 환자의 초음파영상에 대하여 질감분석 방법인 GLCM을 적용하여 특징값을 추출하고자 한다. 추출된 특징값들을 이용한 인공신경망 모델의 적용을 통하여 비알콜성 지방간의 지방침착 정도를 정상 간(normal), 경도 지방간(mild), 중등도 지방간(moderate), 중증 지방간(severe)으로 분류를 하고자 한다. GLCM알고리듬 적용 결과 Autocorrelation, Sum of squares, Sum average, Sum variance 파라미터 값들은 경도 지방간, 중등도 지방간을 거쳐 중증 지방간으로 갈수록 특징값의 평균값이 증가하는 경향성을 나타내었다. 인공신경망 모델의 입력은 비알콜성 지방간질환의 초음파영상에 GLCM 알고리듬을 적용하여 추출한 Autocorrelation, Sum of squares, Sum average, Sum variance의 4개의 파라미터들을 인공신경망 모델의 입력값으로 적용하였다. 비알콜성 지방간질환의 초음파영상에 GLCM 알고리듬을 적용하여 추출한 영상을 인공신경망에 적용하여 분류 정확도를 평가한 결과 92.5%의 높은 정확도를 나타내었다. 이러한 결과를 통하여 비알콜성 지방간 환자의 초음파 영상에 대한 질감 분석 GLCM 연구 시 본 연구의 결과를 기초자료로 제시를 하고자 한다.
대덕구 관내 학교주변 분식점과 길거리 노점, 소규모 제과점에서 수거한 시료들의 조지방과 총 트랜스, 포화, 불포화 지방산의 함량 조사결과 어린이들이 선호하는 식품 중의 하나인 수입 비스켓류에서 100 g 당 트랜스지방산 함량이 0.05~0.83 g으로 나타났으며, 또한 포화지방산은 전체 구성 지방산 중에서 42.25~66.24%를 차지하였고 이때 100 g 당 포화지방산의 함량은 3.18~6.06 g으로 나타났다.
Fatty acid composition of beef intramuscular tissue is an important trait because high proportions of mono-unsaturated fatty acid are related to favorable beef flavor. In this study, we investigated the effects of genetic factors, such as stearoyl-CoA desaturase (SCD), on beef carcass traits, including fatty acid composition, in the Hanwoo. Analysis of fatty acids in Hanwoo was performed using a breed raised in Gyeonbuk province (n = 395). Compared to the homozygote, the GA, CT, and CT genotypes of exon 5 in the SCD polymorphism showed a higher content of oleic acid (p<0.05) and higher contents of mono-unsaturated fatty acid (p<0.05) and marbling scores (p<0.05) in intramuscular fat. Results of haplotype analysis showed a significant presence of unsaturated fatty acids and marbling score in the $ht1^*ht2$ and $ht2^*ht2$ groups (p<0.05). Furthermore, haplotype effects more powerful than a single gene were also observed. These ht1 and ht2 types also showed a significant difference in unsaturated fatty acids and marbling score, affecting beef flavor in the Hanwoo groups. Therefore, it can be inferred that the ht1 and ht2 types might be valuable new markers for use in improvement of Hanwoo.
