Sarcopenia and Sarcopenic Obesity and Their Association with Cardiovascular Disease Risk in Postmenopausal Women : Results for the 2008-2011 Korea National Health and Nutrition Examination Survey (폐경 여성의 근감소증 및 근감소성비만과 심혈관질환 위험도와의 관련성 연구: 국민건강영양조사(2008-2011) 자료를 활용하여)

  • Objectives: This study was conducted to investigate the association between sarcopenia and sarcopenic obesity and cardiovascular disease risk in Korean postmenopausal women. Methods: We analyzed data of 2,019 postmenopausal women aged 50-64 years who participated in the Korea National Health and Nutrition Examination Survey in 2008-2011 and were free of cardiovascular disease history. Blood pressure, height, and weight were measured. We analyzed the serum concentrations of glucose, total cholesterol, high density lipoprotein cholesterol, low density lipoprotein cholesterol and triglyceride levels. Waist circumference was used to measure obesity. Appendicular skeletal muscle mass was measured by dual-energy X-ray absorptiometry. Sarcopenia was defined as the appendicular skeletal muscle mass/body weight<1 standard deviation below the gender-specific means for healthy young adults. The estimated 10-year risk of cardiovascular disease risk was calculated by Pooled Cohort Equation. Subjects were classified as non-sarcopenia, sarcopenia, or sarcopenic obesity based on status of waist circumference and appendicular skeletal muscle mass. Results: The prevalence of sarcopenia and sarcopenic obesity was 16.3% (n=317) and 18.3% (n=369), respectively. The 10-year risk of cardiovascular disease risk in the sarcopenic obesity group was higher ($3.82{\pm}0.22%$) than the normal group ($2.73{\pm}0.09%$) and sarcopenia group ($3.17{\pm}0.22%$) (p < 0.000). The odd ratios (ORs) for the ${\geq}7.5%$ 10-year risk of cardiovascular disease risk were significantly higher in the sarcopenic obesity group (OR 3.609, 95% CI: 2.030-6.417) compared to the sarcopenia group (OR 2.799, 95% CI: 1.463-5.352) (p for trend < 0.000) after adjusting for independent variables (i.e., exercise, period of menopausal, alcohol use disorders identification test (AUDIT) score, income, education level, calorie intake, %fat intake and hormonal replacement therapy). Conclusions: Sarcopenia and sarcopenic obesity appear to be associated with higher risk factors predicting the 10-year risks of cardiovascular disease risk in postmenopausal women. These findings imply that maintaining normal weight and muscle mass may be important for cardiovascular disease risk prevention in postmenopausal women.

Analysis of Nutritional Components and Evaluation of Functional Activities of Sasa borealis Leaf Tea (조릿대 잎차의 영양성분 분석 및 기능성 평가)

  • In this study, the nutritional components and functional activities of Sasa borealis leaf tea were evaluated. The proximate compositions were as follows; moisture 5.68%, crude protein 16.38%, crude fat 4.68%, nitrogen free extracts 32.37%, crude fiber 32.36%, and ash 8.53%, respectively. The mineral elements were as follows: K 2,133.83, Ca 1,144.09 and P 543.00 mg%, respectively. The amino acid contents of the Sasa borealis leaf tea were very rich in proline (1,275.26 mg/100 g) and deficient in cystine (71.49 mg/100 g). The major fatty acid components were linoleic acid (50.52%), palmitic acid (18.52%), and oleic acid (14.16%). Finally, based on our sensory evaluations, the $80^{\circ}C$ extracted Sasa borealis leaf tea evidenced the best overall quality. The contents of total phenol and total flavonoids of the 80% methanol and hot water extracts were 15.09, 7.69 mg/g and 12.03, 6.12 mg/g, respectively. The DPPH and $ABTS^+$ radical scavenging activities of the 80% methanol extract from Sasa borealis leaf tea were 86.87% and 83.85% at a concentration of 1.25 mg/mL. The 80% methanol and hot water extracts evidenced reducing power and inhibitory effects against acetylcholinesterase in a dose-dependent manner.

2008 Dietary Goals and Dietary Guidelines for Korean Adults (2008 한국 성인을 위한 식생활목표와 식생활지침)

  • Recently the Ministry of Health and Welfare, Republic of Korea, announced the “Dietary Guidelines for Korean Adults (DGKA)”, which includes ten Dietary Goals, six Dietary Guidelines, and twenty-three Action Guidelines. DGKA are developed as the revision of the 2003 Dietary Guidelines for Koreans, targeting adult population. Dietary Guidelines are developed for general purpose as well as for different age groups. They are revised periodically to accommodate changes in diet and health problems of the population. The process of developing new DGKA can be summarized as 1) selection of focus areas, 2) analysis and review of available data for each area selected, and 3) derivation of guidelines based on the analyzed data, and 4) finalizing the guidelines after open discussions among the experts and general public. Five focus areas were selected by examining the Nutrition Goals of the Health Plan 2010 of Korea, soliciting proposals from the experts in the related fields, and reviewing existing and international guidelines. Five areas selected were 1) adequate intake of nutrients and foods, 2) balance of energy intake and physical activities, 3) alcohol intake, 4) food security and nutrition service, and 5) food safety. Adequacy of nutrient and food intakes of the Korean adult population was assessed using 2005 Korea National Health and Nutrition Examination Survey (KNHANES) data. Newly developed Dietary Reference Intakes for Koreans were used as reference values to assess the prevalence of inadequacies and excesses in nutrient intakes. Energy balance was examined with energy intake of 2005 KNHANES survey and results of physical activity questionnaire in the survey. Alcohol intake was also examined using 2005 KNHANES results of dietary intakes as well as the results of questionnaire survey on alcohol intakes. Food security, nutrition services, and food safety were analyzed using various government data and published results on the issues. Ten Dietary Goals and six Dietary Guidelines were developed after data analysis and were subjected to reviews of experts and general public. The final DGKA are: 1) Eat a variety of foods from each food group, 2) Increase physical activity and maintain healthy weight, 3) Eat proper amount of clean foods, 4) Avoid salty foods and try to eat foods with bland taste, 5) Avoid foods with high fat contents and deep-fried foods, and 6) When you drink alcohol, limit the amount. Twenty-three action guidelines are developed in order to achieve these guidelines in actual diet and life among the population. The government is disseminating the guidelines with “337” slogan and emblem. “337” indicates everyone should practice “3” guidelines of promoting good eating practice, “3” guidelines to limit or decrease in your diet, and you should practice them for “7” days a week. The guidelines will be useful in promoting healthy food habits and good nutritional status which will result in decrease nutrition related health problems in Korea.

  • Lentils (Lens culinaris) are a nutritious and popular food throughout the world. This review provides an overview of the nutritional and functional properties of lentils. Lentils have high nutritional value: high protein, high fiber, low fat, and a variety of minerals. The addition of lentils to other foods could enhance their health benefits. Additionally, there is no decrease in the amino acid content in lentils when cooked; rather, the amino acids increased and the phytic acids decreased. Lentils are generally known to have biomedical functions including antioxidative, anti-cancer, anti-inflammatory, antihypertensive, and thrombolytic properties. The data presented here show that fermentation would increase the amount of bioactive substances in the beans. Therefore, fermentation techniques could be a new approach to produce lentil-based foods. They are also eco-friendly, cost-effective, and feasible processes. This review has suggested a future development of new lentil-related foods using traditional fermentation technology.

A Study on Dietary Intakes of Elementary School Children According to School Foodservice Type in Won-Ju (원주지역 초등학교 학생의 학교급식유형에 따른 영양섭취실태 조사)

  • This study was carried out to survey dietary intakes of 739 elementary students, 4-6grades, in Won-Ju area, in 1998, to enhance the effect of school foodservice. The results were as follows : 1. Most investigated students had nuclear family with one brother or one sister. 2. The average height of boys and girls was $141.0{\pm}7.7cm\;and\;141.4{\pm}8.0cm$, and the average weight of them was $35.7{\pm}8.5kg\;and\;36.1{\pm}8.5kg$, respectively. There was no significant difference between boys and girls. 3. The rates of obesity were 12.2% in urban, 7.4% in rural and 0% in remote rural area by Rohrer index and 22.9% in urban 13.9% in rural and 0% in remote rural area by the rate based on standard weight. 4. All nutrients intake of investigated students were sufficient according to recommended dietary allowances. All nutrients intake of boys were higher than those of girls. Calcium intake of children with well educated mother was higher than that of children with poorly educated mother. Children in remote rural area had lower carbohydrate, calory and calcium intake than those in other areas. 5. Students without breakfast had lower protein and iron intake and higher calory from snack than those with breakfast. 6. Students who thought themselves to be obesity had low intake of carbohydrate, total calory and calory from snack and students with regular exercise had high intake of protein, iron, calcium and calory from snack. 7. Students with unbalanced diet, snack intake in large quantities and irregular meal had lower protein, fat, iron and calcium intake and higher calory from snack than other students. As a result, Students without breakfast often had lower all nutrients except calory from snack than other students, significantly. Problems of nutrients intake of elementary students in Won-Ju area were high rate of obesity, high intake of protein, unbalanced nutrients intake of students without meal or students with excessive eating and limited calcium intake of students with poorly educated mother. It is important to confirm desirable food habits for balanced nutrients intake in all areas and to increase calcium intake of students in remote rural area.

Effects of Paprika (Capsicum annuum L.) on Serum Lipid Profile and $\alpha$-Tocopherol Concentration in Rats Fed a High-Cholesterol Diet (파프리카 급여가 고콜레스테롤 식이 흰쥐의 혈청 지질과 $\alpha$-Tocopherol 농도 변화에 미치는 영향)

  • In conclusion, rats were fed diets containing either NC, HC, HC-FDP, HC-WEP, or HC-EEP for 6 weeks. At the 6th week, increases in body weight and visceral fat were lower in the paprika fed groups as compared to the HC group. Serum levels of triglycerides, total cholesterol, low density lipoprotein cholesterol, and atherogenic index values were significantly lower in the paprika diet fed groups than the HC group (p<0.05). In particular, the lipid lowering effects in the HC-EEP group were superior among the paprika fed groups. Also, serum $\alpha$-tocopherol levels were lower in the control group compared to the paprika fed groups. The supplementation of paprika may exert lipid lowering effects and saving effect of $\alpha$-tocopherol in the serum of high-cholesterol diet fed rats. However, it should be noted that the results are based on very small sample numbers and a short experimental period.

Study on the Carcass Yield Grade Traits and Prediction of Retail Product Weight in Hanwoo Beef (한우도체의 육량등급 요인 특성과 판매 정육량 추정)

  • Analyses were conducted to estimate carcass component of yield grade factors by sex and live weight class and to develop the prediction equation of retail product weight by sex in Korean native cattle (Hanwoo). Data from 42,113 Hanwoo carcasses were used to estimate the traits of yield grade factor and an additional 1,066 carcasses were used to develop the prediction equation of retail meat weight. The average of fasting weight of cow, bull and steer were 529 kg, 596 kg, and 634 kg respectively. Carcass weight (CW), backfat thickness (BFT), loineye area (REA), Index score of wholesale meat and yield grade were significantly (p<0.01) affected by sex and live weight. The lean meat percentage, fat percentage and bone percentage based on the weight of cold carcasses were significantly different (p<0.05) between sex groups. The equation of predicting the retail meat product from this study could be expressed as a multiple regression $Y=-4.18+0.63{\times}CW\;(kg)-0.17{\times}BFT\;(cm)+0.16{\times}REA\;(cm^2)$, $R^2=0.93$. Among the independent factors, the BFT was the highest contributor to the prediction equation. Using the equation from this study should allow for rapid, precise and cost-effective assessment of the retail product in Hanwoo beef carcasses.

Improved Quality Properties of Low-Fat Meat Patties Containing Sweet Persimmon Powder during Freeze Storage (단감분말을 함유한 저지방 돈육 미트패티의 냉동 저장 중 품질 변화)

  • Pork patties were made containing hot air dried sweet persimmon powder (T1: 3%, T2: 6%) and freezer dried sweet persimmon powder (T3: 3%, T4: 6%). The control (C: no addition) and each treatment were stored for 40 days at $-18^{\circ}C$. The pH value decreased (p<0.05) in all products over 30 days of storage but slightly increased thereafter. There was no significant difference in WHC between the control and treatment groups. Cooking loss and meat color (CIE L, a, b) increased significantly (p<0.05) as storage increased. The cooking loss of meat patties containing sweet persimmon powder were significantly (p<0.05) higher than the control. The L value of the control increased significantly (p<0.05) relative to the treatment groups, however the a and b values were slightly higher in meat patties containing sweet persimmon powder. In all products, the reduction ratio of diameter increased (p<0.05) with storage time. With regard to microorganisms, all samples were in good condition, containing below 4.20 log CFU/g based on total plate counts through 40 days, though total plate counts and coliform plate counts of the control were lower (p<0.05) than T3 and T4. The VBN values of T4 was significantly higher than those of other products at 15, 30, and 40 days of storage. The TBARS values of meat patties containing sweet persimmon powder were significantly (p<0.05) higher than those of the conlIol. Sensory panels determined that meat patties containing sweet persimmon powder had a higher (p>0.05) preference score for overall acceptability.

A Nutritional Analysis of Chinese Red-headed Centipedes (Scolopendra subspinipes mutilans) from Different Regions of Korea (지역에 따른 국내산 왕지네(Scolopendra subspinipes mutilans (Arthropoda:Chilopoda))의 영양성분 및 유해물질 비교분석)

  • The Chinese red-headed centipede Scolopendra subspinipes mutilans, a member of the arthropod class Chilopoda, is a traditional medicine used for the treatment of several allergic diseases, such as atopy. S. subspinipes mutilans samples were collected from different regions of South Korea: Sancheong, Gyeongnam; Yeonggwang, Jeonnam and Jeju-do. The nutritional values of the centipedes were analyzed to extend the species' applications. The crude protein and fat contents of all samples were high and ranged from 54.9-55.8% and from 26.8-30.6%, respectively. Essential amino acids were present; lysine was the most common and accounted for 3.4-3.6% of the essential amino acids. Glutamic acid, which assists in improving concentration, memory and other cognitive abilities, was the most common non-essential amino acid at 6.8-7.1%. It had a similar content percentage in all three regions' samples. Additionally, unsaturated fatty acids were present, and oleic acid, which prevents cancer and cardiac disease, was the most common at 41.3-48.6% of each sample. Mercury, a hazardous substance, was detected at a range of 0.08-0.11 mg/kg in all samples; the amount was lower than the standard food allowance. Additionally, no pathogenic microorganisms, such as Escherichia coli and Salmonella spp., were detected. There were no significant differences between the nutritional factors of the S. subspinipes mutilans samples from the three regions. Based on the nutritional analysis, Chinese red-headed centipedes have the potential to be food and medicinal ingredients due to their proteins, essential amino acids, unsaturated fatty acids and nutritive capacities.

Effect of Polygonatum Odoratum on Lowering Lipid and Antioxidation (옥죽(玉竹)의 지질강하 및 항산화효과)

  • Objectives : This study was designed to examine the effects of Polygonatum odoratum EtOH ext. on lowering lipid and anti-oxidation using hyperlipidemic rat. Methods : Male rats weighting $195.21{\pm}4.93g$ were divided into 4 groups and fed high fat diet for 8 weeks. Each of 7 rats was divided into a control and sample group. We fed a control group of rats a basal diet and administered normal saline(100 mg/kg, 1 time/1 day) for 4 weeks. And we fed each experimental group of rats basal diet and administered an extract of Polygonatum odoratum(100 mg/kg, 200 mg/kg, 300 mg/kg, 1 time/1 day) for 4 weeks. At the end of the experiment, the rats were sacrificed to determine their chemical composition. We measured lipid of plasma and liver, concentration of anti-oxidative activity and tumor necrosis factor-$\alpha$($TNF-{\alpha}$). Results : 1. Concentration of plasma free fatty acid, low density lipoprotein-cholesterol showed a significant decrement in the 200 mg/kg and 300 mg/kg Polygonatum odoratum EtOH ext. groups than that of control group. Concentration of plasma total cholesterol, triglyceride showed a significant decrement in all Polygonatum odoratum EtOH ext. groups than that of control group. However, concentration of plasma high density lipoprotein-cholesterol was not significantly different in all the treatment groups. 2. Concentration of liver total cholesterol showed a significant decrement in the 200 mg/kg and 300 mg/kg Polygonatum odoratum EtOH ext. groups than that of control group. Concentration of liver triglyceride(TG) showed a significant decrement in all Polygonatum odoratum EtOH ext. groups than that of control group. 3. Concentration of plasma thiobarbituric acid reactive substance, and liver thiobarbituric acid reactive substance showed a significant decrement in the 200 mg/kg and 300 mg/kg Polygonatum odoratum EtOH ext. groups than that of control group. 4. The values of glutathione peroxidase activity showed a significant increment in all Polygonatum odoratum EtOH ext. groups than that of control group. The values of superoxide dismutase activity and catalase activity showed a significant increment in the 200 mg/kg and 300 mg/kg Polygonatum odoratum EtOH ext. groups than that of control group. 5. The values of plasma aspartate aminotransferase and alanine aminotransferase activities were not significantly different in all treatment groups. 6. Concentration of liver $TNF-{\alpha}$ showed a significant decrement in the 200 mg/kg and 300 mg/kg Polygonatum odoratum EtOH ext. groups than that of control group. Conclusions : Based on the results in this study, the Polygonatum odoratum EtOH ext. showed a positive effect in lowering lipid and anti-oxidation.
