Development of Beverages Drinks Using Mountain Edible Herbs (산채류를 이용한 음료 개발에 관한 연구)

  • Beverages using mountain edible herbs(MEH) were formulated by determining optimum ratio of juices of MEH to several other ingredients. Fermented beverages were made by mixing juices(1 volume) fermented with Lactobacillus helverticus with syrup(3 volumes), followed by homogenization and flavoring . The general analysis and quality change of the beverages during storage were Peformed. The analysis of the beverages showed that the pH of Synurus deltoides and Cirsium sctidens were 3.8 and 3.7, titratable acidities were 0.50 and 0.49, optical densities were 1.201 and 1.119, respectively, The pH and color were not significantly changed when Synurus deltoides and Cirsium sctidens were stored at room temperature and 37$^{\circ}C$ for 6 months. The pH of Synurs deltoides beverage ranged 3.95~3.96 and pH of Cirsium sctidens was 3.83~3.95 at room temperature and 3.87~3.98 at 37$^{\circ}C$, respectively. The analysis of fermented beverages showed that pHs of Synurus deltoides and Cirsium sctidens were 3.65 and 3.70, titratable acidities were 0.57 and 0.60. Solids-non-fat were 3.2 and 3.1, and total counts of lactic acid bacteria were 2.5$\times$10$^{8}$ and 4.0$\times$10$^{8}$ , respectively. The changes of pH and titratable acidities stored at 4$^{\circ}C$ for 15 days were 3.39~3.56 and 0.61~0.81 for Synurus deltoides and 3.48~3.67 and 0.60~0.78 for Cirsium sctidens, respectively.

Processing Properties of Kiwifruit Treated with Protopectinase (Protopectinase를 이용한 참다래의 가공 특성)

  • In development of the processed food, it is important not only to make the food delicious but to enhance its storage span and thermal stability without change of the food quality in color, which greatly affects the tastes of customers. Protopectinase (PPase) from Bacillus subtilis EK11 hydrolyses or dissolves protopectin in the middle lamella of plant tissues with the resultant separation of plant cells from each other, called enzymatic maceration. With the PPase, Kiwifruit was enzymatically macerated to separate cells to primary cell wall without damage. Yields of kiwifruit treated with PPase and mechanical maceration were 82% and 60%, respectively. Total and reducing sugars, crude protein and fat in the enzymatic maceration were well preserved as in the mechanical maceration. Importantly, over 95% of vitamin C, which is the most unstable component in application of the mechanical maceration, remained with intact form for one day after the enzymatic treatment. When the suspensions of kiwifruit macerated with both treatments had been stored at $4^{\circ}C for 6 days, the suspension of kiwifruit mechanically macerated was decolorized. whereas decolorization was not found in the enzymatically macerated kiwifruit. Moreover, the mechanically macerated kiwifruit was greatly deteriorated after heat treatment at $100^{\circ}C for 60 min ; the cell suspension of the exzymatically separated kiwifruit appeared to be stable, indicating the thermal stability. Thus, the PPase treatment could be a better choice for preparation of the highly valuable and functional processed food of kiwifruit as well as for prolonging the preservation period of the processed kiwifruit.

  • The effects of dietary Gleditschia on fatty acid composition, lipid oxidation, and pork quality were investigated. Pigs (n=40) were fed a diet containing 0, 0.1, 0.2, 0.4, and 1% Gleditschia for 14 weeks and slaughtered at 110 kg average. The longissimus throracis et lumborum muscle was collected at 24 hr postmortem. Pork loin chops (3 cm thick) were packaged aerobically and stored at $4^{\circ}C$ for 7 days. Samples were analyzed for fatty acid composition, ultimate pH, thiobarbituric acid-reactive substance (TBARS), color ($L^*$, $a^*$, $b^*$), drip loss and water-holding capacity. There was no significant difference of moisture and crude fat percent in between treatment and control group, and the color stability of pork loin better in all treat groups was more improved during cold storage. The change of pH was significantly increased (p<0.05) in 0.2, 0.4, 1% treatment groups compare to the control group. Water-holding capacity of pig loins was significantly higher (p<0.05) in all treat groups than in control group; 0.2% treat group was the highest in the water holding capacity followed by 0.4, 1, and 0.1% treat groups. Less drip loss of pig loin was observed with samples from Gleditschia-fed pigs except 1% treat group. Unsaturated fatty acid were tend to be decreased and saturated fatty acid were tend to be increased in Gleditschia-treated group. Thiobarbituric acid-reactive substance value of control was significantly higher than that of the Gleditschia-fed group (p<0.05).

Effect of Sawdust-Bedded Thickness in Floors of Hanwoo on Meat Quality of M. Longissimus after Slaughter (한우우사 바닥의 톱밥두께가 도축 후 등심의 육질에 미치는 영향)

  • This study was carried out to investigate the effect of sawdust-bedded thickness in floors (SBTF) of Hanwoo on meat quality of M. longissimus after slaughter. The 7 mon-aged bulls (22 heads) were housed in single sheds ($3{\times}8\;m^2$/animal) bedded with sawdust of 10, 15, and 20 cm thickness for 20 mon prior to slaughter. The M. longissimus from carcasses were then stored at $4{\pm}0.2^{\circ}C$ for 9 d. SBTF had no significant effect on carcass traits and pH, water-holding capacity, drip loss, cooking loss, Warner-Bratzler shear force, aroma pattern with electronic nose, and sensory attributes of beef. The 20 cm group had the highest crude fat and the lowest n6/n3 (p<0.05). At 9 d, the 10cm group showed the highest total reducing ability and the lowest TBARS content (p<0.05). During storage, the 10 and 20 cm groups had lower MetMb content, higher OxyMb content, and redder meat color than the 15 cm group (p<0.05).

Changes of Lactulose Content during Heat Treatment of Milk (우유의 열처리 및 저장 조건에 따른 Lactulose의 함량 변화)

  • The aim of this work to determine the formation of lactulose during heat treatment process as a contribution to the estabilishment of limits of chemical indicators for different types of heat processed milk and analyze of lactulose for the reconstituted milk added samples. The HTST(75$\^{C}$/15s) and UHT(130$\^{C}$/2∼3s) treatment realized with a pilot plant and heat-treated samples were stroed at 4, 10, 30$\^{C}$ for 4 weeks. Changes in lactulose was evaluated at 7 days intervals. The other heat treatment was sealed in glass tube and heated at 75$\^{C}$ for 10 to 120s and heated at 130$\^{C}$ for 2 to 60s in a thermostatically controlled constant temperature bath of glycerol. The reconstituted milk was made with full fat dry milk that reconstituted with deionized water to 10% total solid, and was added to milk at 10, 20, 30% respectively. The samples processed with a HTST pilot plant showed that lactulose was contained at 1.47∼1.52mg/10()ml and 8.19 ∼8.32mg/100ml for UHT-treated samples. Changes in the lactulose content of heat-treated samples during storage at 4 and 10$\^{C}$ for 4 weeks caused a slight increase, however a noticeable increase was observed at 30$\^{C}$ for 4 week. The glass tube samples showed that high correlations between relative increase in content of lactulose and increasing processing times(75$\^{C}$ : r = 0.986, 130$\^{C}$ : r = 0.987, respectively). Added with reconstituted milk would cause a increase of the lactulose content linear with increasing addition amount(r = 0.982). This results observed for lactulose in commercial milk samples would applied to the detection of chemical changes during heat treatment and illegal use of reconstituted milk.

Quality Comparison of Beef from Outdoor-Reared before Finishing and Indoor-Reared Hanwoo (비육전 방목 및 옥내사육한 한우육의 품질 비교)

  • This study was carried out to compare the quality of beef from outdoor-reared before finishing and indoor-reared Hanwoo. Among the experimental animals, $28{\pm}4$ mon-aged Hanwoo cows (n=5) were outdoor-reared for 7 mon (April-November) and then indoor-reared for 6 mono The 6 mon-aged Hanwoo steers (n=10) were indoor-reared for 24 mono The M. longissimus from all animals were stored at $4{\pm}0.2^{\circ}C$ for 7 days. Carcasses from outdoor-reared cattle before finishing were lighter, firmer, maturer, and leaner than indoor-reared (p<0.05). The beef from outdoor-reared cattle had lower crude fat and n-6 PUFA contents, n-6/n-3 ratio, and higher n-3 PUFA and SFA contents than indoor-reared (p<0.05). The pH and water-holding capacity were lower in beef from outdoor-reared cattle than in indoor-reared (p<0.05). The aroma pattern by electronic nose was discriminately different between beef from outdoor-reared and indoor-reared cattle. During storage, beef from outdoor-reared cattle showed lower lipid and myoglobin oxidation stabilities, and a darker and less red color than indoor-reared.

  • This experiment was carried out to evaluate the possibility of wine-making with Elderberry cultivated in Korea. The results obtained are summarized as follows: 1. The Elderberry fruits were composed of 82.8% moisture, 0.82% crude fat, 3.73% crude protein and 0.83% crude ash. 2. The Elderberry juices were composed of 9.2% sugar, 0.62% total acidity (as tartaric acid), pH 4. 46 and the percentage juice extraction ratio from fruits was 61.4%. 3. In fermentation experiments carried out with two strains, Saccharomyces cerevisiae ellipsoideus showed better characteristics for wine-making than Saccharomyces cerevisiae montrachet. 4. In fermentation experiments carried out with Saccharomyces cerevisiae ellipsoideus under different storage conditions, frozen fruits showed better characteristics for wine-making than dried fruits. 5. In fermentation experiments carried out with Saccharomyces cerevisiae ellipsoideus under different pressing times, red wine and pink wine showed little difference. 6. The results of organic acid contents determined by gas chromatography showed that citric acid was the main acid for frozen fruit, and lactic acid for both dried fruit and wines. 7. Sensory evaluation showed that the wine pressed at the 3rd day had the best palatability but the wine fermented with the dried fruits had the worst among the tested.

Effect of food waste properties on methane production (음식물쓰레기의 특성이 메탄생성량에 미치는 영향분석)

  • The buffer capacity of food waste lowers during the collecting and transportation period. Food waste usually shows deficiency of micro nutrients especially molybdenum(Mo) and cobalt(Co). Therefore, food waste can be considered as a good mixture of livestock waste to enhance methane production. The objective of this study was to investigate the correlation between properties of substrates (local food waste and livestock manure) and methane yields for successive anaerobic fermentation process and its stable management. Food wastes were taken at an intermediate storage or treatment system provided by eight local authorities (Gangnam, Gangdong, Gwanak, Guro, Dongjak, Songpa, Yeongdeungpo, and Younsan) in Seoul. The solid content and potential methane yield of food wastes were average of 16% and $446.6STP-m{\ell}/g-VS$ (range from 334.8 to $567.5STP-m{\ell}/g-VS$) respectively. As for the beef cattle manure, the solid content and potential methane yield had an average of 26% and $280.6STP-m{\ell}/g-VS$ respectively. Potential methane yield had a positive correlation with fat content, and hydrogen content and a negative correlation with carbohydrate content ($r^2&gt;0.8$). Therefore, the potential methane yield can be predicted based on the substrate characterization results with reasonable accuracy. Further research may be needed to investigate the relation of the properties of the mixture substrate and methane production rate. The mixtures may include food waste, livestock waste, and bulking agents (saw dust, rice hull, or agricultural byproducts etc.) to determine best combination of these substrates for maximum methane production rate.

Characteristics of Sweet Persimmon Treated with Protopectinase from Bacillus subtilis EK11 (Bacillus subtilis EK11 유래 Protopectinase를 처리한 단감의 특성)

Importantly, over 50% of vitamin C, which is the most unstable component during the mechanical maceration, remained with an intact form for one day after the enzymatic treatment. When the suspensions of persimmon macerated with both treatments were stored at 4$^{\circ}C$ for 9 days, the mechanically macerated persimmon suspension was decolorized, whereas decolorization, was not found in the enzymatically macerated persimmon suspension. Moreover the mechanically macerated persimmon was greatly deteriorated after heat treatment at 10$0^{\circ}C$ for 60 min, whereas cells of the enzymatically separated persimmon suspension appeared to be stable, indicating increased thermal stability Thus, the PPase treatment of persimmon could be a better choice for preparation of highly valuable and functional processed food as well as for increase in preservation period.

Effect of Yellow Loess Packaging on the Eating Quality of Rice (황토포장재가 쌀의 품질에 미치는 영향)

  • Milled rice was subjected to check the eating quality of rice at various conditions of packaging with haft paper(packaging material made of paper), PE and yellow loess in the ambient conditions($18{\sim}25^{\circ}C$, $18{\sim}34%RH$. Rice packed with yellow loess was shown higher eating quality and less changes in the content of moisture loss and free fatty acid than control(kraft paper, PE). Eventually, yellow loess packaging showed a better performance in the rice storage than kraft paper and PE.
