Effect of Alkali-Washing at Different Concentration on the Chemical Compositions of the Steam Treated Bamboo Strands

  • The objective of this study was to investigate the effect of alkali-washing with different sodium hydroxide concentrations on the chemical compositions of steam-treated Betung bamboo strand. Strands were subjected to steam treatment at 126 ℃ for 1 h under 0.14 MPa pressure and followed by washing with 1-5% sodium hydroxide solution for 30 sec. The alteration of structural and non-structural chemical components content of bamboo strands was evaluated. Steam and washing treatments with various concentrations of sodium hydroxide solution considerably reduced the extractive content of bamboo strands, and the cell wall chemical components of the strand in the small degree. FTIR analysis showed noticeable changes in peaks related to hemicellulose and lignin. The relative crystallinity increased significantly after steam and washing treatment with sodium hydroxide up to 3% concentration. SEM Images showed smooth and clean strands surface after washing with 3% sodium hydroxide.

자연산과 양식산 참조기의 식품학적 품질평가 (Biochemical Composition of the Wild and Cultured Yellow Croaker (Larimichthys polyactis) in Korea)

  • The biochemical composition of wild and cultured yellow croaker, Larimichthys polyactis, was analyzed in this study. The moisture contents in wild and cultured yellow croaker was high: $75.2{\pm}1.60%$ and $79.5{\pm}1.95%$, respectively. The crude lipid contents of wild and cultured yellow croaker were low; moreover, the crude protein and ash contents did nol differ significantly (P>0.05). The total amino acid content of wild and cultured yellow croaker did not differ significantly; however, the cystine content of wild yellow croaker was higher than than of cultured yellow croaker. The essential /nonessential amino acid (E/NE) ratio in wild and cultured yellow croaker was $0.76{\pm}0.01$ and $0.77{\pm}0.02$, respectively. The free amino acid and extractive nitrogen contents of cultured yellow croaker were high and differed significantly. The water soluble vitamin ($B_1$, $B_2$, $B_6$, $B_{12}$, C and folate) and fat-soluble vitamin (A and E) contents did not differ significantly. expect for niacin. The niacin content of cultured yellow croaker was higher than that of wild yellow croaker. The fatty acid composition of wild and cultured yellow croaker did not differ significantly The sodium, magnesium, and copper contents in wild yellow croaker were relatively low. In comparison, the calcium, phosphorus and iron contents in cultured yellow croaker were relatively high. Overall, the biochemical composition of wild and cultured yellow croaker did not differ significantly.

담수어의 정미성분에 관한 연구 8. 붕어의 정미성분 (Taste Compounds of Fresh-Water Fishes 8. Taste Compounds of Crucian Carp Meat)

  • 전보에 이어서 우리나라 주요 담수어의 정미성분을 밝힐 목적으로 붕어 배육중의 유리아미노산, 핵산관련물질, 유기염기, 당류, 유기산 및 무기질을 분석하였고 이 분석치를 기초로 하여 표준 시약으로 합성엑스분을 조제해서 천연엑스분과 맛을 비교하였으며 omission test를 통하여 각 성분들이 맛에 미치는 영향을 실험 검토하였다. 유리아미노산 중 histidine 함량이 월등히 많아 전체 유리아미노산의 $46\%$를 차지하였으며 다음으로 glycine, lysine, alanine, taurine 등이 많았다. 핵산관련물질 중에는 IMP 함량이 166.lmg/100g으로서 가장 많았으며 그 외 성분은 함량이 적었다. 유기염기로서는 총 creatinine 이 320.5 mg/100 g으로 가장 함량이 많았고 betaine은 21.6mg/100g이었으며 TMA 및 TMAO는 1mg/100g미만으로 극미량이었다. 유기산의 경우는 숙신산, 프로피온산, 보티르산, 발레르산등이 함량이 많았고 옥살산, 푸마르산, 말레산, 타르타르산 및 시트르산은 흔적량에 불과하였다. 당류의 함량으로는 포도당이 2.4mg/100g이었고 ribose, arabinose, fructose 및 inositol은 1 mg/100g미만이었다. 무기염류 중에는 $K^+$$PO_4^{3-}$이 각각 220.0mg/100g, 288.7mg/100g으로서 월등히 많았고 다른 무기염류는 32 mg/100g 이하이었다. omission test에 의한 관능검사 결과에 의하면, 붕어의 주된 정미성분은 serine, glutamic acid, IMP, $Na^+,\;K^+$$PO_4^{3-}$이었으며 lysine, arginine, tyrosine 및 phenylalanine에 의해서 더욱 맛이 조화를 이루고 있었다.

시판 마른 멸치의 정미성분 (The Taste Compounds in Boiled-Dried Anchovy)

  • 마른멸치의 정미성분에 관한 기초자료를 얻고자, 시판 대멸, 중멸, 소멸 및 세멸 중의 핵산관련물질. 유리아미노산, TMAO, TMA 및 총creatinine을 분석하였다. 핵산관련물질 중 IMP가 대멸, 중멸, 소멸 및 세멸에 각각 건물양기준으로 $22.7{\mu}mole/g$, $18.6{\mu}mole/g$, $20.3{\mu}mole/g$$4.0{\mu}mole/g$으로서 가장 많았고, 전핵산관련물질에 대하여 각각 $55.0\%,\;51.1\%,\;69.1\%$$42.0\%$를 차지하였다. 유리아미노산 중 함량이 많은 것은 histidine, lysine, alanine 및 proline이고, 특히 histidine 함량이 월등히 많았다. 전유리아미노산에 대하여 histidine이 차지하는 비율은 대멸, 중멸, 소멸, 세멸에 있어 각각 $52.0\%,\;40.7\%,\;46.6\%,\;17.0\%$였다. 총 creatinine 함량은 대멸, 중멸, 소멸, 세멸에 있어 각각 510.8mg/100g, 496.1 mg/100g, 546.1mg/100g, 278.5mg/100g 였으며, 이들의 액스분질소에 대한 비율은 $34.0\%,\;36.0\%,\;39.1\%$, 및 $21.1\%$였다. 그리고, TMA 및 TMAO 함량은 미량이었다. Omission test 결과 마른멸치의 정미성분으로서는 핵산관련물질 중 함량이 많은 IMP와 glycine, alanine, proline 등과 같은 아미노산이라는 결론을 얻었다.

Food Component Characteristics of Tuna Livers

  • Livers of skipjack tuna (Katsuwonus pelamis) and yellowfin tuna (Thunnus albacares) were investigated on the food compositional characteristics and also compared to that of Alaska pollack (Theragra chalcogramma). The proximate compositions of skipjack tuna and yellowfin tuna livers were high in crude protein, carbohydrate, and crude ash, while were low in crude lipid when compared to that of Alaska pollack liver. The results of heavy metal suggested that tuna livers appeared safe as a food resource. The total amino acid contents of skipjack tuna and yellowfin tuna livers were 17.7 and 17.1 g/100 g, respectively, and the major amino acids in both livers were aspartic acid, glutamic acid, alanine, valine, leucine, and lysine. Tuna livers were good sources of iron and zinc, while have low lipid content. The extractive nitrogen contents of skipjack tuna and yellowfin tuna livers were 526.5 and 468.2 mg/100 g, respectively, and their major free amino acids were taurine, glutamic acid, and alanine. From the results of taste value, the major taste active compounds among free amino acids were glutamic acid and aspartic acid.

북양(北洋) 침엽수재(針葉樹材)의 공기(空氣) 투과성(透過性) (Air Permeability of Softwoods Imported from the Russian Far East)

  • Air permeabilities for both sapwood and heartwood of the three softwoods(Picea jezoensis, Larix gmelini, Pinus sylvestris), imported from the Russian Far East, in the three different structural directions were measured using steady-state rotameter method. After measuring permeability, the liquid absorption into the longitudinal permeability specimens was measured, and then related with the measured permeability. The longitudinal permeability was overwhelmingly greater than the transverse permeability, with the radial direction showing higher permeability than the tangential direction. There appear to be species differences in permeability of the three softwoods. The mean longitudinal sapwood permeability of P. jezoensis(3.300darcy) and P. sylvestris(3.028darcy) were considerably greater(ca. 25times) than that of L. gmelini(0.134darcy). Also the average longitudinal heartwood permeability of P. jezoensis(0.300darcy) was about 10 times as great as that of P. sylvestris(0.029darcy) and L. gmelini(0.024darcy). The average calculated radius of pit openings in the heartwood was $0.101{\mu}m$ for L. gmelini, $0.152{\mu}m$ for P. sylvestris for and $0.703{\mu}m$ for P. jezoensis. Heartwood permeability increases with the increase in radius of pit pore and the decrease in ring width and in extractive content, even though the correlation between permeability and its affecting factors was dependent on species. However, there was an inverse relationship between specific gravity and permeability, showing poor correlation between them. The correlation between air permeability and liquid retention was fairly high, so it was revealed that prediction of liquid absorption into the wood by using permeability was feasible.

삼자산(三子散)이 흰쥐 음경조직의 Nitric Oxide Synthase 활성 및 과산화지질 함량에 미치는 영향 (Effects of the Extract of Samjasan on the Nitric Oxide Synthase Activity and the Level of Lipid Peroxide in Penis of Rats)

  • Objectives : The following are the results of the experimental studies of Samjasan (SJS) extract on the nitric oxide synthase (NOS) activity and the level of lipid peroxide in the penises of rats. Methods : Cnidii Fructus, Cuscutae Semen, Schizandrae Fructus constitute SJS. 150 g of crushed crude drug was extracted with methyl alcohol, under reflux, for 24 hours, three times; the total extractive was evaporated under reduced pressure to give 28.6 g. Results : In vitro, the SJS extract didn't effect the activity of NOS. However, the SJS extract decreased the activities, the ratio of type conversion of xanthine oxidase, the levels of lipid peroxide, In vitro, after administration of the SJS extract to rats, the activities and ratio of type conversion of xanthine oxidase decreased, but the activity of NOS and the content of nitrite increased. Also, the levels of the superoxide anion radical and lipid peroxide decreased in the penises of rats. But, after administration of the SJS extract to rats, the levels of glutathione did not increase. The effects of the SJS extract did better as the dosage and the length of treatment increased. Conclusions : These results suggest that the SJS extract decreases the activities of free radical generating enzymes which form lipid peroxide and increases the NOS activity in the penises of rats. Therefore, the SJS extract is capable of improving of sexual ability in rats.

저식염 속성 멸치 발효액화물 가공에 관한 연구(II) - 숙성 중 oligopeptide 아미노산 함량변화 - (Studies on the Processing of Rapid- and low Salt-Fermented Liquefaction of Anchovy(Engrulis japonica) (II) - Changes in the Amino Acids from Oligopeptides during Fermentation -)

  • In order to establish the processing conditions for salt-fermented liquefaction of anchovy(Engrulis japonica), changes in the amino acid composition from oligopeptides during fermentation periods were analyzed. Experimental sample A: chopped whole anchovy, adding 20% water, heating at $50^{\circ}C$ for 9 hrs and then adding 10% NaCl. Sample B: chopped whole anchovy, adding 20% water, heating at $50^{\circ}C$ for 9 hrs and then adding 13% NaCl. Sample C: chopped whole anchovy adding 13% NaCl. Sample D: whole anchovy adding 17% NaCl. The total amino acids from oligopeptides in fermented liquefaction of anchovy increased in early fermentation period and reached highest level, and then they declined irregularly during fermentation. Their maximum amounts were just after heating at $50^{\circ}C$ for 9 hrs in sample A, after 15 days in sample B, and after 60 days in samples C and D. The fermented liquefaction of anchovy extracts were rich in glutamic acid, aspartic acid, proline, glycine, alanine, lysine and valine. However, the contents of most amino acids fluctuated by the experimental specimens and fermenting periods. Among them glutamic acid was the most abundant amino acid which was occupied $0.6{\sim}27.7%$(average 24.0%) in the content of total amino acids from oligopeptides. The contribution of the amino acid composition from oligopeptides to extractive nitrogen was occupying average 20.8 and 17.5% in rapid- and low salt-fermented liquefaction(sample A, B and C) and traditional fermented liquefaction(sample D), respectively.

오디오의 파형과 FFT 분석을 이용한 대표 선율 검색 (Representative Melodies Retrieval using Waveform and FFT Analysis of Audio)

  • 최근 내용 기반 음악 검색 시스템에서는 사용자의 응답 시간을 단축시키기 위해 음악의 대표성을 갖는 선율을 추출하여 색인하고, 검색 시 이를 사용한다. 기존 연구에서는 미디(midi) 데이타를 이용하여 대표 선율을 추출하는 방법이 제안되었으나, 미디 데이타에 한정되는 단점이 있었다. 따라서 본 논문에서는 디지털 신호처리를 이용하여 모든 오디오 파일 포맷에 적용 가능한 대표 선율 검색을 제안한다. 대표 선율 검색을 위해 FFT(Fast Fourier Transform)을 이용하여 박자와 마디를 찾고 각 마디들의 PCM 데이타로부터 높은 수치가 나타나는 빈도를 측정한다. 이때 높은 수치들이 가장 많이 뭉쳐 있는 영역에서 여덟 마디 간격이 오디오 데이타의 대표 선율 영역이다. 제안 방법의 유효성을 검증하기 위한 실험으로 총 1000곡을 선택하여 대표 선율을 추출하였고, 그 결과 템포를 찾아낸 737곡 중 79.5%의 정확성을 보였다.

미나리의 단백질의 및 아미노산 조성 (Protein and Amino Acid Composition of Water Cress Oenanthe stolonifera DC)

  • This study was attempted to compare the nutritive value of leaf with stem of the water cress Oenanthe stolonifera DC. in order to improve the eating habits and as a part of studying on the effective curing nutrients for the damaged liver. The contents of moisture crude proteinon the effective curing nutrients for the damaged liver. The contents of moisture crude protein crude fat and crude ash were 90.40% 2.85%, 0.42% and 0.74% in leaf while the contents of moisture crude protein crude fat and crude ash were 95.15% 0.77% 0.09%, and 0.64% of moisture crude protein crude fat and crude ash were 95.15% 0.77% 0.09% and 0.64% in stem respectively. The quantitative fractionation of proteini of both leaf and stem ranked albumin the highest content followed globulin prolamin and glutelin in order. It has been sh-own by SDS-polyacrylamide gel electrophoresis that water extractable protein of leaf 11 bands but those of stem were not detected. The scope of molecular weight for the main protein of water extractable protein of leaf was between 34.700 and 45,000. The amounts of extractive-nitrogen from leaf and stem of the water cress were 241.02mg% and 271.67mg% respec-tively. The amounts of free amino acid-nitrogen from the leaf and stem were 89.02mg% and 32.02mg% respectively. In free amino acid-nitrogen from the leaf and stem were 89.02mg% and 32.02mg% respectively. In free amino acid composition of both leaf and stem the major components were aspartic acid and glutamic acid. In total amino acid composition of water cress leaf aspartic and glutamic acid were the major components. Whereas alanine and thr-eonine were the major components in stem The assessment of water cress leaf and stem with chemical score. EAAl Rl showed that the values of stem were lower tendancy than those of leaf. Limiting amino acid of leaf was tryptophan while that of stem was lysine.
