Comparison of Seasonal and Regional Variation in Extractive Nitrogenous. Constituents of the Raw Anchovy (Engraulis japonica) (생 멸치의 함질소 엑스성분조성 및 지역과 계절에 따른 변동)

  • In order to investigate the composition, seasonal and regional variation of extractive nitrogenous components in the raw anchovy (Engraulis japonica) harvested from June 1991 to June 1992 at Nam-hae and Ki-jang in the southern coast of Korea, the contents of extractive nitrogen (EN), free amino acids (FAA), oligopeptides (OP), ATP and its related compounds (ARC), quaternary ammonium bases, and guanidino compounds were measured. The EN contents of raw anchovy were $444{\~}773\;mg/100\;g$. Thirty-four kinds of FAA were found and their total amount were $1,049{\~}2,079\;mg/100\;g$. Histidine, taurine, alanine, leucine and glutamic acid were the major free amino acids in the anchovy extracts. The amount of ARC was average $5.02\;{\mu}mol/g$, and IMP was the major compound among them, who and creatine contents in the extracts or raw anchovy were average 164 and 229 mg/100 g, respectively. The contents of glycinebetaine,${\brta}-alaninebetaine,\;{\gamma}-burobetaine$, homarine, TMA, and creatinine were extremely small. As for the regional and seasonal disparities, the Nam-hae samples contained more EN, FAA, OP, betaines and creatine than the Ki-jang samples. On the other hand the Ki-jang samples contained more ARC and TMAO. The spring samples contained more EN, FAA, OP, ARC and betaines than the autumn samples. On the other side the autumn samples contained more TAMO and creatine.

Studies on the Processing of Rapid- and low Salt-Fermented Liquefaction of Anchovy(Engrulis japonica)(III) - Changes in ATP-related compounds, TMAO, TMA, Creatine, and Creatinine during Fermentation - (저식염 속성 멸치 발효액화물 가공에 관한 연구(III) - 숙성 중 ATP관련화합물, TMAO, TMA, creatine 및 creatinine 함량변화 -)

  • Changes in ATP and related compounds, TMAO, TMA, creatine and creatinine were analyzed to establish the processing conditions for rapid- and low salt-fermented liquefaction of anchovy(Engrulis japonica) extracts during fermentation. Experimental sample A: chopped whole anchovy, adding 20% water, heating at $50^{\circ}C$ for 9 hrs and then adding 10% NaCl. Sample B: chopped whole anchovy, adding 20% water, heating at $50^{\circ}C$ for 9 hrs and then adding 13% NaCl. Sample C: chopped whole anchovy adding 13% NaCl. Sample D: whole anchovy adding 17% NaCl. ATP, ADP, AMP and IMP were broken down during fermentation period, while inosine and hypoxanthine or hypoxanthine were detected in each fermented liquefaction of anchovy. However the amounts of them were varied from collection to collection according to the pretreatment methods. Possibly ATP and their related compounds will not make a great contribution to the umami taste in fermented liquefaction of anchovy. The contents of TMAO were decreased during fermentation period, ranging from 3 to 15 mg/100g in the fermented liquefaction of anchovy after 180 days. The TMA contents were increased slowly during fermentation period, ranging from 60 to 114 mg/100g in the 180 days specimens, however their contents were varied from sample to sample. The contents of creatine and creatinine were increased during early fermentation period, and then they were decreased in the last period. As for distribution of nitrogen in the anchovy extracts, the contribution of creatine and creatinine to the extractive nitrogen was occupying 6.8, 5.7, 4.6 and 5.7% in the experimental sample A, B, C and D, respectively. The contribution of ATP and related compounds to the extractive nitrogen was occupying 2.1, 2.4, 2.2 and 2.7% in the experimental sample A, B, C and D, respectively. The contribution of TMAO and TMA to the extractive nitrogen was very low as they are occupying $0.7{\sim}1.2%$ in the four experimental samples.

Extractive Nitrogenous Constituents of Dried Layer, Porphyra yezoensis (방사무늬김 건제품의 함질소 엑스성분 조성)

  • In order to investigate the composition of dried layer, Porphyra yezoensis cultured at the south coast of Korea, the dried laver was analyzed separately for extractive nitrogen, free and combined amino acids, ATP and related compounds and quaternary ammonium basis using specimens collected monthly from January to April 1998. The extractive nitrogen contents of dried layer extracts were $976\~1,196\;mg/100\;g$ (on dry basis). Twenty-eight to thirty-one kinds of free amino acids were found in the dried laver extracts and their total amounts were 5,648-6,845 mg/100 g (on dry basis). The extracts were rich in free amino acids such as alanine, glutamic acid, taurine, phosphoserine and aspartic acid. Eighteen to twenty-two kinds of combined amino acids from oligopeptides were found in the extracts and their total amounts were $1,194\~1,406\;mg/100\;g$ (on dry basis). The amounts of ATP and related compounds were $111.6\~195.5\;mg/100\;g\;(3.30\~6.00{\mu}mol/g$ on dry basis). Homarine was detected in all samples but glycinebetaine, $\beta$-alaninebetaine and $\gamma$-butyrobetaine disappeared during processing, TMAO was detected in all samples but low TMA was found in some. During processing of dried layer, P. yezoensis, free amino acids, ATP and its related compounds were increased but the other constituents such as combined amino acids, TMAO and TMA and betaines were decreased in all specimens.

  • In order to investigate the composition of dried layer, Porphyra dentata cultured at the south coast of Korea, the dried layer was analyzed for extractive nitrogen, free amino acids, combined amino acids, ATP and its related compounds and quaternary ammonium basis, The extractive nitrogen contents of dried laver extracts were 670-1,304 mg/100 g (on dry basis). From twenty-eight to twenty-nine kinds of free amino acids were found in the dried laver extracts and their total amounts were $2,796\~6,277\;mg/100\;g$ (on dry basis). The extracts were rich in free amino acids such as alanine, taurine, glutamic acid, glutamine and phosphoserine, From eighteen to twenty-one kinds of combined amino acids were found in the extracts and their total amounts were $1,406\~2,142\;mg/100\;g$ (on dry basis). The amounts of ATP and its related compounds were $65.7\~124,7\;mg/100\;g(2.13\sim3.68{\mu}mol/g$ on dry basis), Homarine was detected in all samples but $\beta$-alaninebetaine, $\gamma$-bufobetaine and trigonelline disappeared during processing. TMAO and TMA were detected in all samples. During processing of dried layer, free amino acids, TMAO and TMA were increased but the other constituents such as combined amino acids, ATP and its related compounds and betaines were decreased in all specimens.

  • The extracts of toha, a kind of freshwater shrimp (Caridina denticulata denticulata) being cultivated in Naju district, Chonnam of Korea and jeotsaeu, a kind of seawater shrimp (Acetes japonicus) being caught in Shinan district, Chonnam of Korea, were analyzed for the taste constituents-extractive nitrogen, free amino acids, oligopeptides, nucleotides and related compounds, quaternary ammonium bases, and guanidino compounds-using specimens collected from December in 1994 to November in 1995. The content of extractive nitrogen. free amino acids, oligopeptides, nucleotides and related compounds in toha extract was higher than that in jeotsaeu extract. On the contrary, the amount of homarine, trimethylamine oxide and trimethlamine in toha extract was lower than that in jeotsaeu extract. But in case of creatine and creatine both species showed almost the same level. Arginine, lysine, glutamine, glutamic acid, phenylalanine, leucine, alanine, asparagine and glycine were the major amino acids in toha extract, while arginine, glutamic acid, proline, glutamine, lysine, leucine, glycine, alanine and taurine were the major amino acids in jeotsaeu extract. Methionine, glutamine, valine were almost the same level between the two species. As for nucleotides and related compound, AMP was the principal constituent in toha extract, and inosine was the principal constituent in jeotsaeu extract. In conclusion, the content of major nitrogenous constituents in toha extract was more abundant than that in jeotsaeu extract. So toha was more excellent raw material than jeotsaeu.

Natural Dyeing Characteristics of Korean Traditional Paper with Smoke Tree (Cotinus coggygria Scop) (안개나무 추출물을 이용한 한지의 천연염색 특성)

  • The purpose of this study was to estimate natural dyeing properties of Korean traditional paper (Hanji). We dyed the Korean traditional paper with dyestuff which extracted from wood meal of Cotinus coggygria Scop (smoke tree) using hot-water, ethanol and $K_{2}CO_{3}$ solution. As mordants, 0.5% of $AlK(SO_4)_2$, $FeCl_2$, and $CuCH_3(COO)_2$ solution were used respectively. The color of dyed Hanji mainly depended on not the methods of extraction but the kinds of mordant. The dyed Hanji mordant with $AlK(SO_4)_2$ colored vivid yellow, $FeCl_2$ colored dark olive, and $CuCH_3(COO)_2$ colored brown and/or orange. The dyed Hanji with hot-water extractive had the highest K/S value and ethanol and $K_{2}CO_{3}$ solution extractives were followed. The K/S value of dyed Hanji mordant with $AlK(SO_4)_2$ was higher than that of $FeCl_2$ and $CuCH_3(COO)_2$. The dyeing effectiveness of after-mordanting method was superior to the others but sim-mordanting method was the worst.

Nitrogenous Constituents in the Extract of Crabs caught in the Korean adjacent Sea (한국 근해산 주요 게 종류의 함질소엑스분에 관한 연구)

  • Nitrogenous constituents in the extract of 3 species of raw and boiled crabs, tenner crab (Chionoeretes opilio elongatus), horsehair crab (Erimacrus isenbecki), and blue crab (Portunus trituberculatus) caught in the Korean adjacent sea, were analyzed and compared their compositions with the sex and the tissues, body meat, leg meat, and viscera. The crabs contained about 3% of the extractive nitrogenous constituents in the tissues, meat and viscera. The free amino acid compositions were commonly featured a high content of arginine, taurine, proline, and glycine regardless of the differences in species and tissues. Free amino acids and quarternary bases were greatly increased in hot water extraction while nucleotides were slightly diminished. Glycine betaine and trimethylaminoxide were accounted for above 30% of the total extractive nitrogenous constituents. Arginine, taurine, proline, glycine, glycine betaine, and trimethylaminoxide which abundant in the meats and viscera of the crabs were estimated to greatly contribute directly or indirectly toward appearing the characteristic crabs taste.
