Quality Characteristics of Baked Rice Cake Added with Maltitol (말티톨 첨가 구운떡의 품질 특성)

  • This study investigated the quality characteristics of baked rice cake added with maltitol syrup. The hardness, adhesiveness, cohesiveness, gumminess, and chewiness of baked rice cake significantly decreased (P<0.05) according to the level of added maltitol syrup. Hunter's color values of baked rice cake did not differ significantly according to the level of added maltitol syrup. Sensory evaluation indicated that appearance, moistness, chewiness, hardness, and overall acceptance of baked rice cake prepared with added maltitol syrup were improved compared to those of baked control rice cake. Hunter's color values and texture properties of baked rice cake added with 10% maltitol syrup were compared with those of baked control rice cake during storage at room temperature for 3 days. Hunter's color L values of baked rice cake decreased during storage, whereas a and b values increased. The rate of hardness increase in baked rice cake with maltitol syrup was lower than that in baked control rice cake during storage. The Avrami exponents (n) of baked control rice cake and baked rice cake added with 10% maltitol were 2.418 and 2.098, respectively. The time constants (1/k) of the former and latter were 43.860 and 60.976, respectively. Overall, addition of 10% maltitol syrup improved the texture, sensory properties, and retarding retrogradation of baked rice cake.

Nonlinear Dynamic Analysis of EEG in Patients with Positive and Negative Schizophrenia (양성 및 음성 정신분열증 환자 뇌파의 비선형 역동 분석)

  • Objectives : The hypothesis that the brain is a nonlinear dynamical system exhibiting deterministic chaos has offered new perspectives to the investigation of information processing in the brain of schizophrenic patients. It seemed worthwhile to estimate nonlinear measures of the electroencephalogram (EEG) in positive and negative schizophrenics, because nonlinear measures might serve as indicators of the specific brain function in schizophrenia according to specific psychopathologies. Method : Previous studies which estimated the chaoticity in the brain of schizophrenia with nonlinear methods recorded the EEGs at limited electrodes, so we tried to record EEGs from 16 channels for nonlinear analysis in 8 positive and 9 negative schizophrenics and 8 healthy control subjects. We employed a new method to calculate the nonlinear invariant measures. For limited noisy data, this algorithm was strikingly faster and more accurate than previous ones. Results : Our results showed that the patients with negative schizophrenia had lower the first positive Lyapunov exponents ($L_1$) than the positive schizophrnics and control subjects at $T_3$ lead. Positive symptoms were positively correlated with $L_1$ in $C_3,\;O_1$ leads, and negatively correlated with $C_4$ lead. Conclusion : These results suggest that if clinical variables such as psychopathology or neuroleptic medications would be well controlled, the nonlinear analysis of the EEGs in patients with schizophrenia seems to be a useful tool in analyzing EEG data to explore the neurodynamics.

Effects of Moisture Content on Recrystallization of Rice Starch Gels (쌀전분겔의 재결정화에 미치는 수분함량의 영향)

  • Effects of moisture content on the gelatinization and recrystallization of non-waxy and waxy rice starch gels were investigated by differential scanning calorimetry (DSC). The recrystallization rates of the starch gels containing various moisture contents $(40{\sim}70%)$ were analyzed by Avrami equation. The waxy rice starch had higher gelatinization temperature and enthalpy than non-waxy one. The highest degrees of recrystallization in both rice starch gels stored at $4^{\circ}C$ were shown at 40%, and recrystallizations above 80% moisture content were not found. The degree of recrystallization of waxy one was higher than that of non-waxy one in the range of 40 to 60% moisture content. The Avrami exponents (n) of both rice starch gels were near to 1.0 and the time constant (1/k) was increased with increasing moisture content in the range of 40 to 70% moisture content. The recrystallization rate of waxy rice starch gel was slower than that of non-waxy one. The recrystallization of rice starch gels could be explained by the change of ice melting enthalpy during storage. The Wg's, represented the maximum practical amount of plasticizing water, were about 29.9% and 28.2% for non-waxy and waxy rice starch gels, respectively.

  • In Wireless Sensor Network(WSN)s, the detection of precise location of each node is essential for utilizing sensing data acquired from sensor nodes effectively. Among various location methods, the received signal strength(RSS) based localization scheme is mostly preferable in many applications because it can be easily implemented without any additional hardware cost. Since a RSS-based localization scheme is mainly affected by radio channel or obstacles such as building and mountain between two nodes, the localization error can be inevitable. To enhance the accuracy of localization in RSS-based localization scheme, a number of RSS measurements are needed, which results in the energy consumption. In this paper, a RSS based localization using Bayesian Compressive Sensing(BSS) with path-loss exponent estimation is proposed to improve the accuracy of localization in the energy-efficient way. In the propose scheme, we can increase the adaptative, reliability and accuracy of localization by estimating the path-loss exponents between nodes, and further we can enhance the energy efficiency by the compressive sensing. Through the simulation, it is shown that the proposed scheme can enhance the location accuracy of multiple unknown nodes with fewer RSS measurements and is robust against the channel variation.

Analysis of Morphological Characteristics of Farm Dams in Korea (한국 농업용 저수지의 형태학적 특성 분석)

  • This study was to analyze a total of 18,068 farm reservoirs in Korea with their basic measures, and estimate their average characteristics. These characteristics have also been compared with those of foreign countries. Histograms of seven measures(approval area, beneficial area, watershed area, effective storage, full water area, dam length, and dam height) of reservoirs are made to characterize their distributions and to apply the Pareto analysis with the power law to evaluate their inequalities. The histogram analysis shows that the measures of dam(channel cross-section) characteristics follow the log-normal distributions, on the other hand, those of the basin characteristics the exponential-type distributions. Pareto analysis was done for the five measures of having exponential distribution. The Pareto exponents estimated are 0.38 for the approval area, 0.42 for the beneficial area, -0.19 for the effective storage, 0.30 for the watershed area, and 0.22 for the full water area, so the inequality of the beneficial area is the highest and that of the effective storage is the lowest. Analysis of morphology index versus watershed area shows that most reservoirs are categorized into deep or normal ones. These characteristics are also found to be similar to those of foreign countries.

A study on the Creep fracture life prediction of Al7075 alloy under high temperature (고온상태에서 Al 7075 합금의 크리이프 파단수명 예측에 대한 연구)

  • Modern technological progress demands the use of materials at high temperature and high pressure. One of the most critical factors in considering such applications - perhaps the most critical one - is creep behavior. In this study the stress exponents n were determined during creep over the temperature range of $90^{\circ}C\;to\;500^{\circ}C$ (0.4 - 0.85 Tm) and stress range of 0.64 kgt/$mm^2$ in order to investigate the creep hehavior. The stress dependence of rapture time (n') were determined over the temperature range of $200^{\circ}C\;to\;240^{\circ}C$ and stress range of 8.13 kgt/$mm^2$ to 9.55 kgt/$mm^2$ in order to investigate to creep rupture property. And the stress transient dip tests were also carried out for the internal stress ${\sigma}i$ over the temperature range of $90^{\circ}C\;to\;500^{\circ}C$ and stress range of 0.64kgt/$mm^2$ to 17.2 kgt/$mm^2$. The creep tests for constant temperature and stress transient dip tests were conducted in air with Al 7075 alloy under constant tensile load. At around the temperature range $200^[\circ}C\;-\;230^{\circ}C$ and the stress level 8.13 - 9.55 (kgt/$mm^2$), the temperature range $280^{\circ}C\;-\;310^{\circ}C$ and the stress level 1.85 - 2.55 (kgt/$mm^2$), the temperature range $380^{\circ}C\;-\;410^{\circ}C$ and the stress 1.53 - 0.91 (kgt/$mm^2$), the stress exponent in had the value of 6.2 - 6.65 but at around the temperature range $90^{\circ}C\;-\;120^{\circ}C$ and the stress level 10 - 17.2(kgt/$mm^2$), the value of 1.3, and at around the temperature range $470^{\circ}C\;-\;500^{\circ}C$, the stress level 0.62 - 1.02 (kgt/$mm^2$) the value of 1-1. Besides these results, at around the temperature $200^{\circ}C\;-\;240^{\circ}C$ the stress dependence of rupture time (n') had the value of 6.3. Finally, it was found that the value n calculated by considering the applied stress dependence of the internal stress were in good agreement with those obtained for the creep test. Then, it was concluded that the change in n was mainly attributed to the difference of the applied stress dependence of the internal stress and the ratio of the internal stress to the applied stress, and the creep rupture life may be represented as.

The Study on Empirical Propagation Path Loss Model in the Antler Terminal Environment (엔틀러 터미널 환경에서 실험적인 패스 로스 모델에 관한 연구)

  • In this paper, The path loss model of Air Traffic Control(ATC) telecommunication radio channel has been studied at the Incheon International Airport(IIA) with the terminal with two antlers. We measured two frequencies among VHF/UHF channel bands. The transmitting site radiated the Continuous Wave(CW). The propagation measurement was taken using the moving vehicle equipped with receiver and antenna. The transmitting power, frequency and antenna height are the same as the current operating condition. The path loss exponent and intercept parameters were extracted by the basic path loss model and hata model. The path loss exponents at passager terminal areas were 3.32 and 3.10 respectively in 128.2 MHz and 269.1 MHz. The deviation of prediction error is 9.69 and 9.65. The new path loss equation at the terminal area was also developed using the derived path loss parameters. The new path loss was compared with other models. This result will be helpful for the ATC site selection and service quality evaluation.

Identity-Based Online/Offline Signcryption Without Random Oracles (ID기반 온라인/오프라인 사인크립션(Signcryption) 기법)

  • Signcryption is a cryptographic primitive which offers authentication and confidentiality simultaneously with a cost lower than signing and encrypting the message independently. We propose a new cryptographic notion called Identity-based online/offline signcryption. The notion of online/offline scheme can be divided into two phases, the first phase is performed offline prior to the arrival of a message to be signed or encrypted and the second phase is performed online phase after knowing the message and the public key of recipient. The Online phase does not require any heavy computations such as pairings or exponents. It is particularly suitable for power-constrained devices such as smart cards. In this paper, we propose ID-based signcryption scheme and ID-based online/offline signcryption scheme where the confidentiality and authenticity are simultaneously required to enable a secure and trustable communication environment. To our best knowledge, this is the first ID-based online/offline signcryption scheme that can be proven secure in the standard model.

Shear wave velocity of fiber reinforced cemented Toyoura silty sand

  • Several additives are used to enhance the geotechnical properties (e.g., shear wave velocity, shear modulus) of soils to provide sustainable, economical and eco-friendly solutions in geotechnical and geo-environmental engineering. In this study, piezoelectric ring actuators are used to measure the shear wave velocity of unreinforced, fiber, cemented, and fiber reinforced cemented Toyoura sand. One dimensional oedometer tests are performed on medium dense specimens of Toyoura sand-cement-fiber-silica flour mixtures with different percentages of silica flour (0-42%), fiber and cement (e.g., 0-3%) additives. The experimental results indicate that behavior of the mixtures is significantly affected by the concentration of silica flour, fiber and cement additives. Results show that with the addition of 1-3% of PVA fibers, the shear wave velocity increases by only 1-3%. However, the addition of 1-4% of cement increases the shear wave velocity by 8-35%. 10.5-21% increase of silica flour reduces the shear wave velocity by 2-5% but adding 28-42% silica flour significantly reduces the shear wave velocity by 12-31%. In addition, the combined effect of cement and fibers was also found and with only 2% cement and 1% fiber, the shear wave velocity increase was found to be approximately 24% and with only 3% cement and 3% fibers this increased to 35%. The results from this study for the normalized shear modulus and normalized mean effective stress agree well with previous findings on pure Toyoura sand, Toyoura silty sand, fiber reinforced, fiber reinforced cemented Toyoura sand. Any variations are likely due to the difference in stress history (i.e., isotropic versus anisotropic consolidation) and the measurement method. In addition, these small discrepancies could be attributed to several other factors. The potential factors include the difference in specimen sizes, test devices, methods of analysis for the measurement of arrival time, the use of an appropriate Ko to convert the vertical stresses into mean effective stress, and sample preparation techniques. Lastly, it was investigated that there is a robust inverse relationship between α factor and 𝞫0 exponent. It was found that less compressible soils exhibit higher 𝜶 factors and lower 𝞫0 exponents.

Experimental Study on the Effect of Degree of Saturation on the Electrical Conductivity of Soils (포화도에 따른 흙의 전기전도도 변화에 대한 실험적 연구)

  • The degree of saturation determines the connectivity of void space and the particle surface. Thus, it greatly affects the electrical conductivity of soils. This study aimed to analyze the electrical conductivities of coarse grains with a high relevance of pore water conduction and fine grains with a high relevance of surface conduction based on the degree of saturation. It also aimed to express the electrical conductivity of unsaturated soils as a combination of surface and pore water conductions using the modified Archie's equation. Samples were prepared in a plastic cell equipped with four electrodes, and the electrical conductivity was measured based on the porosity at various degrees of saturation (40%~100%). The results demonstrate that Archie's equation can be used to express the electrical conductivity of coarse grains, with a saturation exponent of ~1.93 regardless of the pore water conductivity. However, the saturation exponent of fine grains varied considerably with pore water concentration. This variation can be attributed to the relative magnitude of surface conduction with respect to the electrical conductivity of soils at different pore water concentrations. Thus, the degree of saturation has varying effects on pore water conduction and surface conduction. Therefore, different saturation exponents must be used for pore water conduction and surface conduction to predict the electrical conductivity of unsaturated soils using the modified Archie's equation.
