  • We evaluated the nutritional status of 116 Songmyun middle school students. The means of height and weight were similar to the standards published by the Ministry of Education(1991). The height of 79% of the subjects was in the normal range, and the height for 11% was below the normal range. While 27% of the subjects were underweight, 18% and 8% were overweight and obese, respectively. The percentage of anemia was 29%, and the mean urinary urea nitrogen to creatinine ratio was 8$\pm$4. Total daily energy and nutrient intake was 48-103% of RDAs, and especially calcium and iron intake was very low. Carbohydrate, protein and fat intake was 71%, 12% and 17% of total calories, respectively. Breakfast, lunch, dinner and the between meals provided 20%, 37%, 26% and 18% of total energy intake. Energy and nutrient intake from lunch box was 52-95% of the 1/3 RDAs. Our data suggest that the nutrition education for the meal planners of the subjects is necessary to improve the nutritional status of the subjects. In addition, the school lunch program is recommended.

  • The objectives of this study were to determine whether older Americans would provide valid energy intake information using a 24-hr recall method and to determine which characteristics were predictive of under-report of energy intake. We conducted 24-hour recalls on 83 male and 105 female community-dwelling older adults(66-87y) in the USA to assess energy(EI) and nutrient intakes. Basal metabolic rate(BMR) was calculated from age-and gender-specific equations of Schofield. Under-reporting was defined a priori as EI : BMR<0.9. Subjects volunteered demographic information, underwent depression and cognition exams, and completed a Level II Nutrition Risk Screen. Differences between under- and adequate-reporters were assessed using t-tests for characteristics and macro-nutrient profile. Stepwise regression analyses were used to predict under-reporting status. Under-reporting of EI occurred in 34% of the sample. Neither geriatric depression scale(GDS) score, nor self-reported weight loss were related to under-reporting. On average, under-reporters had higher body mass indices. The most significant variables for the main effect to predict the ratio of energy intake to estimated basal metabolic rate(EI : BMRest) were BMI and age. Using a standard cut-off of 76% of the recommended dietary allowances for Americans, under-reporters were consistently more likely to be classified as having inadequate nutrient, as well as energy, intakes. • Objectives: With an increase in the population of the elderly in Korea, their nutritional status has become a cause for concern. This study was designed to compare the nutritional intake and health status of the Korean elderly according to their body mass index. Methods: The subjects were 3,274 elderly people aged 65 and above who had participated in the 2016-2018 Korea National Health and Nutrition Examination Survey. The subjects were divided into four groups: underweight, normal, overweight, and obese, based on their BMI. The general characteristics, daily energy, and nutrient intakes, nutrient intakes compared to the recommended nutrient intake, percentage of participants whose nutrient intake was lower than the estimated average requirement (EAR), index of nutrient quality, the mean adequacy ratio (MAR), intakes by food group, and health status of the four groups were compared. Results: Underweight elderly people showed lower energy, lipids, dietary fiber, vitamin C, riboflavin, niacin, phosphorus, sodium, and potassium intake and MAR score (P < 0.001) compared to the normal or obese elderly. The mean protein, riboflavin, niacin, vitamin C, phosphorus, and iron intake of the underweight elderly was lower than the EAR (P < 0.05). Underweight elderly people also had a lower intake of vegetables and fats, oil and sweets food groups than the other groups (P < 0.001). The prevalence of diabetes and dyslipidemia was higher in the obese group, but the percentage of anemia was higher in the underweight group. Conclusions: Underweight elderly people were vulnerable to undernutrition and were at a higher risk of anemia.

  • A dietary survey was conducted using 24-hour recall method in 80 male elementary school children, 83 high school students, 87 adults and 98 elderly people over 65 years of age to discuss food and nutrient intakes among different age groups. In observing food intake by age groups, the percentage of plant foods to total food intake was significantly higher in the elderly than other groups and that of animal foods was the highest in the children. The children consumed significantly higher amounts of milk and dairy products. Carbohydrate energy percent in the elderly people was 68.0%, significantly higher than other age groups. All age groups consumed Ca below Korean RDA and especially, 65.1% of the adolescents and 68.4% of the elderly consumed below 75% of RDA. Nutrient adequacy ratio (NAR) of most nutrients was lowest in the elderly. Mean adequacy ratio (MAR), an index of overall dietary quality, was 0.94 for the children, 0.84 for the adolescents, 0.84 for the adults, and 0.73 for the elderly. The above results suggest that food and nutrient intakes have been differently affected with advancing age, and overall dietary quality of the elderly people is lower than that of other age groups. • This study was intended to investigate food habits, dietary variety and the effects of nutrient intake of female college students. Food habits such as regularity of meal time, repast of breakfast, lunch, and supper, and duration of meal were assessed via a self reporting questionnaire, 24 hrs recall method for nutrient intake was obtained from 155 female college students in Yangju-si. Dietary variety was assessed by dietary diversity score(DDS). The mean height and weight of the subjects were $161.25{\pm}3.52cm$ and $52.26{\pm}4.52kg$, respectively. The dietary habits of female college students was generally inadequate. In the survey of dietary habits, the ratio of skipping breakfast 3~6 days a week in total subjects was 87.09%, showing a rather higher ratio of skipping breakfast. In the evaluation of nutrient intakes by DDS, subjects who had higher DDS had significantly higher nutrient intakes of energy, protein, carbohydrate, fiber, calcium, phosphate, iron, vitamin A, vitamin C, and cholesterol(p<0.05). There was a great difference in nutrient intakes, suggesting the risk of nutritional imbalance. These findings suggest that nutritional education based on female college students' eating variety and dietary habits(regularity of meal time, skipping breakfast and night snacks per week, and duration of meal) may be required to improve dietary variety. it is considered that the improvement in dietary habits will contribute to the improvement of nutrition.

  • Physiological changes that affect nutrient absorption and utilization occur in older adults, and the collection of nutritional information is an important part of examining the nutrition and health issue. A nutritional survey using the 24-hour recall method was performed to identify nutritional quality and leading patterns of food group intake for protein, vitamin C, P and Fe were over 1, whereas those for vitamin A, $B_1$, $B_2$, niacin and Ca were below 1. The MAR(Mean Adequacy Ratio) was relatively low(0.75). The percentage of energy from carbohydrate, protein, and fat was 65.1, 15.6, and 19.5, respectively, thus the quantities of energy source were ideal. The Older subjects revealed poorer nutrition quality than the younger subjects did. The food group intake pattern of the elderly was not diverse, only 9% of them consumed all food groups in a day. These results suggest that nutritional guidelines for older Koreans should focus on the maintenance of adequate energy intake. In addition, selection of foods with high protein and calcium, such as dairy food, should be emphasized, particularly in the older elderly. Nutrition programs should target individuals at risk of not receiving enough nutrients, like the oldest elderly, and persons with lower education.

  • This study was conducted to evaluate the nutritional status of the elderly women, who attended the Health Promotion Program of the Seogu Health Center in Daegu. The study subjects were 158 elderly women in an urban community. The general characteristics, dietary behavior (nutritional knowledge, nutritional attitudes and dietary habits), food and nutrient intake were surveyed by an individual interview. The average age of the study subjects was 70.9 $\pm$ 2.3 years of the subject group 79.1% ranged in age from 65 to 74 years and 20.9% were over 75 years. Their average score for nutritional knowledge, nutritional attitudes and dietary habits was 7.3 (total mark of 10), 7.2 (total mark of 10) and 9.1 (total mark of 22) respectively. Specifically, the level of the dietary habits of the study subjects was very low. In relation to food group intake of the study subjects according to age, their food intake was low. The total, plant. and animal food intake were 1078.9 g, 954.4 g (88.5%), and 244.4 g (11.5%), respectively. The mean daily energy intake and nutrient intake according to percentage of the Korean RDA were higher in the from 65 to 74 year group than in those people over 75 years. The average calories and the mean percentage of nutrient intake, except for vitamin C and phosphorus. were below 75% of the Korean RDA. It seems that the nutrient intake was very low. The mean nutrient adequacy ratio (MAR) was 0.59. Nutritional status of age over 75 years old was significantly lower than that of 6574 years old group (Mar = 0.60 VS 0.54, p < 0.05) The correlation coefficients between their dietary behavior (nutritional knowledge, nutritional attitudes, dietary habit) and their mean nutrient adequacy ratio (MAR) showed significant linear relations. In conclusion, if nutritional education is to affect the dietary behavior of elderly women, it should be included in a Program to Promote their nutrition and health status.

  • Objectives: With the increasing number of single households and so-called Honbab-jok, those who eat alone, people tend to enjoy convenient and simple meals, such as single dish meals. This study was performed to provide data on the energy and nutrient content, and nutritional adequacy of single-dish meal. Methods: From the literature reviews, 61 types of single-dish meals were selected, and divided into 4 groups (steamed rice, noodle, porridge, and sandwich burger), and a further 11 sub-groups (bibimbab, fried rice, topped rice, rolled rice/ warm noodle, cold noodle, seasoned noodle, dukgook/ porridge/, and sandwich, burger). In addition, 382 junior high school students from Gyeonggi, Sejong, Jeonbuk, and Chungnam areas were recruited for the survey. The survey questionnaires were composed of the characteristics, preference, and intake frequency of single-dish meals. The representative energy content (arithmetic mean) of single-dish meals were calculated, and compared with the energy contents of preference and intake frequency-weighted values adjusted. The representative nutrient contents, energy contribution ratio, and INQ (index of nutritional quality) of a single-dish meal were calculated for a nutritional adequacy evaluation. Results: The study subjects considered a single-dish meal as tasty, simple and fast to prepare, inexpensive, nutritious, and no low calorie food. The preference scores of all but 1 sub-group of singledish meals were ${\geq}5.00$ (5.00~5.97), and 1 sub-group (porridge) was 4.67 on a 7-point scale. The intake frequency of 11 sub-groups were 0.31~1.71/week, porridge was the lowest at 0.31 and warm noodles was the highest at 1.71. Fried rice, rolled rice, and warm noodle' intake frequency were ${\geq}1/week$. The representative energy of steamed rice, noodle, sandwich burger were 443, 429, and 428 kcal, respectively, and that of porridge was 264 kcal. Less than 5% differences in the representative energy of 4 groups were observed when adjusted for the preference or intake frequency-weighted values. The energy contribution ratio of macro-nutrients calculations showed that porridge was a high carbohydrate and low fat food, whereas sandwich burger were high fat and low carbohydrate foods. The INQ of calcium and vitamin C were less than 1.0 in all 4 food groups, but the INQ of protein and thiamin were > 1.0 in all 4 single-dish food groups. Conclusions: The representative energy in the 4 groups of single-dish meal was 264~450 kcal, which is a rather low calorie meal, and the energy contribution ratio of macro-nutrients were inadequate. The protein and thiamin levels were sufficient but the calcium and vitamin C levels were insufficient in all 4 groups of a single-dish meal judged by the INQ. The additional intake of fruits and milk dairy products between meals with a single-dish meal, supply of calcium and vitamin C may increase, which will result in an improved nutritional balance.

  • This study is designed to forecast the characteristics in food consumption patterns under per capita GNP growth. Ordinary least square(OLS)method was employed as analyzing technique. Equation was $Y=a_0+a_1X$, in which X was per capita GNP and Y were Engel coefficient, food supply, energy supply, nutrient intake and ratio of self-supply of food. The result obtained indicates that the intake of nutrient such as protein and fat will be increased, and wheat, corn and legume are expected to be imported wholly due to lower ratio of self-supply, and rice will be over-supplied continually. Therefore, the relevant policy of government must be established in the field of supply and demand of food, and the research of sound national health should be done.
