국민영양조사를 이용한 지방에너지 섭취비율에 따른 식품섭취패턴과 식이관련인자의 비교연구 (Food Consumption Patterns and Other Diet Related Factors Among Three Groups of Households with Different Fat Energy Intakes)

  • With changing socio-economic environments, there have been some changes in the Korean diet. One of major changes is the increasing fat intake. Based on the current trend of increase, it is important to understand factors related to fat intake levels. Objective of this study was to find out the differences in food consumption patterns, demographic characteristics, and other socio-economic factors among three groups of households. The households were devided into three groups by percentage of fat energy intake to total energy intake such as less than 15%(Group 1), from 15% to 25%(Group 2), and more than 25% (Group 3). Among 1, 987 households, the numbers in Group 1, Group 2 and Group 3 were 792(39.6%), 902(45.4%), and 293(15.1%), respectively. The mean size of family was 3.44 person per households for total survey household, 3.42 for Group 1, 3.54 for Group 2, and 3.21 for Group 3. More than 60% of families living in the rural area belonged to Group 1(p<0.05). Group 3 had most educated food preparers and more income than other groups(p<0.05). Group 3 showed higher intake of all nutrient analyzed except carbohydrate (p<0.05). Other than calcium and vitamin A for Group 1, and vitamin A for Group 1, and vitamin A for Group 2, all nutrient intake analyzed for three groups were more than 75% of Korean recommended dietary alowances. Mean fat intakes for Group 1, Group 2, and group 3 had highest amount of intake for all food groups. According to food group analysis, Group 3 had highest amount of intake for all food groups except vegetables. Group 3 consumed more than 10 times of meats compared to Group 1. Group 3 had more dishes prepared by baking, deep-fryng, stir-frying, and pan-frying other two groups. Processed foods were used most frequently in Group 3. Other diet and related factors were analyzed also. These results showed that the amount of fat consumed by Korean households varies widely. Households with high fat energy intake had tendency to reside in the largy city, and to have heigher education level and more income than other groups. They eat less vegetables, use more cooking methods using oils, and use more processed foods. To ensure a proper intake of fat, there should be two separate ways of approach for high fat energy group and low fat energy group, since they are different in many ways.

한국과 일본여자의 체지방 분포에 관한 연구 (Comparative Study on Body Fat Distribution in Korean and Japanese Young Female Subjects)

  • 본 연구는 19세부터 23세까지의 한국과 일본 여대생 108명을 대상으로 체격을 비교하고, 나아가 환경인자의 영향으로 인한 신체적 변화를 신체조성으로부터 평가 비교하였다. 그리고 성인병의 발병인자의 하나이기도 한 신체내부지방의 축적량을 검사하여 이것과 관계 깊은 영양상태를 평가 하였으며 결과를 요약하면 다음과 같다. 1) 한 $cdot$ 일 양국에서 체위측정치의 차이를 볼 수 있는것은 상지장(上肢長), 경위(頸圍), 상완위(上脘位) 및 전완위(前脘位)로써 한국측이 유의하게 크지만 그 외의 측정치는 본 연구에 참여한 여대생에서는 거의 차이가 없었다. 신장에 대한 체중, 흉위(胸圍), 앉은키(座高)의 비교와 로러지수, BMI,체표면적을 양국간에 대부분 동일하여 유익한 차이는 없었다. 2) 피하지방두께 에서는 협골하연(頰骨下緣),대퇴전부(大腿前部), 후부(後部), 배하부(背下部)를 제외하고는 모두 일본측이 큰 수치를 표시하교 있으나 총 피하지방두께와 평균 피하지방에서는 본 연구에 참여한 여대생에서는 거의 차이가 없었다. 체지방총량에는 본 연구에 ㅏ참여한 여대생 사이에서 2.7kg의 차이가 있으며, 피하지방량에 유의한 차이가 없었을 분 체지방총량 신체내부지방량, 체수분량, 체지방률은 모두 일본측이 유의하게 컸다. 3) 1일의 섭취 에너지 총량에서는 한국측이 유의하게 높고, 3대 영양소의 에너지 비율은 단백질에서는 차이가 없고, 지방 에너지의 비율에서는 일본측이, 당질 에너지의 비율에서는 한국측이 유의하게 높은 수치를 표시하고 있었다. 동물 단백질과 지방질의 섭취량은 반대로 일본이 많았다. 4) 1일 소비 에너지 총량에서는 양국간에 거의 차이가 없었고, 생활 내용별 소비 에너지에서는 睡眠時 座位時 立位時의 소비 에너지에는 유의한 차이를 볼 수 없으나 보행(步行)으로 인한 소비에너지량은 일본측이 다소 높게 나타났다.5) 한국에서는 고추와 마늘의 섭취량이 많고 보통 $3.6pm4.99$g/일, $5.8pm7.53$g/일이며, 일본에서는 거의 섭취하지 않았다.

도시 저속득층 지역의 모자 영양 및 섭식에 관한 생태학적 연구 -I. 임산부의 인체 계측, 식이 섭취 및 혈청 지질/지방산 조성 - (Ecological Studies of Maternal-Infant Nutrition and Feeding in Urban Low Income Areas)

  • This study was aimed at evaluating the lipid status of 122 pregnant women, who were attending peripheral community clinics in low-income areas and were vulnerable in terms of public health, by anthropometric measurements, estimating dietary intakes and analyzing serum lipids content and fatty acids composition. Regarding the skinfold thickness, it has increased more significantly in suprailliac than in triceps, biceps, subscapular, which means body fat has been accumulated in central parts more than in distal parts of the pregnants. It is found that intakes of energy, protein, lipid and carbohydrate are desirable while calcium, zinc and copper are low and sodium is excessive. Regarding dietary fat intake, the energy $\%$ of fat was within the same range as RDA(20%) for adults, but energy $\%$ intake from each fatty acid was usually low, especially energy % of monoun-saturated fatty acid intake was below RDA for adult women. And intake ratio of $\omega$6$\omega$3 fatty acids was desirable. Accordingly, it is thought that dietary fat intake was balanced in quality. Serum lipids concentrations were increased with the length of pregnancy and were higher as compared with non-pregnant women. Polyunsaturated fatty acids, especially $\omega$6 fatty acids, have gradually decreased with the length of pregnancy. Serum lipids content and fatty acids composition were not greatly influenced by dietary fat but serum free fatty acid level was negatively related to energy, carbohydrate, fatty acids and cholesterol intake. On the basis of the above results, it can be predicted that lipid metabolism for mother and fetus is changed by pregnant status and multilateral research on maternal nutrition in terms of areas and income levels will have to be made. 여대생을 위한 단기복합 체중조절프로그램 효과판정 (Evaluation of Short Term Weight Control Program for Female College Students)

  • The purpose of this study was to evaluate weight control program provided by university health care center for female college students. The program was 8-week long and composed of diet, exercise, and behavioral modification. Evaluation was made on the completion of 8-week program and a follow-up survey was done at 3-24 months after the end of program by telephone or bye-mail. Total of 76 women completed the 8-week program and 51 for follow-up survey. On the completion of 8-week program, significant decreases in body weight, BMI, body fat (kg), % body fat, and WHR were resulted, however, no change in muscle mass was found. Even the subjects without weight change showed significant reduction in body fat (kg) and % body fat. Total food intake was decreased resulting in reduced intakes of most nutrients. Meal distribution of energy was changed; %energy from snack decreased from 22% to 14%, and proportion for breakfast increased. Blood values of hemoglobin, hematocrit, total cholesterol, HDL-cholesterol, LDL-cholesterol, and triglyceride were within normal range, and no changes were observed by this program. The follow-up survey revealed that 88.3% of the subjects continued to lose weight after completion of the program, while only 7.8% gained weight. And 78.4% of the subjects considered the program effective. In conclusion, the weight reducing regime with education is effective for long lasting weight control and health conscious behavior for female college student. Since the subjects reduced the size of meal, instead of cutting only calories down, food selection to meet all the nutrient requirements except energy should be emphasized.

Influence of rendering methods on yield and quality of chicken fat recovered from broiler skin

  • Objective: In order to utilize fat from broiler byproducts efficiently, it is necessary to develop an appropriate rendering procedure and establish quality information for the rendered fat. A study was therefore undertaken to evaluate the influence of rendering methods on the amounts and general properties of the fat recovered from broiler skin. Methods: The yield and quality of the broiler skin fat rendered through high and lower energy microwave rendering (3.6 W/g for 10 min and 2.4 W/g for 10 min for high power microwave rendering (HPMR) and high power microwave rendering (LPMR), respectively), oven baking (OB, at $180^{\circ}C$ for 40 min), and water cooking (WC, boiling for 40 min) were compared. Results: Microwave-rendered skin exhibited the highest yields and fat recovery rates, followed by OB, and WC fats (p<0.05). HPMR fat had the highest $L^{\star}$, $a^{\star}$, and $b^{\star}$ values, whereas WC fat had the highest moisture content, acid values, and thiobarbituric acid (TBA) values (p<0.05). There was no significant difference in the acid value, peroxide value, and TBA values between HPMR and LPMR fats. Conclusion: Microwave rendering at a power level of 3.6 W/g for 10 min is suggested base on the yield and quality of chicken fat.

편의점 기업과 도시락 가격에 따른 편의점 도시락의 영양학적 질 평가 (Evaluation of Nutritional Quality of Convenience Store Meal Boxes according to Store Company and Meal Price)

  • Objectives: This study evaluated nutritional quality of convenience store meal boxes according to store company and meal price. Methods: In May 2020, 71 meal boxes from five major convenience store companies were collected. Respective weights of all dishes and food ingredients included in each meal box were measured with a digital scale. Information on nutritional contents was collected from nutrition fact panels on packages. Food group patterns, dietary diversity scores (DDS), and dietary variety scores (DVS) were analyzed. Nutritional contents, i.e., amounts of energy, protein, and sodium, and percentages of energy from carbohydrate, sugar, fat, and saturated fat were compared with respective standards based on the 2020 Dietary Reference Intakes for Koreans. Comparison was made among five companies (Company A, B, C, D, E) and three price groups (≦ 4,200 won, ≧ 4,300 and ≦ 4,500 won, ≧ 4,600 won). Multiple regression analyses were conducted to examine the difference of nutritional contents according to company and price, respectively while holding the other variable constant. Results: DDS, but not DVS, significantly differed among companies. The percentages of meal boxes meeting the nutritional standards of sodium significantly differed among companies; the percentage was highest in companies B (75.0%) and C (73.3%). "Company" was associated with amount of energy, protein, and sodium, and percentage of energy from saturated fat. "Price" was associated with the amount of energy and percentage of energy from carbohydrate. The average number of satisfied standards was highest in companies B (5.0) and C (4.0). About two-thirds of the meal boxes provided less amount of energy than the standard; the percentage of such meal boxes was highest in meal boxes with price of 4,200 won or lower. Conclusions: There were significant differences in the nutritional quality of meal boxes according to "company". Meanwhile, higher-priced meal boxes did not necessarily ensure better nutritional quality.

Relationship between Fat-Free Mass and Muscle Strength, Nutrient Intakes, Exercise Habits in Male Aged

  • This study was performed fir the purpose of finding the relationship between fat-free mass (FFM) which mainly represents muscle mass change, and muscle strength. The correlation between diet and exercise behaviors and FFM in healthy elderly men over age 55 was also investigated. FFM and corresponding hand grip strength declined significantly with increasing age. However the concentration of serum albumin, the indicator of protein nutritional status, showed no change with increases in age. The subjects were categorized into three groups according to FFM textiles. Anthropometry such as height, BMI, circumferences of waist and hips, body fat mass percent and hand grip strength decreased significantly in the lowest FFM group. But albumin level showed no change relative to FFM level. FFM showed a significant relationship to nutrient intake such as energy and fat. However, no association was found with exercise behavior probably because there were no instances of resistance exercise habits among the subjects studied. The variance in FFM could be attributed 86.2% to height and age. The variance of height-adjusted FFM could be attributed only 40.6% to age and fat intake. In conclusion decreases in FFM may cause reductions in muscle strength in elderly men. Increasing energy and fat intake were associated with increased FFM and may protect elderly men from the risk of sarcopenia. FFM had no association with endurance exercise habits.

Vegetarian Diets and Estrogen Metabolism in Korean Premenopausal Women

  • It has been suggested that dietary fat increases the risk of breast cancer by elevating serum estrogen concentrations. However, studies on a relationship between fat intake and breast cancer risk have shown contradictory results, possibly because the levels of fat intake in study populations were too high to observe differences. Also, the effect of other dietary factors may present. The present study was performed to investigate the relationship between diet and estrogen metabolism in premenopausal women whose usual fat intake is relatively low compared to their western counterparts. Twenty lacto-ovo vegetarians (LOV) and twenty omnivores participated in the study. Three day food records including a Saturday or a Sunday were used to estimate nutrient intake. Serum lipids, estradiol, sex-hormone binding globulin, and urinary estradiol were measured. Study results showed $24.8\%$ and $20.9\%$ of energy intake were provided from fat in omnivorous and LOV subjects, respectively. Serum and urinary levels of estradiol were two times higher in omnivores. Fat intake was not related to either serum estradiol nor urinary estradiol when the Spearman correlation coefficient analysis was performed. Carbohydrate, total dietary fiber and soluble dietary fiber intakes were negatively related to serum estradiol concentration. Legumes, vegetables and fruit consumption showed significantly negative relationships with both serum and urinary estradiol concentrations. These results indicate lower estrogen availability may be associated with plant food­based diets in premenopausal women whose usual diets contain less than $25\%$ of energy as fat.

월경주기동안의 여대생의 열량섭취와 열량구성비 (Energy and Macronutrient Intakes during Menstrual Cycle in Young Women)

  • The purpose of this study was to examine changes in energy and macronutrient intakes during the premenstrual(days -10-1) and postmenstrual(days 5-14) phases. Thirty-two college female students recorded their food consumption and dietary patterns over 5 weeks from September 8 to October 12, 1997. Mean daily energy and macronutrient intakes and the percentage of energy intake from protein and carbohydrate were relatively consistent over the two menstrual cycle phases, but the energy intake from fat increased 1%(P<0.05)during the postmenstrual phase. Two different dietary patterns were identified by the shifts in energy intake between postmenstrual and premenstrual phases. Seventy five percent of subjects revealed a consistent pattern with the results of previous studies investigating food intake over the menstrual cycle, in which the premenstrual phase is associated with an increment in energy, carbohydrate, and protein intake. In contrast, energy, protein, and fat intakes increased during the postmenstrual phase in 25% of the subjects. We conclude that cyclical fluctuations in energy and macronutrient intakes occur in both postmenstrual and premenstrual dietary pattern groups across the two menstrual phased with the opposite directions.

성인 여성을 대상으로 한 지방섭취제한행동 변화단계에 따른 사회심리적 요인 분석 (Analysis on the Stages of Change in Fat Reducing Behavior and Social Psychological Correlates in adult Female)

  • Under the assumption that people go through stages in making dietary behavior change, this study was attempted to apply the stages of a change model for fat intake by examining the associations of social psychological variables with stages of change in dietary fat reduction. Derived from social psychological theories, 10 social psychological variables on motivational beliefs(6), social influence(3) and self-efficacy(1) related specifically to selecting every day diets low in fat were constructed. Fat and energy intakes were assessed by a short form semi-quantitative food frequency questionnaire. The associations of stages of change with motivational beliefs, social influence, and self-efficacy variables and energy and fat intakes were assessed in 333 female adults from large cities in Korea. Dietary stage groups differed significantly on most of the social psychological variables in ways predicted by theory. Motivational factors that lead to a psychological state of readiness to take action were important in the early stages of the dietary change process. Social influences were more important in the stages as people decide to take action. Self efficacy and motivational beliefs, particularly, reduction of perceived barriers were important in maintaining fat reduction behavior. The results of our study indicate differences in stages of change in fat reduction behavior in terms of nutrient intakes and social psychological correlates and suggests that adding a time dimension to social psychological models increases our understanding of dietary change, which assist us in designing nutrition education interventions that are more appropriately targeted by stage of change.
