A study on the Thickness of Egg Shell Membrane and Egg Shell in Quail Eggs (메추리의 난각과 난각막의 두께에 관한 연구)

  • This study was carried out to investigate the variations in the thickness of egg shell and egg shell membrane of Quail eggs from July 25, 1978 to September 7, 1978. No. of eggs used in this experiment was 520 okay and all the eggs were purchased from a farm located in Jinju city. The results obtained are summarized as follows: 1. Egg shells of quail were classified as white egg shell with large spots, egg shell with large spots, violet egg shell with small spots and beige egg shell with small spots by the exterior shell colour and their average egg weights were 8.993g, 8.866g, 8.403g and 8.109g, respectively. 2. Average egg shell thickness of white egg shell with large spots, egg. shell with large spots, violet egg shell with small spots and beige on shell with small spots were 0.171mm, 0.169mm, 0.160mm, and 0.156mm, respectively. 3. Average eggs shell membrane of white egg shell with large spots, egg shell with large spots, violet egg shell with small spots and beige egg shell with small spots were 0.0449mm, 0.0431mm, 0.0398mm, and 0.0397mm, respectively. 4. Negative correlation coefficient was found between egg shell thickness ana egg shell membrane thickness, but it was not significant. 5. Comparing quail egg with fowl egg, the thickness of quail egg shell was much thinner than that of fowl egg, but egg shell membrane thickness was similar between the two.

Effect of Types of Egg Shell Calcium Salts and Egg Shell Membrane on Calcium Metabolism in Rats (난각 칼슘염의 종류와 난막의 존재유무가 흰쥐의 칼슘대사에 미치는 영향)

  • This study was carried out to investigate the effect of egg shell calcium salt types and egg shell membrane on calcium metabolism in rats. Sprague-Dawley male rats, 4 weeks of age, were fed on free-calcium diets for 2 weeks after adjustment period. Rats weighing approximately $247{\pm}2.3g$ were divided into 6 groups and were fed on the experimental diets containing 0.2% calcium for 4 weeks. Experimental groups were as follows; {ES(M+)} (egg shell powder diet with egg shell membrane), {ES(M-)} (egg shell powder diet without egg shell membrane), {AC(M+)} (egg shell calcium acetate diet with egg shell membrance), {AC(M-)} (egg shell calcium acetate diet without eg shell membrane), {GC(M+)} (egg shell calcium glucuronate diet with egg shell membrane) and {GC(M-)} (egg shell calcium glucuronate diet without egg shell membrane). Bone length of femur was significantly different by the types (p<0.05) of egg shell calcium salts. Bone mineral density of femur showed the highest level in AC(M-) group. Calcium content of femur and calcium absorption rate were higher in egg shell calcium salt groups than in eg shell powder groups. Calcium absorption rate and retention were significantly different (p<0.05) among the types of eg shell calcium salts and were higher in the AC(M-) group than in the other groups. Alkaline phosphatase activity, parathyroid hormone and osteocalcin levels of serum showed no significant difference among the experimental groups. From the above results, it is concluded that bioavailability of calcium is higher in groups of egg shell calcium salts compared to those in egg shell powder, even though egg shell membrane has no effect on calcium metabolism. Thus, these findings suggest the possibility of using egg shell calcium salts as a functional food material related to calcium metabolism.

Functional Properties of Egg Shell Membrane Hydrolysate as a Food Material (난각막 분해물의 식품 소재로서 기능적 특성)

  • The functional properties of egg shell membrane hydrolysate by Bacillus licheniformis(EESMH) and NaOH-ethanol(AESMH) as a food material were investigated.. The yield of egg shell membrane hydrolysate was about 15% by Bacillus licheniformis, whereas that was 70% by NaOH-ethanol. Histidine content was higher in EESMH (18.69%) than in AESMH (2.56%). Both EESMH and AESMH showed high protein solubility (>95%). Emulsi-fying activity and stability of EESMH were higher than those of AESMH. foaming capacity and stability of AESMH were 2 times higher than those of EESMH in the pH ranges from 2 to 12. The AESMH had antioxidative activity whereas EESMH had not. Therefore, both AESMH and EESMH can be used for industrial food materials from the results of functional properties.

A Study on the Thickness of Egg Shell and Egg Shell Membrane in Silky Fowl (오골계의 난각과 난각막의 두께에 관한 연구)

  • This study was carried out to investigate the variabilities of the thickness of egg shell and shell membrane of silky fowl egg from April 11, 1983 to May 14, 1983. One hundred and twenty eggs used in this experiment were obtained from a Synanmyun silky fowl farm, Sanchungkun, Gyeongnam province. The results obtained are summarized as follows: 1. Total items investigated for the silky fowl egg; egg weight, egg shell weight, egg shell thickness of sharp end, middle part, and blunt end, egg shell membrane thickness of snarp end, middle part, and blunt end, breaking strength, length of egg(L), width of egg(W), and L/W, were measured as 36.58${\pm}$0.446g, 4.53${\pm}$0.079g, 0.32${\pm}$0.006mm 0.32${\pm}$0.047mm, 0.30${\pm}$0.056mm, 0.050${\pm}$0.001mm, 0.050${\pm}$0.001mm, 0.053${\pm}$0.001mm, 3.06${\pm}$0.101kg, 4.80${\pm}$0.024mm, 3.82${\pm}$0.010cm, and 1.26${\pm}$0.005, respectively. 2. Correlation coefficients among 66 combinations of 12 items were estimated. The correlation coefficients relating to egg weight, egg shell weight, egg shell thickness of sharp end, middle part, and blunt end breaking strength, length of egg (L), width of egg (W), and L/W were largely to be highly significant but those related egg shell membrane thickness of sharp end middle part, and blunt end were not significant, sometimes showing inverse correlation

Investigation on the Egg Quality of the Ostrich Farming in Korea (우리 나라 농장 사육 타조 알의 난질 조사)

  • The fresh eggs of African ostrich in Korea were used in this study to investigate their interior and exterior quality characteristics. In ostrich egg shape characteristics, long and short length were measured as 15.1~16.1 cm and 12.1~13.6 cm, respectively. The egg shape index was calculated as 81.0 and the egg shell showed a more g loss white in color than that of hen egg. Calculated breaking strength of egg shell and egg shell surface based on the equation were $41.155kg/cm^3$ and $804.7cm^2$, respectively. Average egg shell thickness including egg shell membrane was 1.89 mm and there are no differences among parts of the shell. The egg shell membrane thickness was 0.10 mm showing relatively thick in equator compared with that of blunt end. The ave rage number of egg shell pores was counted as $19.7/cm^2$ showing relatively high number of egg shell pores at point end and the total number of egg shell pores in an egg was estimated as 15,241. The relative port ion of each parts based on egg weight was estimated as 25.1% for egg yolk, 58.2% for egg white, 16.7% for egg shell and the ratio of egg yolk to egg white (Y/W) was 0.43. The average diameter and the ave rage height of ostrich egg white were 19.7 cm and 13.2 mm, respectively. Calculated the H.U (Haugh Unit) was -69.7 and the pH was 8.3. In ostrich egg yolk, the diameter, the height, the egg yolk index, and it's pH were calculated as 14.4 cm, 29.4 mm, 0.20, and 6.6, respectively. And the egg yolk color showed a more thin in yellow chroma compared with that of hen egg as due to it's thicker membrane.

Effect of Hen Weight on Egg Production and Some Egg Quality Characteristics in Pheasants (Phasianus colchicus)

  • A study was conducted to determine the effect of live weight of pheasants on egg production and egg quality characteristics. A total of 48 ring-necked pheasants were divided into control, heavy, middle and light BW groups. Live weights of the control were 1,187 g, 1,352.92 g for heavy group, 1,247.92 g for middle group and 1,003.33 g for light group. Egg production of groups were found as 47.32, 42.82, 45.79 and 46.51% respectively, in 10 weeks of period. There were no statistical differences on egg production among the groups. The effect of live weight on egg weight, shape index, specific gravity, shell weight, shell thickness, Haugh Unit, yolk weight and albumen weight were found statistically significant (p<0.05). The effect of live weight on albumen index, membrane weight and membrane thickness were found not important (p>0.05). On the other hand, other important factors to be effective on the egg quality of pheasants should be investigated. As a result of this study, live weight of pheasant hens is not an important factor to obtain high egg production in pheasants. But, body conformation of breeding materials should be in good conditions.

Studies on Characteristics of Ostrich Egg Shell and Optimal Ashing Conditions for Preparation of Calcium Lactate (타조알 껍질의 성분특성 및 젖산칼슘 제초를 위한 최적 회화조건 검토)

  • Characteristics of ostrich egg shell and optimal ashing conditions for preparation of calcium lactate were investigated. Average weight, girth, and length of ostrich egg shell with membrane (OESM) were 255.17 g, 39.50 cm, and 15.20 cm, respectively. Ostrich egg shell without membrane (OES) contained 0.35% moisture, 40.98% Ca as a maior mineral, 2.43% protein, and 235.0 mg/100 g of amino acids. Optimal ashing times for preparation of white-colored ashing powder from OES were 12 hr at $700^{\circ}C$, 80 min at 80$0^{\circ}C$, and 15 min at 90$0^{\circ}C$, respectively. These ashing conditions resulted in ashing powder with yields of 54.5~54.6% and color values of 97.26 ~97.51 for $L^{*}$, -0.30~-0.34 for $a^{*}$, and 0.63~0.98 for $b^{*}$. Ashing powders, from three different particle size ranges of OES, did not show significant differences in yield.eld.d.

Effects of Egg Shell Membrane Hydrolysates on Skin Whitening, Wound Healing, and UV-Protection

  • This study was conducted to examine the effects of egg shell membrane hydrolysates (ESMH) on skin whitening, wound healing, and UV-protection. ESMH was divided into three groups by molecular weight (Fraction I: above 10 kDa of ESMH, Fraction II: 3 kDa-10 kDa of ESMH, Fraction III: below 3 kDa of ESMH). As a result, all of ESMHs showed over 90% of protein contents. The wound healing experiment using HaCaT cells showed that the fraction I was slightly superior to other fractions depending on the concentration though it was not significantly different. In the experiments of inhibition of tyrosinase and L-3,4-dihydroxyphenylalanine (L-DOPA) oxidation to verify the L-DOPA whitening effect, the whole ESMH (before fractioning) showed a similar amount of inhibition effect with arbutin (control). In the inhibition of melanin formation in B16-F1 melanoma cells, the fraction I showed a high inhibitory effect. In the experiment for protecting the skin from ultraviolet rays using HaCaT cells, all the fractions showed a higher rate of cell viability than the control. In conclusion, this study confirmed that the cosmetic effects of ESMHs such as skin whitening, wound healing, and UV-protection, which were divided depending on the molecule weight. We could confirm that the possibility of ESMHs as a material for functional cosmetics.

Effects of Egg Shell Membrane Hydrolysates on UVB-radiation-induced Wrinkle Formation in SKH-1 Hairless Mice

  • This study was conducted to examine the effect of egg shell membrane hydrolysates (ESMH) on wrinkle, UV, and moisture protection for cosmetic use. ESMH were fragmented as whole ESMH (before fractioning), Fraction I (> 10 kDa), Fraction II (3-10 kDa), and Fraction III (< 3 kDa). In order to test whether fractionated ESMH can be used for functional cosmetic materials, we examined not only the level of hyaluronic acid and collagen production, but also the MMP-1 activity using a HaCaT and CCD-986Sk cell line. Our study treated each sample of fractionated ESMH with different concentrations (0.01, 0.1, 1 mg/mL). In our in vivo research, we used hairless mice that had been exposed to UV-B to induce wrinkles for 7 wk, then applied Fraction I to the treatment group for 5 wk and then tested skin thickness, minimum erythema dose and moisture content. In addition, Fraction I was high in collagen and HA biosynthesis and it was better than TGF-${\beta}$ in improving of the skin. When TNF-${\alpha}$ caused MMP-1 activity in the CCD-986Sk cells, the whole ESMH and Fraction I proved to be effective in hindering the induction of collagenase depending on the concentration, and also showed outstanding effects in the suppression of skin aging. We found that the treatment group mice's UV-B radiation-induced skin damage was largely mitigated compared to that of the non-treatment group mice. Thus, we have concluded that EMSH helps to mitigate UV-B radiation-induced wrinkles, collagen, HA, MMP-1 activity and can be used for functional cosmetic materials.

Purification and Characterization of a Keratinase from Bacillus licheniformis Strain for Degradation of Egg Shell Membrane (낙각막 분해를 위한 Bacillus licheniformis로 부터 Keratinase의 정제 및 특성)

  • The egg shell membrane degrading isolated from soil was identified as Bacillus licheniformis by 16S rDNA identification method. A keratinase was isolated from the Baciilu licheniformis culture. DEAE-cellulose ion-exchange and Sephadex C-75 gel chromatograhies were used to purify the enzyme. The specific activity was increased 17.3-fold by the purification procedures. Sodium dodecyl sulfate polyacrylamide gel electrophoresis (SDS-PAGE) analysis and Sephadex G-75 chromatography indicated that the purified keratinase was monomeric and had a molecular weight of 65 kDa. The enzyme showed optimum activity at pH 9.0, and was stable above pH 9.0. The optimum temperature was 50$\^{C}$ and the enzyme was stable in the temperature ranges from 20$\^{C}$ to 50t. By the addition of 1 mM and 10 mM FeSO4, the activities of the enzyme were increased to 111$\pm$4.6% and 133$\pm$3.79%, respectively. The keratinase was an alkaline serine pretense because it was inhibited only by phenylmethylsulfonylfluorice (PMSF).
