The drying of duck blood provides safety and commercial benefits, but each drying method has its own characteristics. Moreover, information on the effects of diverse drying methods on the quality of duck blood is limited. This study aimed to investigate the effects of various drying methods on the chemical and functional properties of duck blood. The physicochemical characteristics and functional properties of duck blood subjected to spray drying (SD), freeze drying (FD), vacuum drying (VD), and hot air drying (HD) were examined. The carbonyl content of FD duck blood powder was the lowest and the thermal stability was higher than that of the other treatments (p<0.05). The gel obtained from spray-dried blood displayed the lowest malondialdehyde content. The hardness, gumminess, and chewiness were the highest in the heat-induced gel prepared from FD duck blood powder (p<0.05). The gel obtained from FD duck blood displayed a denser structure than the other gel samples. Taken together, the FD duck blood exhibited excellent chemical properties and processing suitability.
Antioxidant and antimicrobial efficiency were investigated for: i) water extract of green tea(Camellia sinensis), ii) water extract of middle drying megmoondong(Liriope platyphylla Wang et Tang) and iii) water extract of drying megmoondong. The electron donating ability of the green tea(Camellia sinensis) and drying megmoondong(Liriope platyphylla Wang et Tang) extract were 88 and 79, respectively, while that of the middle drying megmoondong extract showed low levels. The relative inhibitory abilities against lipid peroxidase were: green tea(Camellia sinensis) extract > drying megmoondong(Liriope platyphylla Wang et Tang) extract > middle drying megmoondong extract. The green tea(Camellia sinensis) extract showed the strongest antimicrobial effect against Staphylococcus aureus. The middle drying(Liriope platyphylla Wang et Tang) and drying megmoondong extracts showed no antimicrobial effect against Staphylococcus aureus. The green tea(Camellia sinensis) extract had the strongest antimicrobial effect against Escherichia coli. The middle drying megmoondong(Liriope platyphylla Wang et Tang) and drying megmoondong extracts showed no antimicrobial effect against Escherichia coli.
Purpose: The present study investigated the nutritional and organoleptic characteristics of two African leafy vegetables (ALVs)-jute mallow (Corchorus olitorius L) and cowpea (Vigna unguiculata)-at various drying temperatures. Methods: The thin-layer drying of cowpea leaves and jute mallow was studied at various temperatures ($40-100^{\circ}C$) in a convective laboratory dryer, and the nutrient profiles of the dried vegetables were determined. The nutrients considered were vitamins B2 and C, and ${\beta}$-carotene. The level of vitamin C was determined by high-performance liquid chromatography (HPLC), whereas the levels of ${\beta}$-carotene and vitamin B2 were determined by titration. Results: ${\beta}$-carotene was the most stable nutrient, whereas vitamin C was the least stable nutrient in both cowpea leaves and jute mallow. The drying parameters-temperature and time-revealed that temperature had the most profound effect on vegetable nutrient stability. Organoleptic tests were carried out on the fresh and dried vegetable; there were no significant differences in preference between the fresh and dried ALVs (95% confidence interval). Conclusions: The present study revealed that the vegetables can be preserved by drying, and the study could be used as a guide for effective drying of those vegetables.
Collapse is an abnormal shrinkage resulting in uneven, rough surfaces and/or warping of sawn timber. The maximum abnormal shrinkages of the oak and persimmon specimens were obtained by the quasi-equilibrium drying and were compared with the other drying methods. The effect of steaming and freezing treatments on the shrinkage of wood was also investigated. The Quasi-equilibrium drying used in this study was proved as a good tool to make the maximum abnormal shrinkage of wood. The maximum abnormal volumetric shrinkage possibly caused by collapse could be 16.3% and 14.3% for the oak and persimmon specimens, respectively. In general the steaming-treated specimens shrank less than the controls for the oak specimens, but did more for the persimmon specimens. The volumetric shrinkages of the freezing-treated specimens were more various between the drying methods than those of the control and steaming-treated specimens.
Air-drying tests were carried out on green taun (Pometia pinnata f glabra) for 25-mm and 50-mm thickness to elucidate drying characteristics on air-drying rate, time and defects in spring and air-drying calendar. The results of this study were as follows: 1. The air-dried lumber for 25-mm thickness from an initial average moisture content (MC) of $58.3{\pm}3.5$ percent reached 30 percent MC in 17 days, 25 percent MC in 24 days, 20 percent MC in 38 days and 15 percent MC in 84 days. 2. The air-dried lumber for 50-mm thickness from an initial average MC of $59.6{\pm}5.0$ percent reached 30 percent MC in 39 days, 25 percent MC in 55 days and 20 percent MC in 84 days. 3. Air-drying calendar that could be useful in estimating drying times for each month developed by the use of climatological data for Suwon. Total number of effective air-drying days during a year were 243.5 days and the major determinant of the effect air-drying days was temperature. 4. The air-drying rates for 25-mm and 50-mm coated lumber were slight1y slower than those of uncoated lumber. The number and total length of both end checks and surface checks for end coated lumber were less severe than those of uncoated lumber.
This study was conducted to develop a new drying technology in order to quickly and massively dry bamboo tubes without crack and check. The bamboo tubes with the diameter of 45 mm - 68 mm had been impregnated in the solution of PEG-1000, and then were dried under room temperature and high temperature, respectively. The cracks occurred on all control specimens while no cracks were found on PEG treated specimens during drying at room temperature due to effect of PEG restraining the circumferential shrinkage of bamboo tube. But the drying period of this method was too long (200 days) compared to 10 hours of kiln drying. During fast high temperature drying, cracks occurred on all control specimens, but no cracks were found on PEG treated specimens, which could be accounted for more solidified PEG due to higher drying temperature and faster drying rate, and the tension set formed on the surface of bamboo tube in the early stage of drying owning to high drying temperature and low relative humidity. Thus, it is advised that PEG treated bamboo tube should be fast dried at high temperature in order to not only prevent crack or check in short drying period but also increase the dimensional stability of the products made of bamboo tubes.

The brown rice drying is effective for energy saving and cost reduction. However, deterioration after drying is one problem, because the skin damage occurs during the drying. So, the measures to preserve the quality has been investigated. One of major quality deteriorations is the oxidation of fat which is contained in the bran layer. So, milling should be carried out to remove the fat as soon as possible after brown rice drying. And the low temperature storage is also worth to be examined for prevention of oxidation. The effect of skin damage on the increase of fat oxidation was clarified. For the grain of skin damage, the increased of fatty acid vaule was remarkable after 70 days elapsed from occurrence of skin damage even in $15\;^{\circ}C$ condition. Therefore it is impossible to keep grain as brown rice form after brown rice drying. For the clean rice and excessively milled rice, the quality can be preserved even in high temperature of $30\;^{\circ}C$. Therefore the brown rice drying can b applied practically using the clean rice technique.
A microcomputer-based on-line monitoring and controlling system was built and applied to the dehycration operation. Drying conditions-drying temperatures and air velocities-were successfully controlled by the control deveices incorporated on/off realy and thyristor, and with the high language program. Drying variables-temperature in drier and weight loss of radish slice were accurately measured and acquisited. The computer-based drying system effectively saved the man power required to measure and record data during the drying period and also made possible to conduct the process undisturbed for long period. The drying rate curves of radish at various drying conditions were obtained from automatic data analyzing program. And also the computer programmed control made possible to investigate the effect of air velocity change during the drying period. The dynamic change of air velocity of from one to another level could be performed and affected markedly the drying rate at first stages of drying, but no significant effect were found in falling rate period.
This study reviewed the effect of the drying conditions on the production of biogenic amines and lipid oxidation in semi-dried Pacific saury Cololabis saira or Guamegi. The moisture content of the Guamegi ranged from $32.71{\pm}2.37$ to $45.9{\pm}2.60$ g/100 g. The respective ranges of the acid value (AV) and peroxide value (POV) were $1.39{\pm}0.40$ to $15.79{\pm}0.47$ mg KOH/g and $76.14{\pm}2.19$ to $282.84{\pm}2.34$ meq/kg on drying for 3 days. The AV and POV increased for up to 3 days of drying and the values differed according to the amount of sunlight and temperature. However, lipid oxidation was reduced in Guamegi manufactured using a cold-air drying method. The fatty acid composition and the biogenic amine content in Guamegi during drying did not differ significantly with the drying method or drying date. The main saturated, monoene and polyene fatty acids were palmitic acid, eicosenoic & erucic acids, and eicosapentaenoic & docosahexaenoic acids, respectively. At 16.67 to 71.89 mg/kg, the histamine content was higher than that of other biogenic amines and it increased significantly during drying. In conclusion, this study showed that the packaging and drying conditions of Guamegi products need to be improved to inhibit lipid oxidation and biogenic amine formation.
A study on the heat and mass transfer for the drying time in spray freezing drying process was experimentally presented in this paper. A spray freezing dryer for the production of an inhalable powder medicine is developed and an albumin solution as protein specimen is adopted. The freeze-drying for the albumin solution is tested in three different height of the particles piled up in a tray such as 2 mm, 5 mm, 7 mm, and the drying time is estimated as 10 h, 15 h, 22 h. From this results, the correlation is suggested and the drying time with various height of the particles piled up in a tray can be estimated. The assessment on the drying time is conducted thought a microbalance and the rate of water content is measured. The results based on temperature and weight are compared. The difference of the results happens due to the heat transfer from the lateral side of the vial. It is thought that the better estimation in drying time can be predicted by considering the heat transfer effect.
