This study was conducted to determine the interconversion of sugars in persimmon during the drying process and the textural properties of raw and dried persimmons using the changes of some chemical constituents, the analysis of sugar component, and the measurement of texture. Five varieties of persimmons were used in this experimment. As the drying proceeded, content of acetaldehyde and alcohol increased while soluble tannin content rapidly decreased. The rapid changes of these component obserbed in kyongsan Bansi and Hiratanenashi. Soluble sugars detected in raw persimmons were mainly glucose, fructose and sucrose. The content of sucrose was rapidly decreased in early stage of drying, while glucose and fructose were rapidly increased. The nearly same amount of glucose and fructose presented in the dried persimmon although there were some differences among varieties tested. The major component of white powder developed on the surface of dried persimmon was almost glucose. The texture profile analysis of the raw and dried persimmons was made with texturemeter and the quality of the dried persimmons was sensory evaluation method. Hiratanenashi and Sagoksi were determined as the suitable varieties in the processing of dried persimmons, but the varieties of Changdungyee and Namyang Susi were not suitable.
Persimmon boards of 30mm thick were dried, their temperatures were monitored during drying with 490 and 200watt microwave, and the drying efficacy and problems were investigated. The effects of pretreatments such as presteaming and prefreezing were also examined. The persimmon green lumbers of 80% moisture content were dried to 10% for only 50~60 and 110 minutes with 49watt and 200watt microwave, respectively. Severe internal checks were, however, found in all boards. The presteamed boards collapsed on their surfaces earlier than the controls. It may attribute to the high temperature inside boards during microwave drying and the decrease of their internal tensile strength caused by the presteaming treatment. To increase the internal tensile strength of the pretreated boards and to reduce their internal checks, they were air-dried at room temperature. The air-dried boards could be dried to 10% moisture content clearly and free from defects with 200watt microwave. The heating efficiency were also calculated with the maximum weight loss per minute of 490watt and 200watt.
Storage quality dried persimmons was evaluated by 5 scale scoring hedonic sensory analysis in various packaging methods and materials. Dried persimmons were deteriorated within 1 months of storage in polyethyene(PE, 0.08mm) and 1.5-2.5 months in nylon(PA/PE, 0.1mm) packages at room temperature, But those were kept good quality for 5 months of storage in PA/PE package and for 8 months in $CO_2$ or $N_2$ gas filled polyester/aluminum/casteded polypropylene(PET/Al./CPP, 0.1mm) package at $5^{\circ}C$. Dried persimmon had the best quality in water content of 37% and at humidity 75% and its shelf-life was noticialy prolonged by low temperature.
"Sujeonggwa" is a traditional korean beverage made from dried persimmon, cinnamon, and ginger and is often garnished with pine nuts. The purpose of this study was to investigate changes in the ingredients, recipes, and processing of "sujeonggwa" in Korean cookbooks published since 1400. The name sujeonggwa is derived from jeonggwa. In the early 1600s, sujeonggwa was used in ancestral rites and as a reception beverage, although we don't know its cooking method. According to the literature of the early 1800s, sujeonggwa was made from various fruit ingredients such as pear and yuzu. But since the late 1800s, it has been mostly made from dried persimmon based on ginger and cinnamon boiled with water. Garyeon-sujeonggwa is made with lotus leaf while japkwa-sujeonggwa is made with pear and yuzu. Japkwa-sujeonggwa is similar to hwachae in terms of ingredients and cooking method.
Retarding effects of the dietary fibers from persimmon peels (PTDF ; total dietary fibers, PIDF ; insoluble dietary fibers, PSDF ; soluble dietary fibers) and dried jujubes (JTDF ; total dietary fibers, JIDF ; insoluble dietary fibers, JSDF ; soluble dietary fibers) on glucose, bile acid and cadmium transport were evaluated by in vitro dialysis sack method. These effects were compared with those of commerical citrus pectin, CM-cellulose (CMC) and $\alpha$-cellulose. Yields of PTDF, PIDF and PSDF on wet weight basis were 14.04% , 11.61%, 1.76%, respectively, and those from dried jujubes were 14.80%, 9.98% and 2.80%, respectively. The amount of soluble fibers in JTDF was higher than PTDF. Soluble fibers had the retarding effects on glucose transport but insoluble fibers did not have. CM-cellulose showed the greatest retarding effect, which was followed by citrus pectin and JSDF. Among the soluble fibers, PSDF had the lowest retardig effect. Retarding effect of TDF was dependent upon the amount of SDF in TDF. Regarding bile acid dialysis , insoluble dietary fibers as well as soluble dietary fibers showed the retarding effects, among which JSDF had the greatest retarding effects, among which JSDF had the greatest retarding effect, followed by citrus pectin. Among the extracted fibers, dietary fibers from dried jujubes were more effective than these from persimmon peels, and SDF seemed to show higher retarding effects than IDF and TDF. On cadmium transport retardation , all dietary fibers except $\alpha$-cellulose had the retarding effects and PSDF showed the greatest effect which was followed by PIDF and CMC, The extracted fibers showed higher retarding effect on Cd transport than glucose and bile acid transport, and dietary fibers from persimmon peels showed higher retarding effects than those from dried jujubes.
This study was performed to determine chemical compositions of dried persimmons stored with plastic film at low temperature and the effect of film packaging on dried persimmons during storage. The moisture contents of dried persimmons were 30 to 36% and alcohol contents were 264 to 318 mg/100g and acetaldehyde contents were 25 to 40mg/100g. Total lipid contents of dried persimmon were 626 to 869mg/100g and oleic, palmitic, linolenic, and palmitoleic acid were major fatty acids in total lipids. Major amino acids were glutamic acid, arginine, cystine and aspartic acid. From the result of storage experiment, non-packed group was that hardness was high as decreased in moisture content. In case of film packed groups stored at 5$^{\circ}C$, self life was longer than non-packed and packed groups stored at room temperature. But, it need to develop available packing material and storage method.
In order to observe the contents of some essential amino acids in Korean foods, total and free tryptophan, and available lysine in fifty kinds of Korean foods were analyzed by the sfectrophotometry. The results obtained are summarized as follows : 1) The tryptophan contents per 100g of soybean, wet green laver and skim milk were over 250 mg, and the contents Per g nitrogen in ginger, dried persimmon and chestnut were over 150 mg. 2) The free tryptophan contents per 100 g of soybean, small red bean, dried persimmon, ginseng stem were over 100 mg, ana the contents per g nitrogen in dried persimmon was over 150 mg. 3) The available lysine contents Per 100g of soybean, wet green laver and skim milk, fish(auchovy), dried yeast, casein and silkworm pupa were over 1000 mg, and the contents per g nitrogen in potato, perilla(wild sesame), red pepper, sausage and skim milk were over 300mg. 4) The contents of tryptophan and available lysine in soybean, green laver and skim milk were higher than in other samples. 5) In general, the contents of tryptophan and available lysine were abundant in seaweeds.
This study did an empirical analysis using consumer survey data to determine whether Taiwanese consumers' preference for the Korean Wave affects their preference for Korean dried persimmons. There were 158 effective respondents used for the analysis, and the effects of the Korean Wave was estimated using ordered logit regression. The main results of this study were as follows. First, females more preferred Korean dried persimmons compared to men. Second, it was found that the housewife variable had a statistically significant positive effect at a significance level of 1% indicating that the degree of preference for Korean dried persimmons was higher compared to other occupations. Third, when the main place for purchasing dried persimmons was a department store or a large discount store, the analysis result showed a positive effect at a significance level of 1%. Finally, the Korean wave effect was found to have a statistically significant positive influence at a 1% significance level. In particular, it is worth noting that as the Taiwanese consumers' preference for the Korean Wave increased, the preference for Korean dried persimmons increased, which could be useful information for companies wishing to export Korean dried persimmon products to Taiwan. As a promotional plan for revitalizing Korean dried persimmons in Taiwan, conducting promotional events in conjunction with the Korean Wave, such as K-pop contests, and promoting persimmons that reflect Korean traditional culture should be considered.
This study aimed to investigate quality characteristics of hot-air dried persimmon during the drying period in 'Bansi' and 'Godongsi'. These cultivars were classified into four grades: 2L, L, M, and S based on the fruit weight. Weight loss, firmness, soluble solid content (SSC), and moisture contents were measured during the hot-air drying period. The weight loss significantly increased during the drying period (p<0.05), while there was no difference between cultivars. In the initial drying period, the firmness decreased due to softening during the ripening stage and increased significantly due to hardening during the water loss stage. Regardless of the cultivars, the SSC increased from 19.6% in the initial period to 55.3% at 12 days after drying. Moisture content statistically decreased in both cultivars over the whole drying period. It took 4 days and 8~10 days to produce semi-dried persimmon (45~55% moisture content) and dried persimmon (25~35% moisture content) in both cultivars. These results could be effectively used as basic data for producing high-quality semi-dried and dried persimmons using the hot-air drying method in 'Bansi' and 'Godongsi'.

This experiment was carried out the quality of astringent and dried persimmon according to various cultivars and harvesting time. There were need for proper selecting cultivar of astringent persimmon and knowing proper mature degree of persimmon in order to enhance the quality of dried persimmons. Immature persimmons showed lower moisture content, color value and higher hardness than riped and over-riped persimmons. The total quality of riped and over-riped fruit were superior than un-riped fruit.
