The purpose of this study was to determine the content attributes and sensory characteristics of ice cream flavored with lotus leaf and seeds (Nelumbo nucifera Gaertner). Analysis of freeze dried lotus leaf powder produced the following technical results: Freeze dried lotus leaf powder contained moisture 12.2, crude protein 5.9, crude fat 1.2, crude ash 7.0, crude fiber 13.4g/100mg; raw lotus seed powder contained moisture 65.0, crude protein 8.2, crude fat 0.3, crude ash 1.0, crude fiber 10.8g/100mg; freeze dried lotus seed powder contained moisture 14.0, crude protein 17.1, crude fat 1.9, crude ash 4.0, crude fiber 2.8g/100mg. Lotus seed was processed by 4 methods: freeze dried, roasted, freeze dried peeled inner layer, cooked cut peeled inner layer. Analysis of the color value produced the following technical results: freeze dried lotus leaf powder were L(lightness) 14.5, a(redness) 4.4, b(yellowness) 24.0; freeze dried lotus seed powder L 57.3, a 14.4, b 12.0; roasted lotus seed powder L 52.7, a 22.5, b 11.9; freeze dried lotus seed peeled inner layer L 60.0, a 1.4, b 12.3. Proportional lotus ingredients used for ice cream were 1%, 3%, 5%, 7%, 10% for lotus leaves and 1%, 3%, 5% for lotus seeds. The maximum over run ratio for lotus leaf ice cream was 45.3~56.9% at 20~25 minutes operating time. Over run was significantly decreased by increasing the contents of lotus leaf powder. A maximum over run ratio for lotus seed ice cream was 46.1~54.3% at 20~25 operating time. Over run was not significantly different based on content of lotus leaf versus lotus seed. Sensory evaluation of lotus leaf ice cream produced the following results: the highest score was for color of 4.42 and the lowest score was for sweetness of 3.30. The total mean score significantly decreased by increasing the content of lotus leaf powder. Sensory evaluation of lotus seed ice cream produced the following results: the highest score was for cooked cut peeled inner layer type and the lowest was for freeze dried type 3.86. The sensory scores were not significantly different based on the content of lotus seed. Texture was evaluated highest with a rating of 4.21 and the taste was evaluated lowest with a rating of 3.68 For whole evaluation. This study concluded that lotus leaf ice cream demonstrates relative strength in terms of color and taste, and a relative weakness in terms of over run and sweetness. Suitable content of lotus leaf ranged from 1~5%. The lotus seed processed by the cooked cut peeled inner layer method received a higher rating than dried powder for lotus seed ice cream.
Purpose - Unstable vegetable prices have been one of the major concerns in Korean agricultural and food marketing system. The Korean government has implemented a number of policy instruments, including government purchasing programs in order to alleviate fluctuations in vegetable prices. The economic impact of policy instruments has been assessed based on the average monthly price change rate before and after the implementation of the policy. However, this approach failed to provide a net impact of policy measures on price stabilization in the vegetable markets, as policy impacts could not be successfully distinguished from other effects on price changes in the vegetable market. The purpose of this study is to evaluate the net impact of the government purchasing program on the price volatility of dried red pepper which is considered one of the major vegetables in Korea. Research design, data, and methodology - This study develops a monthly dynamic partial equilibrium model of Korean dried red pepper market. Behavioral equations in the model were estimated by OLS and synthetic method based on the annual and monthly time series data from 1993 to 2015. The model is first simulated to yield actual dried red pepper market conditions in 2015 as a baseline and then compared it to the scenario assuming that there were no government purchases of dried red pepper in 2015. Results - According to the ex-post scenario analysis using the developed model, without the government procurements in 2015, the average monthly price change rate and the value of coefficient of variation of dried red pepper in 2015 would be respectably 7.9 percent and 0.10. It is relatively higher than the actual average monthly price change rate and the value of coefficient of variation of dried red pepper in 2015 which were respectively 1.7 percent and 0.06. Conclusions - The ex-post simulation results in this study shows that if there were no government purchases of dried red pepper in 2015, the dried red pepper market would have had much higher volatile price movements. The results of this study would provide useful information for future price stabilization policy of vegetable markets in Korea.

In recent years, there has been a growing need for measuring consumer demand in overseas markets in order to increase the sales of Korean dried persimmons. The country of origin of products is associated with consumer ethnocentrism and has become one of the important factors for explaining consumer demand in overseas markets. The purpose of this study was to analyze the Taiwanese consumers' preferences and consumption behaviors concerning dried persimmon based on ethnocentrism. Results found no significant differences in the consumer awareness of imported dried persimmons according to the level of ethnocentrism. The perception and preference of Korean dried persimmons were statistically significant in terms of satisfaction, taste, color, safety, packaging, and hardness by level of ethnocentrism. The factors affecting Taiwanese consumer's preference of Korean dried persimmon were found to be the satisfaction of Korean dried persimmon. Age was the most influential factor in the purchase experience of Korean dried persimmon. This implies that it would be necessary to increase consumer awareness of Korean dried persimmons by targeting the segmented market and promoting marketing strategy in the Taiwan market for securing sales channels and generating profit.
Ensiled or oven-dried green tea by-products (GTB) were evaluated in goats for their nutritive potential as protein feedstuffs based on in vitro and in vivo digestibility. To elucidate the effects of tea tannin on in vitro digestibility, polyethylene glycol (PEG) was used as a tannin binding agent. Both ensiled and dried GTB contained 31.9 to 32.6% of crude protein (CP) on a dry matter (DM) basis. Phenolics and tannins in soybean meal and alfalfa hay were low or not detected, but they were high in both ensiled and dried GTB (7.3-10.1% DM as total extractable tannins). In vitro protein digestibility in the rumen ranked: soybean meal>alfalfa hay cube>ensiled GTB = dried GTB. The protein digestibility post-ruminally of these feedstuffs showed a similar trend to that in the rumen, but the digestibility of ensiled GTB was significantly higher than that of dried GTB. Addition of PEG improved the in vitro protein digestibility of both kinds of GTB in the rumen and post-ruminally, indicating that tannins suppressed the potential protein digestibility of GTB. The increased protein digestibility by PEG addition was not significantly different between ensiled and dried GTB in the rumen, but the percentage increment of ensiled GTB was higher than dried GTB post-ruminally. In the in vivo digestibility trial, ensiled and dried GTB were offered to goats as partial substitutes for soybean meal and alfalfa hay cubes. Offering both GTB to goats as 5-10% on a DM basis did not affect nutrient digestibility, ruminal pH, volatile fatty acids, and ammonia concentration. However, the eating time of the GTB-incorporated diet was longer than that of the basal diet. It took 1.4 and 1.6 times longer than the control diet, to eat the diet completely when GTB silage was offered at 5 and 10% levels, respectively, of the total diet. These results show that ensiled and dried GTB are useful as partial substitutes for soybean meal and alfalfa hay cubes for goats with respect to nutritive value. Because of lessened palatability, it is recommended that GTB be incorporated into the diet at 5% on a DM basis.
There experiment were carried out to analyze for pesticide residues in 4 kinds of dried fruits collected in northern area of Seoul in 2007~2009. Total of 213 samples were analyzed. According to the results, 20 kinds of residual pesticides were detected. Residual pesticides were detected in 66 samples (31.0%) and 8 samples (3.8%) exceeded maximum residue limits (MRL). Cypermethrin, fenvalerate, endosulfan, chlorpyrifos, bifenthrin were detected frequently. The Pesticide types which were detected in dried furits were revealed in order of pyrethroid > organophosphate > organochloride > dicarboximide. Detection rates of dried fruits were dried chinese matrimony vein (53.0%), dried jujube (34.9%), dried rubi fructus (7.6%) and dried maximowiczia chinensis (4.6%). Based on these results, we investigated the risk assessment from amount of residual pesticide in dried jujube. Range of %ADI were 0.0001~0.0081%, but the value has not effected on human health.
In this study, the quality characteristics of spray dried powders from unripe fig extract were investigated. The protease activities of unripe fig and peeled unripe fig extract were 0.11 unit/mL and 0.28 unit/mL, respectively. The spray dried powder of unripe fig extracts was analzed using different maltodextrin ratios (F-MD 5, 5% maltodextrin; F-MD 10, 10% maltodextrin; and F-MD 20, 20% maltodextrin). The spray-dried powder showed the highest protease activity with F-MD 10 (0.84 unit/g). The moisture content and L value of the spray-dried powder were higher than those of the freeze-dried powder. The particle diameter of the freeze-dried powder ($209.67{\mu}m$) was higher than that of the spray-dried powders ($22.18{\sim}37.33{\mu}m$). The water absorption index ranged from 0.18 to 0.40, while the water solubility index ranged from 94.40% to 98.80%. In the in vitro digestion study, spray-dried powders of the unripe fig showed a protease survival range of 16.47%~24.80%. In conclusion, it is considered appropriate to use the spray-dried powder (F-MD 10) of unripe fig as a meat tenderizer for processing food.

The objective of this study was to determine the processing conditions for salt dried rockfish Sebastes schlegeli by sun drying and cold-air drying, as measured by alcohol dehydrogenase (ADH) and acetaldehyde dehydrogenase (ALDH) activity. We processed salt dried rockfish samples. The salinity of rockfish samples was within 1% following salting with 25% salt brine for 3 h. The moisture content of salt dried rockfish was found to reduce linearly from 70.12 to 39.5 g/100 g over the same time interval. The water activities of salt dried rockfish by sun and cold-air drying were 0.94 and 0.87, respectively, after three days of drying. Acid values (AV) were 10.71 and 5.96 mg KOH/g, respectively, after the three day drying period. The ADH activity in a water extract from salt dried rockfish following sun and cold-air drying for 24 h was 228.5% and 226.1% at 13.3 mg/mL, respectively, and was higher than that when drying lasted for 48 and 72 h. The ALDH activity was not affected but both ADH and ALDH activity tended to decrease as the drying time increased from 24 to 72 h. The conditions of processing for the best quality of salt dried rockfish were determined to be drying with a cold-air system for 24 h. These results indicated that water extracts from salt dried rockfish have valuable biological attributes owing to the metabolizing of alcohol and can provide useful information for the design of drying systems for salt dried rockfish.

Prunus serrulata var. serrulata f. spontanea (E. H. Wilson) C. S. Chang was treated with dried swine excrement at various concentration levels, and their growth reactions and the contents of total kjeldahl nitrogen and total phosphoric acid were analyzed. The result is as follows; 1. When the plants were treated with 0.25% of dried swine excrement, the seed germination rate of Prunus serrulata var. serrulata f. spontanea was higher than that of the control. However, it showed a tendency to decrease when the treatment concentration got higher than 0.25%. 2. The growth rate of species was highest when they were treated with 0.25% of dried swine excrement. It tended to decrease with higher treatment concentration than 0.25%. Significant difference was clear between the control and the experimental plants of Prunus serrulata var. serrulata f. spontanea. 3. The contents of nitrogen and phosphoric acid in Prunus serrulata var. serrulata f. spontanea also got higher as the concentration of dried swine excrement increased. However, the content of total kjeldahl nitrogen was highest in the leaves, and followed by the roots and stems. In contrast, the content of total phosphoric acid were highest in the roots, and followed by the leaves and stems. Therefore, stems had the lowest contents of both nitrogen and phosphoric acid. 4. The contents of total kjeldahl nitrogen and total phosphoric acid in the soil were measured before and after the growth experiment of Prunus serrulata var. serrulata f. spontanea treated with dried swine excrement. The contents of nitrogen and phosphoric acid significantly decreased after the experiment. In conclusion, the contents of total kjeldahl nitrogen and total phosphoric acid accumulated in the plants increased as the concentration level of dried swine excrement got higher. The seed germination and plant growth rates were best at 0.25% treatment of dried swine excrement. The treatment of dried swine excrement may bring high effects on increasing the plant growth rate but could damage the plants with higher concentration than they need. Different optimal concentration levels of dried swine excrement for different plants should be found before it is used as fertilizer.

This study was conducted to evaluate the quality of the cold air dried anchovies (CA), and compared with those of sun-dried anchovies (SA) and hot air dried anchovies (HA). Peroxide value increased, while ratio of percentage of (20:5+22:6) to that of 16:0 decreased during boiling and drying. The extents of change were CA>SA>HA in the order. In the case of CA, lightness was higher, but redness, yellowness and degree of browning was lower than in SA and HA. From the results of lipid properties, color test and sensory evaluation on color and rancidity odor, lipid deterioration was the lowest in CA of all boiled dried anchovy. Favorite properties such as a hot-water soluble nitrogen content and sensory evaluation on color and appearance of CA was superior to that of SA and HA. The nutritional properties (total amino acid contents, mineral contents and fatty acid compositions) of CA was similar to that of SA, but was superior to that of HA. Consequently, CA was recognized as a boiled dried anchovy with the most quality.
Ultra-drying [<5.0% seed moisture content (SMC)] storage technique is a cost-effective storage method for oily seeds. To decide proper ultra-drying condition for soybean seeds, drying rate was compared three silica gel to seed ratios, two seed sizes with varietal difference, two kinds of container, and three seed amounts per container under :t 23$\pm$1$^{\circ}C$. When the relative humidity (RH) was reduced at the rate of less than 0.1 % a day, silica gel was replaced with dry one by 47 days. Higher silica gel to seed ratios (3:1 and 2:1) dried faster than lower ratio (1:1) until 28 days, but not after 43 days of drying. Also, large seeded variety was dried faster than small seeded variety. Kinds of container and seed amounts per container didn't show differences in drying of soybean seeds. After completion of ultra-drying, percentage germination by standard germination test (SGT) was not different among silica gel to seed ratios, kinds of container, and seed amounts per container, except among seed sizes (varieties). Before SGT, soybean seeds were premoistened using saturated ${CaCl}_2$ for 48 hours and ${NH}_4$Cl for 24 hours in desiccators. To compare germinability between ordinary-dried seeds and ultra-dried seeds, the seeds of seven soybean varieties, which were varying in size from 8.1 to 34.9 g per 100 seeds, were dried using same amount of silica gel under 23$\pm$1$^{\circ}C$. After completion of 76 days of drying, SMCs were reduced to 3.13-3.45% from 7.86-8.82%. SMC after completion of drying was not correlated with 100-seed weight (r=0.556). Before germination tests, soybean seeds were premoistened using saturated salt solutions. Percentage germination was higher with ultra-dried seeds than ordinary-dried seeds in SGT and higher with ordinary-dried seeds than ultra-dried seeds in AAT at the beginning of storage and after 6 months storage, but general trend of percentage germination was not observed among varieties classified by 100-seed weight. From these results, we concluded that further studies are needed to improve ultra-drying storage method for soybean seeds.
