보릿가루 첨가 복합분의 반죽 물성 및 빵의 품질 특성 (Dough Properties and Quality Characteristics of Breads added with Barley Flour)

  • 보리를 제빵에 이용하기 위하여 새쌀보리와 새찰보리가루를 첨가한 복합분의 반죽물성과 제빵 특성을 조사하였다. 호화특성의 최고점도는 새쌀보리 복합분에서는 증가하였지만 새찰보리 복합분의 경우는 감소하였다. 반죽의 안정도는 10% 복합분에서는 대조구와 동일하였으나 30% 복합분에서는 대조구에 비해 크게 감소하였다. Extensograph 특성 조사 결과 대조구에 비하여 복합분의 신장도는 감소한 반면 저항도는 증가하였다. 빵의 무게와 부피는 보릿가루 첨가량이 증가할수록 무게는 증가하고 부피는 감소하였다. 새쌀보리 첨가구보다 새찰보리 첨가구, 무발아보리 첨가구보다 발아보리 첨가구의 비용적이 더 컸다. 빵 속살의 L값은 10%, 20% 첨가구는 대조구와 차이가 없었다. 조직감 특성은 새쌀보리의 경우 10% 첨가구는 경도의 증가를 제외하고는 대조구와 차이가 없었고, 새찰보리의 경우 10% 첨가구는 모든 항목에서, 20% 무발아새찰보리 첨가구는 응집성을 제외한 탄력성, 점착성, 파쇄성 및 경도에서 대조구와 유의적 차이를 보이지 않았다. 관능평가 결과 10% 첨가구는 대조구와 유의적 차이가 없었으며, 20% 첨가구도 제빵품질에 큰 영향을 주지 않고 첨가할 수 있는 수준이라 판단 되었다. 반죽의 물성과 빵의 품질 특성 조사 결과 메성보리인 새쌀보리는 발아시킴으로써 제빵적성이 좋아졌으나 찰성보리인 새찰보리는 발아시킴으로써 제빵적성이 감소되었다.

$\beta-Glucan$ 첨가 Pound Cake의 이화학적$\cdot$관능적 특성 (Physicochemical Characteristics of Pound Cake Added with $\beta-Glucan$)

  • This study was conducted to evaluate the physicochemical characteristics of pound cake made of substituted flour with different amount of $\beta-glucan$ i.e. 3, 6 and $9\%$ respectively. $\beta-glucan$ is a functional food material produced from Agrobacterium sup. R259 KCTC 10197BP. The specific gravity and pH of dough were found to be increased according to $\beta-glucan$ content Rheological property such as adhesiveness of dough has no difference between control and $\beta-glucan$ added groups. The pH of baked pound cake was not significantly different between control and $\beta-glucan$ groups. The volume of baked pound cake wag not significantly different between control and the ones with up to $6\%$ $\beta-glucan$, Lightness (L), redness (a) and yellowness (b) value of Hunter color system of cake crumb were not significantly different among teated groups, except a value of crust in $9\%$ $\beta-glucan$ group. the moisture content of cake increased according to $\beta-glucan$ content. Hardness by texture analyser was decreased with increasing $\beta-glucan$ content although cohesiveness wag not changed in β$\beta-glucan$ groups, compared with the control. Sensory evaluation results showed that the mean scores of over·all acceptability in 3 and $6\%$ $\beta-glucan$ were higher than that of control. Based on these results, the addition of $\beta-glucan$ to pound cake up to $6\%$ was considered to be desirable especially in terms of texture.

분쇄방법을 달리한 통곡 찰수수가루를 이용한 수수빵의 제조 및 품질 개선 (A Study on the Quality Improvement of Bread Using the Whole Waxy Sorghum Flours Prepared with Different Milling Methods)

  • This study was conducted in order to investigate the properties of bread making and quality improvement when wheat flour is replaced with whole waxy sorghum flour. Sorghum flour, which was prepared with two types of milling methods of pin mill and ultra fine pulverization, was used at different levels ranging from 10, 20 and 30%, respectively. The pasting properties of peak viscosity, setback viscosity and pasting temperature of the composite flour containing pin-milled sorghum flour were higher than those of ultra fine pulverized sorghum flour. The volumes of sorghum bread were lower than that of wheat bread; moreover, they gradually decreased with increasing amounts of sorghum flour, which has inferior dough properties and therefore collapses in the oven. The use of vital gluten (12% based on sorghum flour weight) and emulsifier (SSL; sodium stearoyl lactylate) increased the extensibility and resistance to the extension of the dough, thereby improving its rheological properties. Thus, the oven spring of bread containing sorghum was improved, demonstrating as loaf volume increase up to 15%. However, in the case of breads containing 30% sorghum flour, the loaf volumes were still unacceptably low. Therefore, the formula and the bread making process were further modified as follows: An increase of vital gluten ($12%{\rightarrow}18%$) and shortening ($3%{\rightarrow}6%$), a decrease of mixing time and dough fermentation temperature, and the addition of sorghum flour after gluten development during mixing. The above modifications resulted in the improvement of sorghum bread quality. Therefore, we suggest that pin-milled sorghum flour is more appropriate than ultra fine pulverized sorghum flour for making bread.

현미와 다시마분말의 첨가수준을 달리한 증편의 품질특성 (Quality Characteristics of Jeungpyun Prepared with Brown Rice and Sea Tangle Powder)

  • Purpose: This study investigated the quality characteristics of Jeungpyun prepared with brown rice and sea tangle powder. Methods: The pH, volume, and spreadability of the dough and moisture content, color, texture and sensory evaluation of the Jeungpyun were performed. Results: The results showed that the pH of the dough decreased in all sample groups with the lapse of fermentation time, and ultimately revealed a pH ranging from 4.55-4.65. The spreadability of the dough significantly decreased as the substitute amount of the brown rice flour increased; the sample group with 1% sea tangle powder showed a significantly larger spreadability than the sample group with 2% sea tangle powder (p<0.05). The moisture content in the Jeungpyun showed a significantly lower result as the substitute amount of brown rice flour increased (p<0.05). Lightness (L) was reduced as the substitute amount of brown rice flour increased, and redness (a) and yellowness (b) also appeared to increase. As a result of measuring the texture, the 50% sample group with a high substitute rate of brown rice flour was observed to have high characteristics of hardness, gumminess and chewiness, and was low in cohesiveness. The result of the acceptance test showed that the sample group that substituted 25% brown rice flour and added 1% sea tangle powder was evaluated to have a significantly higher acceptance than the sample group that added 2% sea tangle powder in terms of color, texture and overall acceptance. Conclusion: The result of the acceptance test showed that the sample group that substituted 25% of brown rice flour and added 1% of sea tangle powder showed higher tendency in all acceptance attributes than the sample group that did not substitute the brown rice flour to show the possibility of developing the Jeungpyun with brown rice.

흑미 첨가가 바게트의 품질 특성에 미치는 영향 (Effect of Pigmented Rice on the Quality Characteristics of Baguette)

  • 흑미를 첨가한 바게트의 품질특성을 조사하기 위해서 흑미가루를 1~5% 수준으로 첨가한 바게트의 제빵특성과 관능적 품질을 평가하였다. 바게트 반죽의 pH는 첨가비율이 증가함에 따라 낮아지는 경향이었으며, 아밀로그램상의 최고점도는 흑미가루 첨가군에 비해 대조구에서 높았다. 바게트의 부피는 흑미가루 1%와 3% 첨가군이 대조군보다 컸다. 그러나 5%첨가군에서는 감소되었다. 흑미의 첨가량이 높아질수록 $L^{*}$ 값과 $b^{*}$ 값은 감소하는 반면 $a^{*}$ 값은 증가하였다. 빵의 견고성(hardness)은 흑미가루 첨가량이 높을수록 감소하여 빵이 다소 부드러웠으며, 탄력성(springiness)은 흑미 첨가량이 높을수록 증가하였고 응집성(cohesiveness)은 감소하였다. 점착성(gumminess)과 파쇄성(brittleness)은 흑미 첨가량이 높을수록 증가하였다. 관능검사에 의한 종합적인 기호도 검사 결과, 바게트 제조시 흑미가루를 3% 수준으로 첨가하였을 때에는 거의 모든 항목에서 대조구 보다 좋은 기호도를 나타내었다. 따라서 흑미가루를 3%수준으로 첨가하여 바게트를 제조하면 부피의 경우도 대조구보다 양호하며 조직감에 있어서도 바게트 특유의 성질을 가지며 색상뿐만 아니라 종합적인 기호도 역시 대조구보다 양호한 것으로 생각된다.

유청분말 첨가가 제면특성에 미치는 영향 (Properties of Wet Noodle Changed by the Addition of Whey Powder)

  • 치즈제조공정의 부산물로 생성되는 유청을 분말화한 후 생면 제조용 원료 밀가루 중량에 대하여 2.5%(T-I), 5.0%(T-II), 7.5%(T-III), 10%(T-IV)를 첨가하여 제조한 생면제조의 특성을 조사하였다. 아밀로그래프, 파리노그래프, 익스텐시그래프를 사용한 리올로지특성의 결과 유청분말 첨가량이 증가함에 따라 호화가 지연되었으며, 수분흡수율과 반죽형성기간은 감소하였고, 반죽의 안정도는 처리구 T-IV에서 가장 길게 나타났다. 또한 최대저항도는 유청분말 첨가량이 증가됨에 따라 증가하였고, 신장도는 감소함을 보였다. 조리면의 성질도 첨가량이 증가함에 따라 무게와 부피는 상대적으로 감소함을 보였고, 탁도는 증가하였으며, 조리면에 대한 TPA(texture profile analysis)결과 유청분말 처리구는 첨가량이 증가함에 따라 경도와 씸힘성은 각각 감소함을 보였다. 평점법을 적용한 관능평가(p<0.05)의 결과 조직감에서는 대조구와 처리구 T-I간에 유의적인 차이가 나타나지 않았으나, 처리구 T-II, T-III, T-IV와 대조구 간에는 유의적인 차이를 보였다. 전체적인 기호도는 처리구 T-II, T-III에서 상대적으로 평점이 높았으며, 대조구와 유의적인 차이를 나타내었다. 표면색의 측정결과 L값과 a값은 감소하였고, b값은 증가하였다.

표고버섯가루 분말 첨가 식빵의 일반성분 및 품질 특성 (Proximate Composition and Quality Characteristics of White Bread with Lentinus edodes Powder)

  • The quality properties of bread with Lentinula edodes powder were investigated to find the most adequate ratio of the Lentinula edodes powder. The protein and crude fat were increased in proportion to the added quantity of Lentinula edodes powder. The amount of ash was found the most in the bread with 1% Lentinula edodes powder. It was confirmed that the volume of bread with Lentinula edodes powder decreased as the amount of the Lentinula edodes powder increased. The brightness was the highest in the control and was inversely proportional to the added amount of Lentinula edodes powder. The yellowness and redness of the dough were proportional to the added amount of Lentinula edodes powder. Total amino acids and free amino acids were found. The dough with 3% Lentinula edodes powder contained the highest amounts of both, followed by 2%, and 1%. When evaluating the length of storage, the bread's springiness and cohesiveness decreased. Regarding the taste, preference was given to the bread with 2% Lentinula edodes powder, which had the lowest value of bad odors and odd texture in the sensory test.

자건(煮乾) 톳 분말 첨가가 제빵의 물성 및 관능품질에 미치는 영향 (Effect of Steam-Dried Hizikia fusiformis Powder on the Rheological and Sensory Profile of Bread)

  • To establish the optimum formular for processing bread with steam-dried Hizikia fusiformis flour(SHF), it was incorporated into wheat flour by the ratio of 0, 1, 3, 5 and 7% based on a flour weight. Evaluation was performed on the rheological and sensory profile of bread, such as specific loaf volume, water holding capacity(WHC) and height, appearance and Hunter's color value, mechanical texture properties, and sensory value. Increase in the addition of SHF led to the tendency that the expansive force of dough fermentation reduced, and an increase in the textural properties of bread. And cohesiveness, gumminess, and chewiness indicated the tendency of a little reduction as influenced by adding more dried Hizikia fusiformis powder. As for sensory properties and flavor components of the white bread, in case of color and flavor, more than 3% of increase in the addition of the dried Hizikia fusiformis powder led to a drop in preference, and more addition led to a fall in taste and softness. Overall, it was found that adding less than 3% of dried Hizikia fusiformis powder is proper for dough in breadmaking.

Effect of a Bacterial Laccase on the Quality and Micro-Structure of Whole Wheat Bread

  • The gluten protein content in whole-wheat flour is low, which affects the elasticity and viscosity of the dough. Enzymatic modification of the protein may result in a network that mimics gluten, which plays an important role in the processing of whole-wheat foods. In this study, the effects of Halomonas alkaliantartica laccase (LacHa) on the quality parameters of whole-wheat bread were investigated. The optimum dosage of LacHa was 4 U/100 g of whole-wheat flour. At this dosage, whole-wheat bread exhibited the best specific volume and optimum texture parameters. Laccase also extended the storage duration of whole-wheat bread. We analyzed the micro-structure of the dough to determine its gluten-free protein extractable rate and free sulfhydryl group content, and verify that LacHa mediates cross-linking of gluten-free proteins. The results demonstrated that the cross-linking of gluten-free protein by LacHa improves the texture of whole-wheat bread. As a flour improver, LacHa has great developmental and application potential in baked-food production.

매생이를 첨가한 식빵의 품질 특성 (Quality Characteristics of White Pan Bread with Mesangi(Capsosiphon fulvecense))

  • 밀가루의 1%, 2%, 3%, 4%를 매생이로 대체한 식빵을 제조하여 최적의 비율을 알아보고, 대체 비율에 따라 식빵의 발효율, 비용적, 영상 분석, 색도와 관능검사를 통해 품질 특성을 평가하였다. 매생이의 첨가는 반죽의 발효율을 감소시켜 4%를 첨가한 M4의 발효율이 가장 낮았지만, 대조구에 비해 M1과 M2의 발효율이 높았으며, M1의 발효율이 가장 좋은 것으로 나타났다. 비용적은 매생이를 첨가한 식빵이 대조구보다 컸는데, M1의 비용적이 가장 컸다. 영상분석의 결과에서 기공의 조밀도는 M2가 987.07로 가장 높았고, 기공의 찌그러짐은 M4가 1.35로 가장 컸다. 껍질의 두께는 매생이를 가장 많이 첨가한 M4가 0.05 cm로 가장 얇았으며, 껍질과 속질의 색상 대비도 높게 나타났다. 색도는 매생이를 첨가한 식빵의 명도가 낮았으며, 관능검사 결과는 매생이를 첨가한 식빵의 속질색과 껍질색이 대조구에 비해 진했다. 매생이를 가장 적게 첨가한 M1은 가장 부드럽고 촉촉하였으며, 맛과 전체적인 기호도에서도 가장 높았다. 그러므로 기호도와 비용면에서 모두 매생이를 1% 첨가하는 것이 가장 적합한 것으로 생각된다.
