초경날식 절삭형 완패스정미기의 개발 (Development of One-Pass Rice Whitener with Cutting Blades of Hard Metal)

  • A one-pass rice whitener with hard metal blades was developed to solve the problems of the existing one-pass rice whitener. The developed one-pass rice whitener was tested and improved through various milling experiments. It showed high performance such as the capacity of 3.5 t/h, the energy consumption of $1.0 kWh/100kg$, milled rice recovery of 91.6%, broken rice rate of 2.2%, the crack rate of 1.9% at the 750 rpm of the roller shaft, compared with those other domestic and foreign one-pass rice whiteners. Especially, it could whiten broun rice of high moisture (16~l7%) with water sprayed at low internal pressure of less than $0.2 kg/cm^2$ and low temperature due to the characteristics of the cutting part composed of 24 hard metal blades. The developed one-pass rice whitener was industrilized and distributed to some rice processing complexs in one fourth price compared with that of imported one-pass rice whiteners.

수입쌀과 국산쌀(추청벼)로 제조한 죽의 품질 특성 비교 (A comparative study on quality characteristics of Jook(traditional Korean rice gruel) made of imported and domestic rices(Chuchung byeo))

  • 본 연구는 수입쌀과 국산 쌀의 품질특성 비교 연구의 일환으로 수입쌀 2종류(1998년도 산 중국산 및 태국산)와 국산 쌀 2종류(1997년도 산 및 1998년도 산 추청)로 죽을 제조하여 밥알의 팽윤도, 중량비, 텍스쳐, 죽의 낙하속도, 퍼짐성, 색도, 환원당, 관능특성 등을 조사하였다. 죽에서 분리한 밥알의 팽윤도와 죽에 대한 밥알의 중량비는 태국산 쌀로 만든 죽이 유의적으로 높은 값을 나타내어(p<0.05) 태국산 쌀이 가열했을 때 수분을 많이 흡수하고 많이 팽윤하는 것을 나타내었으며, 나머지 세 가지 쌀로 만든 죽들은 그 값들이 유의적으로 낮았다. 텍스쳐에 있어서는 태국산 쌀로 만든 죽의 밥알이 가장 경도가 높고 부착성이 낮아 바람직하지 않은 특성을 나타내었으며 응집성, 씹힘성, 검성 등의 값이 높아 씹어 삼키기까지 오래 씹어 주어야 할 것으로 예상되었다. 죽에서 분리한 액체의 낙하속도와 죽의 퍼짐성에서는 태국산 쌀로 만든 죽의 낙하속도가 4.33s(6$0^{\circ}C$)와 4.97s(4$0^{\circ}C$)로 가장 빨랐고, 퍼짐성이 7.37cm로 가장 컸으며 그 다음은 1997년도 산 국산 쌀, 중국산 쌀과 1998년도 산 국산 쌀의 순서(p<0.05)로 태국산 쌀로 만든 죽이 끈기가 낮은 특성을 나타내었다. 색도는 태국산 쌀로 만든 죽이 66.3으로 가장 높은 명도를 나타내었으나(p<0.05), 황색도는 수입쌀로 만든 죽이 유의적으로 값이 높아 국산 쌀에 비해서 수입쌀로 만든 죽의 색이 누렇게 보임을 알 수 있었다. 죽의 환원당 생성량은 1998년도산 국산 쌀> 중국산 쌀> 1997년도 산 국산쌀> 태국산 쌀로 만든 죽의 순으로 동일 취사조건에서 1998년도 산 국산 쌀이 가장 호화도가 높고, 태국산 쌀의 호화도가 낮음을 알 수 있었다(p<0.05). 관능평가 결과는 1997년도 산 국산 쌀로 만든 죽이 전체적인 바람직성이 가장 높았고(p<0.05), 그 다음은 1998년도 산 국산 쌀과 중국산 쌀로 만든 죽으로 두 쌀 사이에는 유의차가 없었다. 태국산 쌀로 만든 죽은 이취가 강하고, 점조도가 떨어져 입안에서의 느낌이 매끄럽지 못하여 전체적인 바람직성이 가장 떨어지는 것으로 나타났다.

장기 저장된 쌀의 품질 특성 (Quality Characteristics of Long-term Stored Rice)

  • 가공용으로 공급되는 국내산 정부미와 수입산 정부미의 품질 특성을 조사하고 빵이나 국수의 원료로 사용하기 위하여 제빵 및 제면성을 시험하였다. 두 가지 정부미 모두 가루의 백색도가 낮고 황색도가 증가되어 저장된 쌀의 색의 특성이 관찰되었고 아밀로오스 함량이 13% 이하로 국수나 빵을 만드는데 적합한 고 아밀로오스(22% 이상) 쌀로 사용하기에는 부적합하였다. 낟알의 경도는 수입산 정부미가 가장 단단하였지만 제분된 가루의 손상 전분 함량과 수분 흡수율은 시료 간에 유의적인 차이가 없었다. 수입산 정부미의 호화 점도가 높고 국내산 정부미의 호화 점도가 상대적으로 낮았으나 두 가지 모두 저장되지 않은 가공용 쌀 Goamibyeo에 비하여 높은 점도를 나타내어 일반적인 저장 쌀의 호화 특성이 관찰되었다. 그러나 저장기간에 따라서 감소된다고 알려진 breakdown viscosity는 정부미가 오히려 높은데 이는 저장에 따른 효과보다 정부미 자체 전분의 특성에 기인한 것으로 예측된다. 두 가지 정부미 모두 빵의 발효와 굽기과정까지는 우수한 제빵성이 관찰되었지만 굽기 후 식히는 과정에서 빵의 모양이 유지되지 못하고 가라앉아서 100% 쌀 빵을 만들기에 부적합하였다. 100% 쌀로 만든 국수의 조리 손실률은 정부미가 Goamibyeo보다 적었지만 국수의 탄성이 적고 신장성이 커서 무른 특성이 나타났다. 따라서 가공용으로 공급되는 국내산 및 수입산 정부미를 빵이나 국수 등의 원료로 이용하려면 밀가루 또는 제면 제빵성이 우수한 곡류를 혼합하여 반죽의 물성을 개량한 후 사용하는 것이 유리할 것으로 판단된다.

Assessment of Antioxidative Capacity in Relation to Seed Trails of Rice Varieties

  • In order to assess antioxidant capacity in relation to seed traits of rice (Oryza sativa L.), ninety-six varieties were examined for antioxidative activity of brown rice grain using superoxide dismutase (SOD), 1,1-diphenyl-2-picrylhydrazyl (DPPH), and thiobarbituric acid (TBA) assays. Overall, average total activities measured by the three methods were of very wide range between 64% and 13%. Significant differences were noted depending on the variety and evaluation method. Rice varieties with foreign origin, middle maturity, colored hulls, and colorless awn exhibited statistically significant higher total activity. As for the measurements, total activity was significantly correlated with SOD (r=0.29***), DPPH (r=0.80***) and TBA (r=0.76***). Between the three activities, SOD was not positively correlated with DPPH (r=0.15*), while TBA was significantly correlated with DPPH value (r=0.51***). DPPH (55.20%) and TBA (50.36%) were significantly higher in foreign rice, while SOD activity (44.29%) was significantly higher in domestic rice. However, an average total activity was significantly higher in foreign rice (47.31%) than in domestic rice (35.92%). SOD, DPPH and TBA activities of middle maturity in maturity time were the highest total activity (44.96%) and significantly differed from the other two groups. Total activity was significantly higher in rice with a colorless awn (42.18%) than with a colored awn (35.87%).

Satisfaction with the Quality of Agricultural Machinery and the Propensity for Replacement Purchases

  • Purpose: This study was conducted to serve as a basis for strengthening policy support and R&D to improve the domestic and international competitiveness of domestic agricultural machinery. Levels of satisfaction among farmers and service engineers were analyzed regarding the current quality of agricultural machinery and the primary consumers' propensity for replacement purchases. Methods: A survey was carried out targeting farmers in over 150 townships and 300 villages in South Korea who collectively used 711 tractors, 286 rice transplanters, and 221 combine harvesters. Furthermore, agricultural machinery service engineers from 20 different after-services were surveyed regarding the quality of main components in domestic agricultural machinery versus those in imported agricultural machinery. Results: The farmers' overall quality satisfaction ratings for tractors, rice transplanters, and combine harvesters ranged from 57.1% to 62.6% in consideration of operating performance, failure rate, and durability. Compared with imports, satisfaction ratings for domestic agricultural machinery were 19.1%p to 38.1%p lower for quality. Regarding engines, transmissions, hydraulics, planters, reapers, threshers, and electrical components, only 5.3% to 25.0% of service engineers indicated that domestic agricultural machinery was higher in quality compared with imports. By contrast, 33.3% to 78.9% of those surveyed indicated that domestic components were lower in quality compared with imports. Intent to purchase replacement agricultural machinery at the end of their respective products' lifecycles was indicated that they planned to purchase imported tractors, rice transplanters, and combine harvesters comprised 25.2%, 46.9%, and 43.9%, respectively. This clearly shows that a very high percentage of farmers were satisfied, particularly for transplanters and combine harvesters. Conclusions: The level of desire for purchasing imported agricultural machinery was very high among those who expressed intent to purchase replacement machinery. Therefore, strong policy support and R&D for domestic agricultural machinery is critical for improving competitiveness on the domestic and foreign markets.

  • The part I was for developing regression models to predict the moisture content, protein content and viscosity of brown and milled rice using Near Infrared(NIR) Reflectance analyzer. The purpose of this study(part II) is to measure fundamental data required for the prediction of rice quality, and to develop regression models to predict the protein content of brown and milled rice, brown rice yield from undried paddy powder by using Near Infrared(NIR) Reflectance analyzer. The results of this study were summarized as follows : The predicted values of protein contents obtained from the undried paddy powder were well correlated to the measured values from brown and milled rice. The predicted yields of brown rice from undried paddy powder were not well correlated to the lab measured values from dried paddy. Continuous study in wavelength selection and of constituent relationship is necessary for practical application.

  • When the quality and cooking characteristics of wash free rice was compared with those of control milled rice during storage, smaller quality change during storage and more easy to cook was found in wash free rice than control. The wash free rice equipment manufactured in foreign country was carefully investigated and commercial wash free rice equipment with 1metric ton per hour capacity was made considering the characteristics of domestic rice cultivar. Modification of the equipment was made through the repeated field test, and the technique on wash free rice equipment was transferred to the RICETECH. These systems were manufactured in RICETECH will be exported to China next year.

한국산 쌀의 품질측정에 있어서 근적외분광분석법의 응용 (Application of Near Infrared Reflectance Spectroscopy in Quality Evaluation of Domestic Rice)

  • 국내산 맵쌀 30종으로 쌀의 미질(米質)과 관련이 큰 수분, 단백질, 지방 및 아밀로오스 함량을 근적의 분광분석법에 의해 동시에 신속, 정확하게 비파괴 측청할 수 있는지의 가능성을 조사하였다. 기존의 습식분석법에 의한 수분, 단백질, 지방 및 아밀로오스 함량치 데이타와 근적외영역의 흡광도 데이터 사이에 중희귀분석을 행한 결과, 백미외 수분, 단백질, 지방, 아밀로오스 함량의 측청오차(SEP)는 각각 0.104, 0.196, 0398 및 1.427%이었고, 현미의 경우는 0.120, 1226, 0.153 및 1.923%이었다. 이상의 결과로서 근적외분광분석법을 응용함으로서 쌀의 수분과 단백질은 비파괴적으로 동시에 신속, 정확하게 측정 가능함을 알 수 있었으나, 지방과 아밀로오스의 측청정확도는 낮은편이었다.
