Dairy Dietary Calcium and Osteoporosis - An Overview

  • The osteoporosis is a disease characterized by lower bone mineral content, deterioration of bone tissue and a reduction in the protein and mineral matrix of the bone. The bone becomes more porous leading to increased bone fragility and risk of fracture, particularly of the hip, spine and wrist. Osteoporosis can result in disfigurement, lowered self·esteem, reduction or loss of mobility, and decreased independence. Adequate calcium intake through milk and milk products in childhood and adolescence is a decisive marker for obtaining a maximum bone mass (peak adult bone mass) and f3r the prevention of osteoporosis. Calcium is one of the most critical nutrients associated with the osteoporosis. Dietary calcium is of great significance for healthy skeletal growth and development. The bone mineral content and bone mineral density of young adults is directly related to the calcium intake through milk and dairy products. Milk and milk products are the important sources of calcium as the richness and bioavailability of this nutrient is very high as compared to other food products. If enough calcium is not supplemented through diet, calcium from the bone will be depleted to maintain the blood plasma calcium level. The article focuses on the various issues related to osteoporosis manifestation and the role of dietary calcium especially calcium derived from dairy products.

A Study on Nutritional Status of Iron in the Rural Elderly (일부 지역 농촌 노인의 철분 영양상태에 관한 연구)

  • The purpose of this study was to examine nutritional status of iron in 27 rural elderly subjects. The daily intake, urinary excretion and serum level of iron were determined by 24-hr food collection method, and 24-hr urine and serum collection for 3 days. The results were summarized as follows. 1. The mean age, height, weight, and blood pressure were 67.7 years, 163.2cm, 55.9kg, and 121.1/80. 0mmHg in men and 69.9 years, 146.5cm, 47.6kg, and 108.9/71.1mmHg in women, respectively 2. The daily intake of energy, protein, vitamin A, vitamin B$_1$, vitamin B$_2$, niacin, vitamin C, and iron were lower than Korean recommended dietary allowances. 3. The daily iron intake was 7.82mg. The proportion of heme iron and nonheme iron to the total iron intake were 8.05% and 91.94%, respectively Major iron sources of the rural elderly were cooked rice, Ko Chu Jang, beef blood, anchovy, soybean paste, and leafy radish. 4. The hemoglobin, hematocrit, serum iron, and total iron binding capacity were 14.3g/㎗, 42.9%, 79.4 $\mu\textrm{g}$/㎗, and 268.4 $\mu\textrm{g}$/㎗ in men and 12.9g/㎗, 38.8%,92.4 $\mu\textrm{g}$/㎗, and 277.9$\mu\textrm{g}$/㎗ in women, respectively. 5. There was a significant positive correlation between dietary intake and urinary excretion of iron.

  • Dietary acidifiers appear to be a possible alternative to feed antibiotics in order to improve performance of weaning pigs. It is generally known that dietary acidifiers lower gastric pH, resulting in increased activity of proteolytic enzymes, improved protein digestibility and inhibiting the proliferation of pathogenic bacteria in GI tract. It is also hypothesized that acidifiers could be related to reduction of gastric emptying rate, energy source in intestine, chelation of minerals, stimulation of digestive enzymes and intermediate metabolism. However, the exact mode of action still remains questionable. Organic acidifiers have been widely used for weaning pigs' diets for decades and most common organic acidifiers contain fumaric, citric, formic and/or lactic acid. Many researchers have observed that dietary acidifier supplementation improved growth performance and health status in weaning pigs. Recently inorganic acidifiers as well as organic acidifiers have drawn much attention due to improving performance of weaning pigs with a low cost. Several researchers introduced the use of salt form of acidifiers because of convenient application and better effects than pure state acids. However, considerable variations in results of acidifier supplementation have been reported in response of weaning pigs. The inconsistent responses to dietary acidifiers could be explained by feed palatability, sources and composition of diet, supplementation level of acidifier and age of animals.

Dietary Optimum Phosphorus Level of Juvenile Korean Rockfish (Sebastes schlegeli)

  • A 10-week feeding experiment was conducted to determine the phosphorus requirement of juvenile Korean rockfish (Sebastes schlegeli). Three replicate groups of fish initially averaging 4.2g were fed the semipurified experimental diets containing graded levels of $NaH_2PO_4\;\cdot\;2H_2O$ to provide from $0.1\%$ to $1.32\%$ total phosphorus level in a flow-through seawater system. Korean rockfish muscle and casein were used as the protein sources of the basal diet. Weight gain, feed efficiency and protein retention of fish fed the $0.35\%$ phosphorus were higher than those of fish fed the $0.1\%$ phosphorus, although no significant improvements $(P>0.01)$ were observed above the level. Determined phosphorus requirement using the broken line model was found to be $0.3\%$ for weight gain. Moisture, protein and lipid contents of whole body and muscle were not affected by dietary phosphorus levels $(P>0.01)$. Lipid contents of liver in fish fed the $0.1\%$ phosphorus were lower than those in fish fed the $0.35\%$ and $1.32\%$ phosphorus $(P<0.01)$. Dietary phosphorus increased ash and phosphorus contents of the whole body, while those of bone were not affected $(P>0.01)$. The data obtained in this study indicate that a $0.3\%$ dietaryphosphorus level could be recommended for the optimum growth and efficient nutrient utilization of juvenile Korean rockfish.

Effects of Protein and Protein Hydrolysate on Nitrogen Metabolism in Rats with Cysteamine-induced Duodenal Ulcer (Cysteamine에 의해 유도된 십이지장 궤양 흰쥐의 체내질소대사에 대한 단백질과 단백질 가수분해물의 섭취효과)

  • This study aimed to verify the nutritional and curative effects of protein hydrolysate in rats with cysteamine-induced duodenal uncer. Duodenal ulcer rat model was established by intraperitoneal injections of cysteamine. Sprague-Dawley, female rats weighing approximately 200g were intraperitoneally injected twice cysteamine(13mg/100g BW) at intervals of 3h per day. This procedure was repeated 3$\times$at intervals of 3d. Animals fed on 10% casein diet for infection periods. After last injection, 4 kinds of diets(10% casein, 20% casein, 10% casein hydrolysate, 20% casein hydrolysate) were given. Gastric montility, trypsin activity in gastrointestinal content, retention rate of nitrogen, plasma total protein, albumin, amino-N, urinary urea nitrogen, creatinine and hydroxyproline were analyzed for nutritional effects of dietary nitrogen levels(10%, 20%) and sources(casein, casein hydrolysate). In duodenal ulcer rat model, there was no differences between 20% casein diet and 20% casein hydrolysate in the view of severeness of ulcer, gastric emptying rate, serum total protein, serum albumin, plasma $\alpha$-amino-N, UUN, creatinine excretion, GFR, nitrogen retention. On the other hand, rats on 10% casein hydrolysate diet group had more curative effect of the ulcer, higher plasma albumin concentration and nitrogen retention than 10% casein diet group. The casein hydrolysate diet group was lower trypsin activity in small intestinal content than the casein diet group, at both nitrogen levels(10%, 20%). The results suggest that protein hydrolysate be applied in diet therapy for the patients with gastrointestinal ulcer.

A Nurition Survey of the Latter Half of Pregnancy in Nam-Hae Do (남해도 지역이 임신후반기 임부의 영양실태 조사)

  • The purpose of this survey was to investigate the nutrient and food intake and haematology of the latter half of pregnant women in Nam Hae Do. The nutrient intake study was performed by Twenty-four hour dietary recall method. As Haematology, RBC, Hb. and Hct were measured. 1. The results of nutritional survey were, 1) The mean nutrient intakes that were below the RDA were Protein, Calorie, Calcium and Iron. 2) The mean nutrient intakes that were above the RDA were Vitamin A, Thiamin, Riboflavin, Ascorbic acid. 3) Most of calorie and other nutrients were obtained from vegetable food sources. 4) Animal protein intake was 33% of total protein intake and most of this value was obtained from fish and shell fishes. 2. The extent of malnutrition was explained in terms of the amount of calorie, protein, calcium and iron. The results were, The predicted percentage of deficiency, in case of Calorie, 53.3% of total subjects. in case of Protein, 52% of total subjects. in case of Calcium, 78.7% of total subjects. in case of Iron, 54.7% of total subjects. 3. The results of Haematology were, 1) The mean level of RBC, Hb and Hct were 3.76$\times$106cm/㎣, 10.47gm%, and 32.56% 2) There were significant correlation between calorie intake and Hct level, protein intake and RBC level, Iron intake and MCHC level.

Effects of Nutrition Education Using Food Exchange System: Changes in Elementary Students' Nutrition Knowledge, Dietary Attitude and Nutrients Intake (식품교환법을 활용한 영양교육의 효과: 초등학생의 영양지식, 식생활 태도, 식이섭취 변화)

  • The purpose of this study was to investigate the effects of nutrition education using Food Exchange System on elementary students' nutrition knowledge, dietary attitude and nutrients intake. Nutrition education lessons (40 min /lesson, 4 times), '5 major nutrients and functions', '6 food groups and sources of 6 food groups', 'good choice of snacks and eating out' as class lesson, 'daily needed energy and food exchange units' as individual lesson, were provided to 70 elementary students (4th grade 33 students, 5th grade 37 students) in Jeonbuk Province. We assessed the changes in nutrition knowledge, dietary attitude, food habit using a questionnaire and nutrient intake using 24 hr recall method by nutrition education. In nutrition knowledge, there were significant increases in scores of 'functions of carbohydrate', 'functions of protein', 'functions of lipid', 'foods of carbohydrate', and 'foods of lipid'. In dietary attitude, there were significant increases in scores of 'taking a meal with joy', 'taking a meal at ease', 'taking a meal with sufficient protein intake' and 'taking a meal without spicy foods' by nutrition education. There were significant changes in the type of breakfast and in the frequency of snacks. After education, in type of breakfast, it showed higher number of students ate rice oriented meal than they did before education. and in frequency of snacks, it showed lower number of students ate snacks 'over 3 times' than they did before education. In Carbohydrate : Protein : Fat (CPF) ratio (%), it was significantly changed from 55.8 : 17.7 : 26.6 to 63.6 : 15.3 : 21.1. In evaluation of nutrient intake by Dietary Reference Intakes for Koreans (KDRIs), vitamin A, thiamin, niacin, vitamin $B_6$, calcium, phosphate, iron and zinc showed positive changes in distribution of number of children by intake level. That is, there were significant improvements in intakes of vitamin A, thiamin, niacin, vitamin $B_6$, calcium, phosphate, iron and zinc. These results showed that nutrition education using Food Exchange System for elementary students improved nutrition knowledge, dietary attitude and nutrients intake. It suggest that nutrition education using Food Exchange System may improve dietary behaviors and reduce an incidence of obesity in elementary students.

Persistence of the Enzymatic Activity of Dietary Acid Phosphatases from the Lumen of the Midgut of the Lady Beetle, Harmonia axyridis (무당벌레(Harmonia axyridis)의 중장내 먹이 Acid Phosphatase(AP)의 활성변화)

  • Acid phosphatase(AP) of he aphid, Megoura crassicauda and the major component of the lady beetle's artificial diet, fresh chicken liver, was adapted as a model protein to study the digestion of diet proteins in the midgut of Harmonia axyridis. The lady beetle did not secrete its own AP into the lumen of the midgut. The aphid and the live chicken liver had AP which was still alive in enzymatic activity from the extract of the lumen of the midgut of the lady beetle. The digestive ability of the lady beetle on proteins turned out to be different depending on food sources. In the lumen of the midgut of the lady beetle, though most of AP of live chicken liver lost its activity withtin 12 hours, that of M. cassicauda kept strong enzymatic activity up to 24 hours.

  • The effects of dietary fiber on true digestibility of amino acids by growing pigs were studied, using semi-purified diets formulated from alfalfa meal, cassava leaf meal, rubber seed meal and leucacna meal at 20% level. A protein-free diet including 5% cellulose was formulated for correcting the endogenous amino acid loss. Across all the diets, arginine was the most digestible while the least at ileal level was threonine; methionine and/or histidine at fecal level respectively. The true digestibility value of amino acids at ileal level were higher than at fecal level except control diet (cellulose). The true digestibility values at ileal level were similar for all diets but differed at fecal level in different magnitude. These results indicate that undigestible compound in individual feedstuff might confound. True digestibility should be studied together for accurate diet formulation as apparent digestibility decreased when their amino acid concentration in the diet was reduced.

Physicochemical Characteristics and Antioxidative Effects of Korean Figs(Ficus carica L.) (국내산 무화과의 이화학적 특성 및 항산화 활성)

  • In order to obtain the basic data fer the processing adaptability of Korean figs(Ficus carica L.), physicochemical analyses were carried out with Korean common type figs in the different ripening stages. Moisture contents decreased, but the contents of protein, fat carbohydrate and soluble solids increased according to the ripening of fruits. K was detected as the most abundant one of all the minerals and Ca, Mg, Na, Fe, Mn, Zn and Cu were the next in order. The mineral contents decreased slightly with ripening. Especially, Ca, Mg, U, Fe and Zn were higher in the unripened H stage figs. The antioxidative activity was assayed with water and methanol extracts from ripened figs by the DPPH radical scavenging ability. The antioxidative activities of Korean figs were relatively high and increased in a dose dependent manner. The methanol extract showed the higher antioxidative activity than the water one. Therefore, the methanol was the better solvent than water for the antioxidative compounds. These results suggested that Korean figs are relatively the good sources of minerals, especially the Ca and the antioxidative compounds.
