  • This study was performed to investigate lead(Pb) detoxification with different dietary protein levels and detoxifying periods in Pb poisoned rats. Forty nine male rats of Sprague-Dawley strain weighing 114$\pm$4g were used and they were fed 1% Pb-15% casein diet ad libitum for 2 weeks. After sacrifying 7 animals as control group, remaining forty two rats were blocked into 6 groups according to body weight. Three groups were fed each detoxifying diet(5%, 15% or 40% casein diet without Pb) for 1 week and the other 3 groups were fed same diets for 3 weeks. The results obtained were summerized as follows ; 1) Liver and kidney weight, bone weight, and bone length were increased with increasing dietary protein level and detoxifying period. 2) Hematocrit values were recovered to normal level during detoxifiying periods but hemoglobin contents in detoxifying diet groups showed no significant difference from those in control group. 3)Pb contents in blood were decreased with increasing dietary protein level, and Pb contents in liver were significantly decreased in high protein diet groups. Pb contents in kidney were significantly decreased during detoxifying period compared to control group, but no significant difference was shown within the detoxifying diet groups. Pb contents in femur were significantly decreased after 3 weeks of detoxifying period but no difference was shown with different dietary protein level. 4) Urinary Pb excretions were significantly increased with increasing dietary protein level. Fecal Pb excretions were remarkably decreased after 3 weeks of detoxifying period, but no difference was showen in fecal Pb excretions with different dietary protein level. Above results suggest that high protein diet improves Pb detoxification by increasing urinary Pb excretion.

  • This research was designed to study the effect of Korean dietary lipids on the lipid metabolism and the immune function in young rats . The three different lipid sources were compared lard, perilla oil and fish oil. Three different levels of lipid in the diet, 2%, 15% and 30%,on the weight basis, were included. After four weeks feeding, the rats were sacrified and blood sample was collected to analyze for the total lipid, TG and cholesterol contents in serum. The HDL fraction in serum was seperated by the electrophoresis of lipoproteins. The immune responses were measured by the blastogenesis of spleen lymphocyte stimulated by PHA and in serum were measured. The following results were obtained. Lower body weight gain was shown in 30% lipid diet fed group on the isocaloric basis. In concerning the different dietary lipid sources, there were significantly lower boyd weight gain in fish oil than in perilla seed oil and lard group in 30% lipid groups. Deposition of body fat expressed by epididymal fat pad in serum were significantly different among perilla seed oil, lard and fish oil groups. Perilla seed oil group showed lowest level of total lipid and TG in serum regardless of dietary fat level. The feeding perilla seed oil to rats was resulted in lower serum cholesterol levels than lard in all three levels of fats tested. The HDL fraction was elevated in perilla seed oil group at the high fat level. The stimulating responses of lymphycotes by PHA did not seem to be influenced by different dietary fat sources. However, conA mitogenic responses was significantly increased in perilla seed oil group. The lower level of perilla seed oil (2%, 15%) showed slightly higher responses of ConA, indicating that lower level of perilla seed oil might have stimulatory response on the immune response. The number of antibody forming cells of spleen against SRBC was increased in 30% fat level for all the three kind of fats. However, no effect has been found in plaque forming cell response by the differences in dietary fat sources. There were no significant differences in serum IgG and IgA levels in all dietary groups.

  • This study was performed to investigate the stress level, dietary attitudes and nutrient intakes of Food and Nutrition major female students at a university located in Changwon. A total of 122 female students taking the course 'Meal Management' during 2001-2004 participated in this study. The general characteristics, stress level and dietary attitudes of the subjects were surveyed using a self-administered questionnaire. The nutrient intake data collected from 3-day food-record method were analyzed by the Computer Aided Nutritional Analysis Program. The symptoms by stress showed that 'eye strain', 'physically exhausted or get tired' and 'pains on neck or shoulders' were high in 59.4-81.8%. The mean scores of stress in 2001-2004 were 8.5-12.0 out of 30 points and the subjects in 2002 and 2004 scored significantly higher on stress level than the subjects in 2001 did (p < 0.00. The mean scores of dietary attitudes were 58.7-66.6 out of 100 points, most of the subjects are belonged to the 'fair' group in terms of dietary habits level. The stress level had a negative correlation with dietary habits (p < 0.001). About 1/3 of the subjects, the intake of calcium, vitamin $B_2$, vitamin A and iron were less than 75% of Korean RDA, whereas more than half of the subject, protein, vitamin C and phosphorus intake were more than 125% of RDA, and intake ratio of Ca and P showed an unbalance of 1 : 2. The animal protein intake was higher than the plant protein, whereas the animal vitamin A and iron intake were lower than vegetable food source. In 2001-2004, the index of nutritional quality (INQ) of vitamin $B_2$ and niacin was 0.56-0.98, and in 2003, the INQs of vitamin $B_2$ was 0.56, and that of niacin was 0.67, which was extremely low when compared to that of the other nutrients. Therefore, nutritional education is necessary if female university students are to practice optimal nutrition, including well-balanced diets of high nutritional quality.

  • To study the correlation between body composition values and practice of the Standard Guideline for Korean Dietary Life, a nationwide cross-sectional survey was conducted with 378 female college students living in four Korean cities in December 2005. Among the student subjects, 98 were analyzed for body fat mass, percent body fat, waist-hip ratio(WHR), body mass index(BMI) and obesity degree using Inbody 3.0(Biospace Co, Seoul, Korea). Percent body fat was at a high level of 54.1 %, WHR was at a high level of 58.2% and BMI was at a high level of 41.8%. However, both weight and body fat were below normal at 79.5% and 77.6%, respectively. Percent body fat, WHR, and BMI were slightly negatively correlated with vegetable consumption, but slightly positively correlated with beer intake. WHR > 0.8 was significantly negatively correlated with exercise. Standard Guideline for Korean Dietary Life was practiced to and above normal level by 64.6% of the female college students. However, female college students who are within the normal range of body composition value should notice that obesity will relate to abdominal or visceral fat on their body.

  • A $3{\times}2$ factorial experiment was conducted to investigate the proper dietary protein and lipid levels for the growth of sub-adult flounder Paralichthys olivaceus reared during the summer season. Six experimental diets were formulated to contain three levels of protein (45%, 50% and 55%) and two levels of lipid (9% and 14%). Duplicate groups of fish (initial body weight of 298 g) were hand-fed to apparent satiation during the summer season ($21.8{\pm}1.7^{\circ}C$) for 60 days. Survival of each group was over 83% and there was not significant difference among all groups. Weight gain of fish fed the 45% protein diet with 14% lipid was not significantly different from that of fish fed the 50% and 55% protein diets with 9% and 14% lipids, but weight gain of fish fed the 45% protein diet with 9% lipid was significantly lower than that of fish fed the 55% protein diets with 14% lipid. Feed efficiency tended to increase with increasing dietary lipid level at each protein levels, although no significant differences were observed at 50% and 55% protein levels. Protein efficiency ratio, daily feed intake, condition factor and hepatosomatic index were not significantly affected by dietary protein and lipid levels. Crude lipid content of the liver tended to increase with increasing dietary lipid level at the same protein levels, but the opposite appearance was found for moisture content. The contents of moisture, crude protein and crude lipid of the dorsal muscle were not significantly affected by dietary protein and lipid levels. Based on data obtained form this study, inclusion of dietary protein at level of 45% appears sufficient to support optimal growth, and an increase of dietary lipid level from 9% to 14% has beneficial effects on feed utilization of sub-adult flounder during the summer season.

  • Thirty female and six male rats aged fourty days were divided into two groups in order to feed them by pairfeeding for 50% dietary restriction in the pair group two weeks interval. Each group contains 15 female and three male rats matched each rat between two groups in consideration of body weight. Two female groups, one fed by 50% restricted diet and other Ad Libitum were divided into four groups each by the duration of dietary restriction during pregnancy: First ten days dietary restriction at 50% level, Last ten days dietary restriction at 50% level, Dietary restriction at 50% level for full period, And dietary unrestriction for full period Urinary total nitrogen and creatinine were determined. The birth weights of offsprings were decreased partial and full period dietary restriction of pregnant rats. There was no significant difference in the litter size of progeny due to the maternal diets. The growth was stunted in offsprings from the mothers fed restricted diet at 50% level for full period of pregnancy. No effect in the body weight gain of offsprings was observed in account of partial period of maternal dietary restriction. The urinary nitrogen of offsprings from eight different groups did not show any statistically significant difference.

  • In order to investigate the effects of dietary cellulose and protein levels on chick performance, four semi-purified diets were formulated so as to contain cellulose at levels of 5% (LC) and 20% (HC) in combination with 10% (LP) and 20% (HP) protein, and fed ad libitum to 1-week-old White Leghorn male chicks for 3 weeks. There were no significant differences in feed intake, body weight gain and feed efficiency between the LC-HP and HC-HP groups. All parameters were lower in the LP groups; the HC-LP group consumed very small amount of feed and lost body weight during the experiment. The retention rates of DM, ash, nitrogen and energy were higher in the HP than the LP groups. The triglyceride concentration of carcass was lower in the HC-LP group and that of liver was higher in the LC-LP group. The carcass total cholesterol level was higher in the HC-HP group. The relative weight of most digestive organs was higher in the HP group irrespective of the cellulose level. In conclusion, the chick performance was primarily influenced by dietary protein level, and when the chicks were fed inadequate levels of protein, the low cellulose level gave a better performance than the high cellulose level.

  • Male rats of 2 months-old(young), 6 months-old(adult) and 30 months-old(old)were fed 8 or 16 weeks to investigate the e(feats of dietary fat level on the lipid metabolism in the different stages of aging. The response of 30 month old rats to dietary fat level differed from either 2 or 6-months old rats. In 30-months old rats, dietary fat level had a little effect on weight gains, lipid content of serum as compared with other two age groups. Young rats showed higher body weight gain, F.S.R, and PER compared with aged rat. The younger and the more high fat fed the rats were, the more body weight gains, FER and PER showed. Weight of liver and kidney was increased in aged rats but ratio per unit weight of liver and kidney was not affected by age. Serum lipid content was higher in aged rat compared with the young and liver lipid content was higher in high fat diet fed rats. But TG of liver and serum was not changed with aging process. Intake, excretion and absorption of lipid was not changed by age of animals. but absorption was decreased as experimental period was increased.

  • This study was carried out to examine how dietary protein and calcium levels in rats fed fat-enriched diet affect the total lipid and cholesterol contents of blood and tissues. Male Sprauge-Dawley rats weighing approximately 200g were fed six purified diets which contained 18%(w/w) beef tallow, 1% (w/w) cholesterol, two source of protein, casein or isolated soy protein (ISP) and three levels of dietary calcium, 0.1%, 0.4% and 1.0%, first, for four weeks, and second, for eight weeks. The contents of the total lipid, cholesterol and triglyceride in blood, liver, heart and feces were determined. After four weeks feeding serum lipid and cholesterol concentrations significantly decreased in rats fed 1.0% (w/w) level calcium, regardless of dietrary protein sources. After eight weeks, these concentrations were significantly lower in the rats fed soy protein than in casein-fed rats. As dietary calcium level increased serum and tissue lipid and cholesterol contents were decreased and fecal lipid excretion increased. It is concluded that hypolipidemic and/or hypocholesterolemic effects of soy protein and calcium were partly due to decrease in lipid absorption.
