A Study on the Nutritional Knowledge, Food Habits, Food Preferences and Nutrient Intakes of Rural Housewives. (경상북도 안동군 농촌지역 주부들의 영양지식, 식습관, 식품기호도 및 영양소섭취실태에 관한 조사 연구)

  • This nutritional survey was conducted from January 20 to February 8, 1994, in order to investigate the nutritional knowledge, food habits, nutritional attitude, food preferences and nutrient intakes of housewives living in Andong district, rural area of Korea. The subjects of this survey were 181 rural housewives living in Andong area. The completely answered questionnaires were analyzed for nutritional knowledge, food habit, nutritional attitude, food preferences and nutrient intakes of rural housewives. The results obtained are summarized as follows: The subjects had a high level of perceived knowledge (79.9%), that is the knowledge that each subject believed she had, but the accuracy of the knowledge was only 66.6%. The average nutritional knowledge score was 7.93 out of possible 15 points, and food habit score was 5.08 out of 10 points. Most of the subjects belonged to "Fair" or "Poor" food habit group, which is considered to be relatively bad. With increasing age, the percentage of perceived knowledge, accuracy, and nutritional knowledge score were getting lower. Food habit score and nutritional attitude score were getting lower with increasing age, too. The correlation between nutritional knowledge score and food habit score was low(r=0.01). The correlation between nutritional attitude score and food habit was low, too(r=0.15). Food preferences for kimchi, cooked rice, potato, milk, beef, chicken, and carrot were high. Average calorie and protein intakes of the subjects were 1915.7㎉ and 77.0g respectively. The ratio of caloric nutrients intake was carbohydrate 65.9%, protein 14.9%, and fat 19.2%.

Dietary Behaviors and Status of Nutrient Intakes by the Obesity Levels of Housewives in Daegu (대구지역 주부들의 비만정도에 따른 식행동 특성과 영양섭취 실태 평가)

  • This study was intended to collect the baseline information on dietary behavior of adults to develop nutrition education program in the context of healthy weights at community level. Nutrient intakes of 128 housewives were assessed by 24 hour recall method. Also food habits, nutrition knowledge and attitude were investigated by self-administered questionnaires. Subjects were divided to under-weight, normal-weight, over-weight groups by body mass index (BMI). Most under-weight groups evaluated as their current body images were normal. $41\%$ of normal-weight groups judged as their current body images were obese. Energy and fat intakes of over-weight group were significantly higher than that of under-weight and normal weight groups (p<0.05). However, carbohydrate and protein intakes showed no significant differences among the three groups. It appeared that active attitude toward change in nutrition attitude of normal weight group was significantly higher than that of under-weight group (p<0.05). There were no significant differences of food habit score, nutrition knowledge, and obesity habit scores among the three groups. The frequency of eating-out showed significant difference among three groups (p<0.05). Food habit scores were positively related to health-concerned attitude (r=0.174), convenience-concerned attitude (r=0.229) and food enjoyed attitude (0.213) and negatively related to obesity habit score (r=-0.206). Also, positive correlation of body fat mass with frequency of eatingout (r=0.213), instant food (r=0.227) and amount of meal (r=0.187) existed (p<0.05). We concluded that nutrition education programs for housewives should include specific strategies to modify unsound food behaviors and inappropriate perception of body image for a healthy weight.

A Study on Dietary Attitudes of Preschool Children in Child Care Center (어린이집 아동들의 식생활 태도에 관한 연구)

  • This study aimed at examine dietary attitude, eating behavior and food preferences of children in child care center. The children involved in this study were 153 boys and 134 girls, aged 3 to 6 years old. The eating frequency of breakfast and the number of meal times a day were significant difference according to sex(P<0.01). Reason for skipping breakfast was ‘no appetite’(49.3%). It was found that 51.5% of the children belonged to ‘fair’ in food habit score, while children in ‘poor’ and in ‘excellent’ were 25.0% and 9.7% respectively. There was no significant difference in food habit score between boys and girls. Their preferred staple foods were ‘cooked rice’ and ‘Chajangmyon’, their preferred soup was ‘seaweed soup’. Also, their most preferred side dishes with animal foods were ‘fried chicken’ and ‘Bulgogi’. The preference of ‘hard boiled soybean curd’ and ‘pan fried soybean curd’ among the side dishes with vegetable foods were significant according to the obesity index(P<0.05). Children preferred side dishes with animal foods to those with vegetable foods. First considered item in meal preparation was child's favorite(58.1%). Mother's response to child's unbalanced diet was ‘trying to persuade the child’(56.6%). It was significant according to mother's occupation(P<0.01). The nutritional management program at child care center is required to enhance the nutritional status of children. Also the nutritional education for the children and their meal planners is required for better growth and health promotion of preschool children.

Dietary Attitudes, Dietary Behaviors, and Smartphone Usage-related Dietary Habits According to Risk Level of Smartphone Overdependence of Elementary School Students in the Siheung and Ansan Areas (경기 시흥안산지역 초등학교 고학년의 스마트폰 과의존 위험 수준에 따른 식태도, 식행동 및 스마트폰 사용관련 식습관)

  • This study was conducted to investigate the nutrition knowledge, dietary attitudes, dietary behaviors, smartphone usage-related dietary habits, and health-related lifestyles of higher grade students in elementary school according to risk level of smartphone overdependence. Subjects were 286 fifth and sixth grade students of elementary school in the Siheung and Ansan areas. Data were collected using self-administered questionnaires and analyzed using SPSS v. 20.0. Based on scores of S-scale (smartphone overdependence scale for adolescents), subjects who used smartphone were classified into an overdependence group (ODG, n=52) and a normal group (NG, n=234). The ODG showed a significantly longer usage time than NG on both weekdays and weekends (p<0.001). There were no significant differences in total scores of nutrition knowledge between the ODG and NG. Average total scores of dietary attitude and dietary behavior in the ODG were significantly lower than in the NG (p<0.001). There were higher risks of ODG for skipping meals (OR=8.3, 95% CI=4.027-17.099), changing eating speed (OR=4.4, 95% CI=2.209-8.822), and changing meal amount due to smartphone usage (OR=2.9 95% CI=1.233-6.623). Therefore, education programs are needed to ensure proper dietary behaviors and habits among smartphone overdependent elementary school students.

A Study on Dietary Attitude of Middle School Students in Kunsan City, Jeonbuk Province (전북 군산지역 중학생의 식생활 태도에 관한 연구)

  • The purpose of this study was to explore dietary attitude among middle school students by sex. The subjects were collected from 211 boy students and 198 girl students in the city of Kunsan, Jeonbuk province. The mean age of the subjects was 13.7 years old. The average score of food habit was 4.61 $\pm$ 1.92. The average score of food habit of boy students was higher than the score of girl students. The correlations between the score of food habit and father's education level. family income, and nutritional supplements were positive. The correlation between the scores of the nutrition knowledge and father's education level was also positive. On the other hand the mother's occupation did not have any influence on the scores of food habits and the scores of the nutrition knowledge. As a staple food, cooked rice was preferred on boy and girl students at breakfast(82.7%) and supper(94.3%). The preference of snacks was fruit and fruit juice. The reason of skipping breakfast was the lack of time and no appetite, and skipping lunch was due to no appetite. Lastly the main reason of skipping supper was playing computer on boys. on the other hand no appetite and weight control on girls. In order to improve the nutritional status of the middle school students, they must establish good food habits by eating three regular meals per day and balancing their diet. Also they should be notified that severe weight control is very harmful for health. This study indicate that nutrition education and correct information for body image. balanced diet. regularity of meals and food selection are required for middle school students at both school and home.

Effects of Nutrition Education on Overweight and Obese Children in Chonbuk Area -Focus on Food Habit, Eating Behaviors, Dietary Attitude, Nutrition Knowledge and Nutrients Intake- (전북지역 과체중 및 비만아동의 영양교육 효과 -식습관, 식행동, 식생활 태도, 영양지식과 영양소 섭취 상태를 중심으로-)

  • The purpose of this study was to investigate the effects of nutrition education focus on food habit, eating behaviors, dietary attitude, nutrition knowledge, and nutrients intake. The nutrition education was provided to 103 overweight and obese children in Chonbuk area. Nutrition education lessons were conducted 40 min/lesson, 12 times in year (6 times/semester). We assessed the change in knowledge using a questionnaire on food habit, eating behaviors, dietary attitude, nutrition knowledge and nutrients intake using 24 hr recall method. After the nutrition education, dietary habits were significantly improved. Especially, the answer of 'Don't eat when feel full' were significantly improved (boys (p<0.01), girls (p<0.05)). And the answer of 'Eat sugar meal frequently (chocolate, candy)' which is a dietary attitude question was significantly improved (girls (p<0.05)). There were positively changes in the dietary attitude and nutrition knowledge, but there were no significant differences after program. The results suggest that this nutrition education must be continue for positive food habit change in the long term.

A Study on the Nutrition Knowledge, Attitude on Dietary Life and Dietary Habits by Meal Manager of High School Students in Bucheon Area (부천 지역 고등학생의 식생활 관리자에 따른 영양 지식, 식생활 태도 및 식습관 연구)

  • This study aims to identify the nutrition knowledge, attitude on dietary life and eating habits of 281 high school students in Bucheon area and investigate difference and correlation among the factors: details of nutrition knowledge, attitude on dietary life, dietary habit, meal manager and the Body mass index(BMI). Data were analyzed by descriptive analysis, $\chi^2$-test, t-test, Pearson's correlation coefficients and ANOVA test using SPSS window program. The results show that parents were the most influential group in dietary habits and the group of friends were followed. The nutrition knowledge score of female students was higher than the score of male students. There was a significant difference between nutrition knowledge and attitude on dietary life by meal manager. Especially, nutrition knowledge showed the highest difference when they answered that the meal manager was a mother, and the subject 'eating regular meals' was significant when the meal manager was his/her mother. According to the result of the difference by meal manager, respondents preferred eating snacks the most when father was in charge of meal preparing. This group also preferred eating out than the other groups. Moreover, there was a significant correlation between nutrition knowledge and attitude on dietary life.

A Study on the Nutritional Knowledge, Nutritional Attitude, Eating Practice and Food Intake of Womans University Student (일부 여자대학교 학생들의 영양지식, 태도, 식행동 및 식품섭취상태와 그 관련요인에 관한 연구 - 1학년, 4학년 중심으로 -)

  • This study was conducted to analyze the relations among nutritional knowledge, nutrional attitude, eating practice and total nutritional diagnosis and also to find the influencing factors of them. The survey was done during the period from April 1990 to June 1990 and the target population were Ewha Womans University students (freshmen and senior) of whom 1,354 peoples were surveyed. The summarized results are as follows ; 1. For the teaming environment, the percentage of completion on nutritional knowledge course was 28.6% and among them the department of foods and nutrition had the highest score(100.0%) and the next was dept. of medicine (53.4%). 2. To find the relation which the nutritional knowledge, nutritional attitude, eating practice and the total nutritional diagnosis influence on one another, the multiple correlation analysis was done. The attitude and the practice were highly correlated with total nutritional diagnosis, but the correlation between nutritional knowledge and total nutrional diagnosis was not significant. The correlation between the practice and nutritional knowledge which were positively and significantly correlated with attitude respectively was positive but not significant. 3. The difference which were analyzed by department, grade and completion on knowledge course on the nutritional knowledge, attitude, eating practice were significant (p<0.01) by ANOVA. 4. The significant variables on nutritional diagnosis are the eating practice points, the grade, the knowledge course, the breakfast and the attitude ($r^2=10.3%$) by multiple regression analysis. This study has the limitation that it did not consider the environmental factors of dietary life such as dietary culture, family environment, cultural habit. Therefore important points of these dietary studies are to extend to the practical nutritional education and dietary improvement for the national health not restricted to the local area or local population.

The Study on Dietary Habits , Dietary Behaviors and Nutrition Knowledge of Middle School Students in the Small City (소도시지역 중학생의 식습관 , 식생활 행동 및 영양지식)

  • This study was to obtain information about the dietary habits, the dietary attitudes, nutrition knowledge, and the food consumption of middle school students and to assess relationships between the dietary habits, the dietary attitudes, and nutrition knowledge of middle school students. Data were collected from 390 middle school students in Kimcheon. In the dietary habits, the regularity of breakfast showed the highest point and the snack consumption showed the lowest point. Female students were lower in the regularity of breakfast, and male students were higher in overeating of dinner and night. In the dietary attitudes and the perceived importance of nutrition, male students showed more favorable attitudes and perceived more importance of nutrition. In the nutrition knowledge, the responses to items 'Cola or cider doesn't have calories' and 'An egg contains lots of cholesterol' were the lowest point. Female students had higher knowledge than male students. In the food intake, grains, milk.yogurt.cheese, and fruits were always eaten or frequently eaten. While fast food, spicy and salty food, seaweeds, carbonated drinks, and yellow or green vegetables were eaten in lower frequency than other foods. Male students consumed more meat.ham.egg.fish, fried.stir-fried food, fast food, carbonated drinks, and spicy and salty food than female students. The correlation between dietary attitudes and dietary habits was statistically significant. The correlation between dietary attitudes and the perceived importance of nutrition was statistically significant. But the correlation between dietary attitudes and nutrition knowledge was statistically significant for female students, not significant for male students. Nutrition knowledge was related to the perceived importance of nutrition. It might be suggested that effective nutrition education program might be developed and implemented to ensure the good eating behaviors of middle school students.

Analysis of Correlation among Health Consciousness and Nutrition Knowledge, Dietary Habits and Nutrition Attitudes of Elementary and Middle School Teachers in Masan City (마산시 초.중 교사의 건강에 대한 관심도와 영양지식, 식생활 습관 및 영양 태도의 상호 관련성 분석)

  • This study investigated the correlations among the health consciousness, nutrition knowledge, dietary habits and nutrition attitudes of school teachers. The subjects of this study were 75 male and 152 female leachers in elementary and middle schools in Masan city. The survey was conducted by using a questionnaire. Even though the average body mass index (BMI) and the obesity index were normal in both male and female subjects, 33.3% of the male subjects were overweight/obese, while 18.5% of the female subjects were underweight, according to the obesity index. The food components of most concern during mealtime were (in order of importance) salt, MSG and cholesterol by male subjects, and salt, fat and MSG by female subjects. The subjects considered self-relaxation as the most important factor in maintaining optimal health status, followed by resting, bathing or use ova sauna, moderation in diet, exercise, decreasing alcohol intake, and no smoking. Newspapers/magazines and TV/radio were the primary sources of nutrition and health information of the subjects. As the degree of health consciousness increased, scores of the dietary habits and nutrition attitudes increased. Nutrition knowledge scores and nutrition altitudes scores increased with subjects'increased level of perception of the importance of acquiring nutrition knowledge and nutrition information. There was a highly significant correlation between the degree of health consciousness and dietary habit score (${\gamma}$ : 0.3, p<0.001). The degree of health consciousness was also significantly correlated (${\gamma}$=0.6, p<0.001) with nutrition attitudes scores. But the correlation between the degree of health consciousness and nutrition knowledge was not statistically significant. The degree of the perception of the importance of nutrition knowledge showed a positive correlation with nutrition attitude (${\gamma}$:0.4, p<0.001) and dietary habit (${\gamma}$:0.3, p<0.001). The degree of perception about the importance of nutrition knowledge and nutrition information was positively correlated with nutrition knowledge (${\gamma}$:0.2, p<0.001) and nutrition attitudes (${\gamma}$:0.3, p<0.001).
