The purpose of this study was to examine the effect of age, education and residence on food consumption and nutrient Intakes of older women living alone. In-home interviews were conducted using the health habits and food frequency questionnaire for one hundred twenty free living, healthy women who were between the ages of 60 and 87 years. Analysis of variance was used to assess the effect of three independent variables on food consumption and nutrient intakes. Food groups eaten at every meal were examined on 5-point scale, and consumption scores were compared with groups according to age and education. The meat consumption of younger and more highly educated respondents were significantly( p<0.05) higher. The oldest Participants had higher consumption frequencies for cereals and grain food categories. but lower consumption frequencies for vegetables and fruits ( p<0.05) The dietary assessment data showed that the energy and Protein intakes of subjects were 84.8% and 85.1% of RDAs, respectively. Vitamin A and calcium intakes showed a significant (p<0.05) difference among the three age groups More highly educated respondents had higher intakes of calcium and phosphorus than those respondents with less education.
The purpose of this study was to obtain baseline data on dietary management of women's constipation. We estimated the prevalence of self reported constipation, bowel habits and foods & nutrients intake. The subjects were 169 female college students (normal = 92, constipation group = 77) aged 19 to 23 years. We conducted anthropometric measurements, an evacuation habits survey, and a dietary intake assessment for three days by a 24 hour recall method. The prevalence of self reported constipation was 46% (n = 77). Results showed that bowel habits (the difficulty of evacuation, the duration of evacuation and the feeling after evacuation) were significantly different between the two groups. Over 65% of constipation group used laxatives for constipation relief. Frequency of stress and deep sleeping were related with constipation. In daily food consumption and nutrients intake, there was not a significant difference between the groups. However in relation to bowel habits which factors influence constipation, the study showed that the intake of water, potatoes, kimchi, and fruits correlated with evacuation facility. Further, there were no findings in the difference of foods consumption and nutrients intake between the two groups. But some life style changes and food intakes (potato and kimchi) may be useful to improve constipation symptoms in young women.
BACKGROUND/OBJECTIVES: The dietary intake of foods with fermentable oligosaccharides, disaccharides, monosaccharides, and polyols (FODMAP) is known to adversely affect patients with irritable bowel syndrome (IBS). However, the effects of FODMAP have been studied predominantly among Western populations. This study aimed to identify foods high in FODMAP content which form a part of the Korean adult diet and obtain basic data for the preparation of IBS guidelines. SUBJECTS/METHODS: An online survey of 1,000 adults from the general population in the age group of 20 to 40 years was performed. Data from 787 participants (men, 386; women, 401) were analyzed. The general characteristics of the participants, health status, IBS diagnosis using the Rome III diagnostic criteria, semi-quantitative food frequency questionnaire findings, and food items causing symptoms were analyzed. RESULTS: Overall, 169 participants (21.5%) had IBS. The contribution of the FODMAP nutrients in both IBS and healthy groups was as follows: fructan > lactose > excess fructose > sorbitol > mannitol > galacto-oligosaccharides (GOS). The fructan intake was 4.6 ± 2.2 g/day and 4.3 ± 2.5 g/day in the IBS and healthy groups (P = 0.014), respectively. In the IBS group, the ratio of the intake of fructan to the total FODMAP intake was 39.5%, 29.8%, and 5.8% through onions, garlic, and bananas, respectively. CONCLUSIONS: Fructan was the FODMAP nutrient most consumed by Korean adults. Therefore, given the difference in the dietary habits of each country's population, the dietary guidelines for IBS should be country specific.

The most critical point in the assessment of adherence to dietary guidelines is the development of a practical definition for adherence, such as a dietary pattern score. The purpose of this study was to develop the Korean Diet Score (KDS) based on the Korean Food Balance Wheel and to examine the association of KDS with various lifestyle characteristics and biochemical factors. The dietary data of 5,320 subjects from the 4th Korean National Health and Nutritional Examination Survey were used for the final analysis. The food guide was composed of six food group categories; 'grain dishes', 'fish and meat dishes', 'vegetable dishes', 'fruits', 'milk' and 'oils and sugars'. Based on the recommended serving numbers for each group, the scores measuring adherence to this food guide were calculated from the dietary information from the 24-hour dietary recall questionnaire, and then its correlation with various characteristics was assessed. KDS was significantly associated with several clinical, lifestyle and socioeconomic factors as well as diagnosed disease history. The higher quintile group of KDS showed a significantly lower level in fasting blood glucose, systolic blood pressure, triglycerides, current smoking and drinking as well as higher leisure time activity, house income and education. Furthermore, the KDS quintile group of women was inversely associated with hypertension, osteoporosis and diabetes. A higher KDS quintile was characterized with a higher intake of several critical nutrients, such as Ca, Fe and vitamins as well as a desirable nutrition balance such as the ratio of macronutrients. Our results demonstrate that KDS is a beneficial tool in assessing the adherence to a healthy diet based on the Korean dietary guidelines. We suggest that KDS could be a useful indicator for evaluating the dietary balance of the Korean population.

Atopic dennatitis (AD) is one of the major public health problem. It has been reported that the prevalence of AD in children and adults are 10-20% and 1-3%, respectively. Westernization of food habits, urbanization, and environmental pollution are contributing factors toward the recent rise in prevalence. Excessive dietary restriction leads to chronic malnutrition in atopic dermatitis patients. The purpose of this study was to investigate the effects of medical nutrition therapy (MNT) on quality of diet and blood immune parameters in atopic dermatitis patients. The 19 atopic dermatitis patients (7 men and 12 women) admitted to K University Medical Center were studied. During the 12 weeks of intervention, the subjects were given MNT by a dietitian for 30-45 minutes every other week. MNT was comprised with general dietary therapy, intake of balanced meals, emphasis on n-3 fatty acid contents in foods, and food allergies. Anthropometric and dietary assessment and blood analysis were taken at baseline and after 12 weeks of MNT. After 12 weeks of MNT, the subjects' dietary qualities, including dietary diversity score (DDS), meal balance score (MBS) and dietary variety score (DVS) were significantly increased (p < 0.05). According to significantly increased intake of EPA and DHA, dietary n-6/n-3 fatty acid ratio decreased to the recommended level for the atopic dermatitis patients (p < 0.05). These changes of dietary fatty acid consumption were reflected erythrocyte fatty acid composition. After 12 weeks of MNT, serum levels of IgE and IL-4 levels were significantly decreased, however, the levers of INF-$\{gamma}$, WBC, lymphocyte and TLC were not changed. As a conclusion, the individualized MNT improved the quality of diet in atopic dermatitis patients thereby influenced RBC fatty acid composition and IgE and IL-4 levels.
The purpose of this study was to provide a baseline assessment and relationship of nutrition attitude and food habit among mothers of middle school students. Eighteen questions were developed to test nutrition attitude and food habit test was used to reflect dietary behavior. The questionnare was mailed to a representative sample of nationwide middle schools, and was asked to be answered by mothers of one class' students. Usable questionnares were recieved from 4,694 participants of 99 schools. The mean score of nutrition attitude was 65.9 out of minimum possible score 18 and maximum 90. Nutrition attitude was weaker in the areas of control and self-efficacy than in intention and outcome-expectation. The mean score of food habit was 38.6 out of minimum possible score 12 and maximum 60. Food habit was weaker in the areas of protein, vitamins & minerals and dietary fiber than in the other areas. Nutrition attitude and food habit scores were lower among rural, manually working, lower educated and low-income mothers. There was a significant correlation between nutrition attitude and food habit(r=0.37, p<0.001).
Functional constipation is regarded as a long-standing symptomatic manifestation of abnormal defecation expressed by either a reduced frequency of bowel movements and /or an altered act of evacuation. Patients with constipation can be treated with laxatives, diets and regular habits. Thorough evaluation of functional constipation is considered in those in whom conservative treatment with dietary advice and use of laxatives fails. Patients with normal colonic transit and normal anorectal function may only need reassurance, education and dietary advice with fiber supplementation. For constipated patients in whom such treatment modalities fail, laxatives including bulk-forming and osmotic agents may be used Although most laxatives, if used intermittently, are relatively safe, they must be chosen bearing in mind possible side effects, patient compliance and their action mechanisms. A subgroup of patients with slow transit through the colon ay be unresponsive to conventional laxatives, and, in these subjects, a trial with enteroprokinetics and sometimes stimulant laxatives should be attempted. This article presents our view of the assessment and pharmacologic treatment of functional constipation.
The purpose of this study was to investigate the quality characteristics of Maejakgwas prepared with different concentrations of shrimp powder (0, 1, 2, 3, 4%) substituted for flour as a snack food for kindergarteners. The pH of the Maejakgwas dough decreased significantly as the level of shrimp powder increased; however, there were no significant differences in dough values among the test groups. Furthermore, the spread factor values of the groups were found to be inversely proportional to the shrimp powder concentration. Hunter's color L, a and b values decreased significantly as the level of shrimp powder increased. Moreover, the 2~4% shrimp powder groups had increased levels of hardness, cohesiveness, springiness, and brittleness when compared to the control. Finally, an acceptance test, the Maejakgwas sample containing 3% shrimp powder received the highest scores.
There were numerous evidences that subjective health evaluation was a powerful indicator for morbidity and mortality in many countries. Since self-rated health (SRH) was a reasonable health measure, identifying predictors for SRH would be beneficial for assessment of overall health, monitoring health status, and development of health promotion programs. Health risks, health behavior, socioeconomic characteristics and social capital were potential indicators for SRH. We examined association. between SRH and indicators such as health risk factors, subjective living condition, income, education level and dietary variety score. Total 4,262 subjects, aged between 20 and 69 years old, were selected from KNHANES 2001; those who completed health examination, nutrition survey, and provided their socioeconomic information. Results of logistic regression showed that it was likely to have better SRH for those who were younger, male and have higher education, higher income, better living condition, no metabolic syndrome and higher dietary variety.

Precise and correct assessment of nutrient intake using appropriate dietary intake method is necessary to improve the nutritional status of the target people group. It is more likely so in elderly people since their dietary habits and inadequate nutrient intakes are of special concern even worse in rural areas. Two popular methods of gathering dietary intake are 24-hour recall and food frequency method (or food frequency questionnaire). In the present study, we conducted both 24-hour recall and food frequency method on 120 rural elderly people $(aged\;65{\sim}74\;years)$, 62 male and 58 female. The dietary intakes were analyzed and the correlation of the dietary intake between 24-hour recall and food frequency method to determine the reliability between two methods. Also each nutrient intake was compared to recommended dietary allowance (RDA) or nutrient reference value (NRV) as appropriate. Even correlation did not show significance between the two methods except for dietary fiber intake (0.65 at p<0.01) and energy-yielding nutrients which mostly showed similar results with nutrient intake level. These support the possible reliability between 24-hours record and food frequency method that is also shown on the cases of most mineral and vitamin intakes. Thus, the food frequency method used in this study for the assessment of nutrient intakes of the elderly people would be reliable for the assessment of the nutrient intake along with the 24-hour recall. Also, the present study results suggested that rural female elderly people would be under optimal nutriture status due to the lower food intake measured by 24-hour recall. The optimal food frequency method would be considered to be developed for the precise nutrient assessment.
