Performance of Growing-Finishing Pigs Fed Sesame Meal Supplemented Diets Formulated Using Amino Acid Digestibilities Determined by the Regression Technique

  • Two experiments were conducted to determine ileal digestibilities for the amino acids contained in sesame meal using the regression technique and then applying the values obtained in a growth trial using growing-finishing pigs. For the digestibility trial, four, 20 kg crossbred (Yorkshire $\times$ Landrace $\times$ Beijing Black) barrows were fitted with a simple T-cannula in the terminal ileum. After recovery, the barrows were fed one of four experimental diets according to a $4{\times}4$ Latin Square design. The pigs were fed corn-soybean meal based diets supplemented with 0, 25, 50 or 75 percent sesame meal. For the growth trial, 210 crossbred (Yorkshire $\times$ Landrace $\times$ Henan Min) growing pigs ($21.8{\pm}1.4kg$), were fed corn-soybean meal based diets supplemented with 0, 3, 6, 9, or 12% sesame meal. Three pens (7 gilts and 7 castrates) were assigned to each treatment. With the exception of arginine and phenylalanine, the digestibility coefficients for the indispensible amino acids declined as the level of sesame meal in the diet increased. There was little agreement between the amino acid digestibilities determined with the regression technique and values previously published for sesame meal determined with the direct method. Daily gain and feed conversion both declined (linear effect p=0.02 and 0.06 respectively) as the level of sesame meal in the diet increased.

The association between meal regularity and weight loss among women in commercial weight loss programs

  • BACKGROUND/OBJECTIVES: While many obesity studies have pointed out the importance of meal regularity, few have conducted empirical analyses using data from food diaries. We examined the association between meal regularity (i.e., meal time regularity [MTR] and calorie intake regularity [CIR]) and weight loss. SUBJECTS/METHODS: We collected food diary data from 637 women who had participated in commercial weight loss programs for 28-168 days (4-24 weeks). This study defined "meal regularity" in terms of two concepts: MTR and CIR. MTR refers to how regularly people eat their meals (i.e., at certain times each day), whereas CIR refers to how regularly people consume a certain amount of calories at each meal. We conducted multiple regression analyses. RESULTS: MTR (model 1: β = -2,576.526, P < 0.001; model 2: β = -1511.447, P < 0.05; model 3: β = -1,721.428, P < 0.05) and CIR (model 1: β = -1,231.551, P < 0.01; model 2: β = -2,082.353, P < 0.001; model 3: β = -1,343.490, P < 0.01) turned out to be significant determinants of the amount of weight loss in breakfast, lunch, and dinner contexts. While meal regularity (i.e., MTR and CIR) was significantly associated with weight loss, daily calorie intake from meals was not significantly associated with the amount of weight loss (model 1: β = 0.13, P > 0.05; model 2: β = 0.11, P > 0.05; model 3: β = 0.14, P > 0.05). Subjects who consumed an equal amount of calories per meal throughout the day lost more weight than those who did not (model 4: β = -3,675.51, P < 0.001). CONCLUSIONS: Eating each meal (i.e., breakfast, lunch, and dinner) at a certain time every day may increase weight loss success. Also, consuming the same amount of calories at each meal may help weight loss success.

유아 교육기관의 급식 운영실태와 유아의 식사 섭취량 조사 (A Study on Kindergarten's Meal Service Program and Children's Food Intake)

  • Today, the role of kindergarten is more important as nutrition provider through snack and meal services. Desirable kinds and amounts of food items at school lunch menu were important factors of nutrients intakes in children. This study was performed to assess the kindergarten's meal service program (snack and lunch) and the consumption amount of lunch according to each dishes. Twenty four institutions that cared over one hundred children were observed at Seoul and Kyunggido area. Well-trained observers checked meal and snack serving activity and foodservice facilities by formal checklist. And using the weighing method assessed the consumption levels of food items at lunch. During 3 days, 30 children in each kindergarten were selected randomly according to age, observers measured serving and residual weight of each food. The data was compiles by performing ANOVA-test using SPSS WIN 10.0. The result were as follows: 1) Foodservice facilities in kindergarten was limited to provide qualified foodservice. $91.7\%$ of institution had kitchen, $41.7\%$ had dinning. The kitchen equipment possession rate was $12.5\%$ (oven), $30.8\%$ (heating cabinet), $58.3\%$ (refrigerator). The rate of using document about foodservice was used $83.3\%$ (menu list), $41.7\%$ (daily foodservice record), $25\%$ (standard recipe). $41.7\%$ of institution employed licensed dietitian. Only $41.7\%$ of subjects preserved meal after daily meal service. 2) Meal serving size was decided by teacher, $54.5\%$ at snack and $43\%$ at lunch and pre-divided individual portion type was $36.4\%$ at snack and $28.6\%$ at lunch. The rate of cleaning activity before meal was $72.2\%$ at snack, $90.5\%$ at lunch. And nutrition or sanitation education activity was more performed at lunch time, for examples brushing teeth activity was $12.5\%$ at snack $85.7\%$ at lunch. 3) The consumption amounts of plain cooked rice was $112.7{\pm}26.1{\cal}g$, cooked rice and cereal was $93.06{\pm}27.97{\cal}g$, curry rice was $208.35{\pm}64.84{\cal}g$ and the consumption amounts of these main dishes was significantly different by age (p < 0.001). The consumption amounts of soup was very different according to children's preference. The consumption amounts of seaweed soup was $120.18{\pm}82.13{\cal}g$, wild sesame and bean-paste soup was $40.64{\pm}23.16{\cal}g$. The consumption range of kimchis was from $6{\cal}g\;to\;13{\cal}g$, jorim (braised food) was from $3{\cal}g\;to\;25{\cal}g$, fried food (include stir fried, deep fat fried, pan fried) was from $14.5{\cal}g\;to\;22{\cal}g$, vegetable dish was from $3{\cal}g\;to\;16{\cal}g$. These consumption amount of each dishes was not reached recommended portion size of nutritionally planning menu by nutritionist.

병원 영양과의 재무관리 시스템 전산화 모델에 관한 연구 (Development of a Computer-assisted Cost Accounting System Prototype for Hospital Dietetics)

  • The purpose of the study were to assist foodservice managers in complex decision making by utilizing computerized cost accounting system and to relieve managers from repetitive and routine tasks so that more adequate patient care and consultation can be provided. The scope of the computer-assisted cost accounting system consists of budget, menu planning, purchasing, inventory, cost control and financial reporting. The content of the computerized system are summarized as follows ; 1) For budgeting monthly income was estimated by calculating unit cost of each meal and forecasting serving numbers. The actual serving numbers for patients and employees were totaled everyday, and utilized as the basic data base for estimating income and planning menu. The monthly lists of meal sensus were generated. 2) for menu planning concersion factors were computed based on the standarized recipe for 50 servings. Daily menus for patients and employees which include total amounts of each ingredient and cost analyzed information were generated. 3) Daily and monthly purchasing report for each food item classified by patient and employee meals were generated. 4) Inventory transactions such as recipts and issues were totalized daily for each stocked item, and monthly inventory reports were generated. 5) Cost analysis reports for each menu item were generated into two ways based on the budget coat as well as the purchasing cost. 6) Editing new recipes and updating food costs change to the data base were carried out. 7) Financial reports were generated monthly, first-half and second-half of the year, and yearly basis.

일부 성인의 구강건강상태 및 일상생활구강영향지수(OIDP)에 관한 연구 (A Study on Oral Health Status and the Oral Impacts on Daily Performance of Adults)

  • This study was to identify oral health status, O'Leary index and OIDP for the preventive oral prophylaxis among adults who visited dental hospitals or clinics from 30th September in 2011 to 31th May in 2012. The results are as follows. In DMFT, female(8.79) was higher than male(7.65)(p<.05). Housewife(9.70) and agriculture fishery industry was higher than others(p<.01). In O'Leary index, male(47.41), over 50 years old and 200~300 million won were higher than others. but these results wasn't significantly different. The majority answer about discomfort feeling in OIDP was during meal(66.7), and period of discomfort was 1~2 time/month(29.6). The discomfort feeling in OIDP effected on meal(40.8)and teeth brushing(50.0). The difficulty in daily life were toothache(21.0), cold feeling(20.8), and crowding(19.3). In conclusion, the negative factor of oral health status didn't effect daily life. These findings are require of development of oral health management program which included the prevention of toothache and cold feeling.

초등학생의 식생활 실태 및 전통 식생활교육에 대한 인식 (Meal practice and Perceptions of Traditional Food Culture Education in Elementary School Students)

  • Changes in social, economical, and cultural environments affect the meal practices of children. The transmission of traditional Korean food culture is very important because it presents not only a well-balanced diet but also contributes to shaping identity. The purpose of this study was to investigate elementary school students' present meal practices and views, as well as demands on traditional food culture education to reflect future educational plans. Half of the students ate breakfast everyday and 72% ate a traditional Korean style breakfast. About 38% of the students participated 2-4 times per week in meal preparation and 34% participated in clean-up after the meal once a day. Although 6th graders had greater skills in basic cooking, they tended to be more passive upon applying their skills in daily meal practice. For traditional food culture education, 89% of the experienced and 86.2% of the inexperienced groups agreed on the necessity of traditional food culture education. Students attained traditional food culture knowledge through Silgwa, practical coursework within the curriculum, and by teachers leading classes. They were also educated by parents, mass media, and books outside of school. The preferred methods of class teaching were lecture and experiential learning. The preferred subjects to learn were 'cooking classes based on taste development', 'learning food ingredients through vegetable growing', 'traditional Korean food manners', and 'traditional Korean food culture and seasonal foods' as well as nutritional education. Fifth graders had more positive attitudes towards meal practices and traditional food culture education. Traditional Korean food culture and nutrition education should be integrated and developed into regular subject curricula to improve children's meal practice and inheritance of traditional food culture.

STUDIES ON THE UTILIZATION OF RICE STRAW BY SHEEP IV. EFFECT OF SOYBEAN MEAL AND BARLEY SUPPLEMENTATION ON EATING AND RUMINATION BEHAVIOR

  • A $3{\times}3$ latin square design experiment was conducted to study eating and rumination behavior in sheep fed rice straw (RS) supplemented with soybean meal (SBM) and barley at three different levels of crude protein: low (40 g CP/d, LCP), medium (67 g/d, MCP) and high (94 g/d, HCP). In addition, all the supplements were formulated to contain the same amount of total digestible nutrients (TDN; 275 g). Daily time spent eating and eating rate of RS were not affected by any supplementation. However, time spent ruminating in sheep fed HCP diet was markedly shorter (p<0.05) than in those fed LCP and MCP diets. Rumination index (ruminating time/100 g DM intake) was also significantly reduced (p<0.05) by increasing level of protein supplementation. Although no significant differences were observed, the daily number of rumination periods tended to be lower, while daily number of boli regurgitated was considerably higher in sheep fed HCP diet than in those fed LCP and MCP diets. Increasing level of protein supplementation did not affect the number of chews per bolus, bolus time and rate of chewing during rumination. It is suggested that increasing level of protein supplementation was associated with more effective microbial reduction of rumen digesta particle size and consequently reduced the time spent ruminating.

익산지역 여중생과 여고생의 식행동과 영양 섭취에 관한 연구 (A Study on the Dietary Behaviors and the Nutrient Intake of Middle School and High School Girls in Iksan)

  • This study was carried out to compare the dietary behaviors and the nutrient intake of a middle school and a high school girls in Iksan. The subjects consisted of 132 middle school girls and 122 high school girls in Iksan. The proportion of subjects eating meals irregularly was higher in the high school girls (98.6%) than in the middle school girls(78.7%). The proportion of subjects skipping a meal also was higher in the high school girls(61.5%) than in the middle school girls(53.8%) and most of them (65.8%) skipped breakfast though they thought breakfast was the most important meal of a day (87.4%). The subjects tended to overeat at lunch (38.6%), and at dinner (55.9%). The main reasons of skipping a meal were 1. They had no time (49.3%), and 2. They had poor appetite (24.7%) Mean daily energy intake was 2198.5Kcal in the middle school girls and 2150.5Kcal in the high school girls and mean daily intake of protein, iron, vitamin $B_1$, vitamin $B_2$ and niacin was significantly higher (p<0.05, p<0.01) in the middle school girls than in the high school girls. Mean daily calcium, iron, vitamin $B_1$, vitamin A and C intake of middle school girls were lower than those of RDA and all nutrients intake of high school girls except for phosphorus was lower than those of RDA. The index of nutritional quality (INQ) was under 1.0 for calcium, iron, vitamin A, $B_1$ and C. Mean blood level of cholesterol, triglyceride, Hb, Hct, GOT, GPT were 170.9mg/dl, 78.9mg/dl, 13.1g/dl, 39.5%, 18.8mg/d and 15.7mg/dl, respectively.

한국성인의 김치 섭취에 관한 연구: 국민건강영양조사 5기(2010~2012) 자료를 이용하여 (A Study on the Kimchi Consumption of Korean Adults: Using Korea National Health and Nutrition Examination Survey (2010~2012))

  • The purpose of this study was to analyze average kimchi intake, general characteristics, frequency of daily meal intake, intakes of vegetables and fruits, and nutrient intakes in four serving size groups based on data from the Korea National Health and Nutrition Examination Survey 2010~2012. The results showed an average amount of kimchi intake in subjects of 115.6 g, ranging from 0 g to 605.94 g. For daily meal intake except snacking according to kimchi serving size, all daily meal intakes increased significantly with increasing kimchi serving size (p<0.0001), and tendency of kimchi intake increased with more eating-out. As kimchi serving size increased, total intakes of vegetables and salted vegetables increased significantly (p<0.0001). However, unsalted vegetables intake did not show significant difference. Intake of fruits also increased with increasing kimchi serving size. As the serving size of kimchi increased, intakes of energy, carbohydrates, protein, fat, sodium, and potassium increased significantly (p<0.0001). For intake of sodium, intakes of all groups exceeded 2,000 mg, which is the recommended level for Koreans. Moreover, the fourth serving size group consumed three times (6,546.35 mg) more sodium than the recommended level.

RUMINAL AND POST-RUMINAL DIGESTlON AND NITROGEN BALANCE IN EARLY WEANED CALVES FED SOYBEAN MEAL AND HEATED SOYBEAN MEAL

  • Two digestion trials were conducted to investigate the effect of feeding heated soybean meal (HSBM) on ruminal and post-ruminal digestion of organic matter (OM) and nitrogen (N), bacterial N flow to the duodenum and N balance in young calves weaned at 6 weeks of age. In trial 1, calves were fed concentrate diets containing soybean meal (SBM) or HSBM and hay mixed in the ratio of 6:4 to support daily weight gain of 0.5 kg. The same concentrate diets were used in trial 2, but the ratio of concentrate to hay was 7:3 to support body weight gain of 0.7 kg/d. Measurements were made 10 and 13 weeks of age in trial 1, and at 10 and 15 weeks in trial 2. Ruminal OM digestibility increased with advancing age in both trials. Ruminal OM digestion was not affected by the diets in trial 1, but it was greater for the SBM diet than for the HSBM diet at 10 weeks in trial 2. Net N loss from the rumen was lover for the HSBM diet than for the SBM diet in trial 1, but it was not affected by the diets in trial 2. Bacterial N flow to the duodenum, N digestion in the total digestive tract and N retention were not affected by the diets in either of the trials.
