양로원 거주 여자 노인들의 비타민 E 섭취 상태 조사 (Assessment of Vitamin E Status of Female Nursing-Home Residents)

  • This study was peformed to assess the nutritional status of female nursing home residents by dietary intake. The subjects were 60 nursing home residents aged over 60 from 3 different nursing homes in Seoul, Cheonan and Chunchon. Dietary intake was assessed by 24-hr recall and nutrient intake was calculated using CAN-Pro and database for vitamin E established by authors. To establish vitamin E database, we analyzed vitamin E concentration using HPLC in several foods consumed frequently by nursing home residents. The results of nutrient intake were as follows; 1) Average daily intakes of energy, protein, phosphorous, iron, vitamin $B_1$ and niacin were higher than RDA, but calcium, vitamin $B_2$ and niacin of Chunchon were lower than RDA. 2) Intakes of protein, sodium and niacin of Cheonan residents were significantly higher than those of Seoul. 3) Intakes of phosphorous, potassium, vitamin $B_1$ and dietary fiber of Cheonan residents were significantly higher than Seoul and Chunchon. 4) Intakes of sodium and cholesterol of Seoul residents were higher than Cheonan and Chunchon. 5) Average daily intake of vitamin E was lower than RDA. Especially vitamin A intake of Cheonan residents was significantly lower than other two cities.

서울 일부지역 남자 고등학생의 식품 섭취, Glycemic Index, Glycemic Load와 체중과의 관련성 비교 (Relationship between Food Intakes, Glycemic Index, Glycemic Load, and Body Weight among High School Boys in Seoul)

  • This study was conducted to study the relationship between food intakes, glycemic index (GI), glycemic load (GL), and body weight with high school boys residing in Seoul. The subjects of 329 boys were divided into normal weight group (BMI < $23\;kg/m^2$, n = 212) and overweight group (BMI ${\geq}\;23\;kg/m^2$, n = 117) by body mass index (BMI). The food intakes data obtained by the 3-day food record were analyzed by Can pro 3.0 software. Anthropometric measurements and physical activities were collected from each subject. Daily dietary glycemic index (DGI) and dietary glycemic load (DGL) were calculated from the 3-day food record. Body weights and BMI of normal weight group were 58.8 kg and $19.9\;kg/m^2$ and those of overweight group were 79.2 kg and $26.8\;kg/m^2$, which were significantly different between two groups (p < 0.05). Total food and animal food intakes of normal weight group were significantly higher than overweight group (p < 0.05), and vegetable food and other food intakes of normal weight group showed higher than overweight group. All nutrient intakes of normal weight group were higher than overweight group. Dietary fiber, calcium, potassium and folate intakes of normal weight group and overweight group were under 65% of the dietary reference intakes (DRIs). Major food sources of energy intake for both groups were rice, pork and instant noodle in order. Mean adequacy ratio (MAR), an index of overall dietary quality were 0.83 in normal weight group and 0.79 in overweight group, which showed significantly higher in normal weight group than overweight group (p < 0.05). Mean daily dietary GI of normal weight group and overweight group were 67.7 and 68.2, respectively. Mean daily dietary GL of normal weight group and overweight group were 214.6 and 202.7, respectively, and which was significantly different between the two groups (p < 0.05). Major food sources contributed to DGI and DGL were rice ($\geq$ 55%) in both groups. DGI and DGL were not significantly correlated with anthropometric data. Activity adjusted to energy intake was negatively correlated with percentage of body fat (r = -0.1308, p < 0.01) and that was positively correlated with height (r = 0.1227, p < 0.05) and lean body mass (r = 0.1351, p < 0.05).

  • The Budget method used currently in Codex for estimation of use levels of food additives was investigated and the specific approach that can be applicable for Koreans has been proposed. Theoretical maximum daily intakes(TMDIs) of benzoate, $\rho$-hydroxybenzoic acid ester, butylated hydroxyanisole(BHA), butylated hydroxytoluene (BHT), t-butylhydroquinone(TBHQ), nitrite, nitrate, sorbate, and sulfite were estimated and compared with corresponding acceptable daily intakes(ADIs). Additives requiring further precise evaluation were screened. TMDIs of benzoate, BHA, BHT, TBHQ, nitrite, and sulfite exceeded ADIs. On the other hand, it is appeared that TMDIs of $\rho$-hydroxybenzoic acid ester, nitrate, and sorbate were below ADIs. It is expected that the Budget method may be used as one approach for the estimation of use level and risk assessment.

전북 일부 지역 과체중 및 비만 중년 여성 대상 보건소 영양교육 효과 -개인별 하루필요에너지 및 식품군 단위수 교육을 중심으로- (Effects of Nutrition Education at a Community Health Center on Overweight and Obese Middle-aged Women in Jeonbuk Area-Focused on Personalized Daily Energy Requirement and Food Exchange Units)

  • Objectives: This study examined the effects of nutrition education focused on personalized daily energy requirement and food units using Food Exchange System on anthropometric, biochemical characteristics, nutrition knowledge, dietary attitude and nutrient intakes for overweight and obese in a public health center. Methods: The subjects were 60 overweight/obese women based on BMI (educated 30 vs. non-educated 30, 50~64 years). Educated group was provided individual and/or group lessons (40 min/lesson/week, 5 week), 'Introduction: obese & health', '6 nutrients and 6 food groups', 'My obesity & daily needed energy', 'Meal planning for personalized daily energy and food units using Food Exchange Systems', and 'Smart food choices'. After education, we examined the differences in anthropometric/biochemical characteristics, nutrition knowledge, dietary attitude and nutrient intakes between educated group and non-educated group. Results: After nutrition education, in the educated group, there were improvements on anthropometric/biochemical characteristics, nutrition knowledge, dietary attitude and nutrient intakes in the educated group compared to the non-educated group. We observed a decrease in the mean weight, total cholesterol (TC) and the incidence of overweight/obesity and hypercholesterolemia and an increase in the mean lean body mass. The scores of nutrition knowledge, 'Function of carbohydrate, protein, vitamin, mineral' and 'Food Sources of fat, vitamin, mineral' were increased. The scores of dietary attitudes, 'Taking a joyful meal, a leisurely meal, a balanced meal, a meal with sufficient vegetables, a meal with diversity, a meal with spicy foods, a meal with overeating' were increased. The intakes of energy, carbohydrate, fat, protein, vitamin A, thiamin, Zn and cholesterol were decreased. The scores of INQ, protein, vitamin A, vitamin C, thiamin, riboflavin, vitamin B6, folate, Ca, P, Fe, Zn were increased. Conclusions: The nutrition education focused on personalized daily energy requirement and food exchange unit using Food Exchange System for overweight and obese may improve food behavior, dietary intakes and symptoms of overweight and obese, even in a community health center.

농촌지역 급식교 및 비급식교 중학생의 영양소 섭취 적절성에 관한 연구 (Evaluation of Nutrient Intakes and Diet Quality of Rural Middle School Students)

  • This study was performed to assess the nutrient intakes and diet quality of rural middle school students provided with and without the national school lunch program(NSLP). The data on dietary intakes were obtained by using food record method questionnaires which were collected from 340 rural middle school students provided with(n=177) and without (n=163) NSLP. Diet quality was accessed by NAR(nutrient adequacy ration), MAR(mean adequacy ration), and INQ( index of nutritional quality). Total energy intakes of the boys were 2123 kcal with NSLP and 1857 kcal without NSLP. Total energy intakes of the girls were 1913 kcal with NSLP and 1814 kcal without NSLP. Phosphorus, vitamin A, vitamin E, ascorbic acid, thiamin, riboflavin, and niacin intakes were above the RDA in the NSLP group. For those without NLSP, phosphorus, vitamin E, thiamin intakes were above RDA, however, calcium, iron vitamin A, vitamin $B_6$ were less than the RDA. The mean adequacy ration(MAR), an index of dietary quality was 0.69(with) 0.62(without) for males and 0.62(without) for females The indexes of nutritional quality(INQ) were over 1 for most nutrients except calcium, vitamin A, vitamin B$_2$ and zinc. The study showed that total daily energy and nutrient intakes were significantly higher in students provided with than those without school-lunches. Thus, the school-lunch program is recommenced and necessary to improve the nutritional status of middle school students.

수유부의 식품 및 영양소 섭취와 유즙 생성량 및 조성 (Composition and Yield of Korean Breast Milk and Maternal Intakes of Foods and Nutrients)

  • This study was conducted to investigate the relationship between lactational capacity and intakes of energy and energy-yielding nutrients. Food consumption, intakes of carbohydrate, protein, fat and energy and quantity and proximate composition of milk of 11 lactating Korean mothers were determined at 1, 2 and 3 months postpartum longitudinally. Food consumption was estimated using a 24-hour recall method ; intakes of energy and energy-yielding nutrients were calculated according to the Food Composition Table. Daily milk production was estimated using a 72-hour test-weighing method ; protein, fat, lactose and energy concentrations were analyzed. Average intakes of energy and protein were 1974$\pm$386㎉/day and 67.0$\pm$12.3㎉/day, these were 73% and 74% of the Korean Recommended Allowances, respectively. Average milk yield was 720.1$\pm$123.3ml/day containing energy 59.6$\pm$9.5㎉/dl, protein 1.1$\pm$0.1g/dl, fat 2.7$\pm$0.8g/dl, and lactose 6.3$\pm$0.3g/dl. No relationship existed between the intakes of carbohydrate, protein, fat and energy and the quantity and proximate composition of the milk. However, the intakes of energy, carbohydrate and vegetable protein were inversely related to the concentrations of energy and lactose in the milk. This result indicates that lactational capacity may be affected by the other factors excluding intakes of energy and energy-yielding nutrients and a high intake of energy may not guarantee optimal lactational capacity.

완도지역 성인 및 노인의 영양소 섭취 실태조사 (A Study on Nutritional Intakes in Elderly People in Wando Area)

  • The purpose of this study was to investigate nutrients intakes and nutritional quality of Adults and Elderly People in an island area (Wando). A three-day dietary intakes survey, using a 24 hour recall method was obtained from 187 subjects aged 46 to 84 (mean age 65.3) living in an island area (Wando). Nutient intakes were analyzed using CAN-Pro soft program and compared to Korean RDA. The quality of nutrients was assessed by analyzing nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and index of nutritional quality (INQ). The average daily mean energy intakes were 1869.0 kcal for males and 1943.9 kcal for females, respectively. Daily intakes of protein for males and females were 28.0 and 30.4 g and those of fat were 31.5 and 28.51 g, respectively. Nutrient consumed below $75\%$ of Korean RDA was protein, vitamin A, Ca and Zn in both males and females. Average CPF ratio of males and females were 78.8 : 6.0 : 15.1 and 80.0 : 6.4 13.4, respectively. Energy intake ratio from protein was significantly higher in over 60 years males. Carbohydrate dependency decreased with age. Protein dependency increased with age. Nutrient adequacy ratio (NAR) of energy, protein vitamin A and vitamin E were increased with age in males. The mean adequacy ratio (MAR), an index of overall dietary quality, were not significantly different by age group. Average MAR for males and females was 0.77 and 0.78, respectively. The index of nutritional quality (INQ) showed the tendency to decrease with age. Especially, there were significantly decreases in INQ of all nutrients, except protein, with age. Based on these results, it is evident that people in the island area did not consume enough nutrients. Specially, dietary intake of protein, vitamin A, vitamin E, and Ca were not adequate. 국내 엘리트 보디빌더의 영양지식과 Bulking Phase의 영양보충제 복용실태와 영양소 섭취상태 (Study on Nutritional Knowledge, Use of Nutritional Supplements and Nutrient Intakes in Korean Elite Bodybuilders)

  • The objectives of this study were to investigate 1) the nutritional knowledge, 2) the use of nutritional supplements, and 3) nutrient intakes of male elite bodybuilders (n=20). Participants carried out a comprehensive survey, anthropometric assessment, and 1 day food record. Daily nutrient intakes of the subjects were analyzed using Computer Aided Nutritional Analysis Program (Can-pro 3.0). The mean age of the subjects was 23.4 years. The mean duration of exercise was 5.3 years. The average scores of nutritional knowledge were 71.0%. The subjects were gathered nutrition information from nutrition book (65%), mass communication (50%), friends (50%) and coach (30%) in order. Ninety percentage of the subjects reported that they were taking nutritional supplements. Major reasons for taking nutritional supplements were to improve performance and to build-up muscle. The most frequently taken nutritional supplements were protein powder (85%), multivitamin/mineral (75%), BCAA (60%) and glutamine (55%) in order. The average daily energy intakes of the subjects were 4,248.7 kcal. The mean intake of protein was 370.3 g/day (3.93 g/kg BW). The ratio of total energy intake from carbohydrate, protein and lipid was 51 : 34 : 15. The intakes of most vitamin and minerals through food and nutrition supplements were much higher than those of each nutrient of the RDAs. Especially, vitamin B complex and vitamin C intakes were ranged from 500 to 3,000% of KNHNES. More research needs to be conducted to determine the optimal amounts of carbohydrates, protein, lipid and micro-nutrients for the bodybuilders.

미취학 아동의 영양섭취실태 및 환경적 영향요인의 조사 연구 (A survey of nutritional status and the effect of environmental factor of preschool children.)

  • This survey was undertaken to evaluate the correlationship between the nutrients intakes and the environmental factors that was assumed to influence to them in the preschool children in Masan city. Their average energy intake was met with the korean recommended dietary Allowance(RDA), and the other nutrients intakes exceeded to. The percentage of carbohydrate, fat and protein among daily total energy intakes was showed 67 : 18 : 15 in order and it is similar to the proposal-value of RDA. The higher socioeconomic level of family, and educational degree of their parent were, the more amounts of nutrients intakes inc4eased. Especially educational level of mother can affect the amounts of nutrients intakes greatly. It is considered that the development of nutritional program for the more concrete and various education for their patron should be done.

각 병원에서 채택되고 있는 저염식사의 Sodium 함량에 관한 실태조사 (Survey on the Sodium Content of Low Salt Diet at 27 Hospitals)

  • This study was designed to find out the status of low sodium diet in 27 hospitals located in Seoul and rural areas. The study was conducted from the beginning of June, 1976 to October, 1976. The differences in Na, protein and calorie contents between the hospitals in Seoul an ones in rural areas, and between the medical college attached hospitals and general ones, were compared by means of t-test. Correlation coefficient were made among Na, protein and calorie. In order to find out which food group is the major source of Na in the diet, six food groups were divided and Na content in each was calculated. The results showed that average daily Na intake of 27 hospitals was 2,382mg which is regarded as mild restriction. Average daily protein and calorie intakes were 94gm and 2,438 cal respectively. About 60% of hospitals restricted sodium at mild level $(2,300mg{\sim}4,600mg)$ and 33% at moderate $(1,000mg{\sim}2,300mg)$ and only 7% of the subjects were Planning strict sodium restriction $(250mg{\sim}500mg)$ There was statistically significant differences in Na contents between Seoul and rural areas. But no significant difference was found between medical college attached hospitals and general ones. The correlation between the average daily intakes of Na and protein was found not to be significant but protein and calorie intakes were related each other. When the total sodium intakes divided into six groups, about 74% were supplied by condiments (Food group 6th).
