This study was conducted to blow the effect of postharvest physiological changes on garlic quality according to its ecotypes and storage temperatures. The changes of water, total soluble solids, crude stein, md total fructans were measured and the rates of respiration and sprouting were analyzed during storage at 20$^{\circ}C$ and 30$^{\circ}C$. The decrease of water content and the increase of total soluble solids were reversely appeared during garlic storage. The crude protein content was gradually increased during storage but total fructan content was decrased. The respiration late was maximized at 60days after storage and the spouting rate was gradually increased. In the aspect of ecotypic characteristics, the water content, fructan content and sprouting rate were higher in 'Namdo' cultivar than those of southern type. The high storage temperature (30$^{\circ}C$) controlled spouting and loss of fructan, and it was effective to maintain the garlic quality.
본 연구의 목적은 국내 주요 밤 5품종(단택, 대보, 석추, 옥광, 병고)의 전체과육, 흰과육 그리고 노란과육을 10개월 동안 냉장($4^{\circ}C$), 냉동($-10^{\circ}C$) 저장 중에 수분, 조단백질, 조지방, 비타민 C 그리고 당의 함량 변화를 알아보므로 국내산 밤의 이용가치를 높일 수 있는 저장방법 및 가공식품 개발을 위한 기초자료를 제공하는 것이다. 밤 5품종의 전체과육 중 수분함량은 $49.9{\sim}57.4%$였으며, 석추($57.4{\pm}0.2%$)가 밤 5품종 중 수분함량이 가장 높았고, 단택($49.9{\pm}0.1%$)이 가장 낮았다. 단택을 제외하고 시료의 흰과육이 전체과육보다 수분 함량이 더 높았고, 노란과육보다 흰과육에서 수분함량이 높았다. 5품종 밤의 전체과육, 흰과육 및 노란과육을 10개월 동안 냉장($4^{\circ}C$), 냉동($-10^{\circ}C$) 저장 중 수분함량 변화를 보면 감소하는 경향이었다. 밤 5품종의 전체과육 중 조단백질 함량은 $3.3{\sim}4.2%$였으며, 주요 밤 5품종 중 대보($4.2{\pm}0.2%$)에서 조단백질 함량이 가장 높았다. 단택, 석추, 옥광, 병고를 10개월간 냉장 저장한 후 조단백질 함량을 저장 전과 비교한 결과 유의적으로 증가하였으나, 대보의 전체과육은 감소하였고, 노란과육은 변화가 없었다. 10개월간 냉동 저장 후 옥광의 전체시료에서만 조단백질이 유의적으로 증가하였다. 10개월간 냉장과 냉동 보관한 후 보관 온도가 다른 시료의 조단백질 함량 변화를 비교한 결과 냉장 보관보다는 냉동보관에서 함량변화가 적었다. 대보와 병고의 조지방 함량은 냉장($4^{\circ}C$), 냉동($-10^{\circ}C$) 저장 중 감소하였고, 대보, 옥광 그리고 병고에서는 흰과육보다 노란과육에서 조지방 함량이 높았다. 비타민 C 역시 감소하였다. 비타민 C의 감소는 냉동 ($-10^{\circ}C$) 저장보다는 냉장($4^{\circ}C$) 저장에서 더 급속하게 감소하였으며, 3개월 냉동 저장 후 모든 시료에 비타민 C가 검출되지 않았다. 당 함량은 냉장, 냉동 저장 후반기에 증가하였다. 밤 5품종의 전체과육 중 당 함량은 $36.2{\circ}44.3%$였으며, 단택에서 당 함량이 가장 높았다.

This experiment was conducted to investigate the effects of crystalline isoleucine supplementation of a low protein, corn-soybean meal diet on the performance and immune function of weanling pigs. Forty-five crossbred ($Duroc{\times}Landrace{\times}Large\;White$) piglets, weighing an average of $11.00{\pm}0.07kg$, were assigned to either a control diet containing 20% crude protein (0.64% isoleucine), a 16% crude protein diet without isoleucine supplementation (0.41% isoleucine) or a 16% crude protein diet supplemented with isoleucine (0.64% isoleucine). Reducing the crude protein content of the diet from 20 to 16% significantly (p<0.05) reduced both average daily gain and feed intake. Feed conversion also tended (p=0.07) to be poorer for a low protein diet without isoleucine supplementation. Isoleucine supplementation of the 16% crude protein diet increased both gain and feed intake to a level similar to that obtained by pigs fed the 20% crude protein diet (p>0.05). Blood urea nitrogen, serum total protein and serum globulin were significantly (p<0.05) higher for pigs fed the unsupplemented 16% crude protein diet than for pigs fed the isoleucine-supplemented diet or the control. Egg albumin antibody titre decreased significantly (p<0.05) in pigs fed the diet with isoleucine supplementation, whereas the antibody titre of pigs fed the low protein and low isoleucine diet was similar to that of pigs fed the diet containing 20% crude protein and 0.64% isoleucine. It was suggested that crystalline isoleucine supplementation of a low protein and low isoleucine diet improved pig performance but suppressed humoral immune function.
In the proximate composition of the yams of home product, wild yam was most abundant in crude lipid and crude protein, and those content in the cultivated yams, cultivated long yam and cultivated short yam were similar. Cultivated long yam is the richest in crude ash. African yam had more crude lipid and crude protein compare to those of home product yams. Especially, the amount of crude lipid in African yam was four-fold of home product yams. In the mineral content, Ca was the richest mineral in four kinds of yam. The rest of mineral were in order of Fe, Mn and Zn. Among the home product yams, the Ca content of wild yam was higher than that of cultivated yam. The contents of Fe, Mn and Zn were also high in wild yam compared to cultivated yam. In the composition of free sugars, the sucrose content is the highest in wild yam, cultivated short yam and African yam. in order The fructose content was the most abundant in cultivated long yam and the next was sucrose. The composition of free fatty acids were in order of lactobacillic acid, palmitic acid and palmitoleic acid. Crude saponin contents of the home products were almost similar levle, but crude saponin of wild yam was more abundant than that of cultivated yam. And crude saponin of African yam was much more abundant compared that of other home product yams. there is not much difference in the kinds of saponin from the home product yams. However, the amount of each saponin from the home product yams was different. In case of African yam, 'b' saponin did not appear and 'e' saponin was higher compared with home product yams. In African yam, the bitter taste from ethyl acetate layer was the strongest, and the next was n-butanol layer. It is possible that there was a powerful UV absorption material in the bitter taste of ethyl acetate layer and also supposed that there were saponin and phenol is material.
This experiment was carried out to compare chemical composition, TDN yield of corn-soybean intercropping and corn monocropping forage plants at different harvesting time and obtained the following results. 1. In both cropping systems, the content of chemical composition of forage were changed same pattern in growing stage. The content of crude protein in corn-soybean intercropping forage at yellow stage increased more than that of corn nonocropping forage, while the crude fat in corn monocropping forage plants increased than that of corn-soybean intercropping forage plants at mature stage. 2. The crude fiber, crude ash, ADF content of forage plants in both cropping system decreased same pattern in growing period, however, NFE content of forage increased with maturity. 3. TDN yield of corn-soybean intercropping and corn monocropping forage plants at yellow stage obtained similar results and TDN yield per 10a in intercropping and monocropping were 1006.lkg and 978.6kg, respectively. 4. Consequently, corn-soybean interaopping system could be increased crude protein yield without decreasing of dry matter yield in comparison with corn monocropping system for corn silage.
The effect of phosphorus nutrition on the content of deoxyribonucleic acid(DNA), ribonucleic acid(RNA), crude protein and plant growth of soybean plant(Glycine max, Merr.) was studied. Yields of the above-and under-ground parts of the soybean plant in terms of dry weight, the amounts of crude protein, RNA and DNA continued to increase with increasing phosphorus supply. The amounts of RNA and crude protein were highest in the leaf tissues where most intensive growth was taking place. The relationships among DNA, RNA, crude protein and plant growth appeared to consist of the central dogma which has immortalized, while DNA in plant tissue was subject to charges cuased by external environmental facters such as phosphorus nutrition.
The species of forage crops used in this study were Italian ryegrass (cv. Kowenery), sorghum (cv. SX17), proso millet (cv. domestic) and Japanese millet (cv. Jeju). The plant height of the summer crops was the highest at the dough stage. The dry matter yield of Italian ryegrass was 902.7 kg per 10 a. The dry matter yield of the winter crop and sorghum was 11,985 kg when harvested at the dough stage rather than at the first and second harvests. The proso and Japanese millet also had higher yields for dry matter during the dough stage rather than during heading and regeneration. The acid detergent fiber (ADF) content of Sorghum was lower than that of the first and second harvest; however, the proso and Japanese millet had a higher ADF content at the dough stage. The neutral detergent fiber (NDF) content was higher at the dough stage than at the first and second harvest, and the crude protein content was also lower at the dough stage than at the first and second harvest. The crude protein production for the dry matter yield was about 84 kg in Sorghum when harvested at the dough stage. Proso millet showed no difference for the crude protein production at the heading and dough stage while the Japanese millet had a higher crude protein production. There were no differences in the total digestible nutrients (TDN) content for the three crops according to the harvesting time. Therefore, if Sorghum and Proso and Japanese millet are to be combined with Italian ryegrass, it is better to harvest them at the dough stage.
수획기(1973년 9월$\~$1974년 4월) 중, 참굴의 생패를 채취하고 자숙하여서 얻은 자즙의 식품영양학적가치를 평가하기 위하여 화학포성의 월별 변화를 분석한 결과는 다음과 같다. (1) 조단백태 질소의 양은 1월을 전후하여 약간 감소하였으나, 그 이후는 계속 증가하는 경향이었으며, 이 점은 비단백태 질소에서도 같은 결과이었다. (2) 아미노태 질소는 4월까지 계속 증가하였으며, 특히 2월 이후는 급격히 증가하였다. (3) 총당은 그 대부분이 글리코겐으로 이루어져 있음을 알 수 있었고, 글리코겐은 아미노태 질소의 함량변화와 비슷한 경향으로서 4월까지 계속 증가하였다. (4) 자즙중의 조단백질과 총당의 함량변화는 수분함량과는 역의 상관관계를 보였다.
Protein content of cellulosic wastes, such as spent grain, hop bark, spent rye, rice straw, rice hull, saw dust and used newspaper, was increased by a mixed culture of C. utilis wastes having 66-75% moisture. Among the fungal strains tested. A.phoenicis KU175 was the most powerful to increase the protein content of A. phoenicis during the mixed culture with C. utilis in the CMC medium reached at the peak for one day culture after inoculation of the both strains at the same time, while it reached at peark from the beginning of the mixed culture, when A. phoenicis was inocultated for 12-24hours prior to the inoculation of C.utilis. To increase the protein content of the cellulosic wastes by the mixed culture of C.utilis and A.phoenicis, the inoculation of both strains at the same time was more effective than the preinoculation of A. phoenicis for 6-24 hours. Content of crude cellulose in the used newspaper, saw dust and spent grain was high relatively, and the lignin content of spent grain, spent rye, and rice strew was reduced more than half by the treatment of 2% NaOH. However, effect of alkali treatment of increase the protein content of the cellulosic wastes was not prominent in the case of mixed culture. Protein content of the cellulosic wastes was increased prominently by the mixed culture of C.utilis and A.phoenicis in semi-solid substrate, compared with the single culture of C. utilis, although the latter increased the protein content of cellulosic wastes considerably. The effect of mixed culture of C. utilis and A. phoenicis increased 4-fold the protein content of spent grain, and more than doubled crude protein in hop bark and rice straw.
