Effects of Extrusion Variable on Functional and Nutritional Properties of Extruded Oat Products

  • The purpose of this research was to study the effects of initial moisture levels and extrusion temperatures on dietary fiber, nitrogen solubility index, available lysine, and the in vitro protein digestibility of extruded oat productes. The dehulled grains were ground in a Brabender quadrumat Senior mill and the coarse fraction, with higher crude protein, lipids and dietary fiber were conditioned on various mositre levels (15.5~25.5%) and extruded in a Brabender single-screw laboratory extruder. The extrudates showed a higher amount of soluble dietary fiber (8.14%) than in the raw material . However, the extrusion process affected the nutritional value of the protein due to a decrease in available lysine with increased temperature . The in vitro protein digestibility was unaffected by initial moisture levels and the extrusion temperatures examined.

A Whole Genome Association Study on Meat Quality Traits Using High Density SNP Chips in a Cross between Korean Native Pig and Landrace

  • A whole genome association (WGA) study was performed to detect significant polymorphisms for meat quality traits in an $F_2$ cross population (N = 478) that were generated with Korean native pig sires and Landrace dams in National Livestock Research Institute, Songwhan, Korea. The animals were genotyped using Illumina porcine 60k SNP beadchips, in which a set of 46,865 SNPs were available for the WGA analyses on ten carcass quality traits; live weight, crude protein, crude lipids, crude ash, water holding capacity, drip loss, shear force, CIE L, CIE a and CIE b. Phenotypes were regressed on additive and dominance effects for each SNP using a simple linear regression model, after adjusting for sex, sire and slaughter stage as fixed effects. With the significant SNPs for each trait (p<0.001), a stepwise regression procedure was applied to determine the best set of SNPs with the additive and/or dominance effects. A total of 106 SNPs, or quantitative trait loci (QTL) were detected, and about 32 to 66% of the total phenotypic variation was explained by the significant SNPs for each trait. The QTL were identified in most porcine chromosomes (SSCs), in which majority of the QTL were detected in SSCs 1, 2, 12, 13, 14 and 16. Several QTL clusters were identified on SSCs 12, 16 and 17, and a cluster of QTL influencing crude protein, crude lipid, drip loss, shear force, CIE a and CIE b were located between 20 and 29 Mb of SSC12. A pleiotropic QTL for drip loss, CIE L and CIE b was also detected on SSC16. These QTL need to be validated in commercial pig populations for genetic improvement in meat quality via marker-assisted selection.

국내산 비파 열매의 화학적 성분 분석 (Analysis of Chemical Components of Korean Loquat (Eriobotrya japonica Lindl.) Fruit)

  • 국내에서 재배 수확되는 비파나무(Eriobotrya japonica Lindl.) 열매의 가공시 기초 자료로 활용될 수 있는 기본적인 화학적 성분들을 분석하였다. 건물 기준으로 비파열매 과육과 씨의 조지질은 0.53%와 0.83%, 조단백질은 0.05%와 5.27%, 조섬유는 3.46%와 3.49%, 조회분은 3.24%와 2.78%, 당질은 92.72%와 87.63%이었다. 비파 열매 과즙의 당도는 약 $12^{\circ}Bx$, pH는 4.43,산도는 구연산으로 0.18%이었다. 과육과 씨의 $3^{\circ}Bx$추출물 유리당 조성은 프럭토스 0.77%와 0.31%, 글루코스 0.73%와 0.79%, 슈크로스 0.52%와 0.19%로 나타났으며, 씨에는 특징적으로 리보오스가 0.56% 함유되어있었다. 비파 과육의 아미노산은 글루탐산이 336.72mg%, 아스파르트산이 251.06 mg%로 가장 많이 , 리신과 아르기닌은 각각 5.26 mg%와 30.90mg%로 가장 적게 함유되어 있었다. 씨에도 글루탐산이 448.23 mg%, 아스파르트산이 335.63 mg%로 가장 많이, 히스터딘과 이소로이신은 각각 37.89mg%와 44.20mg%로 가장 적게 함유되어 있었다. 과육과 씨에는 칼륨이 전체 회분의 32627.95 mg%와 28936.28 mg%로 가장 많이 함유되어 있었으며, 비타민 A와 C는 과육과 씨에서 모두 검출되지 않았다. Chloroform-methanol (2 : 1)로 추출한 비파 씨의 지방산 조성은 palmitic acid 23.72%, stearic acid 3.81%, oleic acid 8.55%, linoleic acid 54.29% 및 linolenic acid 9.63%이었다. Silicic acid 컬럼으로 분획한 결과 중성지질 43.78%, 당지질 12.32% 및 인지질 43.90%의 조성비를 나타내었다. 각 분획들의 지방산 조성은 중성지질의 경우 palmitic acid 28.89%, stearic acid 6.80%, oleic acid 11.07%, linoleic acid 40.67% 및 linolenic acid 12.58%, 당지질의 경우 palmitic acid 13.21%, stearic acid 4.56%, oleic acid 6.53%, linoleic acid 64.92% 및 linolenic acid 10.77%, 인지질의 경우 palmitic acid 30.95%, stearic acid 3.40%, oleic acid 9.09%, linoleic acid 48.45% 및 linolenic acid 8.10%이었다.

Dietary fat preference and effects on performance of piglets at weaning

  • Objective: An experiment was to evaluate the interplay of dietary lipid sources and feeding regime in the transition from sow milk to solid food of abruptly weaned piglets. Methods: Soon after weaning, 144 piglets were selected and were trained over a 15 day period to experience gradually reducing dietary fat content from 12% to 6% for lard (L), soybean oil (S), and coconut oil (C) and their feeding behavior and diet preference then tested in a behavior observation experiment. Another 324 weaned piglets were used in three consecutive feeding experiments to measure the effect of different dietary fats on performance and feed choice in the four weeks after abrupt weaning. The lipid sources were used as supplements in a 3% crude fat corn/soya basal diet, with 6% of each being included to form diets 9C, 9S, and 9L respectively, and their effects on performance measured. Combinations of these diets were then further compared in fixed blends or free choice selection experiments. Results: Piglets pre-trained to experience reducing lipid inclusion showed different subsequent preferences according to lipid source, with a preference for lard at 9%, soybean oil at 3%, and coconut oil at 6% inclusion rate (p<0.001). Following abrupt weaning, whilst after 4 weeks those fed 9C had the heaviest body weights (18.13 kg, p = 0.006). Piglets fed a fixed 1:1 blend of 9C+9S had a poorer feed conversion ratio (FCR = 1.80) than those fed a blend of 9C+9L (FCR = 1.4). The 9C and 9L combination groups showed better performance in both fixed blend and free choice feeding regimes. Conclusion: After abrupt weaning, they still have dependence on high oleic acid lipids as found in sow milk. A feeding regime offering free choice combination of lipids might give the possibility for piglets to cope better with the transition at weaning, but further research is needed.

  • 정어리유의 고도불포화지질을 일상식생활을 통하여 효과적으로 이용하기 위하여 정제정어리건의 제조를 위한 탈산, 탈색, 탈취 등의 정제조건을 검토한 결과를 요약하면 다음과 같다. 1. 정어리유의 탄산은 알칼리처리가 효과적이었으며 2M NaOH용액을 $0.5\%$ 과잉첨가하고 $30^{\circ}C$, 30분처리가 적조건이었다. 일반적으로 행하는 인산처리는 탈검에 효과가 없었다. 2. 탈색은 산성백토만을 기름의 $5\%$정도로 첨가하고 감압하에서 $60^{\circ}C$ 20분간 처리하는 것이 가장 효락적이었다. 3. 탈취는 수증기증류가 효과적이었으며 4torr 이하로 감압하면서 $180^{\circ}C$ 이하의 온도에서 하는 것이 바람직하였고 $200^{\circ}C$ 이상에서는 현저한 요오드가의 감소와 지방산조성에 변화를 초래하였다.

  • 최근(最近) 식이성(食餌性) 섬유소(纖維素)가 인간(人間)의 질병발생(疾病發生)에 예방효과(豫防效果)가 있음이 밝혀진 바, 특히 동맥경화증(動脈硬化症)에 관련(關聯)한 cholesterol 저하효과(低下效果)를 조사(調査)하기 위하여 본(本) 실험(實驗)에서는 pectin, agar, pectin+tannic acid, tannic acid 각(各) 5%를 0.5% cholesterol 식이(食餌)에 첨가(添加)하여 Sprague-Dawley계(系) 흰쥐(male)에게 6 주간(週間) 급여(給與)하였다. 이에 흰쥐의 체중증가량(體重增加量), 소화흡수율(消化吸收率), 각종(各種) 장기(臟器) 중량(重量), 혈지(血漬)과 간장(肝臟) 및 분변(糞便)중의 지질(脂質) cholesterol함량(含量)을 측정(測定)한 결과(結果)는 다음과 같다. 1. 체중증가량(體重增加量)과 소화흡수율(消化吸收率)은 5% tannic acid 첨가군(添加群)만이 유의(有意)하게 낮았다. 2. 각종(各種) 장기(臟器)의 중량(重量)에서 간장(肝臟) 비장(脾臟)은 유의성(有意性)이 없었으며 신장(腎臟)은 PEC, AA군(群)에서 감소(減少)하였고, 심장(心臟)은 basal군(群), 폐장(肺臟)은 basal+chol 군(群)에서 유의(有意)하게 증가(增加) 하였다. 3. 혈청(血淸)중 GOT, GPT는 0.5% cholesterol 첨가군(添加群) (basal+chol.)만이 현저하게 높았으며 PEC 군(群)에서 유의(有意)하게 감소(減少)하였다. Total protein은 basal+chol. 만이 유의(有意)하게 높았으나 albumin, A/G ratio는 유의성(有意性)이 없었다. 4. 혈청(血淸)중 tolal lipid와 cholesterol 함량(含量)에는 유의성(有意性)이 나타나지 않은 반면, 간장(肝臟)중 조지질(粗脂質) 및 sterol 함량(含量)은 PEC 군(群)만이 유의(有意)하게 증가(增加)하였다.

Chemical and Fatty Acid Composition of Longissimus Muscle of Crossbred Bulls Finished in Feedlot

  • This work was carried out to study the chemical and fatty acid composition of Longissimus muscle (LM) of crossbred young bulls finished in a feedlot. After weaning (at 8 months old), the bulls were kept in a feedlot for 180 days. The bulls were kept in individual pens and fed (twice daily) with corn silage, soybean hulls, cracked corn, limestone, urea and mineral salt. The bulls were slaughtered with a final weight of 464 kg. Forty bulls were used: 10 Caracu (CAR), 10 Canchim (CAN), 10 Caracu vs. Charolais (CCH) and 10 Canchim vs. Aberdeen Angus (CAA). The percentages of moisture, ash, crude protein, total lipids, as well as the fatty acid composition, were measured in the LM. The moisture percentage was lower (p<0.05) for bulls from CAA genetic group (71.2%) in comparison to bulls from CAR (74.2%), CAN (74.9%) and CCH (74.7%) genetic groups. On the other hand, there was no difference (p>0.05) among bulls from CAR, CAN and CCH genetic groups. Ash percentage was lower (p<0.05) for CAR bulls (0.96%) in comparison with the other genetic groups. There was no difference (p>0.05) among CAN, CCH and CAA genetic groups. Similarly, there was no difference (p>0.05) in crude protein among the different genetic groups. Total lipids percentage was higher (p<0.05) for CAA bulls (5.35%) and lower (p<0.05) for CAN (1.85%) and CCH (1.41%) genetic groups. Genetic group has little effect on the fatty acid composition of Longissimus muscle of bulls. However, CLA (C 18:2 c-9 t-11) percentage was higher (p<0.05) for CAR (0.33%) and CCH (0.37%) in comparison to CAN (0.27%) and CAA (0.29%) genetic groups. Saturated, monounsaturated and polyunsaturated fatty acids, n-6 and n-3 percentages did not differ (p>0.05) among genetic groups. PUFA/SFA ratio ranged from 0.10 to 0.15, with no difference (p>0.05) among genetic groups. Similarly, n-6/n-3 ratio ranged from 12.6 to 16.3, without difference (p>0.05) among genetic groups.

앵두(Prunus Tomentosa Thunberg)씨의 지방질 조성 및 단백질 패턴 (Lipid Composition and Protein Pattern of Prunus Tomentosa Thunberg Seed)

  • 비이용 자원의 효율적인 이용의 가능성을 검토하기 위하여 앵두씨의 지방질 조성 및 단백질 패턴을 분석한 결과는 다음과 같다. 일반성분 중 조지방질과 조단백질의 함량은 각각 40.38% 및 26.59%였다 앵두씨의 지방질은 중성지방질이 95.4%인 반면에 복합지방질은 4.51%에 불과하였으며, 중성지방질의 성분으로는 트리-글리세리드가 89.86%로서 대부분이었고. 스테롤 4.14%. 모노-글리세리드 2.98%, 스테롤 에스테르 1.77%. 유리지방산 1.07% 및 디 -글리세리드 0.18% 였다. 지방산 조성은 총 지방질, 중성지방절 및 트리 글리세리드에서 올레산(65.06$\sim$66.05%)와 리놀레산(26.56$\sim$28.40%)이 주된 구성 지방산이었고, 당지방질파 인지방질의 경우에는 올FP산(40.55$\sim$51.46%)의 함량이 다른 획분의 함량에 비해 적은 반면, 팔미트산(17.64$\sim$21.43%)과 스테아르산(4.14$\sim$8.07%) 의 함량이 높았으며, 소량의 라오르산도 함유되어 있었다. 염용해성 단백질의 추출율은 약 60%였으며, 분획된 주단백질의 수득율은 약 46.5% 였고 전기영동 결과 7개의 밴드가 확인되었다.

진주담치 Mytilus edulis의 성분에 관한 연구 (STUDIES ON THE VARIATION IN CHEMICAL CONSTITUENTS OF THE SEA MUSSEL, MYTILUS EDULIS)

  • 경남 충무 북만산 진주담치 Mytilus edulis에 대하여 3월에서 12월까지 매월 2회씩 화학성분 조사를 실시한 바 그 결과를 요약하면 다음과 같다. 1. 수분 함량은 $5\~6$ 월간이 $81.3\%$로 약간 증가 현상을 나타내었고 평균치는 $78.5\%$였다. 2. 조단백질은 9-10월중에 최대치인 $13.7\%$를 나타내었으며 평균치는 $12.0\%$인바 큰 변화를 찾아볼 수 없고, 굴 또는 다른 조개류에 비하면 그 함량이 많음을 알 수 있었다. 3. 지질은 평균 $2.5\%$로 계절에 따른 변화는 거의 없었다. 4. 당질은 $9\~10$월중에 최대치가 약 $5\%$까지 도달하였으며 평균치는 $4.3\%$로서 다른 패류에 비해서 많은 편이다. 5. 조회분은 평균치 $1.5\%$$11\~12$월중에 최대치인 $2\%$ 내외를 나타내었고 인산염은 평균 $963mg\%$, 철분은 $188mg\%$, 칼슘은 $82mg\%$로서 다른 어패류에비하면 풍부한 무기질을 함유하고 있었다. 6. pH는 6.02-6.55 사이에서 큰 변화가 없었으나 겨울철이 여름철보다 조금 높았다. 7. 구성 아미노산중 특히 함량이 많은 것은 Glutamic acid, Aspartic arid, Lysine, Glycine의 순이었고 비교적 함량이 적은 것은 Valine, Proline, Arginine, Alanine, Leucine, Threonine, Serine, Isoleucine, Histidine, Tyrosine, Phenylalanine, Methionine의 순이었다. 8. 우리나라 진주담치는 9월을 정점으로 하여 $8\~10$월에 가장 영양 성분이 풍부함을 알았다.

홍삼의 법제유황 처리가 당뇨쥐의 혈중지질 및 대사지표물질에 미치는 영향 (Effect of Red Ginseng with Processed Sulfur Extracts on Serum Lipids Concentration and Metabolic Variables in Diabetic Rats)

  • Objectives : The purpose of this study was to evaluate effects of processed sulfur with red ginseng on streptozotocin(STZ) induced diabetic rats for expansion of processed sulfur internal application. Methods : We prepared red ginseng with non processed sulfur extracts(GS), red ginseng with processed sulfur I extracts(GPS I) and red ginseng with processed sulfur II extracts(GPS II). In the present study, we examined about contents of crdue saponin, antioxidant activity, $\alpha$-glucosidase inhibitory activity, and effects of STZ induced diabetic rats. Results : Contents of crude saponin increased by processed sulfur, and GPS II was shown highest contents in crude saponin and sulfur compared with another groups. Electron donating ability of GPS II was shown highest activity compared with GS and GPS I, SOD-like activity showed same tendency as electron donating ability at 1 $mg/m\ell$ concentration. Inhibitory activity of $\alpha$-glucosidase was approximately same level in acarbose and GPS II. Blood glucose level of GPS II group was decreased 18.34% compared with DC(diabetes control) group and maintained stability range in glucose level. but GS and GPS I showed high level compared to GPS II. Serum triglycerides concentration also showed lowest level in GPS II. The activity of ALT, AST and ALP was shown high level in diabetic induced groups, and lowest level in GPS II. Creatinine was shown non-significantly difference in each groups and GPS II was shown lowest level in BUN. Conclusions : These results suggested that processed sulfur with red ginseng have improvement effects on diabetes and internal application of processed sulfur with red ginseng have no specific toxicity in liver and kidney.
