Studies on physiological functionality proposal of Coriolus versicolor(Fr.)Quel and Ganoderma Lucidum (Fr.)Karst (구름버섯과 영지버섯의 기능성에 관한 연구)

  • The purpose of this study was to investigate the physiological functionality of Coriolus versicolor Quel (CV) and Ganoderma IUCIdum (Fr.)Karst (GL) by estimate the proximate composition and content of antioxidant components. 1. In the physicochemical property. the content of proximate composition of GL was higher 08.28% of moisture, 10.3% of crude protein, 78.4% of crude fiber) than that of CV, but the content of crude lipid and ashes of GL was higher than that of CV. 2. CV had relatively higher content of antioxidant components such as total phenol, carotenoids and v itamin C. than GL did. Antioxidant mineral components such as magnesium and zinc also had relatively higher in CV than in GL. 3. TBA value, conjugated diene production, LDL oxidation, DPPH of methanol extracts in CV and GL were as high as a-Tocopherol.

The Sensory Characteristics of Brown Sauce by Adding Different Ratios of Jubak (주박을 첨가한 브라운 소스의 관능적 특성)

  • The purpose of this study was to investigate the sensory characteristics of brown sauce made with different ratios of Jubak. In the brown sauce made from Jubak, the followings showed changes according to the amount of Jubak. The content of crude lipid increased, that of crude protein and moisture decreased, and that of crude ash and reduced sugar increased. Brown sauce made from Jubak contained more reduced sugar than general brown sauce, and the content of reduced sugar increased. pH increased from initial pH 4.32 to 5.42 respectively, and viscosity increased. The "L" value expressing brightness of samples had a tendency to increase with Jubak added. "a" value had a tendency to increase in case of no Jubak added, and "b" value had a tendency to decrease according to the amount of Jubak. In the sensory evaluation, color and flavor decreased and viscosity increased with the amount of Jubak. Overall, it was the highest in 0% Jubak. From the above results, an addition of 25% Jubak to brown sauce is recommended for commercial use.

Quality Characteristics of Tofu Prepared with Boehmeria nivea Powder (모시잎 분말을 첨가한 두부의 품질 특성)

  • This study investigated the quality characteristics of tofu prepared with Boehmeria nivea powder. Moisture, crude ash, carbohydrate, crude protein and crude lipid contents were 7.71%, 20.09%, 39.01%, 31.25% and 0.93%, respectively. The yield of tofu added with BNP increased with addition of BNP, However, there was a significant decrease in pH as well as a significant increase in total acidity. In addition, L, a and b values of tofu decreased with increasing content of BNP. In terms of textural properties, hardness, chewiness and brittleness increased, whereas springiness and cohesiveness decreased, with increasing addition of BNP. In the sensory evaluation, overall preference for tofu added with 0.6% BNP was the highest. According to the results, addition of BNP positively affects the overall sensory evaluation of tofu, and 0.6% is the optimal level.

Quality Characteristics of Fish Paste Containing Lagocephalus lunaris Powder (복어 분말 첨가가 어묵의 품질에 미치는 영향)

  • This study analyzed fish paste containing Lagocephalus lunaris powder (LLP). The moisture, crude ash, crude protein, and crude lipid content of LLP were 6.21%, 1.03%, 74.50%, and 1.21% respectively. The tested concentrations of LLP were 0, 3, 5, and 7%. The pH of the samples ranged from 6.75 to 6.89, and moisture content ranged from 75.23% to 76.95%. The L values of the samples decreased as the concentrations of LLP decreased, and the a and b values increased. In addition, the folding test results in all test samples were "AA", indicating a good mean flexibility. In the texture meter test, the hardness, strength, springiness, gumminess, and chewiness increased according to increasing concentrations of LLP. In the sensory evaluation, the fish paste prepared with 5% LLP were preferred over other fish pastes. These results suggest that LLP can be applied to fish paste for substantially increasing its quality and functionality.

  • Yam, Dioscorea batatas Decne (Dioscoreaceae) is a plant growing in Korea. Dioscoreae Rhizoma in the markets are classified into natural and cultural ones. These studies were conducted to investigate the differencies between natural and cultural Yams by characteristics of morphology, cell contents, chemical components and physical properties. More mucilage cells which contain calcium-oxalate raphides were contained in cultural Yam than natural Yam. However, the amount of crude protein, crude lipid and mucilage viscosity, swelling, gelatinization of polysaccharides were greater in natural Yam than the other. It is suggested that natural Yam is excellent as nutrition agent in quality and worthwhile as a resource of crude drugs.

Comparative Analysis of Physico-chemical Characteristics in Two Goji of Lycium barbarum L. and L. ruthenicum Murr. (붉은 열매 구기자와 검은 열매 구기자의 이화학적 특성 비교 연구)

  • Purpose: Lycium ruthenicum Murr. is a nutritional food that has been used widely for treatment of heart disease, abnormal menstruation, and menopause. Methods: In this study, the crude protein, crude lipid and crude ash contents of two different Lycii fruits with different colors were investigated, and their color values, total sugar, pH, total anthocyanins and total carotenoids were analyzed. Results: Regarding crude ash, crude fat and crude protein contents, the L. barbarum showed higher in crude fat and crude protein contents than black fruits, whereas L. ruthenicum showed higher contents than black fruits. Regarding mineral composition, mineral contents were in the other of K, Mg, Mn, Na, Zn, and Fe. The K content was high in all of the samples, and the contents of Cr and Cu were not measured. The pH values of L. ruthenicum and L. barbarum were $5.00{\pm}0.01$ and $5.08{\pm}0.02$, respectively. The total sugar content of L. ruthenicum was 45.45% while that of L. barbarum was 45.43%. Ascorbic acid content of L. barbarum was $50.86{\pm}3.63%$ while that of L. ruthenicum was $6.3{\pm}1.40%$. The total anthocyanin content of L. ruthenicum was $462.22{\pm}0.41mg/100g$, although no anthocyanin was detected in L. barbarum. The total carotenoids content was $812.25{\pm}6.01mg/100g$ in L. barbarum, although that of L. ruthenicum was not measured. Conclusion: The results from this study indicate that there is a large difference in the composition of functional ingredients of L. ruthenicum and L. barbarum. There is a strong possibility of L. ruthenicum to be developed into color food sources.

Influences of Gamma Ray Radiation Doses on Fatty Acid Contents in Ginseng (감마선 조사선양이 인삼의 지방산 함량에 미치는 영향)

  • In order to investigate the influence of gamma-irradiation on fatty acids in ginseng, ginseng were irradiated with various radiation doses(0-50 Mrads). The results are as follows. 1. With increasing dose, standard fatty acids were decreased in the order of linolenic acid, linoleic acid and oleic acid, and their contents in the presence of oxygen were decreased more t than that in the absence of oxygen. 2. Changes of lipid content in white ginseng by gamma irradiation were varied with the samples, but the changes of crude lipid and purified lipid in a sample were showed same fashion. 3. The fatty acid contents in white ginseng were decreased by gamma irradiation in the order of linolenic acid, linoleic acid, oleic acid, stearic acid and palmitic acid.

  • Direct starch-utilizing microorganisms were isolated from 50 samples. Among them, Y-5 strain was selected as one of the potential microorganisms which could utilize starch directly to produce protein or lipid as food resources. The Y-5 strain was identified as a strain of Sporobolomyces holsaticus. It grew on starch or inulin better than on glucose of fructose and its composition was 45% of crude protein, 16% of crude lipid and 9.2% of ash.

Changes in physicochemical and microbiological properties of isoflavone-treated dry-cured sausage from sulfur-fed pork during storage

  • This study was performed to investigate the physicochemical and microbiological properties of isoflavone-treated dry cured sausage from sulfur fed pork (0.3%) during storage at $15^{\circ}C$ for 45 days. Groups were divided into three treatments: dry-cured sausages produced with pork fed general diet as the control group (CON), sulfur-fed pork (SUL) and isoflavone-(0.25%) treated sulfur-fed pork (ISO). Moisture content in all groups decreased dramatically from 55-57% to 10-11% during storage, whereas crude protein, crude fat, and ash content increased (P < 0.05). The ISO group showed excellent antioxidant effect compared to CON during storage. Redness and lightness of ISO was higher than that of CON during storage. VBN in the ISO group was significantly lower than that in the CON and SUL treatments during 30 and 45 days of storage (P < 0.05). A total plate count of ISO was significantly lower than that of CON at 45 days (P < 0.05). In this study, adding isoflavone to meat products indicated prevention of lipid oxidation and improved color stability in meat products.

Effects of Feeding Frequency and Satiation Rate on the Growth and Body Composition of Red- and White-colored Carp, Cyprinus carpio var. koi (사료 공급 횟수 및 만복 공급율이 비단잉어 홍백치어의 성장 및 체조성에 미치는 영향)

  • We investigated the proper feeding frequency and satiation rate for the growth of red- and white-colored carp fingerlings in a feeding experiment. Triplicate groups of fish averaging 6.3 g were fed diets at four feeding frequencies (1, 2, 3, or 4 meals a day) and two satiation rates (satiation and 80% satiation) for 6 weeks. The survival of the fish was not affected by either the feeding frequency or the satiation rate. The weight gain, feed efficiency, and protein efficiency ratio of fish were affected by the feeding frequency and satiation rate, and increased significantly with both. The feed efficiency and protein efficiency ratio with satiation feeding of fish fed four meals a day did not differ from those of fish fed three meals a day. The daily feed intake was affected by the feeding frequency and satiation rate. The moisture, crude lipid, and ash contents of whole body were affected by the feeding frequency. Moisture and crude lipid contents were affected by feeding satiation. Based on these results, we conclude that the proper feeding frequency and satiation rate for the optimum growth of red- and white-colored carp fingerlings is four meals a day with satiation feeding.
