Purpose: The properties of starch and starch gel prepared from a newly inbred sweet potato, Daeyumi were compared to the properties of starch and starch gel prepared from Sinyulmi which is a well known mealy type sweet potato. Methods: The starch was isolated by using the alkaline steeping method. Physicochemical, pasting, and thermal properties, and crystallinity were measured. The texture properties of starch gel (10%, w/w) were examined. Results: The amylose contents of Daeyumi and Sinyulmi starches were 25.57% and 22.59%, respectively. The initial pasting temperature of Daeyumi starch was significantly higher than that of Sinyulmi starch (p<0.05), but other paste viscosities were not different. The peak and conclusion temperatures of Daeyumi starch were higher than those of Sinyulmi starch by differential scanning calorimetry. The shape of Daeyumi starch gel was more clear and rigid than the shape of Sinyulmi starch gel. The surface and the upper side of Daeyumi starch gel were smoother than the surface and the upper side of Sinyulmi starch gel. Hardness and gumminess were higher in Daeyumi starch gel than in Sinyulmi starch gel. The crystallinity types of Daeyumi and Sinyulmi starches were $C_b$ and A types, respectively, but starch gels showed an amorphous type. Conclusion: Therefore, it is suggested that Daeyumi starch would have better physicochemical properties and higher quality of starch gel than Sinyulmi starch.
Purpose: Physicochemical and microbiological qualities were investigated to compare quality characteristics of traditional with commercial soy sauce (Ganjang). Methods: Nineteen traditional products were collected from six provinces and three commercial products were purchased in domestic markets. The proximate composition, inorganic substance contents, viable bacteria, and chromaticity of the soy sauces were measured. Results: Although concentrations of crude fat and protein were not significantly different between traditional and commercial Ganjang, the moisture concentration of commercial soy sauce was significantly higher than in traditional Ganjang (p<0.05). However, the amount of ash in commercial soy sauce was significantly lower than in traditional Ganjang (p<0.05). Total nitrogen concentrations of traditional and commercial Ganjang were 0.50-1.59% and 0.86-1.26%, respectively. Concentrations of Na, Mg, K, Ca, Li, B, Fe, and Sr in traditional Ganjang were significantly higher than in the commercial products (p<0.05). The number of total bacteria in traditional and commercial Ganjang were $3.3{\times}10^1-6.4{\times}10^7CFU/mL$ and $5.5{\times}10^1-2.0{\times}10^3CFU/mL$, respectively. Bacillus cereus were below 10,000 CFU/mL in all samples, and Staphylococcus aureus was not detected. Fungi was not detected in 13 samples of traditional Ganjang and the three samples of commercial soy sauce. Although lightness, redness, and yellowness were not significantly different among the Ganjang, G10 was had the highest values (p<0.05). Conclusion: This research provided information about the quality characteristics of traditional and commercial Ganjang.
Purpose: The aim of this study was to investigate the effects of various leaf powders on chocolate by analyzing quality characteristics, antioxidant activities, and sensory characteristics. Methods: Pine needles, mulberry leaves, ramie leaves, barley leaves, and squash leaves were freeze-dried, powdered, and added to the chocolate. Results: Water contents of all leaf powder-added groups were significantly higher than that of the control (15.78%). The pH values of chocolate with leaf powder were lower than that of the control (6.33) while that of mulberry leaf chocolate (6.56) was higher than that of the control. In color measurement, L-value, a-value, and b-value were highest in pine needle chocolate (30.31, 3.52, and 4.78, respectively). The ${\Delta}E$ value (total color difference compared to white board) was the highest in squash leaf chocolate (69.51) and significantly different from that of the control (67.69). The hardness of leaf powder-added chocolate was lower than that of the control (6.84 N), except for pine needles. In the antioxidant activity analysis, chocolate with pine needles and squash leaves had higher polyphenols, flavonoids, and ABTS radical scavenging antioxidant activity than those of the control. Overall consumer acceptability was the most preferred in the control compared to the other groups. However, chocolate with mulberry and barley leaves also received high scores (5.60 and 5.40, respectively) for overall acceptability. Conclusion: It can be concluded that chocolate with barley leaves is desirable for making functional chocolate due to its high consumer preference and positive effects on improving antioxidant activities.
Asparagus, which was known to be a good source of dietary fiber and vitamins, has been reported to possess various medical actions such as antioxidant and blood pressure regulating effects. In order to examine the quality and antioxidant characteristics of asparagus, asparagus sponge cakes were prepared with different ratios of freeze dried asparagus powder (0%, 2%, 4%, 6%, 8%, w/w) in this study. With the increase of asparagus powder content in the sponge cakes, the specific gravity and baking loss increased while the dough yield decreased significantly. The moisture contents of the sponge cakes were not significantly different between the control and the cakes prepared with asparagus powder. The pH of the sponge cakes decreased significantly with increased amounts of asparagus powder. Furthermore, the pH of the sponge cake containing 8% asparagus powder was the lowest at 7.49. With the increase of asparagus powder content in the sponge cakes, lightness (L) and redness (a) decreased, whereas yellowness (b) increased. In texture analysis, the hardness and chewiness of the sponge cakes increased as the asparagus powder content increased, while the cohesiveness of the sponge cakes with asparagus powder decreased. Both total polyphenol content and DPPH (1,1-diphenyl-2-picryl hydrazyl) radical scavenging activity increased significantly with increased levels of asparagus powder content in the sponge cakes. In a sensory evaluation using a scale of 1-7, the sponge cake containing 8% asparagus powder had the lowest sensory preference scores. Therefore, the results of this study suggest that sponge cake prepared with 6% asparagus powder is the most appropriate product for quality characteristics.
This study investigated changes in the chemical properties and antioxidant activity of dried shredded radish (Raphanus sativus L.). Shredded radishes with a thickness of either 3.5 mm or 7.0 mm were dried using hot air at $45^{\circ}C$ or were sun dried. The degree of browning for the 3.5 mm sun dried radish, the 7.0 mm sun dried radish, the 3.5 mm hot air dried radish and the 7.0 mm hot air dried radish was 0.12, 0.14, 0.04 and 0.04, respectively. The DPPH radical scavenging activity (EDA%) of the hot air dried radish had a higher value than the sun dried radish. In contrast, the ABTS values of the sun dried radishes were higher than the hot air dried radishes. The total polyphenol content of the 7.0 mm and 3.5 mm hot air dried radishes reached high values of 15.99 and 11.62 mg/g, respectively. The total polyphenol contents of the 7.0 mm and 3.5 mm sun dried radishes were 9.63 and 6.77 mg/g, respectively. In sensory evaluation of the stir-fry dried shredded radishes, the 7.0 mm hot air dried sample scored the highest in terms of smell, color, gloss and overall preference. In conclusion, hot air drying ($45^{\circ}C$) and a thickness of 7.0 mm were found to be the optimal conditions for dried shredded radish and stir-fried dried shredded radish products.
Gelatinization properties and the molecular structure of Korean waxy rice starchesisolated from two japonica types, Sinseonchal, and Dongjinchal, as well as an indica type, Hangangchal 1 were investigated. Sinseonchal is preferred cultivar for making Korean traditional rice cakes and cookies. Sinseonchal starch was the highest in crude protein, amylopectin, damaged starch contents, and water binding capacity among the cultivars tested. The initial pasting temperature ($72.75^{\circ}C$), peak (360.54 RVU), breakdown (162.21 RVU) and setback (30.83 RVU) viscosities of Sinseonchal had the highest values (p<0.05). Onset and peak temperatures by differential scanning calorimeter were also the highest in Sinseonchal. The molecular weight of Sinseonchal amylopectin was 5.46 107higher than those of the other cultivars, but its peak height and area were the lowest among them. The amylopectin peak by HPSEC showed a shoulder in the lower molecular weight portion and its relative area decreased in the following order; Sinseonchal > Dongjinchal > Hangangchal 1. On the branch chain length distribution of amylopectin, the proportion of DP13-24 and DP25-36 showed reverse trends, with higher japonica type amylopectin in DP13-24.
The present study was conducted to supply more scientific information for standardization of preparation method of Gyungdan and to determine the standard for manufacturing procedure adapted with mechanically impacting technology (MIT) for mass production. The optimum preparation condition for non-waxy Gyungdan adapted with MIT was 35% of water, 0.5% of wheat flour (w/w of soaked rice), and mechanically impacting for 10 min at 450 rpm. In the present study, standardization of manufacturing procedure for merchandizing of Gyungdan was established with width, weight, and height. Average of Gyungdan adapted with MIT at 90 rpm (stuffing speed) and 46.58 Herz (cutting speed) is 18.3 g of weight, 28.4 mm of height, and 32.4 mm of width. Hardness, as a main parameter of texture profile, of Gyungdan was maintained lower than 100 g up to 3 days at the storage of $20^{\circ}C$ and up to 70 days at the storage of $-20^{\circ}C$. And, it was performed to develop rice cake as meal-replacement adapted with MIT and sub-ingredients such as strawberry, pumpkin, and mugwort. Gyungdan prepared under controlling manufacturing condition of MIT was supplemented with 0-1.6% of sub-ingredients, respectively. In sensory tests, the best substitute ratios of strawberry, pumpkin, and mugwort were 1.6%, 0.8%, and 1.6%, respectively. With the results above, not-harden Gyungdan supplemented with sub-ingredients and various stuffs can be expected to application for wheat-substitute meal-replacement.
본 연구는 영양학적으로 우수한 혈액을 활용한 식육제품의 품질 특성에 미치는 영향을 규명하여 혈액 소시지를 개발하고자 실시하였다. 수분함량, 명도, 적색도, 황색도, 지질 산패도, 응집성, 검성 및 씹음성은 혈액 첨가량이 증가함에 따라 감소하는 경향을 보였으나, 단백질 함량, 지방 함량, 회분 함량, 휘발성 염기태질소 함량은 혈액 첨가량에 따라서 유의적인 차이를 보이지 않았다. 경도 및 탄력성은 혈액을 20% 첨가한 처리구가 다른 처리구들에 비하여 높은 수치를 나타내었다. 또한 혈액을 20% 첨가한 처리구가 전체적인 기호도에서 가장 높은 점수를 받았으며, 색, 풍미, 연도 및 다즙성에서도 혈액을 20%첨가한 처리구가 우수한 평가를 받은 것으로 보여진다. 따라서, 활용도가 낮은 돈육 부산물 중 혈액을 활용하여 혈액 소시지를 제조할 시 혈액의 첨가량이 20%로 하는 것이 혈액 소시지의 품질 및 관능적으로 우수한 혈액 소시지를 제조할 수 있을 것으로 보여진다.
본 연구에서는 난백분말과 카제인에 당(포도당, 과당, 유당)을 첨가하고 젖산균(Lactobacillus)으로 발효 시키면서 첨가된 당이 젖산균의 산생성과 생육, 요구르트의 관능성 및 휘발성 향기 성분에 미치는 영향을 조사하였다. 난백분말 2%(W/V)와 카제인 3%(W/V)에 당 0.5, 1 또는 2% (W/V)를 첨가하고 L. acidophilus로 발효하여 만든 시료에서 젖산균의 산생성은 우유 시료(대조군)보다 낮았으며, 포도당과 과당은 1%와 2% 가 0.5%보다 생산성이 높았으나, 유당은 당 농도에 의 하여 차이를 보이지 않았다. 한편 L. acidophilus의 생균수는 우유 시료가 24시간 발효 후에 3.6$\times$$10^{9}$인데 비하여, 2%(W/V) 포도당 또는 과당을 첨가한 시료는 5.6-6.0X$10^{8}$으로 낮았으며, 유당 첨가 시료는 3.2$\times$$10^{7}$ 으로 가장 낮았다. 우유 시료와 당 첨가 시료를 L.acidophilus로 30시간 발효시키면서 산생성과 생육을 관찰했을 때, 전 실험 시간에 걸쳐서 우유 시료의 산생성과 생균수가 높았다. 관능검사의 결과(L. acido-philus 16.5hr.발효)를 보면 우유 시료(표준시료)보다 과당 첨가 시료는 다소 우수하였으나, 유당 첨가 시료는 현저하게 저조하였다. L. acidophilus는 시료에 따라서 다소 차이는 있으나 발효 과정에 acetone, ethanol, diacetyl, acetoin을 생성하였다.
증편 반죽에서 일어나는 일련의 이화학적 성질의 변화간의 연관성과 발효시 증편 반죽의 이화학직 성질의 차이가 증편 제조 후 저장 중의 품질 변화에 미치는 영향을 연구한 결과는 요약하면 다음과 같다. 증편 반죽의 pH는 발효가 진행되면서 PH 5.96∼4:36 사이에서 계속 감소하였다. 설탕첨가군의 경우 그렇지 않은 군보다 pH 변화가 완만했으나 유의적인 차이는 없었다. 증편 반죽의 부피는 발효시간에 따라 증가했으며 발효가 반복될수록 최대 부피에 도달하는 시간이 짧아졌으며 최대 부피는 커졌다. 평균 부피는 콩물을 첨가한 군이 대조군에 비해 유의적으로 컷다(p<.05). 반죽의 점도는 발효초기에 감소하였다가 콩물 첨가군의 경우 발효 2시간 이후 급격히 증가하였으며 대조군의 경우 1차 발효 후부터 급격히 증가하였다. 반죽내의 환원당량은 설탕 총 첨가량의 1/2만 처음부터 넣은 군의 경우, 완만한 증가를 보이다가 감소하였고, 2차 발효후 다시 증가하였다. 대조군의 경우, 1차 발효시까지는 증가하였고 1차 발효 후 다시 감소하였다. 환원당량의 변화양상은 설탕 총 첨가량의 1/2만 처음부터 넣은 군과 대조군 사이에서 유의한 차이를 보였다(p < .05). 관능검사를 통한 증편의 저장시 품질의 변화를 연구한 결과 저장기간에 따라 모든 군의 경도는 증가하였고 부드러운 정도, 탄력성, 촉촉한 정도, 전체적인 수응도 등은 감소하였다. 그러나 콩물을 첨가한 군은 그렇지 않은 군보다, 또한 설탕 총 첨가량의 1/2만 처음에 첨가한 군은 그렇지 않은 군보다 이러한 변화가 서서히 일어났다. QTS로 texture를 측정한 결과 저장기간에 따라 경도, 검성, 씹힘성은 증가했으며 부착성은 감소하였다. 이러한 변화는 콩물을 첨가한 군에서그렇지 않은 군보다 서서히 일어났다.
