This research analyzed the characteristics of varieties of rice such as a harvest time and yield, and to select a proper variety to product green rice according to a conventional planting culture and a late planting culture. The most proper harvest time of rice, in general, was 15 to 25 days after heading to product the green rice. Sinsunchal among glutinous rice varieties and Chilbo among nonglutinous rice varieties showed the most amount harvest at 25 days after heading, which was a limit harvest time for the whole green rice production in overall rice varieties. The amount of green rice according to transplanting times, the May $30^{th}$ transplanting was more than the June $20^{th}$. The yield of green rice harvested at 15~25 days after heading was varied according to varieties. Proper glutinous varieties for green rice production were Dongjinchal, Sangdongchal, Boseokchal, and Sinsunchal, in order of listed, which were transplanted at the May $30^{th}$. Meanwhile, Boseokchal, Backokchal, and Sinsunchal, in order of listed, were proper varieties for green rice production, which were transplanted at the June $20^{th}$. In nonglutinous rice, Samkwang, Nunbora, and Chilbo, which were transplanted at the May $30^{th}$, were proper varieties for green rice production. Hwanggeomnodeul, Hopum, and Chilbo, which were transplanted at the June $20^{th}$, were proper varieties for green rice production.
The applicability of near infrared reflectance spectroscopy (NIRS) to determine moisture, protein, fat and amylose content of domestic rice was studied. The standard error of prediction (SEP) of moisture, protein, fat and amylose in polished rice was 0.014, 0.196, 0.098 and 1.427%, and those SEP of brown rice was 0.12, 1.226, 0.153 and 1.923%, respectively. It is concluded that the NIRS method allowed to detect the content of moisture and protein in rice samples with fair precision comparing conventional analysis, but the accuracy for determining amylose and fat was not acceptable.
Flexural rigidity(EI) and deflection characteristics of rice stalks were studied to investigate the mechanical interaction between a rice stalk and a combine reel in harvesting. Deflection of a rice stalk caused by reel operation is so large that conventional equation of small deflection fer elastic beam cannot be applied to the study of deflection characteristics. Therefore, an equation of large deflection for elastic beam was introduced in this study. Feasibility of this equation was examined by comparing theoretical calculation with the measured results for piano wire, and by the relationship between deflection and load acting on a rice stalk which was presumed by this equation. Results showed that the large deflection equation could predict the measurement data quite well. From this research, the following results were obtained. 1. Flexural rigidity(EI) calculated from the equation of large deflection was 4.0${\times}$l0$^4$N$.$$\textrm{mm}^2$(diameter 1.4mm, deflection 300mm) while the actual EI value of a piano wire(diameter 1.4mm) was 3.9${\times}$10$^4$N$.$$\textrm{mm}^2$. 2. The relationship between deflection and load acting on a rice stalk could be presumed by the large deflection equation. Flexural rigidity values of tested rice stalks calculated from the equation of large deflection were 1.6∼2.4${\times}$ l0$^4$N$.$$\textrm{mm}^2$(Hwa sung), 2.7∼3.5${\times}$ l0$^4$N$.$$\textrm{mm}^2$(Il pum) and 1.7∼2.4${\times}$ l0$^4$N$.$$\textrm{mm}^2$(Damakum)

Quick cooking rice was produced by cooking raw, white long grain rice with three different methods which were atmospheric cooking in electric cooker, autoclaving and precooking followed by autoclaving. The drying rate curve showed that cooking methods affected little the drying pattern of the cooked rice except that precooking treatment before autoclaving retarded dehydration. The quick cooking rice prepared by precooking and autoclaving method among three cooking methods showed the fastest rehydration rate and took 7.5 minutes in reaching equilibrium moisture content by soaking in boiling water. And it had less hard and more cohesive texture than the milled rice cooked by conventional method and the quick cooking rice prepared by electric cooking when reconstituted. The microstructure of quick cooking rice was investigated among cooking methods.
Abundant proteins often cause problems in proteome study. Glutelin family proteins (hereafter referred to glutelin) are present in rice proteome sample as over-whelming constituents with very high abundance. In order to increase the number of identified proteins in rice proteome study, we developed a newly improved method for sample preparation through the removal of glutelin. When the protein samples from rice seed were extracted by the conventional trichloroacetic acid (TCA) extraction method, glutelin accounts for about 60% of total rice seed proteins in SDS gels. Using our new water extraction method, glutelin consists of only about 10% of total proteins. After analyzing on a two-dimensional gel electrophoresis (2-DE), 937 protein spots were detected using the conventional TCA extraction method. On the other hand, 1240 proteins could be seen using the new water extraction method. The selectivity for non-glutelin and less abundant protein by the water extraction method was also confirmed by ESI-Q/TOF mass spectrometry analysis. Thus, the new water extraction method developed here can be efficiently used to study the proteome analysis of rice storage seed.
Salinity problems are caused from the accumulation of soluble salts in the root zone. These excess salts reduce plant growth and vigor by altering water uptake and causing ion-specific toxicities or imbalances. In this investigation, green pepper cultivation technique using mixture bed of soil and rice hull and surface drop fertigation system was examined to prolong the productivity of salt-affected plastic film house soils. Green pepper growth was better in the mixture bed of soil and rice hull comparing to the conventional soil cultivation. Especially root growth was much better and the root had more thin root system in the mixture bed of soil and rice hull. The better growth of root may be due to the better physical conditions and lower EC in the mixture bed of soil and rice hull where nutrient supply was well-managed with fertigation system. In the cultivation with mixture bed of soil and rice hull, fruit yield of green pepper was significantly higher; increased by 43% in comparison to the conventional soil cultivation. Pepper cultivation technique using mixture bed of soil and rice hull and surface drop fertigation system is expected to be a useful method for maintaining and prolonging the productivity of salt-affected plastic film house soils.
The milling process is considered as causing one of the greatest grain losses among all the processes in rice post-production. Major source of grain losses in the rice milling is considered as the whitening process. This study was attempted to develop an abrasive-type whitener, the whitening chamber of which being supplied by jet-air evenly and continuously. To investigate the milling performance by the new whitener, three kind of emery-stone grit(#36, #41, and #46), and three levels of rotational speed of emery stone roller (950, 1070, and 1200 rpm) were tested. The jet-air abrasive-type whitener was also compared with the conventional abrasive-type having no jet-air blower in terms of their milling performance. In addition, the effect of different combinations of sequential uses of the abrasive- and friction-type whiteners on the milling performance was also experimentally evaluated. The results of this study are summarized as follows; 1. In general, the whitening system combined with the abrasive type whitener with jet-air supply, which was newly designed, and the existing jet-air friction type whiteners produces more milled- and head-rice by about 0.3% points and 2.8% points, respectively than the system combined with the existing abrasive type without the jet-air supply under the same operational conditions. The former also consumed less electricity by 0.024 KwH per 100kg of milled rice production and gave more milling capacity by about 35 kg/hr. As compared with the conventional whitening system consisting of jet-air friction type whiteners only, the former yielded more milled- and head-rice by 1.5% points and 4.4% points, respectively. 2. The abrasive roller having 46 grit emery was better than the roller having 36 grit in aspects of milling performance and machine efficiency, in general. 3. With regard to the effect of combination method of abrasive type and friction type whiteners, one pass in abrasive type plus three passes in friction type gave better milling performance and energy efficiency than the two passes in abrasive type plus two passes in friction type regardless of the designs of the emery stone rollers. 4. The increase in rotational speed of the emery stone roller from 950 rpm to 1200 rpm presented negative effects on milled and head-rice yields and machine efficiency, but slightly positive effect on milling capacity.

In Korea, rice cultivars have been changing to 'quality' rice rather than high yielding cultivars. However, more than 10% of paddy field has been changed to greenhouse in winter season for cropping of water-melon, oriental-melon, straw berry and et cetra. This experiment has been made to identify the usefulness of critical N and Si fertilization(SF) level to obtain high grain quality rice with reduced insect pest damage by N and SF combination. Before the experiment, watermelon-rice cropping system was maintained for three seasons by farmer from 1998 to 2001. The experiment of N and Si (silicate) fertilization levels was evaluated with Hwayoung-byeo (Oryza sativa L., medium-maturing variety) in 2002 and 2003 in Uiryeong, Korea. Nitrogen fertilization (NF) levels were three and five in 2002 and 2003, respectively, and three SF levels were compared for getting the valuable N/SF level in both years. TOYO-value was positively affected by Si application in N100% plot but it was negatively related with NF level. Normal grain percentage was positively related with TOYO-value and it was highest in 0N plot and Si plots in N100%. Other appearance qualities like powdered, damaged, and cracked grain, were decreased with increasing N fertilization level. SF improved appearance quality in N100% plots but no effects in other treatments. Leaf sheath related diseases were significantly decreased by SF but it was negatively related with NF. In conclusion, SF could be improve grain quality at the same yield levels of conventional fertilization and it also could be reduce the diseases damages of rice plant in all N treatments. NF treatment reduced grain quality and improved grain yield at N50% level, however NF above N50% could not get any kind of benefits. So, compared with conventional fertilizer, reduced NF level is recommended for high grain quality with reduced insect pest damage.
Field experiments were carried out to investigate the effects of different residue treatment of vetch sward on soil improvement, rice growth and grain yield from 1995 to 1996. With Chinese milkvetch, pH, Ca, and Mg of paddy soil were increased in subsoil(10~20cm soil depth), and organic matter, P$_2$$O_{5}$, and K were increased in top soil (0~10cm soil depth). Redox potential of the paddy soil with milkvetch residue was severely reduced at earlier flooding period, and recovered gradually as rice growth continued. Weeds were more abundant in the paddy with unchanged vetch stand. The most dominant weed species in the paddy soil with vetch sward residue was Echinochloa crus-galli, followed by Leersia japonica, Polygonum hydropiper in the order of abundance. Seedling establishment ratio of rice directly sown over vetch-sward was lower than in conventional tillage paddy(no-vetch, tilled) condition. Rice growth pattern, however, was not significantly affected by vetch sward treatments. The number of tillers per square meter and plant height at heading date were not significantly different among the vetch-sward treatments. Grain yield was the highest in plough of vetch vegetation, followed by conventional (no-vetch, tilled), live-mulching of vetch, vetch-removed, and vetch-desiccated by weedcide. The whole grain rice yield was the lowest in vetch-desiccated by weedcide.
Applications of plant residues and green manures generally improve the properties of soil under conventional farming system. Therefore, we investigated the improvement of selected soil physical properties, bulk density, porosity, and water content, soil penetration resistance, and soil microbial biomass carbon (SMBC) content as affected by different management practices: 1) conventional tillage without rice straw or green manure crop treatment (TNT, check plot), 2) no-tillage amended with rice straw (NTRS), 3) no-tillage amended with rye (NTR), 4) no-tillage amended with Chinese milk vetch (NTCMV), 5) no-tillage without rice straw or green manure crop treatment (NTNT), The values of bulk density, porosity, and water content ranged from 1.22 to 1.37 Mg $m^3$, from 48.3 to 54.0%, and from 35.0 to 40.2%, respectively. The management practices might positively influence the changes in the selected soil properties, especially in the second experimental year. The soil penetration resistance and SMBC content were also improved after applying rice straw and green manure crops as comparing with TNT. Therefore, applications of the rice straw and green manure crop management practices under no-tillage system positively influenced soil physical properties and soil microbial activities in paddy field.
