Quality Characteristics and Storage Properties of Chiffon-cake Containing added Bamboo Leaf Powder (시폰케이크 제조 시 첨가한 대잎 분말이 케이크의 품질 및 보존성에 미치는 영향 연구)

  • Bamboo leaf powder was added to Chiffon cake to increase its neutraceutical effects and storage periods. Specifically, 0, 7, 10 and 13% leaf powder was added to the cakes. The content of total dietary fiber in the bamboo leaf powder was 65.57%. The moisture content did not differ significantly among groups. The cake containing 10% bamboo leaf powder had the greatest volume, whereas the control group (0% bamboo leaf powder) had the lowest volume (p<0.05). The Hunter's L and a values decreased significantly as the amount of bamboo leaf powder increased. The b value of the control was lowest among the groups (p<0.05). Evaluation of the consumer acceptance of flavor revealed that the cakes containing the added bamboo leaf had greater consumer acceptance than the control. However, when the color was evaluated, the 13% group showed the lowest acceptance (p<0.05). Other factors such as texture, taste and overall acceptance did not differ significantly among groups. Additionally, the elasticity did not differ among groups, while the air cells were most uniform in the control. The strength of bamboo leaf aroma, bitter taste and aftertaste increased as the amount of bamboo leaf powder added increased. Cakes containing 10% and 13% added powder had the greatest moisture content, while the control had the lowest content (p<0.05). As in previous studies, the results of this study indicated that 10% bamboo leaf powder was the optimal level for the preparation of Chiffon cake. To evaluate the storage of cakes, the 10% group and the control were inoculated with Aspergillus oryzae and then incubated at $30^{\circ}C$ for 6 days. The microbial colony counts in the control group were dramatically increased after 48 hrs; however, the fungal concentration of the 10% group did not increase for 4 days. In conclusion, the addition of 10% bamboo leaf powder to Chiffon cake increased the storage time while maintaining adequate consumer acceptance.

  • The object of this study was to investigate characteristics of kiwifruit protesae and effect of this enzyme on the functionality of casein. The specific activity of crudely prepared kiwifruit pretense on casein was 196.95 units/mg protein, it showed optimum activity at pH 3.0, $60^{\circ}C$. The degree of hydrolysis of casein with pretense treatment steeply increased to 73.5% and 78.9% for 10 and 20 minutes and then reached 84.1% and 89.3% for 1 and 4 hours, respectively. Solubility of non heated control group was 0.2% at pH 4, while the sample groups treated with enzyme for 0, 10 and 20 minutes were 14.5%, 19.2% and 24.0%, respectively. Casein treated with pretense showed marked increase in foam expansion near isoelectric point. However, enzymatically treated groups had lower foam expansion than the control groups. Foam stabilities of enzymatically modified group were lower than those of the control groups at all pH. Emulsifying activity of the non-heated control group was 0% at pH 4, while the groups modified enzymatically for 0, 10, and 60 minutes showed 51.0%, 55.5% and 54.5%, respectively.

Effects of Caffeine Supplementation on Lipid Concentrations of Serum and Liver in Ovariectomized Rats (난소 절제 흰쥐에서 카페인 첨가가 혈액과 간 지질 농도에 미치는 영향)

  • The purpose of this study was to examine the impact of caffeine on lipid concentrations in ovariectomized rats. Forty-four rats (75${\pm}$5 g) were randomly divided into ovariectomy(ovx) and sham groups, each of which were randomly divided into two subgroups that were fed the control diet or a caffeine-supplemented diet (0.03%/diet). The experimental groups were classified into 1) sham-control, 2) sham-caffeine, 3) ovx-control and 4) ovx-caffeine groups. All rats had been fed on experimental diet and deionized water ad libitum for 6 weeks. Triglyceride concentration and total cholesterol were measured in serum and liver. Serum HDL-cholesterol was measured. Serum LDL-cholesterol and atherogenic index were calculated. Weight gain and food efficiency ratio were higher in ovx groups than in sham groups (p<0.05). Caffeine intake did not affect weight gain and food efficiency ratio. Mean food intake was significantly increased in ovx-caffeine group than other three groups. There were no significant differences in serum triglyceride, total cholesterol, HDL-cholesterol, LDL-cholesterol and atherogenic index between the control diet group and caffeine diet group. In addition, hepatic triglyceride and cholesterol level was unaffected by caffeine intake or ovariectomy. Therefore, we suggest that caffeine (0.03%/diet) intake may not have adverse effects on serum lipid level in ovariectomized rats.

L-Carnitine Reduces Obesity Caused by High-Fat Diet in C57BL/6J Mice

  • This study evaluated the effects of carnitine supplementation on obesity caused by a high-fat diet in C57BL/6J mice. The mice were fed a normal diet (ND), high-fat diet (HD), or carnitine-supplemented (0.5% of diet) high-fat diet (HDC) for 12 weeks. The results showed that body weight, energy intake, and feed intake were lower in the HDC group than the control groups. Acid-soluble acylcarnitine (A SAC), acid-insoluble acylcarnitine (AIAC), and total carnitine (TCNE) in the serum and liver were significantly higher in the HDC group. Hepatic carnitine palmitoyl transferase-I activity was significantly higher in the HDC group than the control groups. Acyl-coA synthetase (ACS) and carnitine palmitoyl transferase-I (CPT-I) mRNA expression in the liver was highest in the HDC group, however hepatic acetyl-coA carboxylase (ACC) mRNA expression in this group was lowest. Serum leptin levels and abdominal fat weight were lowest in the HDC group. We concluded that L-carnitine supplementation diminished the risk of obesity caused by a high-fat diet.

Alleviating Effects of Vitamin C on the Gramoxone Toxicity in the Total Lipid Contents, Lipid Peroxidation and Protein Patterns of Rat Liver (흰쥐 간 지질함량, 과산화지질 및 단백질양상에 미치는 제초제 Gramoxone 독성에 대한 비타민 C의 완화효과)

  • This study was made to determine alleviating effects of vitamin C(Vt C) on the gramoxone toxicity in rats with respect to the growth gain, feed effeciency ratio, total lipid contents, lipid peroxication and protein patterns in rat liver. Growth gain, feed efficiency ratio and liver weight in the gramoxone group were decreased significantly as compared with the control group, while those values obtained in the gramoxone-Vt C group were increased as compared with the gramoxone group. Lipid contents and TBA value of rat liver of the gramoxone group were increased significantly as compared with the control group. However, those values of the gramoxone+Vt C group were decreased as compared with the gramoxone group. No significant differences were observed in the liver protein patterns between the gramoxone and the control group. The contents of liver protein were decreased significantly in the gramoxone group fed for 2 weeks as compared with the control group. The change of the liver protein patterns, such as the decrease of high molecular weight protein and the increase of low molecular weight protein were observed in the gramoxone+Vt C group.

Effect of Blanching Conditions on Qualities and Nutritional Characteristics of Sweet pumpkin (블랜칭 처리가 단호박의 품질특성과 항산화활성에 미치는 영향)

  • This study investigated the quality characteristics of sweet pumpkin after blanching. Sweet pumpkins were blanched in distilled water, 2% citric acid and 2% NaCl water at 100℃ for 3 min. The cooking loss of sweet pumpkin in the blanching groups was lower than that in the control group, and greenness and yellowness in the blanching groups were higher than those in the control group (p<0.001). Total polyphenol content (TPC) of sweet pumpkin increased after blanching (p<0.05), and TPC true retention (TR) was measured with the highest NB. CON and NB were significantly higher in ?-carotene content (p<0.001). Lutein content in the blanching treatment groups was lower than that in the control group, but NB was the highest between the blanching groups (p<0.001). DPPH and ABTS+ radical scavenging activity assays revealed higher antioxidant activity in the NB groups among the blanching groups (p<0.001). The CON was 2.44 log colony-forming unit (CFU)/ g in the total bacterial count, but there were no microorganisms in the blanching groups. In conclusion, blanching with the addition of 2% NaCl can inhibit the growth of microorganisms and improve TR and antioxidant activities in sweet pumpkin.

Development and Effectiveness Evaluation of the STEAM Education Program on Food Groups for Kindergarteners (식품군을 활용한 유치원생 대상 STEAM 교육 프로그램 개발 및 효과평가)

  • Objectives: The purpose of this study was to explore the effectiveness of the STEAM (Science, Technology, Engineering, Arts, and Mathematics) education program on the use of specific food groups in improving nutrition-related knowledge and attitude, dietary behavior, creative problem solving, and STEAM attitude. Methods: We selected two classes at a kindergarten in Jeollabuk-do, South Korea. A total of 44 kindergarteners from the two classrooms participated in this study. The experimental group and the control group were formed with 22 students each. The experimental group attended 11 STEAM classes on the use of the grain, fruit, and milk food groups. First, we performed the paired t-test to examine changes from pre-to-post classes for both groups. Then, we used ANCOVA to compare post-test scores between the experimental and control groups with the adjustment of pre-test scores. Results: The results demonstrate that the STEAM education program on the use of the food groups significantly improved (1) nutrition-related knowledge and attitude, and dietary behavior (P < 0.001), (2) creative problem solving (P < 0.001), and (3) STEAM attitude (P < 0.001) in the intervention group when compared with the control group. Conclusions: The STEAM education program on the use of food groups is effective in enhancing nutrition knowledge and attitude, dietary behavior, creative problem solving, and STEAM attitudes among kindergarten students.

Effect of Cnidi rhizoma Water-Extracted Solution on Fat Contents in Plasma, Liver and Adipose, and Fecal Steroids of Fatted Rats (천궁의 열수 추출액이 고지방식이에 의한 흰쥐의 혈장, 간 및 지방조직의 지질함량과 분변 Steroids에 미치는 영향)

  • This study was carried out to evaluate the effect of Cnidi rhizoma (CR) water extract on fat accumulation in fatted rats induced by the oral high fat administration for six weeks. Total cholesterol, neutral lipid and epididymal fat pad of CR groups were lower than the control group. On the other hand, high density lipoprotein(HDL) -cholesterol was somewhat higher In CR than In the control group. In addition, the same result as the above case was obtained when examining adipose for liver and epididymal fat components. During the feeding experiment, level of low density Lipoprotein(LDL) and very low density Lipoprotein (VLDL) increased while HDL was decreased. The degree of LDL and VLDL was decreased however, and HDL was, increased In CH groups as compared with the control group. Insulin and cortisol were higher than the control group, due to the fat accumulation. Experiment group showed the increased excretion as compared with the control group, in the excretion of bile acid and neutral sterol. The liver of the control group observed by the light microscope appeared to the fatty liver, but CR groups showed some improvement of the fatty liver. Based on the above results, it was shown that It Is possible to improve fat accumulation induced, by high fat dietary through using the oral administration of Cnidi rhizoma boiling extract solutions.

Effects of Mozzarella Cheese Manufactured by S. macedonicus LC743 on the Immune Status of Mouse

  • To develop a new starter culture for Mozzarella cheese, the immunomodulatory action of Streptococcus macedonicus LC743 in male C57BL/6 mice was studied. Mice were fed for 7 wk with feed containing 1% Mozzarella cheese made with three kinds of starter cultures from S. macedonicus LC743 (G3), FD-DVS TCC-3 (G2) and S. macedonicus LC743 : FD-DVS TCC-3(1:1) (G4) and control (feed only, G1), respectively. No significant differences in body weight gain were observed among the various groups of mice. The spleen index and thymus index were observed and no significant differences were found among the groups. The production of TNF-${\alpha}$ of S. macedonicus LC743 group significantly increased compared to the control group. The production of IL-$1{\beta}$ was significantly enhanced by the feeding of S. macedonicus LC743 group compared to the control group. In regards to the white blood cell counts, the neutrophil percentages were significantly higher in the G1 group compared to other groups. The lymphocyte percentages were significantly higher in G2, G3 and G4 groups in comparison to the control group. The results of this study may suggest that the supplementation of S. macedonicus LC743 can increase the cytokine production activity by the activated macrophages in mice. Based on the result of this study, it could be concluded that S. macedonicus LC743 could stimulate the immune functions of mice.

Hepatoprotective Effects of Potato Peptide against D-Galactosamine-induced Liver Injury in Rats

  • The effect of some peptides on hepatoprotection and cecal fermentation against D-galactosamine (GalN)-treated rats was studied. In acute hepatic injury tests, serum alanine aminotransferase (ALT), aspartate aminotranferase (AST), and lactic dehydrogenase (LDH) activities were remarkably increased after injection of GalN. However, potato and soybean peptides significantly decreased GalN-induced alterations of serum ALT and AST activities. Hepatic thiobarbituric acid-reactive substance (TBARS) concentration in GalN-treated groups fed potato and soybean peptides was significantly lower than that in GalN-treated control group. Hepatic glutathione level in the GalN-treated group fed potato peptide was significantly higher than that in GalN-treated control group. Furthermore, cecal Lactobacillus level in GalN-treated groups fed potato and soybean peptides was significantly higher than that in GalN-treated control group, and cecal short-chain fatty acid concentrations in GalN-treated group fed potato peptide were significantly higher than in GalN-treated control group. These results indicate that potato peptide may improve the cecal fermentation and prevent the GalN-induced liver damage in rats.
