Food Nutritional Composition of Prunus mume Siebold et Zucc: Dae Hong (대홍의 식품학적 성분 분석)

  • This study was carried out to investigate the food value of Dae Hong(Prunus mume Siebold et Zucc), and also to analyzed contents of general component, free sugar, organic acid, amino acid, mineral element, and vitamins. The carbohydrate of Dae Hog showed the highest content of 46.8±0.92%, followed by crude protein(18.9±0.01%), moisture content(11.8±0.13%), and crude fiber, crude fat, ash(5.7±0.94~6.7±0.52%). In case of free sugar contents, 5 types were found. Most of them were mannitol and fructose. 6 mineral contents were also found, too; K and P showed the highest level. The total phenol content was 615.99±0.52 mg/100 g. Including seven different type of essential amino acids, the total amino acid content of Dae Hong was 121.42 mg/g. These results point out the potential of Dae Hong as innovative food for health or to be incorporated in new products as natural food preservatives and supplements.

Nutritional Characteristics and Screening of Biological Activity of Crataegi fructus (산사 영양성분 분석 및 생리활성 탐색)

  • The purpose of this study is to determine the possibility of using Crataegi fructus as a natural food source. To accomplish this purpose, the contents of general and biological activities were measured. The contents of carbohydrate, crude protein, crude lipid and ash are 85.6%, 2.4%, 1.9% and 0.4%, respeectively. Further, the calories of Crataegi fructus was 369.1 kcal. The contents of essential and non-essential amino acids were 852.26 mg and 1,178.29 mg, respeectively. The K was the largest mineral followed by Ca, P, Mg, which means Crataegi fructus is an alkali material. Crataegi fructus extracts slightly(17.6~32.8) inhibited ${\alpha}$-glucosidase activity. However, there is no inhibitory activity against ${\alpha}$-amylase. In terms of proteslytic activity, Crataegi fructus extracts showed a strong activity than pancreatin(used as a positive control). These results indicate that Crataegi fructus can be used as a natural resource for material aiding digestion.

  • This study is to analyze impacts of a newly developed festival based on place attachment and involvement theories using SEM. The results are that there are positive relationships between festival involvement and festival impacts, but there are negative relationships between place attachment and the impacts. The results mean that residents may have not enough interaction with the newly developed festival. Therefore, the findings suggest that organizers and managers are need to make efforts to communicate with citizens and to enlarge place attachments with the festival.

Quality Characteristic and Antioxidant Properties of Gelatin Jelly incorporated with Black Currant (Ribes nigrum L.) Powder (블랙커런트 분말 첨가 젤리의 품질특성 및 항산화 활성)

  • In this study, to enhance the applicability of the black current as a natural pigment and functional material, a jelly was produced by adding 0 %, 3 %, 6 %, 9 %, and 12 % of the black current powder. The pH and moisture content of the black currant jelly decreased with the addition of the black currant powder, while the sweetness($^{\circ}brix%$) of the jelly increased with the addition of the black currant powder. The chromaticity of the jelly was reduced as the black current powder was added, as the L value and b value increased. Texture measurement score in terms of hardness, chewiness and brittleness of groups with 3% and 6% black currant powder were significantly higher when compared to the control group. The contents of total polyphenol, DPPH radical scavenging activity, and NSA radical scavenging activity of groups by the addition of black currant powder were higher than those of control group. The anthocyanin contents increased proportionally with increasing levels of black currant powder. The sensory evaluation scores in terms of after swallowing, appearance, odor, taste, texture, and overall preference of groups with 6% and 9% black currant powder. Also, the anti oxidative activity and anthocyanine pigment in black current powder are highly visible even after the heating process, so it may be helpful to enhance the functionality of jelly by using natural colors that are highly antioxidants in jelly manufacture.

  • Because of the geographical characteristics of Jeju Island, the degree of usage of dialect in Jeju is higher than those of other cities. In addition, Jeju dialect is one of the important research topics in Korean Linguistics due to archaic words before 15th century. However, the research works about Jeju dialect related to tourism are rare unfortunately. In other words, since the content about Jeju dialect for tourists are rare, in order to activate and inform the tourists about Jeju dialect, the development of mobile content about Jeju dialect is necessary. In this paper, we develop the mobile content about Jeju dialect which are divided into several situations to help the tourists' understanding.

  • Korea Information Security Agency has executed the certification system for the information security management since 2002 and examines the conformance of the IDCs'total management system including the technical and the physical protection measure. However, this certification system has the standard only for the IDC in the wire/wireless segregated and the evaluation method for the wire/wireless integrated has not been suggested yet. This paper is on the basis of "Accumulation Information Communication Facility Secure Principle", guidelines of Wireless LAN security operation, the existing principles and recommendations of the information security and the data on IDC environment. And the paper suggests the IDC network model in the wire/wireless integrated and the IDC evaluation method.

  • The cultural content industry can be stimulated by the production of content based on Korean traditional culture such as Korean court culture. At present, the use of royal costumes of various Korean dynasties for content creation is rare. Less than ten government-supported projects managed by the Korea Culture & Content Agency (KOCCA) are related with Korean royal costumes. Only a handful of tourism-related cultural products (e.g., souvenirs and theme parks) are related to this subject. Fortunately, there are many events that demonstrate traditional court ceremonies; however, there is a need for more investment in academic research to ensure accurate reproduction. There are a number of issue in utilizing traditional royal costumes to produce cultural content that include: a lack of understanding the importance of Korean royal costumes, discrepancies of the content produced based on the historical context, a lack of public knowledge or support, and the lack of the historical accuracy of reproduced content. In order to benefit the most from royal costumes, this article suggests recreating the costumes as a source for further content creation, the development of a database to store information by design features and itemized topics, along with the active support of the government.

  • This study was to analyse participant's satisfaction according to the visiting purpose and experiences on the exhibition service, and also to suggest guideline for new standard evaluation in the operating exhibition service. The implications are as follows; firstly, surrounding environment showed significantly for merchandising & information participant's, and also stay cost & tourism service showed up general visiting purpose participant's. Secondly, it was showed significantly a place for refreshment, fire equipments, and ventilation & heating/air conditioning on the exhibition service. Third, government & exhibition authorized person should provide best environment through satisfaction factors in the exhibition service.

  • In this paper, we proposed the methodology for analyzing online customer reviews by using text mining technologies. We introduced marketing segmentation into the methodology because it would be efficient and effective to analyze the online customers by grouping them into similar online customers that might include similar opinions and experiences of the customers. That is, the methodology uses categorization and information extraction functions among text mining technologies, matched up with the concept of market segmentation. In particular, the methodology also uses cross-tabulations analysis function which is a kind of traditional statistics analysis functions to derive rigorous results of the analysis. In order to confirm the validity of the methodology, we actually analyzed online customer reviews related with tourism by using the methodology.

  • Brand equity of a tourist destination play a significant role in selecting a tourist destination because it is highly associated with its competitiveness. Nevertheless, a few research related to brand equity of a tourist destination has been conducted. Therefore, this study particularly focuses on the conceptualization work and deriving elements of brand equity of a tourist destination. One of the major research findings is that brand equity of a tourist destination comprises four elements including brand name awareness, perceived quality, brand associations and brand loyalty. In particular, brand loyalty turns out to be affected by other elements of brand equity, which verifies the hierarchy of effect among the elements of brand equity.
