Studies on the Fermentation of Lupin Seed (II) - Preparation of traditional Korean fermented been Sauce and Paste - (루우핀콩의 발효에 관한연구(I I) -한국 재래식 장유 제조시험 -)

  • Lupin seed was used to make Meju, the fermentation starter for Korean soybean sauce and paste in substitution for soybean and the fermentation characteristics were compared with those of soybean. Mejus were prepared by in-oculating Asp. oryzae on the cooked whole beans. The dried Mejus were used for making fermented bean sauce and paste by mixing with brine and subsequent ripening for 4 weeks. In general the protease activity and amylase activity-during ripening were higher in lupin seed Meju than those of soybean Meju. The increase in protease activity correlated to the increase in $\alpha$-amino nitrogen content of the fermented paste and sauce. The development of dark-brown color of the sauce during ripening faster with lupin seed Meju compared to soybean Meju. In sensory evaluation the flavor score of lupin seed sauce and paste was slightly lower than that of soybean products but the overall quality of fermented lupin seed sauce was acceptable.

Influence of Amine Surface Treatment on Carbon Dioxide Adsorption Behaviors of Activated Carbon Nanotubes (아민 처리가 탄소나노튜브의 이산화탄소 흡착거동에 미치는 영향)

  • In this work, the amine-treated activated carbon nanotubes (A-MWNTs) were used to investigate the $CO_2$ adsorption behaviors. A-MWNTs were prepared by impregnation with amine in methanol after chemical activation methods using a KOH. The characteristics of amine-treated A-MWNTs were studied by X-ray photoelectron spectroscopy (XPS), $N_2$ adsorption, desorption isotherms at 77 K. The specific surface area and pore volume of the A-MWNTs were analyzed by BET equation, BJH method, and t-plot method. $CO_2$ capture capacity as a function of temperature was measured by temperature programmed desorption (TPD). From the results, the amine treatment increased the basicity and nitrogen content of the A-MWNTs. The $CO_2$ adsorption capacity of the amine-nontreated A-MWNTs showed the highest value at room temperature and then greatly decreased with increasing the temperature. However, the amine-treated A-MWNTs presented a softer slope with temperature compared to the amine-nontreated ones. It was due to the strong interactions between $CO_2$ and amino groups presented on the carbon surfaces studied.

Change of Quality Characteristics of Meju during Fermentation with Multiple Starters (복합균주를 접종하여 제조한 메주의 발효 중 품질 특성 변화)

  • The purpose of this study was to evaluate the quality properties of Meju prepared by inoculating two strains of Bacillus amyloliquefaciens HJ5-2, and Aspergillus oryzae PS03. The three soybean varieties that include Daewonkong, Daechan, and Saedanbaek were used in this experiment. The fermentation temperature during the Meju aging varied at 20℃, 30℃, and 40℃, respectively. The physicochemical analysis of the soybeans, showed that the cured protein and fat contents were 34.83~43.49% and 12.91~18.90%, respectively. The pH and total acidity were 6.47~6.93 and 0.11~1.22%, respectively. The change in appearance of the Meju was that the yellow-green mold was well formed on seven days at fermentation temperature of 20℃ and 30℃, but at 40℃, there was minimal mold formation and cracking of the surface. The amino nitrogen content was highest on the Daechan Meju at 621.83 mg% for seven days. The amylase increased as the fermentation period increased in all samples, and the protease increased rapidly until the first day of the fermentation, and then gradually increased thereafter. The total number of bacteria increased or decreased as the fermentation proceeded to 6.66~10.07 log CFU/g. The mold counts increased with increasing fermentation period in the range of 6.38~8.79 log CFU/g.

Quality and Palatability of Pork Meats Fed with Fermented Wild Grape By-product (발효 머루 부산물을 급여한 돈육의 품질 및 기호성)

  • This study was carried out to investigate the feeding effects of fermented wild grape by-product on pork meat qualities. The samples consisted of the pork not fed fermented wild grape byproduct(FWG-X) and the pork fed fermented wild grape byproduct(FWG-O). The moisture, crude protein, crude fat and crude ash were not significantly different between samples. The cholesterol and TBARS of FWG-O were lower than those of the FWG-X, and the salt soluble protein extractability of FWG-O was higher than that of the FWG-X(p<0.05). The calorie, cooking loss, water holding capacity, pH and volatile basic nitrogen were not significantly different between FWG-X and FWG-O. The meat colors of the a and b value of FWG-O were higher than those of the FWG-X, and in case of the fat color, the a value of FWG-O was higher than that of the FWG-X. The hardness, springiness, cohesiveness, gumminess, chewiness and shear force were not significantly different between FWG-X and FWG-O. The total amino acid contents of FWG-X and FWG-O were 74.35 and 69.59g/100g protein, respectively, The raw meat color of FWG-O was higher than that of the FWG(p<0.01), and the cooked meat color(p<0.05), taste(p<0.001), flavor(p<0.001), juiciness(p<0.01) and palatability(p<0.01) were superior to those of the FWG-X. This study showed that fermented wild grape by-product decreased the cholesterol content and lipid oxidation with enhancing the sensory score.

Quality Changes of Canned Tuna in Cottonseed Oil during Storage (참치 기름담금 통조림의 저장중의 품질변화)

  • To fulfill the requirements for establishing processes of canning low-acid foods, canned tuna packed in cottonseed oil (CTCO) sterilized at $110^{\circ}C$ for varying $F_0-values$ was subjected to microbial, sensory and chemical analyses. The investigation included the long-term quality stability of those products stored at $5^{\circ}C,\;25^{\circ}C\;and\;50^{\circ}C$ for 120 days. Longer sterilization $(F_0>5.18min)$ caused no remarkable changes in pH, amino nitrogen content, TBA value, POV and sensory scores of the CTCOs during storage at all experimental temperatures. But the sterilizing with $Fe\leq5.18min$ resulted generally poor quality in all experimental analyses. Consequently, $F_0-value$ 6.0 min may be applicable to sterilization of CTCO for long-term storage stability.

On the Development of Flesh Greening of the Stored Garlic (저장 마늘의 녹변현상에 관한 연구)

  • Differences in the major components between non-greening and greening garlic bulbs were compared, and the several factors to be affected on the greening were investigated to study on the greening phenomenon occured in garlic puree made from stored garlic bulbs. From the several chemical analyses it was found that the contents of total nitrogen and lipid were lower in the greening than in the non-greening bulb but the contents of pyruvic and succinic acid were not. The content ratio of glutamic acid to total amino acid and the composition ratios of linoleic and linolenic acid were high in the greening bulb in comparsion with the non-greening. The protein pattern of the greening bulb by SDS-PAGE was significantly differed from that of the non-greening, especially in molecular weight ranges of 45.0-66.2 Kd. From the studies on the effects of pH, temperature and duration on the development of green color in the garlic powder solution, the optimum pH for the greening was 5.5 and maximum degree of the greening in the pH adjusted solution was shown after 30 min at $50^{\circ}C$.

A Study on the Quality Characteristics of Doenjang Prepared with Paecilomyces japonica, from Silkworm (누에 동충하초(Paecilomyces japonica)를 첨가하여 제조한 된장의 품질특성 변화에 관한 연구)

  • Change in Quality Properties of Doenjang Prepared with the Powder of Paecilomyces japonica and extract of P. japonica by different solvents were investigated during 90 days of fermentation at 20$^{\circ}C$. The moisture content was not significantly different, pH of Doenjang made with P. japonica was lower than control group and decreased continuously according to the fermentation time. Amino nitrogen continuously increased till 60 days and decreased slightly on 90 days. Value of L, a, b in Color decreased with proportion to fermentation period and L, a, b value of Doenjang made with P. japonica was lower and in Particular that of Doenjang made with P. japonica powder was lowest. From the result of sensory evaluation test, the color of control group was similar to “yellow”but that of Doenjang made with powder of P. japonica was close to“dark brown”and that of Doenjang made with extract of P. japonica was darker than that of control group and the preference of dark color was low. Texture was“glossy and smooth”in all and preference was high. In salty taste, Doenjang by P. japonica addition was stronger and Doenjang made with extract was stronger than that made with powder. Doenjang made with powder of P. japonica was weaker than other groups in sweet taste. In flavor and overall Preference, Doenjang made with P. japonica was scored lower slightly in than control group and Doenjang made with powder of P. japonica was the lowest in score.

Nutritive Quality Evaluation of GDL Soybean Curds (GDL 두부의 품질 평가)

  • This research aims to increase the extent of utilization of soybean curds coagulated with $Glucono-{\delta}-lactone$ (GDL) as a protein soarce by analyzing nutritive guality and preference to them. The curds were made from two kinds of soybean, domestic and imported. The results were as follows; 1. The yield of the domestic soybean curd was higher than that of the imported. 2. The total nitrogen and amino acid content of the GDL soybean curd were higher in the do- mestic while lipid and ash were higher in the imported one. 3. Rheological properties such as hardness, toughness, springiness and chewiness were higher in the domestic soybean curds than those of tile imported. 4. The 'L' values of the GDL soybean curds were higher in the domestic. However, there were no significant differences in the 'a' and 'b' values between the domestic and the imported soybeans. 5. According to the organoleptic the GDL soybean curds were not so favorable to our preferences .

  • An effort was attempted to utilize an under-utilized protein source, rice bran protein, in coating or wrapping food material for the purpose of protection them from oxidation and bacterial infection. However, the utilization of rice bran protein as a food coating material is limited because the rice bran protein coating material itself can be spoiled by a bacterial infection. Therefore, this study was conducted to produce the economical and antibacterial rice bran protein film by utilizing rice bran and bacteriocin-producing microorganism. Bacteriocin produced by Pseudomonas putida 21025 was partially purified after 33h of shaking incubation at 30$^{\circ}C$. The amount of amino-type nitrogen did not increase in the rice bran protein film containing the bacteriocin any more after gradual increase upto the content of 0.22% for 8 days, while that without the bacteriocin increased continuously, implying that application of the bacteriocin to the rice bran had positive effects on prolonging the shelf-life of not only film itself but also the foods wrapped by this film.

  • This study aimed to investigate of Andong sikhe by using pure culture inoculation technique and the improvement of storage stability by the addition of stabilizers to the product. Microorganisms were selected for the pure culture inoculation in the fermentation. The changes in chemical composition such as total acidity, sugar content, amino acid and various forms of nitrogen during fermentation were determined. The changes in pH of the product, the enzyme activities and the population of lactic acid bacteria and yeast were also followed in the process of fermentation.
