This study was designed to investigate the anti-tumor effects of fresh carrot juice, methanol-extracts, and $\beta$-carotene on the human lung cancer cell line NCI-H1299. The anti-tumor effect was evaluated by the MTT assay in vitro. The anti-tumor effect of fresh carrot juice against NCI-H1299 lasted up to 96 hours after exposure; the viability rate of lung cancer cells decreased below 50% after 48 hours, and further after 72 hours. The strongest propagation inhibition effect of fresh carrot juice was shown at the concentration of 2000 $\mu\textrm{g}$/$m\ell$ after 72 hours and the viability rates was 45.98% even at the concentration of 25 $\mu\textrm{g}$/$m\ell$. The value of $IC_{50}$/ was 23.1$\mu\textrm{g}$/$m\ell$ when the elapsed time was 72 hours. The viability rate of methanol-extract was 52.4% under the concentration of 2000 $\mu\textrm{g}$/$m\ell$ and the elapsed time of 72 hours. Under the concentration of 1000 $\mu\textrm{g}$/$m\ell$ and the elapsed time of 48 hours, $\beta$ -carotene decreased the viability rate to 29.99%. The $IC_{50}$/ value of $\beta$-carotene was 691.2$\mu\textrm{g}$/$m\ell$ after 72 hours. According to the above results, the anti-tumor effect arose in NCI-H1299 when the concentration of the fresh carrot juice or the $\beta$-carotene was more than 25 $\mu\textrm{g}$/$m\ell$ or 1000 $\mu\textrm{g}$/$m\ell$, respectively. On the other hand, the methanol-extracts showed a weak anti-tumor effect even at a concentration as high as 2000 $\mu\textrm{g}$/$m\ell$.
Vegetables and fruits contain a great deal of vitamins, minerals, dietary fiber and phytochemicals. Therefore, healthconcious consumer prefer beverage made from fresh fruits and vegetables due to their health benefits. This study was conducted to investigate differences in nutritional composition and sensory characteristics of juices depending on the apparatus used: either a low-speed juicer or high-speed blender. All ingredients could be made into juice without addition of water using the low speed juicer. However, addition of water was necessary to produce juice with the high-speed blender. Phenol and flavonoid content, were higher in juice made with the low-speed juicer than that produced with the high-speed blender and were correlated with DPPH radical scavenging ability. Protease activity of pineapples juices was not significantly different for the two methods, but protease activity of kiwi juice was about 8 times higher in juice made with low-speed juicer than that made with the high-speed blender. SOD activity also tended to be higher in the juice made with low-speed juicer. The concentration of dissolved oxygen in the juice made with high-speed blender was higher than that of juice made with a low-speed juicer and was correlated with color change. In addition, the high-speed blender caused an increase juice temperature, but temperature was not changed during use of the low-speed juicer. The noise level of the low-speed juicer was low, but the high-speed blender had high noise intensity comparable to that of railway or aircraft noise. In the sensory evaluation of juice, juice made with the low-speed juicer was preferred over juice made with the high-speed blender. As a result, the overall quality of the juice produced using the low-speed juicer was superior.
The effective fermentation methods of Kimchi juice for utilization of outer layer of Chinese cabbage, an waste of Kimchi industry were studied. The Kimchi juice prepared with brining and grinding the waste of Chinese cabbage and addition of spices was fermented at $25^{\circ}C$. Addition of 5$^{\circ}C$15% fermented Kimchi juice of pH 5.4 at initial stage and pH 4.4 at middle state resulted in a significant increase in fermentation rate and solid content after 12 hours of fermentation. The combined method of enzymatic hydrolysis(0.1% viscozyme) of the brined and ground cabbage and addition of 2.0% NaCl, 1.0% sucrose and 10% fermented juice of pH 5.4 first and 4.4 during fermentation, respectively resulted in more rapid fermentation. The solid concentration was 5 times higher than control at maximum point and acidic and total flavor intensity were also significantly high.
This study was undertaken to determine the antimutagenic effects of Synurus deltoides extracts on the mutagenesis induced by 3-amino-1, 4-dimethyl-5-H-pyrido[4, 3-blindol(Trp-P-1), 2-amitnofluorene (2-AF) and 4-nitroquinolin-1-oxide(4NQO) using Ames test. Raw juice, heated juice, and ethanol extract from Synurus deltoides itself did not induce mutagenesis. The raw juice, heated juice and ethanol extract of 50${mu}ell$/plate showed approximately 90%, 37% and 28% inhibitory effect on the mutagenesis induced by Trp-P-1 against TA98 strain, while 80%, 60% and 58% inhibition was observed on the mutagenesis induced by 2-AF at the concentration of 200${mu}ell$/plate, respectively. TA100 strain was more sensitive than TA98 strain by raw juice, heated juice and ethanol extract on the mutagenesis induced by Trp-P-1 and 2-AF. Meanwhile, the raw juice, heated juice, and ethanol extract showed very limited inhibitory effects on the mutagenesis induced by 4-NQO against TA98 and TA100 strain. These results indicate that raw juice had the strongest inhibitory effect on the Trp-P-1 or 2-AF induced mutagenesis, but all of the extracts had a little antimutagenc effects on the 4-NQO induced mutagenesis.

The quest to reduce the level of overdependence on fossil fuel product and to provide all required information on proven existing alternatives for renewable energy has resulted into rapid growth of research globally to identify efficient alternative renewable energy sources and the process technologies that are sustainable and environmentally friendly. The present study is aimed at production and characterization of bioethanol produced from sugarcane juice using a $2^4$ factorial design investigating the effect of four parameters (reaction temperature, time, concentration of bacteria used and amount of substrate). The optimum bioethanol yield of 19.3% was achieved at a reaction temperature of $30^{\circ}C$, time of 72 hours, yeast concentration of 2 g and 300 g concentration of substrate (sugarcane juice). The result of statistical analysis of variance shows that the concentration of yeast had the highest effect of 7.325 and % contribution of 82.72% while the substrate concentration had the lowest effect and % contribution of -0.25 and 0.096% respectively. The bioethanol produced was then characterized for some fuel properties such as flash point, specific gravity, cloud point, pour point, sulphur content, acidity, density and kinematic viscosity. The results of bioethanol characterization conform to American society for testing and materials (ASTM) standard. Hence, sugarcane juice is a good and sustainable feedstock for bioethanol production in Nigeria owing relative abundance, cheap source of supply and available land for large scale production.
각종 미네랄과 무기염류의 함량이 풍부한 것으로 알려진 함초를 이용하여 발효 후 그에 따른 기능성을 검토해 보고자 하였다. 유산균 접종 후 pH는 초기 4.50에서 발효 후 2.84로 변했으며, 산도는 초기 0.29에서 발효 후 0.55로 증가하였다. 한편 생균수를 측정한 결과 초기 $1.2{\times}10^{11}CFU/mL$이었던 생균수는 발효 72시간 후 $1.4{\times}10^{13}CFU/mL$를 보였다. 함초 추출물 발효액을 동결건조시킨 후 그에 따른 기능성을 검토하였으며 SOD-유사활성과 DPPH-라디칼 소거능 측정결과, 농도 의존적인 경향을 보였으며 혈전분해능 측정결과 발효 전의 함초 추출물에서는 나타나지 않았던 혈전분해능을 발효 후 동결건조분말 25%의 시료 농도에서 plasmin $3.84{\mu}g/mL$의 농도와 동일한 수준의 혈전용해능을 보였다.
Ganoderma lucidum이 생산하는 polygalacturoanse(endo- 및 exo-polygalacturoanse)를 이용하여 과즙청징 효과를 검토한 결과에 endo-polygalacturoanse에 의해서만 과즙청징을 이를 수 있었으며, 과즙청징을 위한 endo-polygalacturoanse의 반응 최적 온도는 $40^{\circ}C$이었고, 과즙 5 ml 당 약 4 unit의 endo-polygalacturoanse를 첨가 하였을 때 60분에 거의 청징되었다. 그리고 polygalacturoanse의 효소원으로는 영지버섯 균사체 배양 여액이나 ammonium sulfate 분획물을 이용하는 방안이 가장 효율적일 것으로 생각되었다.
This study was conducted to ivestigate the quality of modeled chinese-cabbage Kimchi. The mutual action of sub-ingredients and optimum mixing conditions were examined by analyses of pH, acidity, content of vitamins, carotenes, number of total microorganism, and Lactobacilli, the activities of softening related to enzymes (polygalacturonase and ${\beta}$-galactosidase), and sensory quality during fermentation. The result about the mutual action of red pepler powder and garlic showed that the pH was decresed as concentration of garlic was higher and that of red peppler powder became lower. Kimchi had unpleasant taste and undesirable odor when the adding ratio of the peper powder and garlic was unbalanced. As the concentration of garlic became higher, the content of vitamin C in Kimchi tissue decreased while that of vitamin C in Kimchi juice increased. The contents of vitamin B1, B2 and carotene increased as the concentration of garlic became lower. The optimum mixing ratio of red pepper powder and garlic evaluated by overall eating quality was 4.66% and 3.45%, respectively. The result about the mutual action of ginger and green onion was that pH became higher as the concentration of ginger was 1.84% and that of green onion was 5.96%. The intensity of fresh taste and odor became stronger as the concentration of ginger increaed to 2.76% and that of green onion decreased to 2.98%. The balance of sour, salty and hot taste became better as the concentration of ginger increased and that of green onion decreased. The optimum mixing condition evaluated by overall eating quality was 2.94% in ginger + 2.78% in green onion. The contents of vitamin B1, B2 and C were high in this condition. The result about the mutual action of leek and salted anchovy juice was that pH became lower as the concentration of leek increased and that of salted anchovy juice decreased. Sour, hot and sweet tastes were good in the condition of leek 12%, salted anchovy juice 4.69%. Palatable, fresh taste and odor became weaker when the one of both sub-ingredients was too much little. The optimum mixing condition evaluated by overall easting quality was 9.76% in leek + 7.32% in salted anchovy juice. The contents of vitamin B1, B2, C and carotene were high in this condition and other sensory qualities were good. The result about the mutual action of salt and sugar was that pH became lower as the concentration of sugar became higher and that of salt became lower. The sweet taste was reduced of hot taste than salty taste. Palatable and fresh tastes were desirable when Kimchi fermented with less salt and more sugar. The optimum mixing condition evaluated by overall eating quality was 3.29% in sugar + 4.80% in salt. The contents of vitamin B1, B1, C and carotene were high in this condition. The result of model Kimchi fermented at 20$^{\circ}C$ was that the number of Lactobacilli in model Kimchi was higher than that of in control Kimchi. The fermentation period was extended under pH 4.0 and the contents of vitamin B1, B1,C and carotene were high through the whole edible period. The activity of polygalacturonase was low, but that of ${\beta}$-galactosidase was high during fermentation.
This study was designed to investigate the effects of cholate and deoxycholate on pancreatic exocrine secretion in conscious sheep with external bile and pancreatic fistulae. Bile and pancreatic juices were collected for a basal period of 2 hours. The pancreatic juice was returned to the intestine. Bile salts were infused into the jugular vein or duodenum for 90 minutes at the rate of 0.7mg/kg/min. Cholate and deoxycholate significantly increased the flow rate, pH and bicarbonate concentration of bile juice, but decreased the flow rate of pancreatic juice. The effects induced by intraduodenal infusion of both bile salts were significantly greater than those by intravenous infusion. Protein concentration and amylase activity in pancreatic juice were also significantly decreased by both bile salts; the effects were greater when the bile salts were infused into the duodenum than into the vein. The inhibitory effects induced by deoxycholate infusion were significantly greater than those by cholate infusion. The plasma concentration of secretin was significantly increased by intravenous infusion of deoxycholate, but it was not effected by intraduodenal infusion of both bile salts. The results indicated that cholate and deoxycholate markedly increased the secretion of bile juice and decreased the pancreatic exocrine secretion, although these effects were variable depending on the chemical composition or infusion routes.
본 연구에서는 국내산 사과의 주스 가공과정에서 patulin 함량 최소 방법을 모니터링 하였다. 중심합성계획법으로 ascorbic acid 첨가량(100, 200, 300 및 400 ppm)과 활성탄 사용량(50, 100, 150 및 200 ppm)을 독립변수로 설정하고 각각의 조건에서 사과주스를 제조한 결과 patulin 잔류량은 ascorbic acid 함량 237.77 ppm, 활성탄 함량 106.58 ppm에서 최소점을 나타내었다가 점차 증가하는 경향을 나타내었다. 당도는 활성탄 사용량보다는 ascorbic acid 첨가량에 영향을 더 많이 받는 것으로 나타났으며, 총 페놀성 물질 함량의 정상점은 안장점으로 나타났다. 또한, 총 플라보노이드 함량의 예측된 정상점은 최대점으로 나타나 ascorbic acid와 활성탄 함량이 증가할수록 높은 함량을 나타내었다. 이상의 결과 사과주스 가공시 patulin 잔류량은 ascorbic acid 246~274 ppm (v/v), 활성탄 93~122 ppm (v/v)에서 최소화 되는 것으로 나타났으며 사과주스 가공 품질인자의 $R^2$는 모든 구간에서 1~10% 수준에서 유의성이 인정되었다.
