  • This experiment was conducted to find out the difference between roughage productivity and feed value by using two domestic forage rice cultivars in a mid-west reclaimed rice field in Korea. During the growing period, Na+ content in soil showed no significant difference between the two cultivars; however, the K+ content in the soil was significantly lower than that in which the Mogwo was grown. The tiller number was 45.5 to 58.8, which was higher than that of Mogyeong, and the leaf number was higher than that of Mogyeong. The dry matter yield per 10 a was 1,338 kg for Moggyang and 1,532 kg for Mogwoo. At the harvest time, the crude protein yield per 10 a produced 108 kg of Mogyang and 170 kg of Mogwoo, and the total digestion nutrient (TDN) yield per 10 a also produced about 617 kg of Mogyang and 880 kg of Mogwoo. To sum up the above results, Mogwo, which has many tiller numbers and leaf numbers, has a high dry matter production, a relatively low neutral detergent fiber (NDF) and acidic detergent fiber (ADF), and a high crude protein yield and TDN yield, and it was better when cultivating the forage rice cultivars in reclaimed land.

  • Five local cultivars of northern type garlics (Allium sativum L.) and one of southern type were collected, and their growth and developmental characteristics and productivity were investigated to select a well adaptable cultivar in Euiseong region. Local cultivars used in this experiment were 'Euiseong', 'Yeochun', 'Danyang', 'Jungsun', and 'Yongin' as northern type and 'Namdo' as southern one. The growth characteristic of local garlic cultivars were differed with their ecotypes and 'Namdo', a southern type cultivar, showed higher growth rate at the early growing stage than northern types. However, no clear differences were observed among northern types. Incidence of bolting was low in 'Jungsun' and 'Yongin', while high in 'Euiseong' and 'Yeochun'. In the case of incomplete bolting, however, an opposite trend was showed, thus, high in 'Jungsun' and low in 'Euiseong' and 'Yeochun'. Secondary growth was remarkably low in 'Euiseong'. Considering yield factors, 'Yeochun' seemed to be most promising northern type cultivar in Euiseong region, which showed highest bulb weight and largest cloves with high growth rate at the maximum growing stage. 'Danyang', 'Jungsun', and 'Yongin' seemed to have relatively low productivity in Euiseong region.

  • The nutritional components of 14 new cultivars of pak choi (Brassica rapa L. ssp. chinensis) from China were analyzed and compared with 4 cultivars of Chinese cabbage (Brassica rapa L. ssp. pekinensis) popular in Korea. Leaves were separated into green parts (GP) and white parts (WP) for the analyses. The moisture and ash content in the 14 new cultivars of pak choi were not significantly different from the currently popular cultivars of Chinese cabbage. In addition, the levels of vitamin C and E were very similar between the two kinds of Brassica rapa. In contrast, the overall mineral content was higher in the new pak choi cultivars. Specifically, minerals important for human health, calcium and magnesium, were significantly greater in pak choi cultivars (calcium GP 2.57, WP 2.04; magnesium GP 0.422, WP 0.301 mg/g fresh weight) compared to currently popular cultivars (calcium GP 0.805, WP 0.477; magnesium GP 0.244, WP 0.101 mg/g fresh weight). Although the content of reducing sugars was similar, cellulose content (which correlates with the hardness of plant tissue) was four times higher in the new pak choi cultivars compared to currently popular cultivars. These results demonstrate that the new pak choi cultivars have superb nutritional benefits for human health and could be a good food source as a daily staple vegetable.

  • Wild perennial types of genus Glycine, as sources of genetic diversity, have been recently employed in the soybean breeding programs. This study was carried out to introduce some useful characters of wild perennial Glycine tomentella into common cultivars, G. max. Parent materials used for interspecific hybridization were three common cultivars, Ulsankong, Baemkong and Danyeobkong, and four G. tomentella strains having different diploid(2n) of 38, 40, 78, and 80. Their cross-fertility, effect of reciprocal cross, development comparison of crossing pod and optimum timing to efficient crossing were investigated. Plant were grown in 1/2,000 Wagner pots in greenhouse and field. Crossing efficiency and pod survival rate were the highest in 2n=38 of the four G. tomentella strains when the common cultivars were fixed as female parents. In the reciprocal cross of three common cultivars and four G. tomentella strains, when the former was used as maternal sources, they showed better crossing rate and longer pod survival than the latter. In the interspecific hybridization between G. max cv. Baemkong andG. tomentella, 2n=38, the pod formed from the female G. tomentella had relatively greater size and weight than that from the female Baemkong in comparison with parents. However, the reverse result was true in a number of ovules per pod. More efficient interspecific hybridization in the field was made on August 20, when temperature and relative humidity were higher and day length was shorter, than one or two months earlier.

  • The properties of rice were studied on five rice cultivars (Ilpumbyeo, Samkwang, Goami-4, Dodamssal, and Thai rice), and employed two kinds of saccharification treatment methods (treatment I : rice shape, treatment II: grinding rice shape). Thai rice showed differences in width and length when compared to other cultivars of rice, and the Goami 4 had the lowest thousand-grain weight. The Goami4 and Dodamssal each showed high contents of amylose and resistant starch, and the water absorption rate was close to maximum at 90 minutes as well as the highest level of Goami 4 at all times. The qualities of highest water-binding capacity, solubility and swelling power was most significant in Thai rice. The lowest hardness level of wet rice resulted in the lowest hydration-related characteristics. High amylose content rice, in particular, showed low sugar content and slightly increased sugar content as the saccharification process improved (treatment II). On the other hand, high amylose cultivars had the same high degree of hardness as boiled rice. From these results, the Dodamssal was found to have the lowest viscosity at all temperatures but highest viscosity during the saccharification process, suggesting it may be successfully implemented as a thickener in rice beverage processing. The purpose of this study was to attempt to provide basic data on the development of rice beverage manufacturing technology, based upon the quality characteristics related to beverage processing of rice cultivars.

  • For scientification of commercial fermented radish products the study on physicochemical and processing properties of various radish cultivars should be proceeded and needed. Moisture contents of 3 parts of root ranged from 91.3 to 94.0%. Although, the upper part showed less content of moisture and ash than other parts, the upper part contained higher amount of crude protein and soluble solids. The sugar contents of Baekkwang grown on spring was the lowest$(5.0^{\circ}Brix)$ and that of Taebaek grown on autumn was the highest $(6.6^{\circ}Brix)$ among 6 cultivars. Significant difference of acidity was shown in various cultivars but not in each parts. The most abundant soluble sugars in radish root was glucose ranging from 15.8 to $27.3\;{\mu}mole/g\;f.w.$ fresh weight, f.w. and followed by fructose ranging from 16.4 to $23.1\;{\mu}mole/g\;f.w.$ However, the content of sucrose ranging from 0.7 to $2.7\;{\mu}mole/g\;f.w.$ was the lowest compared to others. Hardness of fresh root was the highest in Taebaek $[93.4{\sim}156.9N/m^2(\times10^3)]$, followed by Dongja and Chudong, and the lowest in Baekkwang. Changes in rigidity of roots during brining were determined. Although the rigidity was drastically reduced during initial 60 min., it was reversely increased during further storage. Sensory acceptabilities of Taebaek and Dongja were the best among 7 cultivars. Optimal time of radish fermentation at pH of 4.2 and acidity of 0.6% was between 24 and 28 days of storage.

  • This study examined the general components and biological activities of fruit from different cultivars of Prunus mume. The average moisture content of fruit ranged from 89.94-90.62%. The levels of crude protein, crude fat and crude fiber were not significantly different in the different cultivars. In an antimicrobial activity test, methanol extracts showed the highest activity and extracts from the Chunmae and Baekgaha cultivars had higherantimicrobial activity than other cultivars. The extract of fruit. However, there was no antimicrobial activity against the lactic acid- producing bacteria and yeasts, even at a concentration of 1.5 mg/mL or higher. Antimicrobial substances in methanol extracts of the fruit maintained their activity after heating at $100^{\circ}C$ for 30 minutes and were also unaffected by changes in pH. The antioxidant activities of extracts isolated with different solvents were: methanol > ethylacetate > water> ether> hexane. Antioxidant activity was not significantly different at different harvest times. The antioxidant index of the methanol extract was also the highest in electron donating activity.
