A Comparison on the Quality Characteristics of Korean and Japanese Commercial Baechu Kimchi (한일 시판 배추김치의 품질특성 비교)

  • Recently, the consumption of commercial kimchi in Korea has increased over 30% and continues to grow rapidly. Similarly, over 50% of Japanese pickles(Tsukemono) have changed to kimchi and most of them are commerical. The purpose of this research is to cmopare and contrast Korean commerical kimchi to Japanese commerical kimchi. Furthermore, it is to provide valuable information to the consumers and suppliers as well as to improve the quality of commercial kimchi. Five different kinds of materials were used; (A) and (B) kimchi that were made and sold in Korea, (C) and (D) kimchi that were made and sold in Japan, and (E) kimchi made in Korea, but sold in Japan. The kimchi purchased on April 20th, 2002 and sensory evaluation, respectively, and they were preserved at $5^{\circ}C$. For the quality index, the followings contents were measured; moisture, ash, protein, crude lipid, mineral and capsaicin. In addition, pH, acidity and sensory evaluation for kimchi stored at $5^{\circ}C$ were measured for four weeks.

A Study on Purchasing Current Status and Promotion Facts for Commercial Kimchi of Women in Seoul Area (서울지역 여성의 시판 김치 구입현황과 구매촉진에 관한 연구)

  • This study was to investigate purchase of women for commercial kimchi. Survey was carried out by questionnaire method that is target on 322 female over 20 age in Seoul area. The results of the study was that the way they get kimchi of women answered that they make it by themselves(63.3%). The reason of purchasing is they do not have enough time to make it at their home(43.8%) and its good taste(56.8%) result in their purchase. In the degree of preference about package material, prefer polyethylene(39.6%). Also respondents prefer purchasing poggi kimchi(63.4%) among other different types of kimchi. The promotion facts of purchasing commercial kimchi shows a high score in cold chain system package and specific kimchi development.

Effect of Bacteriocin on Some Quality Changes during Fermentation of Kimchi (Bacteriocin의 첨가가 김치의 품질변화에 미치는 영향)

  • The effect of commerical bacteriocin(Bc) was studied on some quality changes during fermentation of Kimchi at $25^{\circ}C$. The Bc additon by 1.0, 3.0 and 5.0% was found to be effective in extension of pH decrease to reach the optimal pH of pH 4.0~4.2. Thel effect increased with an increase in bacteriocin concentration. The color values of 'L' and 'b' of the Kimchi liquid increased while 'a' value decreased during fermentation. The hardness also increased until 21 hours and then decreased and a slightly more hardness measured at the late stage of fermentation.
