천연재료와 합성색소 첨가에 따른 마카롱의 품질 특성 (Characteristics of Macaroons prepared with Natural Materials and Artificial Food Colorant)

  • The purpose of this study was to investigate the characteristics of macaroons prepared using natural color materials (Opuntia ficus-indica var. saboten (Re-N), mulberry leaf (Gr-N), pumpkin (Ye-N), and cocoa powder (Br-N)) and corresponding artificial food colorants (red (Re-A), yellow (Ye-A), green (Gr-A) and brown (Br-A)). The moisture content of macaroons prepared using natural color material was higher compared to the macaroons prepared using artificial food colorant. DPPH and ABTS radical scavenging activity was similar in both types of macaroons. Lightness and redness of Re-N, Gr-N, Ye-N, and Br-N macaroons were lower than Re-A, Gr-A, Ye-A and Br-A macaroons. Yellowness of Re-N was higher because of the browning reaction. The texture profile analysis revealed lower hardness when natural color powder was employed. In the sensory evaluation, overall acceptability was not significantly different between natural colored and artificial colored macaroons. As a result, macaroons with the natural color material were softer and showed higher antioxidative activity, however, organoleptic properties were not much different when compared with macaroons with artificial colors. Apparently, it is stated that more studies on the development of macaroons with more enhanced physical functionality and good taste using natural materials should be performed.

천연인디고 색소의 구조분석 (Structural Analysis of Natural Indigo Colorants Extracted from Polygonum tinctorium)

  • 쪽풀 생잎에서 우려낸 색소 액에 소석회를 첨가한 후 쪽풀 색소의 침전물을 만들어서 냉동 건조시켜 쪽풀 색소를 제조하여, 그 성분을 조사한 결과 다음과 같은 결론을 얻었다. 1. UV분광광도, TLC 정성 분석, HPLC 측정 결과 쪽 분말 용액의 2개 bend가 나타났으며, 적색색소대인 540nm 와 청색 색소대인 620nm가 존재함을 알 수 있었다. 2. FT-IR 분석으로부터 $1627cm^{-1}$에서 채, $3200{\sim}3300cm^{-1}$에서 NH의 흡수대가 나타나고, 적색 및 청색 색소의 IR spectrum이 일치하였으며, 3. EI-mass 분석 결과 청색과 적색 색소의 fragment 이온의 m/z가 일치하고, $^1H_MNR$ 분석결과로부터 두 색소는 이성질체임을 알 수 있었고, 4. 쪽 염료 성분 함량을 조사한 결과 인디고 색소 4.06%와 인디루빈 1.06%이었다.

톳 추출액을 이용한 친환경 항균성 모발 염색 (Ecofriendly Antimicrobial Hair Coloration Using Sargassum fusiforme Extract)

  • To overcome the harmful effects caused by conventional oxidative hair dyes, natural colorants becomes more popular in the hair dyeing. By extracting Sagassum fusiforme powders with aqueous alkaline solution as a solvent at 130℃ for 60 minutes, a fucoxanthin concentration of up to 216㎍/ml can be obtained. UV/Vis analysis was used to prove the presence of fucoxanthin in the extract powder. A K/S value of 23.8 can be obtained when wool fabrics were dyed with the extract at 120℃ for 60 minutes under pH 2. The color fastness properties of the dyed wool fabrics were very good as indicated by rating 4 for laundering(color change), rating 3 or higher for rubbing, and rating 5 for light irradiation. The dyed wool fabric was found to have antimicrobial activity against Staphylococcus aureus. The antioxidant and antimicrobial activity of the Sagassum fusiforme extract can be an effective functional hair colorant. Hair dyeing with the extract formulation at 45℃ for 40 minutes under pH 5 accomplished a K/S value of 8.9. The color fastness of the dyed hair showed rating 3 against light irradiation, which increased to rating 5 with after-mordanting of tannin acid.

지역 농특산물의 베타카로틴 함량 조사 (A Study on Contents of Beta-Carotene in Local Agricultural Products)

  • Beta-carotene is the most prominent member of the group of carotenoids, natural colorants that occur in the human diet. Beta-carotene is also an effective source of vitamin A in both conventional foods and vitamin supplements, and it's generally safe. In this study, we explored the beta-carotene contents in agricultural products widely and specifically grown in Korea. The beta-carotene contents were ranging from 223 to $27,908{\mu}g/100g$ in leaves, and 0 to $7,588{\mu}g/100g$ in vegetables. In leaves and vegetables, the amount of beta-carotene was the highest in green tea powder ($27,908{\mu}g/100g$), followed by pepper ($7,588{\mu}g/100g$). In fruits, the beta-carotene content was found to range from $0{\mu}g/1,011g$ to maximum of $293.66{\mu}g/100g$(plumcot). However, there beta-carotene was not detected in strawberry. In the case of cereals and specialty crops, the beta-carotene contents were $326{\mu}g/100g$ for non-glutinous rice, $313{\mu}g/100g$ for glutinous rice, $57{\mu}g/100g$ for amaranth and $15{\mu}g/100g$ for pine nut, respectively. However, the beta-carotene content was not detected in other samples. This study revealed the presence of beta-carotene content in agricultural products specifically grown in Korea for nutritional information and food composition database.

생물자원 폐기물을 활용한 친환경 가죽염색(III): 매리골드와 편백나무 잎 추출물의 복합염색에 의한 기능성 부여 (Eco-friendly Leather Dyeing Using Biomass Wastes(III): Imparting Functionality by Combination Dyeing with Marigold (Tagetes erecta L.) and Hinoki Cypress(Chamaecyparis obtusa) Leave Extracts)

  • In this study, eco-friendly functional leather was developed by recycling wastes such as eel skin, marigold(Tagetas erecta l.), hinoki cypress(Chamaecyparis obtusa). The hot water extracts of marigold and hinoki cypress leaves were freeze-dried at $-80^{\circ}C$ to prepare colorant powder. The dyeing of eel leather with marigold was carried out to investigate the effects of dyeing conditions, mordanting on dye uptake, color, morphological change, and color fastness. Considering shrinkage of eel leather caused by dyeing, the optimum dyeing conditions were $60^{\circ}C$ of dyeing temperature and 60 min of dyeing time at 1:100 of bath ratio, and color of the dyed eel leather was Y to YR Munsell series. In order to prevent the degradation of leather from microbe, we conducted combination dyeing with marigold and hinoki cypress leave colorants. In this case, the combination dyed eel leathers showed excellent antimicrobial activity with above 99% bacterial reduction rate against S. aurieus and K. pneumoniae. It was confirmed that all of the dyed eel leathers were sufficient to meet the Korean Standard for color fastness of leather products. It can be applied practically for the development of eco-friendly functional leather by utilizing some useful active components extracted from plant resources and by recycling food wastes.

비석(碑石)에 칠해진 주사(朱砂)안료에 관한 연구 (A study on the Red Painting of stone monuments)

  • 우리나라에서 고대에 사용하던 붉은 색 안료에는 주사, 석간주, 장단 등이 있다. 이중에서 주사는 고급스러운 상품(上品)으로써 벽사의 상징적 의미를 지니고 있어 단청, 벽화, 회화를 비롯해 비석, 지석 등에 다양하게 나타나고 있다. 특히 "공사견문록(公私見聞錄)"의 기록에서는 고려재상의 지석 음각에 붉은 칠을 메웠다고 기록되어 있어 비, 신도비, 지석 등에 주사와 같은 붉은 칠이 된 것은 고려시대 또는 그 이전부터라고 볼 수 있을 것이다. 문헌기록을 토대로 하여 비석에 남아있는 붉은 안료들의 몇 사례를 조사해 본 결과 대부분 주사, 장단, 석간주 등이 칠해졌음이 분석되었다. 또한 붉은 색의 발색을 더욱 선명히 하기 위해 붉은 칠 아래 바탕칠로써 호분칠이 된 경우도 발견되었다. 현존하는 붉은 안료가 칠해진 비석들은 대부분 조선시대 이후의 사례들이므로 조선시대에는 비등에 붉은 안료로 주사를 사용했음을 알 수 있었는데, "공사견문록(公私見聞錄)"에 남겨진 기록을 보아 고려시대에도 칠해졌음을 추정해 볼 수 있다. 또한 삼국시대 이미 주사안료가 중국으로부터 수입되어 우리나라에 고가의 상품으로 사용되던 역사적 배경을 살펴볼 때 비에 붉은 안료를 칠하던 것은 고려 이전부터 였을 가능성도 배제할 수 없다. 이렇게 붉은 안료로 주사를 주로 사용했을 것은 주사가 지닌 벽사적 상징의미를 미루어 볼 때 상당히 가능성이 있으며 당시 주사가 매우 고가인 탓에 한때 사용이 금지되기도 하였기에 주사 대신 석간주나 장단과 같은 대체안료가 사용되기도 했을 것으로 추정된다.
