Quality and Sensory Characteristics of White Bread added with Various Ginseng Products (인삼제품의 첨가에 따른 제빵적성 및 관능평가)

  • This study investigated the effect of ginseng products on the baking properties of white breads. Flour was substituted by ginseng products (ginseng at levels 2, 4, 6, and 8%, all w/w, of flour levels). Both ginseng powder (GP) and red ginseng powder (RGP) were used. Similarly, red ginseng extract (RGE) was substituted at levels of 1, 2, 3, and 4% (all w/w) of flour. The physical properties of each dough were assessed using farinograms, extensograms, and amylograms. Water absorption increased as the proportions of ginseng products rose. The dough surface areas and R/E (resistance/extensibility) values decreased, as did peak viscosities, at the proportions of ginseng products increased. The pH values during fermentation decreased as the proportions of ginseng products increased. The fermentation power of dough with GP was lower than that of control, and higher than that of dough with RGP or RGE, but the addition of ginseng products beyond certain levels weakened the gas retention power: The specific loaf volumes of breads with 2% GP were the highest at 5.41 mL/g. In breads with RGE, the specificloaf volume increased from 5.52 mL/g to 5.82 mL/g as RGE levels rose from 0% to 4%. Hardness increased with rising GP and RGP levels in breads with GP and RGP, but decreased with RGE levels in breads with RGE. The moisture contents of breads during storage tended to be higher than control in breads with ginseng products. Lightness increased with addition of GP and decreased upon addition of RGP or RGE, while redness and yellowness increased after addition of any ginseng products. In sensory evaluation tests, the sensory scores for texture, color, mouth feel, and overall acceptability, were high, when any ginseng product (GP, RGP or RGE) was present at 2%. Of these breads, the bread with 2% RGE attained the highest sensory score.

  • This study examined the physicochemical properties of rice embryo in order to investigate the antioxidative effect of black rice bran pigment fraction on rice embryo lipid oxidation. Color stability of rice bran pigment fraction and acid value of added rice embryo were determined at various conditions of pH, temperature, and storage time. Rice embryo contained more crude protein (22.1%) compared to the rice bran (9.4%). However, rice embryo had a higher lipid content than rice bran, causing lipid oxidation during storage. Pigment fraction were relatively stable in acidic pH of 3.0 stored at $4^{\circ}C$ for 9 days. Rice embryo showed increased acid value with increased storage time and temperature. Furthermore, rice embryo with pigment fraction resulted in lower acid value compared to the control group. Therefore, addition of black rice bran pigment fractions to rice embryo improved storage capacity.

Floral Characteristics of Labiatae and Umbelliferae Flowers and Insect Pollinators in Korea (우리나라 꿀풀과와 산형과 식물의 화기 구조와 방화 곤충)

  • This research was carried out for revealing the co-relationships between insect-pollinators and the plant species of Labiatae and Umbelliferae, insects visiting in flower and the flowers in Korea, were studied from April 2010 to August 2012. The sum of flower visiting degrees in Labiatae are shown 21 in Hymenoptera, 16 in Lepidoptera, and the lowest 1 in Diptera and Coleoptera, respectively. The sum of flower visiting degrees in Umbelliferae are shown 27 in Diptera, 24 in Hymenoptera, 21 in Coleoptera, and 13 in Lepidoptera, respectively. 17 pollinator species visited the flower of Angelica gigas, next 15 pollinator species did the flower of Agastache rugosa, 13 pollinator species did the flower of Prunella vulgaris var. lilacina. 13 pollinator species foraged on the flower of Peucedanum terebinthaceum. and then 11 pollinator species on the flower of Angelica dahurica. Only 1 pollinator species visited the flower of Clinopodium chinense var. grandiflora and Isodon excisus. Pollinators of Coleoptera and Diptera visit more frequently to the flowers of Umbelliferae than those of Labiatae. Pollinators of Lepidoptera and Diptera visit more frequently white flower than purple one. This study found out that mutualistic relations between plants and insect pollinators in Korea.

Studies on the Nest site Selection and Characteristics of Habitat use of Long-tailed Tits Aegithalos caudatus in Korea (한국에서 번식하는 오목눈이의 둥지장소 선택과 서식지 이용 특성)

  • This study was carried out on Kongju National University and its neighboring area, Mt. Gyeryong national park and Mt. Worak national park in the breeding season of long-tailed tits Aegithalos caudaatus from 2008 to 2012. The result of the inquiry, the nests were found in 15 species of trees, and this result shows me it's not choosy about them. But after having classified them according to the features and analyzed them, long-tailed tits preferred evergreen needleleaf tree and deciduous broad-leaf tree and deciduous bush, especially evergreen needleleaf tree. The concealment rate of long-tailed tits' nests was $11.61{\pm}4.79%]\;4.38{\pm}2.19%$(n=29) in Kongju National University and it's neighboring area, $6.06{\pm}2.31%$(n=43) in Mt. Gyeryong national park and $4.38{\pm}2.19%$(n=32) in Mt. Worak national park. By regional groups, the concealment rates of neighboring nests were almost same, but there are no differences among the areas. The average of the color codes was $26.52{\pm}16.14$(n=32) that those of the nest subtract from those of surroundings of the nest. The nests were procryptic according to their surroundings, and if their nest in a tree were evergreen needleleaf trees, they were made of moss. while if the trees of nest in a tree were yellow because of fungus, made of dried moss, they were yellow, too.

Visible Light Driven ZnFe2Ta2O9 Catalyzed Decomposition of H2S for Solar Hydrogen Production

  • Tantalum-containing metal oxides, well known for their efficiency in water splitting and H2 production, have never been used in visible light driven photodecomposition of H2S and H2 production. The present work is an attempt in this direction and investigates their efficiency. A mixed metal oxide, ZnFe2Ta2O9, with the inclusion of Fe2O3 to impart color, was prepared by the conventional ceramic route in single- and double-calcinations (represented as ZnFe2Ta2O9-SC and ZnFe2Ta2O9-DC respectively). The XRD characterization shows that both have identical patterns and reveals tetragonal structure to a major extent and a minor contribution of orthorhombic crystalline system. The UV-visible diffuse reflection spectra demonstrate the intense, coherent and wide absorption of visible light by both the catalysts, with absorption edge at 650 nm, giving rise to a band gap of 1.9 eV. Between the two catalysts, however, ZnFe2Ta2O9-DC has greater absorption in almost the entire wavelength region, which accounts for its strong brown coloration than ZnFe2Ta2O9-SC when viewed by the naked eye. In photocatalysis, both catalysts decompose H2S under visible light irradiation (λ ≥ 420 nm) and produce solar H2 at a much higher rate than previously reported catalysts. Nevertheless, ZnFe2Ta2O9-DC distinguishes itself from ZnFe2Ta2O9-SC by exhibiting a higher efficiency because of its greater light absorption. Altogether, the tantalum-containing mixed metal oxide proves its efficient catalytic role in H2S decomposition and H2 production process also.

Effect of Plant Growth Regulators on Regeneration from the Cotyledon Explants in Watermelon (Citrullus lanatus (thunb.) Matsum. & Nakai) (수박(Citrullus lanatus (thunb.) Matsum. & Nakai) 자엽 절편의 재분화에 미치는 생장조절물질의 영향)

  • In this study, we developed a high frequency watermelon regeneration system using three breeding lines ('B02', 'B05' and 'D04') of watermelon (Citrullus lanatus (thunb.) Matsum. & Nakai) which are differed in their fruits in shape, color of pericarp and flesh. The highest frequency of explants with callus was observed by using explants that consist of cotyledon proximal part end in all breeding lines, and the highest rate of callus induction was obtained on MS medium containing 1.0 mg/L BAP + 0.5 mg/L IAA for 'B02' (94%), 3.0 mg/L BAP for 'B05' (95%), 3.0 mg/L BAP + 0.1 mg/L IAA for 'D04' (90%). The highest shoot regeneration rates from derived callus were obtained on MS medium containing 1.0 mg/L BAP + 0.5 mg/L IAA for 'B05' (94%), and then a 'B02' (81%) with a same culture conditions, and the lowest regeneration was obtained on MS medium containing 1.0 mg/L BAP for 'D04' (56%). Regenerated plants showed the best rates of root formation on MS containing 0.1 mg/L IBA for 'B02' (67%), 0.1 mg/L NAA for 'B05' (87%), 0.5 mg/L IAA for 'D04' (88%). The regenerated plants showed a 100% survival rate in soil condition. The tissue culture and regeneration conditions obtained from this study will be useful for regenerating plants in breeding applications, and will be a useful tool for further genetic transformation studies on watermelons.

MISCLASSIFIED TYPE 1 AGNS IN THE LOCAL UNIVERSE

  • We search for misclassified type 1 AGNs among type 2 AGNs identified with emission line flux ratios, and investigate the properties of the sample. Using 4 113 local type 2 AGNs at 0.02 < z < 0.05 selected from Sloan Digital Sky Survey Data Release 7, we detected a broad component of the $H{\alpha}$ line with a Full-Width at Half-Maximum (FWHM) ranging from 1 700 to $19090km\;s^{-1}$ for 142 objects, based on the spectral decomposition and visual inspection. The fraction of the misclassified type 1 AGNs among type 2 AGN sample is ~3.5%, implying that a large number of missing type 1 AGN population may exist. The misclassified type 1 AGNs have relatively low luminosity with a mean broad $H{\alpha}$ luminosity, log $L_{H\alpha}=40.50{\pm}0.35\;erg\;s^{-1}$, while black hole mass of the sample is comparable to that of the local black hole population, with a mean black hole mass, log $M_{BH}=6.94{\pm}0.51\;M_{\odot}$. The mean Eddington ratio of the sample is log $L_{bol}/L_{Edd}=-2.00{\pm}0.40$, indicating that black hole activity is relatively weak, hence, AGN continuum is too weak to change the host galaxy color. We find that the O III lines show significant velocity offsets, presumably due to outflows in the narrow-line region, while the velocity offset of the narrow component of the $H{\alpha}$ line is not prominent, consistent with the ionized gas kinematics of general type 1 AGN population.

Effects of Frying Time and Temperature on Formation of Acrylamide and Sensory Evaluation in French Fries (감자 튀김의 가열 온도와 시간이 아크릴아마이드 생성 및 기호도에 미치는 영향)

  • The objective of this research was to study the effect of different frying temperatures and time conditions on acrylamide formation, crispness, and sensory evaluations of french fries. Acrylamide concentration in french fries increased as frying temperature and cooking time increased. The french fries treated at $165^{\circ}C$ frying had higher crispness values than those with other treatments. Frying treatments for 2 min 30 sec had the highest crispness values of the french fries. Sensory evaluations in terms of color, texture, and overall acceptability, showed the better quality of french fries treated at the frying condition of $165^{\circ}C$ and 2 min 30 sec than with other treatments. French fries cooked at $165^{\circ}C$ for 2 min 30 sec had not only good sensory properties in french fries, but also led to a reduction in acrylamide formation.

The Widening of Fault Gouge Zone: An Example from Yangbuk-myeon, Gyeongju city, Korea (단층비지대의 성장: 경주시 양북면 부근의 사례)

  • A fault gouge zone which is about 25cm thick crops out along a small valley in Yangbuk-myeon, Gyeongju city. It is divided into greenish brown gouge and bluish gray gouge by color. Under the microscope, the gouges have a lot of porphyroclasts composed of old gouge fragments, quartz, feldspar and iron minerals. Clay minerals are abundant in matrix, defining strikingly P foliation by preferred orientation. Microstructural differences between bluish pay gouge and greenish brown gouge are as follows: greenish brown gouge compared to bluish gray gouge is (1) rich in clay minerals, (2) small in size and number of porphyroclasts, and (3) plentiful in iron minerals which are mostly hematites, while chiefly pyrites in bluish gray gouge. Hematites are considered to be altered from pyrites in the early-formed greenish brown gouge under the influence of hydrothermal fluids accompanied during the formation of bluish gray gouge that also precipitated pyrites. It is believed that the fault core including bluish gray gouge zone and greenish brown gouge zone was formed by progressive cataclastic flow. In the first stage the fault core initiates from damage zone of early faulting. In the second stage damage zone actively transforms into breccia zone by repeated fracturing. The third stage includes greenish brown (old) gouge formation in the center of the fault core mainly by particle grinding. In the third stage further deformation leads to the formation of new (bluish gray) gouge zone while old gouge zone undergoes strain hardening. Consequently, the whole gouge zone in the core widens.

  • The Plastic material had been developed in the middle of the 19th century as an alternative material. Along with the development of the electrical engineering industry, it cropped up into center stage as an effective material and has increasingly expanded its use. As such, the plastic material has bound deep-seated ties with the design activities of industrial products, coming into the main material for a variety of industrial designs. Despite its dose affinity to design function in terms of its materialistic property, we have rarely seen examples of intensive study on the realtionship between plastics and designs. This study aims to find the importance that the substance affects industrial products in designs along with the development of plastic materials. With the objective in mind, we made a review of the streamline stylishness that had flourished in the twenties and thirties of the 19th century. Through this study, we understand that the plastic material has a close realtionshop with design activities in three different aspects. First, its amorphous state of nature makes it possible to change into any shape one desires in plastic surgery, which feature in turn influences the moulding of any design forms. Second, the plastic material is best suited to mass-manufacture, which induces to reduce the cost of production. Hence, the expansion of design industry. Third, the plastic material allows the multiple variety of colors, sensitivity, gloss and patterns and infinitely large possibility ranging from natural senses to human senses with the result that numberless diversity of designs cdould come into being.
