Effect of Palm or Coconut Solid Lipid Nanoparticles (SLNs) on Growth of Lactobacillus plantarum in Milk

  • This study was performed to investigate the effect of palm or coconut solid lipid nanoparticles (PO-SLNs or CO-SLNs) on growth of Lactobacillus plantarum (L. plantarum) in milk during storage period. The PO or CO (0.1% or 1.0%) was dispersed both in distilled water (DW) and ultra high temperature milk (UHTM), and subsequently emulsified with Tween® 80 by ultrasonication (30% power, 2 min). Increase in particle size and encapsulation efficiency (EE%) in DW was observed with an increase in oil concentration, whereas a decrease in ζ-potential of SLNs was noted with an increment in oil concentration. Moreover, the CO-SLNs exhibited relatively smaller particle size and higher EE% than PO-SLNs. The CO-SLNs were found to be more stable than PO-SLNs. Higher lipid oxidation of PO or CO-SLNs in UHTM was observed during the storage test, when compared to PO or CO-SLNs in DW. However, there was no remarkable difference in lipid oxidation during storage period (p>0.05). In the growth test, the viability of L. plantarum in control (without PO or CO-SLNs in DW) exhibited a dramatic decrease with increasing storage period. In addition, viability of L. plantarum of PO or COSLNs in UHTM was higher than that of SLNs in DW. Based on the present study, production of SLNs containing PO or CO in UHTM is proposed, which can be used in lactobacilli fortified beverages in food industry.

  • To reduce the effects of greenhouse gas (GHG) emissions, the government has announced the special platform of technologies as parts of an effort to minimize global climate change, and the government distributed biodiesel since 2006 as the further efforts. Although there are some debates about some quality specifications and unbalanced of source (44% from palm oil), more than 400kton/year of biodiesel was produced in 2013. Moreover the amounts will be increased when the RFS is activated. To solve the unbalanced situation and to achieve the diversity of feeds, it is essential that many researches should be considered. Especially, free and bond glycerines are one of the important properties seriously affected to the combustion system in vehicle & cold properties. Previous method (KS M 2412) couldn't cover the biodiesel derived from lauric oil($C_{12:0}$) such as PKO (Palm Kernel Oil), Coconut oil because those compositions are lighter than other conventional biodiesel sources. In this study, we review the existed method and figure out the factors should improve to analysis the glycerine from PKO and Coconut oil biodiesel. Modifying the analysis conditions to enhance the resolution and change the internal standards to avoid the overlapped- peaks between Capric acid ME ($C_{10:0}$) and standard#1(1,2,4-butantriol). From this revised method, we could solve the restrictions of previous methods. And check the possibility of new method to analyze the glycerine in biodiesel regardless of sources.

  • These experiment were conducted to investigate the characteristics of the purified lipase of Rhizopus japonicus. 1. The optimum pH for the lipase action was 6.8, the stable pH ranged $5.0{\sim}8.0$ and the optimum temperature was $35^{\circ}C$. The Purified lipase was stable below $45^{\circ}C$ and inactivated abruptly above $45^{\circ}C$ 2. Coconutoil castor oil and palm oil were most favorably hydrolyzed by the purified lipase, wheres olive oil and soybean oil were slightly less than the former three, and Tween 80 was hydrolyzed only 30% compared with coconut oil. 3. The purified lipase was activated by $Ca^{++}$ and $Mg^{++}$, whereas it was inhibited by $Hg^{++}$ and $Fe^{++}$.

The Study on the Thermal Oxidation of Mixed Rapeseed Oil with Coconut and Palm Oil (혼합 유채유의 가열산화에 관한 연구)

  • Rapeseed oil is easily oxidized due to the high contents of unsaturated fatty acid such as linoleic acid and linolenic acid. For stability of rapeseed oil oxidation, a special process is required. Two kind of simple and interesterifying mixed rapeseed oil were prepared according to add 30%, 50% and 70% of coconut oil and palm oil. Sample oils were heated at 180${\pm}$5$^{\circ}C$ for 5, 10, 15, 20, 25, 30 and 35 hours. Then the physicochemical properties such as the tendency of oxidation were investigated. The initial AV and POV of interesterifying mixed rapeseed oil were higher than those of simple mixed oil. But the tendency of oxidation were similar. While oxidation rate of similar and interesterifying mixed rapeseed oils with coconut oil and palm oil were lower about than those of rapeseed oil.

Fatty Acid Compositions of Fats in Commercial Coffee Creamers and Instant Coffee Mixes and Their Sensory Characteristics (국내 유통되는 커피 크리머와 커피믹스에 함유된 지방의 지방산 조성 및 관능적 특성)

  • This study examined the fatty acid compositions of the fats extracted from 14 commercial coffee creamers and 11 instant coffee mixes, and evaluated the sensory characteristics of the coffees using different coffee creamers. The fat content in the 14 coffee creamers and 11 coffee mixes was 15~28% and 8~14%, respectively. The fats in 12 coffee creamers consisted of 34~45% lauric, 15~19% myristic and 10~18% palmitic acids. The fats in the other 2 coffee creamers consisted of 43% palmitic, 39% oleic and 10% linoleic acids. The fatty acids of the fats in the 11 coffee mixes were almost all saturated with lauric acid being the most abundant (44~45%). Coconut oil or palm kernel oil might have been used to manufacture the 12 coffee creamers and 11 coffee mixes, which had a higher lauric acid content. Palm oil (PO) might be a fat source for the other 2 coffee creamers. The sensory characteristics of five coffee mixes were evaluated based on their fatty acid compositions. The coffees with the creamers, which had a higher lauric acid content, were significantly more acceptable than those with a higher palmitic acid (p<0.05). The sensory evaluation of the coffees made with the creamers composed of hydrogenated coconut oil (HCO) and PO at different ratios showed that the acceptability increased with increasing HCO content. This suggests that PO may have a negative impact on the sensory characteristics.

The Study on the Oxidative Stability of Mixed Rapeseed oil with Palm oil (팜유 혼합유채유의 산화안정성에 관한 연구)

  • Two kinds of simple and interesterfying mixed rapeseed oil were prepared according to add 30%, 50% and 70% of coconut and palm oil, then the physicochemical propecties such as the tedency of oxidation, foaming activity were Investigated. The initial AV and POV of interesterifyung mixed rape-seed oils were higher than those of simple mixed oils, but the tendencies of oxidation were similar. The intial value of IV interesterfied rapeseed oils was added in simple mixed rapeseed oil, Induction period were increased about 2.4~4 times. Induction period of intereterifyng mixed oils added palm ell increased about 2~3.2 times. While the foaming Buantity of interesterifing mixed rapeseed oils with palm oil were lower about 28~40% than those of the simple mixed rapeseed oils.

  • This article aims to describe the institutional structuring strategy of independent smallholders in accelerating sustainable economic development, by taking the example of the cow-coconut integration system (SISKA) problem in Sialang Palas Village, Riau. The method used identified stakeholders related to SISKA; the stakeholder's goals and interests, farmers' social and institutional bases, and self-help farmer socio-economic networks. First, identification of various factors through strengths, weaknesses, opportunities, and threats (SWOT) analysis techniques. Second, through the Modern Political Economy analysis technique. Third, imparting knowledge and skills to the farmers and village officials through a collective learning process in utilizing natural resource waste and social resources. The results showed that the farmer management strategy in the reform era started by clustering the interests of farmers. The dynamics of structuring group relations between the chairman and members with farmers outside the group are the basis for strengthening the local ideology of independence in the future. This institutional structuring strategy that focuses on access to farm power in the village decision-making process encourages a more integrated work of farmer organizations. The analysis above shows that the independent smallholder institutional engineering through regulation, organization, and resources are determined by the farmer household economic factors and the application of the value of local wisdom.

Adsorption characteristics of Amitrol, Nonylphenol, Bisphenol-A with GACs (흡착특성이 다른 내분비계 장애물질 3종, Amitrol, Nonylphenol, Bisphenol-A의 GACs에서의 흡착 특성)

  • Adsorption characteristics of three endocrine disruptors, amitrol, nonylphenol, and bisphenol-A, were evaluated depending on the type and service duration of activated carbon (AC). Bituminous coal-, wood-, and coconut-based coals were tested. Bituminous coal-based AC (BCAC) had the greatest sorption capacity for the three chemicals tested, followed by wood-based AC (WAC) for nonylphenol and coconut palm-based AC (CAC) for bisphenol-A. During the column test, amitrol removal efficiency increased over time, indicating that hydrophilic endocrine disruptors are biodegraded in the AC column. Removal efficiencies of hydrophobic compounds such as nonylphenol and bisphenol-A decreased over time since the main removal mechanism was adsorption. The order of the amitrol removal was: BCAC-5.9 yr, CAC-3.l yr > BCAC-2.2 yr > BCAC-virgin > CAC-virgin > WAC-virgin > WAC-3.l yr. In general, used AC had greater removals than virgin AC. The order of the bisphenol-A removal was: CAC-virgin > BCAC-2.2 yr > CAC-3.l yr > WAC-virgin > BCAC-5.9 yr > WAC-3.l yr. The order of the nonylphenol removal was: BCAC-virgin > WAC-virgin > CAC-3.1 yr, WAC-3.1yr> BCAC-2.2 yr > BCAC-5.9 yr > CAC-3.1 yr. Bituminous coal AC performed the best over time. Endocrine disruptors such as these three compounds appear to be removed effectively by activated carbon through biodegradation and adsorption. Wood and coal based among the virgin ACs and 3.1 years used wood base among the used ACs appeared the lowest carbon usage rate(CUR) for nonylphenol removal by prediction model. Virgin and used coconut base ACs except BCAC had the lowest CUR for removal Bisphenol-A. Biodegradation of nonylphenol and Bisphenol-A did not occurred during the 9,800 bed volume experiment period. BCAC had the highest biodegradation capacity of 46% for amitrol among virgin ACs and the used coal based ACs had 33-44% higher biodegradation capacity than virgin's for amitrol so biodegradation is the effective removal technology for hydrophilic material such as amitrol.

  • Alkyl polyglucosides (APG), so called natural nonionic surfactants, are prepared with glucose from corn starch and fatty alcohol from palm and/or coconut oil. When we studied on interfacial properties of APG, surface and interfacial tension, cmc, foaming and effectiveness, according to degree of polymerization of glucose unit (D.P.=1.2~1.8) and alkyl chain length, the former hardly affects but the latter greatly affects on them. The order of detergency for fatty acid soils decreased as followings ; APG 0814> APG 1214> APG 10> APG 0810> APG 08, and the samples with lowest interfacial tension and maximum adsorption had a better detergency.

A Modified Methylation Method to Determine Fatty Acid Content by Gas Chromatography

  • An improved rapid method for determination of the fatty acid composition using modified methylation procedure was compared with the AOAC reference procedure based on the methylation of fatty acid with the addition of BF3 catalyst before and while heating. The new method is useful for research and routine quality control and has a number of advantages over the reference procedure which are more rapid, simple and also reliable. Applicability of the modified methylation method was confirmed with three vegetable oil samples (palm oil, coconut oil and olive oil). Based on the validation method results, we obtained that a quite linear calibration curve of fatty acids was performed with $R^2$ in range of 0.9972-0.9994. The sensitivity of gas chromatography instrument was able to analyze the fatty acids up to a few ppm, the precision and accuracy were good enough with the %RSD between 1.5%-19.5% and the recovery of linolenic acid was 99.1% in the range of 80.0%-113.3%.
