In order to investigate the effect of dietary zinc and phytic acid levels on enzyme activity and lipid metabolism in rats, male Sprague-Dawley rats, weighing approximately 60-74g, were fed different diets which contained 0, 0.35 or $1.05\%$ phytic acid each at 3 levels of zinc (0, 30 and 1500ppm zinc) for 28 days. Body weight gain, food consumption, and food efficiency ratio were lower in the rats fed a zinc deficient diet (0ppm zinc) than those consuming 30 or 1500ppm dietary zinc. The activities of GOT, GPT and alkaline phosphatase were lower in the rats consuming 30ppm zinc than those fed 0 or 1500ppm zinc diet. The activity of GOT was increased in rats consuming $0.35\%$ phytic acid, whereas that of alkaline phosphatase was decreased in the rats fed phytic acid-containing diet. The concentration of phospholipid in serum was higher in rats fed $0.35\%$ dietary phytic acid, whereas that of liver phospholipid was higher in zinc deficient groups, and increased by addition of dietary phytic acid. The concentration of triglyceride in serum from rats fed 30ppm zinc was lower than those fed 0 or 1500ppm zinc On the other hand, liver triglyceride was higher in both the rats fed 30ppm zinc and $0.35\%$ phytic acid. The concentration of serum total cholesterol was lower in the rats fed 30ppm zinc diet, and it was increased by addition of dietary phytic acid. But liver total cholesterol was higher in 30ppm zinc group. HDL-cholesterol in serum was the highest in both rats consuming 30ppm zinc and $0.35\%$ dietary phytic acid, and the ratio of HDL-cholesterol to total cholesterol was higher in rats consuming 30ppm zinc diet. In conclusion, we suggest that coronary heart disease or liver disease can be prevented with phytic acid in rats which are fed the high zinc diet.
This study was carried out to examine how dietary protein and calcium levels in rats fed fat-enriched diet affect the total lipid and cholesterol contents of blood and tissues. Male Sprauge-Dawley rats weighing approximately 200g were fed six purified diets which contained 18%(w/w) beef tallow, 1% (w/w) cholesterol, two source of protein, casein or isolated soy protein (ISP) and three levels of dietary calcium, 0.1%, 0.4% and 1.0%, first, for four weeks, and second, for eight weeks. The contents of the total lipid, cholesterol and triglyceride in blood, liver, heart and feces were determined. After four weeks feeding serum lipid and cholesterol concentrations significantly decreased in rats fed 1.0% (w/w) level calcium, regardless of dietrary protein sources. After eight weeks, these concentrations were significantly lower in the rats fed soy protein than in casein-fed rats. As dietary calcium level increased serum and tissue lipid and cholesterol contents were decreased and fecal lipid excretion increased. It is concluded that hypolipidemic and/or hypocholesterolemic effects of soy protein and calcium were partly due to decrease in lipid absorption.

The effects of Pleurotus (P.) eryngii on the weight gains, food efficiency ratios, serum and hepatic lipid concentrations were investigated in male rats fed the high fat diets. Twenty one week-old Sprague-Dawley rats were given three different types of diet for 10 weeks, respectively: a control diet (high fat; $20\%$ lard), two kinds of P. eryngii diet supplemented with $3\%\;or\;5\%$ of dry P. eryngii powder in substitutes for the same amounts of cellulose in the control diets. The body weight gains and food efficiency ratios of the rats fed $3\%\;and\;5\%$ P. eryngii diets were significantly lower than those of the rats fed the control diet. The concentrations of hepatic total lipid and triglyceride in the rats fed the P. eryngii diets were significantly lower than those in the rats fed the control diet. But the hepatic cholesterol contents of the rats fed the P. eryngii diets were similar to those of the rats fed the control diet. The concentrations in serum total cholesterol, LDL-cholesterol, and atherogenic index ratios were significantly lower in the rats fed the P. eryngii diets compared to those fed the control diet. The HDL-cholesterol/total- cholesterol ratio was significantly higher in the rats fed the P. eryngii diets compared to those fed the control diet. There were no significant difference found in the serum triglyceride, phospholipid and HDL-cholesterol concentrations among the experimental groups. These results showed that feeding of P. eryngii powder feeding decreased the total cholesterol, LDL-cholesterol and atherogenic index and increased the HDL-cholesterol/total-cholesterol ratio in serum of the rats fed high fat diet.
This study was designed to observe the effects of both control and atherogenic diets on the cholesterol and triglyceride (TG) in serum and liver of adult rats fed diets supplying two levels of dietary fat and two different sources of dietary protein in early life. For the first experimental period, the rats were assigned into the four diet groups: High fat, casein (HC); High fat, gluten (HG); Low fat, casein (LC): Low fat, gluten (LG). Each group was subdivided into control and atherogenic groups for the second experimental period. Cholesterol and TG were determined in serum and liver after 7 hr fasting. The body weight gain was greater in the rats of the casein groups than those of the gluten groups tut not influenced by the level of the dietary fat. The difference in body weight from the quality of dietary protein in the first period was not disappeared even after the second period. After the first period, higher serum cholesterol was observed in the rats fed either casein or high fat diets. With the second experimental diet, rats fed atherogenic diet showed higher serum cholesterol concentration but lower serum TG levels compared to those fed control diet, regardless the diets fed in the first period. Serum cholesterol level of the rats of both groups which had been fed high fat diets in early life was increased compared to those of the low fat diet groups. This effect was more pronounced with the atherogenic diet groups than control groups. However, no differences were found in serum cholesterol levels resulted from the different types of dietary protein fed in the first period. Serum TG concentration was not influenced by the quality of protein and level of fat in the diet but seemed to be mere affected by the amount of carbohyrates in the diet. Liver cholesterol per unit weight was greater in the gluten diet groups than in the casein groups but total cholesterol was higher in casein fed rats. There were no differences in liver TG among the groups.
These works were designed to examine the effects of dietary fiber sources and levels on lipid metabolism in rats fed high lard diet. Rats were divided into three($\alpha$-cellulose, polydextrose, carrageenan) groups and were fed with containing 6% fiber diet. Serum, liver and fecal lipid contents were examined after four weeks of dieting. Also, in order to investigate whether hypocholesterolemic effect of dietary fiber at 4 weeks is continued at 8 weeks, rats were fed with diets containing same sources with different levels of each dietary fiber and were sacrificed after eight weeks of dieting. Serum cholesterol in rats fed carrageenan diet and polydextrose diet were reduced compared with $\alpha$-cellulose-fed group at both four and eight weeks dieting. Liver cholesterol in both polydextrose-fed and carrageenan-fed group were lower than $\alpha$-cellulose-fed group. Fecal total group were increased compared with $\alpha$-cellulose-fed group. On the other hand, there was no significant difference between polydextrose-fed and carrageenan-fed group. On the basis of the results, it was suggested that the hypocholesterolemic effect of soluble fiber used in this study (polydextrose, carageenan) on rats was due to the inhibition of cholesterol absorption on the intestinal lumen and acceleration of cholesterol catabolism in the liver and enhancement of bile acids excretion. On the other hand, insoluble fiber($\alpha$-cellulose) showed no hypo-cholesterolemic effect.
Biochemical studies such as growth rate, blood cholesterol and ascorbic acid contents in various organs of albino male rats were studied in the Garlic, Vitamin E, high and low protein diet fed groups. The results of this study were summarized as follows : 1) Either single 10% or 30% protein diet fed rats were not shown growth rate properly. In supplementation of Vitamin E or Garlic on 30% protein growth rate was a more increased than that of the 10% protein diet group. 2) The rate of food consumption of rats fed a 10% or 30% protein diet supplemented with Vitamin E and Garlic was more increased than that of the control Group receving 10% or 30% protein diet alone. 3) No essential difference was observed between the cholesterol level in blood of rats fed 10% protein diet supplemented with Vitamin E and Garlic and that of rats Receiving 10% protein diet alone. But the cholesterol level in blood of rats fed 30% protein diet supplemented with Vitamin E and Garlic was lower than that of control receiving 30% protein diet alone. 4) The Vitamin C contents in various organs of rats fed the diet supplemented with Vitamin E and Garlic seems to be a little higher than that of the control group fed the protein diet alone.
The present study was conducted to evaluate effect of fermented chub mackerel extract (FCME) on lipid metabolism of rats fed a diet supplemented with 1% cholesterol. Four week-old male rats were divided into three groups of 15 rats with 0, 0.1% or 0.2% FCME supplementation. In comparison with control, rats fed 0.2% FCME showed reduction of activities of acetyl-Coenzyme A carboxylase (p<0.05), 3-hydroxy-3-methyl glutaryl Coenzyme A reductase (p<0.01) and fatty acid synthetase (p<0.01). Rats fed 0.2% FCME also showed reductions in free cholesterol in the liver (p<0.05), and in concentrations of free cholesterol (p<0.05), LDL+VLDL-cholesterol (p<0.05), triglyceride (p<0.01) and phospholipid (p<0.01) in the plasma. Plasma HDL-cholesterol concentration was significantly (p<0.05) higher in treatment groups as compared with control group. Atherogenic index was also significantly lower in rats fed 0.1% or fed 0.2% supplement diet, whereas bile acid in feces was not significantly affected. The current study showed that 0.2% inclusion level of the fermented chub mackerel extracts might have hypolipidemic properties.

This study evaluated effects of enzymatic hydrolysates of squid on cholesterol lowering in rats. Thirty male rats were blocked into 3 groups [high cholesterol diet (control), 5% normal squid, and 5% enzymatic hydrolysates of squid] and were raised for 10 weeks. Triglyceride level in enzymatic hydrolysates of squid-fed rats was lower than that in the control. Serum low density lipoprotein-cholesterol level followed in the order of control>normal squid>enzymatic hydrolysates. Serum high density lipoprotein-cholesterol level in enzymatic hydrolysates of squid-fed rats was higher than that in control rats. Liver cholesterol level in enzymatic hydrolysates of squid-fed rats was lower than that in control rats.
This study investigated the effects of dietary soy protein and Ca on the lipid profiles of rats fed fat-enriched diets. Rats were divided into two groups and fed either a casein-low Ca (Exp I) or ISP-high Ca diet (Exp II) for a control period of 4 weeks. The two groups of rats were again subdivided into 4 groups and fed one of 4 experimental diets for another 4 weeks. The experimental diets consisted of 18% beef tallow and 1 % cholesterol, in which either 20 % casein or ISP with one of two levels of Ca, high (1 %) or low (0.1 %). The concentrations of total lipid, cholesterol and triglyceride in serum, liver and feces were determined. At the end of the control period, the serum total lipid and cholesterol concentrations were low in the rats fed ISP-high Ca diet (67~76% and 83~86%). During the next 4 week period, these concentrations remained significantly lower in rats fed the diets containing ISP and high Ca compared with those on casein and low Ca diets (p < 0.05). Total lipid and cholesterol concentrations in feces were significantly higher in the ISP-high Ca dietary group at 4 weeks, and high in both high Ca groups at 8 weeks. This study demonstrates that both soy protein and Ca reduce serum and liver cholesterol, triglyceride, and total lipid in rats fed fat-enriched diet, and that they have an additive effect when combined.
Effects of fermented milk were tested in Sprague-Dawley male rats. In six treatment 150 rats were fed for 12 months: (1) normal control synthetic pellets+water, (2) cholesterol control synthetic pellets containing 1% of cholesterol and 500, 000 IU of vitamin D2/100 g (cholesterol pellets) +water, (3) cholesterol pellets+25% fermented milk, (4) cholesterol pellets+50% fermented milk, (5) cholesterol pellets+75% fermented milk, (6) cholesterol pellets+100% fermented milk. In 3, 6, 9, 12 months, rats were sacrificed for analysis of samples. Rats received the fermented milk had significantly lower (p<0.05) serum cholesterol levels and higher ratios of HDL-cholesterol to total cholesterol than did the water fed rats. Stomach, heart, abdominal aorta and kidney of rat from fermented milk group showed slighter calcification or necrosis than did those of rat from cholesterol control group. Weight gain, diet intake, and drink consumption were significantly different among groups. Results indicate that fermented milk had a helpful effect of experimental hypercholesteremia and atherosclerosis.
