Encapsulation of Flavors by Molecular Inclusion Using $\beta$-Cyclodextrin: Comparison with Spray-drying Process Using Carbohydrate-based Wall Materials

  • Microencapsulation of flavor was carried out by molecular inclusion process using $\beta$-cyclodextrin (${\beta}CD$). ${\beta}CD$-flavor complex was prepared at various flavor-to-${\beta}CD$ ratios (1:6-1:12) to determine the effect of ${\beta}CD$ concentration on the inclusion efficiency. Maximum total oil retention and minimal surface oil content were obtained at flavors to ${\beta}CD$ ratio of 1:10. The physical properties and controlled release pattern of flavors from ${\beta}CD$-flavor complex were measured and compared with spray-dried microcapsules prepared using carbohydrate wall system. ${\beta}CD$-flavor complex showed higher total oil retention and surface oil contents, smaller mean particle size, lower moisture uptake, and higher oxidation stability than spray-dried microcapsule. Oxidative stability of flavor was correlated with hygroscopicity of wall materials. The controlled release mechanism was highly affected by temperature and characteristics of wall materials.

  • This study was conducted to investigate the influence of different nutrient databases in estimating nutrient intake. A nutrient survey with Food Frequency Questionnaire containing 65 food items was conducted with 2,426 subjects over 30 years of age living in Yeonchon-gun, Kyungki province. The nutrient intakes were first estimated by using one (A) nutrient database which was based on the Korean Food Composition Table, 4th edition. With the other (B) nutrient database which was based on the Korean RDA(Recommended Dietary Allowances) 6th edition, it was reestimated and two resu1ts were compared. For most nutrients except carbohydrate, calcium, vitamin C and $eta$-carotene, mean nutrient intake level estimated from database B was significantly higher than that from database A(p<0.05). Mean intake level of most nutrients from two databases were significantly correlated by Pearson's correlation coefficients(p<0.001). Results from the ranking of nutrient intake levels of the subjects by two databases were highly correlated ( P >0.9, p<0.001). Weighted kappa values representing measures of agreement ranged from 0.55 databases ranged from 45% for vitamin C to 96% for carbohydrate. This result implies that different nutrient database may produce substantial differences in estimating the absolute nutrient intake but may not be crucial in ranking or classifying individuals with regard to specific nutrient intake.

Effect of Carbohydrate Source and Cottonseed Meal Level in the Concentrate on Feed Intake, Nutrient Digestibility, Rumen Fermentation and Microbial Protein Synthesis in Swamp Buffaloes

  • The objective of this study was to investigate the effect of carbohydrate source and cottonseed meal level in the concentrate on feed intake, nutrient digestibility, rumen fermentation and microbial protein synthesis in swamp buffaloes. Four, 4-yr old rumen fistulated swamp buffaloes were randomly assigned to receive four dietary treatments according to a $2{\times}2$ factorial arrangement in a $4{\times}4$ Latin square design. Factor A was carbohydrate source; cassava chip (CC) and CC+rice bran at a ratio 3:1 (CR3:1), and factor B was level of cottonseed meal (CM); 109 g CP/kg (LCM) and 328 g CP/kg (HCM) in isonitrogenous diets (490 g CP/kg). Buffaloes received urea-treated rice straw ad libitum and supplemented with 5 g concentrate/kg BW. It was found that carbohydrate source did not affect feed intake, nutrient intake, digested nutrients, nutrient digestibility, ammonia nitrogen concentration, fungi and bacterial populations, or microbial protein synthesis (p>0.05). Ruminal pH at 6 h after feeding and the population of protozoa at 4 h after feeding were higher when buffalo were fed with CC than in the CR3:1 treatment (p<0.05). Buffalo fed with HCM had a lower roughage intake, nutrient intake, population of total viable and cellulolytic bacteria and microbial nitrogen supply than the LCM fed group (p<0.05). However, nutrient digestibility, ruminal pH, ammonia concentration, population of protozoa and fungi, and efficiency of microbial protein synthesis were not affected by cottonseed meal levels (p>0.05). Based on this experiment, concentrate with a low level of cottonseed meal could be fed with cassava chips as an energy source in swamp buffalo receiving rice straw.

Associations between dietary patterns and hypertension among Korean adults: the Korean National Health and Nutrition Examination Survey (2008-2010)

  • The objective of this study is to identify the dietary patterns associated with the risk of hypertensions among Korean adults using data from the Korean National Health and Nutrition Examination Survey (KNHANES, 2008-2010). This study analyzes data from 11,883 subjects who participated in the health and nutrition survey, aging from 20 to 64 years. We performed factor analysis based on the weekly mean intake frequencies of 36 food groups to identify major dietary patterns. We identified three major dietary patterns in both sexes, namely "traditional", "western" and "dairy and carbohydrate" patterns. Participants in the highest quartile of western pattern scores had significantly higher blood pressure, serum total cholesterol, and triglyceride levels than those in the lowest quartile. Although not statistically significant, a trend (P for trend = 0.0732) toward a positive association between the western dietary pattern and hypertension risk was observed after adjustments for age, sex, education, income, body mass index (BMI), smoking, physical activity, and energy intake. The dairy and carbohydrate pattern was inversely related with BMI and blood pressures and positively associated with serum high-density lipoprotein (HDL)-cholesterol. After adjusting the age, sex, education, income, BMI, smoking, physical activity and energy intake, the dairy and carbohydrate pattern showed inverse associations with hypertension prevalence (OR = 0.64, 95% CI = 0.55-0.75; P for trend < 0.0001). Intakes of fiber, sodium, and antioxidant vitamins were significantly higher in the top quartile for the traditional pattern than in the lowest quartile for the traditional pattern (P for trend < 0.0001). Intakes of fiber (P for trend < 0.0001), calcium (P for trend < 0.0001), retinol (P for trend = 0.0164), vitamin $B_1$ (P for trend = 0.001), vitamin $B_2$ (P for trend < 0.0001), niacin (P for trend = 0.0025), and vitamin C (P for trend < 0.0001) were significantly increased across quartiles for the dairy and carbohydrate pattern whereas sodium (P for trend < 0.0001) intake was decreased for this pattern. In conclusion, the dairy and carbohydrate pattern may be associated with a reduced risk of hypertension whereas the western pattern may be associated with an increased risk of hypertension among Korean adults.

Utilization of dietary protein, lipid and carbohydrate by flounder (Paralicthys olivaceus)

  • Although flounder is one of the most important marine fish for aquaculture in Korea, feeding the flounder in commercial farms depends mainly on moist pellet in which over 70% frozen fishes (e.g. frozen horse mackerel) are incorporated in its formulation. Therefore, for further expansion of flounder farming, it is essential to employ practical formulated feeds that can support reasonable growth. Development of nutritionally balanced and cost-effective feeds is dependant on the information about nutritional requirement and feed utilization of the species. Nutrient and energy source in feed are needed for the growth and maintenance of fish. Protein is probably the most important nutrient affecting fish growth and feed cost. Therefore, it is essential to determine the optimum dietary protein level for the growth of fish, both its high proportion in the feed and because it is the main factor in determining feed cost. Dietary energy level is also critical because protein source in the feed is utilized as an energy source when the feed deficient in energy is fed to fish, whereas when the feed excess in energy is fed to fish, feed consumption decreased and resulted in growth reduction due to lack of other necessary nutrients for normal growth. Improper dietary protein, energy levels and/or their ratio will lead to an increase of fish production cost and deterioration of water quality resulting from wasted feed; thus, they are important in formulating commercial feed. Dietary lipids play important roles in providing energy and essential fatty acid for normal growth and survival of fish. Although carbohydrates are not essential nutrients for carnivorous fish, these compounds play important roles as a low-cost energy source for protein sparing and also as a feed binder. Nutrition researches for flounder have identified its requirements of protein, lipid and essential fatty acid, vitamin, and minerals for normal growth. Other studies have also been carried out to investigate the utilization of the protein, lipid and carbohydrate sources. Based on these nutritional information obtained, practical feed formulations have been studied for improve aquaculture production of flounder. The results of the researches on utilization of dietary protein, lipid and carbohydrate by flounder are discussed in this review.

일상식 상차림 패턴과 1인 1회 분량에 근거한 중학생의 식단계획 평가 (Assessment of Menu Plan Prepared by Middle School Students According to Ordinary Meal Pattern and Single Serving Size)

  • It is important to prepare and execute the menu plan for proper and balanced intake of nutrients in the adolescence. This study investigated the new approach for planning menu by ordinary meal pattern based on cooked foods groups. The amounts of cooked foods in the menu plan assumed to be single serving size. The middle school second graders participated for the study. A total of 313 questionnaires were analyzed using CAN-pro 3.0 and SPSS WIN 12.0 program. The average content of energy in the menu plan was 2,453 kcal, the average ratios of energy contribution by carbohydrate, protein and fat were 54.3%, 17.9%, 27.8%, respectively. A total of 56.9% menu plans (94.9% of male and 8.7% of female students') were below the lowest limit of optimum carbohydrate energy ratio of 55%. A total of 29.1% menu plans (33.1% of male and 23.9% of female students') were exceed the highest limit of optimum fat energy ratio of 30%. The NAR of minerals and vitamins were all 1.0 except for calcium (0.92) and folate (0.88). When INQ of the individual cooked food groups were calculated, kimch was the highest in all minerals and vitamins examined, suggesting that kimch may be the best source for all minerals and vitamins, including calcium and folate with the minimum change in energy content. In conclusion, the menu plan by ordinary meal pattern in this study was low in carbohydrate, high in fat, and contained enough minerals and vitamins except for calcium and folate for middle school students.

Digestate residues analysis under elevated heat regime by using DNS method

  • The problems with unsorted municipal waste are always associated with disposal issues as it requires a large area for landfilling or high energy used for incineration. In recent years, an autoclaving technique has been considered a promising approach which could minimize the volume of organic waste from being directly disposed or incinerated. In this work, an attempt was done to study the saccharification potential of organic residues under elevated temperature Thermal treatment involving hot water bath was applied to treat the organic residue ranging from 60℃ to 100℃ for 30 and 60 minutes. The result obtained showed an increasing trend for the concentration of glucose and carbohydrate. However, the result for lignocellulose content which contains various component includes extractive, holocellulose, hemicellulose, cellulose and lignin show variation. Based on the thermal treatment carried out, the result indicated that the trend of glucose and carbohydrate content. The highest percentage of glucose that can be obtained 978.602 ㎍/ml which could be obtained at 90℃ at 60 minutes. The carbohydrate also shows an increasing trend with 0.234 mg/ml as the highest peak achieved at 80℃ for 30 minutes treatment. However, it was found that the lignocellulose content varies with temperature and time. The statistical analysis was carried out using two-ways ANOVA shows an interaction effect between the independent variables (temperature and contact time) and the saccharification effects on the food wastes. The result shows a variation in the significant effect of independent variables on the changes in the composition of food waste.

열량 및 열량영양소 섭취량과 관련된 유전자 변이에 대한 전장유전체 연관성 분석연구 (Genetic Variants Associated with Calorie and Macronutrient Intake in a Genome-Wide Association Study)

  • There has been no genome-wide association study (GWAS) for macronutrient intake as a quantitative trait. To explore genetic loci associated with total calorie and macronutrient intake, genome-wide association data of autosomal single nucleotide polymorphisms (SNPs) from Korean adults were analyzed. We conducted a GWAS in 3,690 men and women aged 40 to 60 years from an urban population-based cohort. At the baseline examination (June 18, 2001 through January 29, 2003), DNA samples of the study subjects were collected and analyzed for genotyping. The information of average daily consumption of total calorie, carbohydrate, protein, and fat was obtained from a semi-quantitative food frequency questionnaire and transformed by natural logarithm for analyses after adjustment of calorie intake. Using multivariate linear regression analysis adjusted for age, sex, and height, we tested for 352,021 SNPs and found weak associations, which do not reach genome-wide association significance, with calorie and macronutrient intake. However, a number of SNPs were found to have potential associations with macronutrient intake; in particular, signals in SORBS1 and those in PRKCB1 were likely associated with carbohydrate and fat intake, respectively. We observed an inverse association between the minor allele of the SNPs in these genes and the amount of consumption of carbohydrate or fat. Our GWAS identified loci and minor alleles weakly associated with macronutrient intake. Because SORBS1 and PRKCB1 are reportedly associated with the metabolism of glucose and lipid as well as with obesity-related diseases, further investigations on biological and functional roles of polymorphism of these genes in the relation to macronutrient intake are warranted.

연령별 일부 한국인의 Glycemic Load와 혈중 지질과의 관련성 (Correlation between Glycemic Load and Blood Lipid Profile in Some Korean according to Age)

  • The purpose of this study was to investigate the correlation between glycemic load and blood lipid profiles in some Korean according to age: The subjects were divided into four groups based on the following age ranges; $10\sim19$ age group(n=260), $20\sim49$ age group(n=129), $50\sim64$ age group(n=135), over 65 age group(n=87). They were measured for the anthropometric measurements, dietary intakes, glycemic load and blood analysis. The average ages of the $10\sim19$ age group, $20\sim49$ age group, $50\sim64$ age group and over 65 age group were 10.9 yrs, 40.8 yrs, 57.1 yrs and 70.8 yrs, respectively. The food intakes were increased according to age in the younger two groups but decreased in the elder two groups. The energy and carbohydrate intakes were the highest in the $10\sim19$ age group. The averages of serum HDL-cholesterol levels of the $20\sim49,\;50\sim64$ and over 65 age group were significantly lower than that of the $10\sim19$ age group. The food intake of the $10\sim19$ age group was positively correlated to the glycemic load(p<0.001). The food and energy intakes of the $20\sim49,\;50\sim64$ and over 65 age group were positively correlated to the glycemic load. And the serum triglyceride and AI levels of the over 65 age group were positively correlated to the glycemic load(p<0.001, p<0.05). These results suggest the need for further research into the relation between glycemic load and blood lipids in order to ensure proper carbohydrate intakes.

  • The purpose of this study were to analyze the staple food consumption trend of Koreans using KNHANES(Korea National Health and Nutrition Examination Survey) data. Nutrient intake of 38,840 participants of 1998~2008 KNHANES, over 6 year old were analyzed. For the analysis of major staple food intakes, twenty four hour recall data was used. The results were analyzed by SAS Program, as follows. Despite westernized diet, ranking in the primary energy source of food showed similar patterns. But total calory intake was reduced over the past 11 years and percentage of carbohydrate intake was increased. Relative proportions of protein and fat intake was reduced. The major carbohydrate and protein source of Koreans was rice and grains. Pork and ramen were the major fat source food. Although intake levels were different by gender, age and areas, carbohydrate of rice was primary source of energy in Korea.
