  • This study attempted to evaluate the effectiveness of nutrition education on a weight control prog-ram. The major components of nutrition education in this program held for 8 weekly sessions were the general nutrition information about the diets especially low fat high carbohydrate hypocaloric diets methods of increasing physical activity strategies for the maintenace of proper body weight and other information related to the prevention of obesity. Twenty five female college students participated in this program. All subjects were randomly assigned to the Nutrition Education (NE) group or the Diet Only (DO) group. Mean energy intake of the NE group was 1,230kcal(CHO:61% PRO:15% FAT:24%) DO group consumed 1,472kcal(CHO:58%, PRO:16% FAT:26%). The NE group lost 3.3$\pm$0.7kg of body weight. In contrast the DO group lost 1.8$\pm$0.6kg The NE group experienced a significant decrease in cholesterol LDL-cholesterol level however the DO group significantly increased in triglyceride. The results of this study suggest that progressive nutrition education in a weight control program might re-duce body weight and serum lipids concentration.

  • The study was undertaken to assess the degree to which subjects were compliant with a specific metabolic diet in a controlled outpatient feeding study. The study consisted of a two-week control period in which subjects consumed a control diet consisting of 38-40% fat, 18-20% protein, 40-42% carbohydrate, followed by a three-week experimental period during which each subject consumed the control diet plus one of the four fiber supplements(20g/4ay) assigned on a random basis on the trust day. All meals were prepared and eaten in a metabolic feeding laboratory, with the exception of Saturday and Sunday meals that were packed for take-out. Fifty-seven healthy adult men, aged 18-65 years participated in the study. Dietary compliance index(CI) defined as the percent deviation of actual consumption from the prescribed food's and unconsumed prepared foods. The CI reflected the additional 'non-prescribed foods' and unconsumed 'prescribed foods'. A CI was calculated for all subjects. A CI of 5% or more was defined as poor compliance. Overall, dietary compliance was substantially improved for the entire group over the course of the study. Significant increase in compliance far energy and macronutrient intake occurred between the baseline and experimental periods. Within a non-obese group, dietary compliance fir energy improved from 5.5% to 3.3% by the end of the study(week 1vs week 5, respectively, p<0.05). However, between non-obese and obese group, dietary compliance was not different. (Korean J Nutrition 31(5) : 957-964, 1998)

  • The purpose of this study was to investigate the possible causal factors of obesity in women with child-bearing experiences in effects to provide optimal information for the prevention and/or treatment of obesity. Sventy one women with child-bearing experiences were divided into five groups based on the degree of obesity by BROCA method ; normal weight, overweight, and obesity which was further divided into three groups of light, moderate, and sever obesity. Various anthropomnetric measurements, overall eating habits, and dietery intakes were asessed for each groups. Out of eighteen anthropometric factors asociated with obesity, thirteen measurements were represented to be valid for the diagnosis of obesity. Body fat % which was analyzed by Bioelectrical Impedance fatnee Analyzer were 24.765, 28.05%, and 29.85 for normal, overweight, and obesity group respectively. WHR(waister to hip ratio) or BMI(body mass index) widely used index was also resulted to be valid as a predictor of obesity. Waist circumference which represents abdominal fat mass showed a good correlatin with body fat%. The analysis of dietary intakes suggested that the overintakes of total calorie may not be the only causal factor of obesity, rather the amount of daily protein, fat and carbohydrate intakes or the physical activity level would be more closely related with the prevalence of obesity. Further investigation considering more variety of food composition of diet and the activity level involving larger number of subjects would be needed.

  • The present study was conducted to investigate physical characteristics, food habits of pregnant women with gestational diabetes mellites(GDM). The subjects were consecutive pregnant women, 21 GDM and 43 non-GDM controls who received antenatal care at the Obstetrics and Gynecology clinic. There were no significant difference in the mean age between the two groups(GDM:30.8years, non-GDM:30.5years). Significant differences were observed in several anthropometric characteristics such as height(GDM:159.7cm, non-GDM:162.3cm), prepregnancy weight(GDM:61.6kg, non-GDM:54.1kg), body mass index(GDM:23.9kg/$m^2$, non-GDM:20.5kg/$m^2$), and triceps skin fold thicknesses(GDM:30.9mm, non-GDM:24.7mm) between the two groups. The GDM group had an high incidence of(52.4%) family history of diabetes mellitus than those of control group(23.3%). In the GDM group, more irregularities of meals and more bed-time snacking were observed than those of control group. The intake amount of carbohydrates as well as the total energy were significantly higher in the GDM group when thery were compared with the control. These results suggest that the GDM women in Korea do exhibit clearly distinctive anthropometric and dietary characteristics. Nutritional management such as weight control before conception and throughout pregnancy, monitoring total energy and carbohydrate intakes, and implementing more rigorous meal scheduling might be beneficial for the prevention or reduction of the prevalence of the GDM or its complications. • This study was conducted to compare effects of various types of dietary carboh ydrates fed with different levels of protein on the protein utilization in weanling rats. Sixty male Sprague-Dawley rats weighing $60{\pm}1.3grams$ were adapted for 1 week with 77% starch-15% casein diet. Then the animals divided into 12 groups according to body weight and fed each experimental diet for two weeks. Carbodydrates used were glucose, starch, and sucrose and the amount of protein given were 0g, 1g, 3g, 5g casein/day. Protein portion of the diet was fed in two seperate feedings per day while nonprotein portion was fed ad libitum. It seemed that there was no significant difference in the protein utilization by using the different kinds of carbohydrate, but in P.E.R., N.P.U., weights of organs and protein and lipid in total carcass, glucose groups were tended to be slightly lower than starch and sucrose groups. The larger the amount of casein given, the higher were the value of body weight gain, F.E.R., weights of organs, total lipid in carcass and the amount of nitrogen retention. On the while, the larger the amount of casein given, the lower were the value of the intake of non-protein portion, P.E.R., N.P.U, and the percentage of nitrogen retention.

  • This study was designed to investigate the nutritional effect of mugowrt powder supple mentation to rice diets with different protein levels. Thirty female albino rats weighing 39-43g were adopted for the feeding trial for 4 weeks. The different 5 kind of experimental diets were performed . Control diet was commercially available forage for rats, experimental diet (I-C) highly milled rice, (Ⅰ) highly milled rice 95% and mugwort powder 5%, (Ⅱ-C)highly milled rice 95% and milk casein 5%, and (Ⅱ) highly milled rice 90%, milk casein 5 % and mugwort powder 5%. Growth rate was remarkably high in the dietary group fed on highly milled rice supplemented with 5% mugwort powder (protein 8%) (P<0.05), but it showed the tendency to be rather low in the group fed on highly milled rice supplemented with 5% casein and 5% mugwort powder (protein 12%). Food efficiency as well as protein efficiency appeared similar to the growth rate. Hematodcrit level demonstrated the same tendency as growth rate, but hemoglobin content was observed to increase by diets supplemented with increasing amount of mugwort regardless of protein level. Each nutrient intake was increased by adding mugwort powder to diets after a week's feeding, but it was increased by 8% protein diet, and decreased by 12% protein diet in 3 weeks as well as 4 weeks after feeding . The absorption rate of carbohydrate and protein decreased by feeding mugwort supplemented diets regardless of protein level and feeding period, and that of lipid increased with 12% protein diet.

  • This study was undertaken to evaluate estimated and analyzed contents of sodium and potassium in the salt-restricted diet using "Food exchange sheet fro control of protein, sodium and potassium" for renal disease patients. Average food intake per day in the salt-restricted diet was 2, 241.2$\pm$68.4g, and water content of meals per day was 2, 082.7$\pm$144.3g including 297.7$\pm$91.1g of metabolic water from protein, fat and carbohydrate. Fried food showed higher weight change than that of the other kinds of food during cooking. Estimated and analyzed content of sodium were 656.4$\pm$273.2mg, 675.7$\pm$195.3mg, respectively ; those of potassium were 2, 198.3$\pm$37.3mg, 2, 142.3$\pm$162.4mg, respectively. Fried squid showed the lowest content of analyzed sodium and potassium compared with the estimated contents. The highest content of sodium was honeyed juice with apple, whereas the highest content of potassium was Mulkimchi. There was also no significant differences between analyzed and estimated content of sodium, as in case of potassium(p<0.05). Side dish and main dish made great contribution to sodium contents and the side dish and dessert were major source for potassium.potassium.

  • This study was performed to assess gender differences in rates of obesity, dietary behaviors, and nutrient intakes among college students living in Gwangju. Anthropometric measurements showed that the body mass indexes (BMIs) of the males and females were $22.1{\pm}2.6$ and $20.1{\pm}2.4$ respectively. All obesity indices including BMI, relative body weight (RBW), % body fat by bioelectrical impedence analysis (BIA), and waist-hip ratio (WHR) were significantly higher in the males than in the females. Abdominal fat was also found to be higher in the males whereas underweight was prominent in the female students. The dietary behaviors of the males as determined by dietary scores, were poorer than those of the females. Twenty-four hour dietary recalls revealed that most nutrient intakes were adequate, exceptions of vitamin C, Ca, and folate intakes in both sexes and Fe intake in the female students. Ca and folate intakes were below 75% of the KDRI for both genders. In addition, Unbalanced energy ratios of carbohydrate, protein, and fat were noted in both genders. Effective nutrition education programs targeting college students should be developed and implemented to increase Ca and folate consumption. It is suggested that gender-based nutrition education approaches be created due to poor dietary behavior in males and inadequate nutrient intakes in female college students.

  • This study evaluated the evaluate nutrient knowledge of child care teachers and assessed the nutritional level of snacks served in 18 child care centers in Tean-Gun. The survey sample was 18 child care teachers working in 18 child care centers of Tean-Gun. The questionnaire requested information about demographic factors, nutritional knowledge, management status of snacks, and the kinds and serving size of snacks served for 1 week. Data were analyzed using SPSS for windows(version 12.0) and nutritional values were assessed using Can-pro 2.0. The mean score of teachers' nutritional knowledge was 22 out of 30 points. The scores were low in the questions regarding the ease with which Ca and re deficiencies can be developed in infants. The contents of most nutrients supplied from the snacks exceeded 15% of RI(Recommended Intake) but there were significant differences in the contents of energy (p<0.05), protein (p<0.05), fat (p<0.05), carbohydrate (p<0.05) and calcium (p<0.001) between the child care centers. Especially, the difference of calcium between the child care centers was 344.84 mg. These results indicate that a program of relevant nutritional education focusing on snacks needs to be developed for child care teachers, with a special recognition on correct calcium level.
