Physicochemical and sensory characteristics of commercial top-fermented beers (시판 상면발효맥주의 관능 및 이화학 특성 분석)

  • The sensory characteristics of 12 commercial top-fermented beers were determined by sensory descriptive analysis. Beer samples were also analyzed for soluble solids, titratable acidity, pH, reducing sugar content, bitterness unit (BU), turbidity, hunter color values, amino acid content, total phenolic content, and DPPH radical scavenging activity. Five appearance, nine aroma, six flavor/taste, and four mouth-feel related sensory attributes were evaluated by a panel of nine judges. As the result of three way analysis of variance of descriptive data, all sensory attributes except "cereal" aroma and "salty" taste showed significant differences among the beers (p<0.05). Based on the principal component analysis of the descriptive data, samples were primarily separated by first and second principal components, which accounted for 78% of the total variance between the beers with high intensities of "yellow color", "caramel aroma", and "barley taste" versus "hop aroma", "sour", and "citrus aroma". In the correlation analysis between the sensory terms and physicochemical parameters, BU, total phenolic content, titratable acidity, soluble solids, and yellowness ($b^*$) showed significant positive correlations with citrus aroma, pineapple aroma, and fresh aroma characteristics.

  • It is France for the origin of wine cepage in the world. Cepage of Syrah is estimated as intense, aromatic and dense wine. It is getting popularized and enlarged in cultivation areas. Syrah is well planted cool areas and hot areas. It is high in alcohol degree concerning sugar content. Especially, this cepage is clear aroma and is the best well-aged wine. The strong points is deversed style, adapted to everywhere. Rhone is attracted public attention for strong and full-boied by international wine experts. Syrah is deep color like ink. From distincted aroma be formed to casis, meat, leather, burned rubber, brown suger, caramel, raisins bouquets by aging. It is popular among wine manias for strong characteristics, spycies, high tanin, lasting flavors. Nowadays it receive response in the world with powerful style and characreristics.

Changes in the Physicochemical Properties and Sensory Characteristics of Burdock (Arctium lappa) During Repeated Steaming and Drying Procedures (증건 횟수에 따른 우엉의 이화학적 변화 및 관능적 특성 연구)

  • This study was conducted to investigate changes in the physicochemical, antioxidant, and sensory properties of burdock during 9 repeated rounds of steaming ($90^{\circ}C$, 3 h) and drying ($60^{\circ}C$, 20 h) procedures. The moisture content decreased from 81.95% to 7.64% as the process was repeated. Fresh burdock showed the highest total sugar content, with 518.35 mg/g of soluble sugar, 86% being inulin. The reducing sugar content was the greatest (377.00 mg/g) in burdock that had been processed 3 times. The brown color continuously intensified, reaching its peak at 7 rounds of processing, and then weakened. Crude saponin content was the highest (6.17%) after the 5th processing. Polyphenol content and antioxidant activity (DPPH, ABTS, FRAP) were the highest at the 3rd and 5th procedures, respectively. Repeated processing weakened the grass and root odors and the bitter, astringent, and metallic tastes, whereas it strengthened the sweet and savory odors, caramel flavor, and richness.
