Clostridium botulinum and Its Control in Low-Acid Canned Foods

  • Clostridium botulinum spores are widely distributed in nature. Type A and proteolytic type B bacteria produce heat-resistant spores that are primarily involved in most of the food-borne botulism outbreaks associated with low-acid canned foods. Food-borne botulism results from the consumption of food in which C. botulinum has grown and produced neurotoxin. Growth and toxin production of type A and proteolytic type B in canned foods can be prevented by the use of thermal sterilization alone or in combination with salt and nitrite. The hazardousness of C. botulinum in low-acid canned foods can also be reduced by preventing post-process contamination and introducing hazard analysis and critical control point (HACCP) practices during production. Effectiveness of non-thermal technologies such as high pressure processing with elevated process temperatures on inactivation of spores of C. botulinum will be discussed.

가공식품의 무기질 함량에 관한 연구 (A Study on Mineral Content in Processed Foods)

  • We analysed 398 kinds of processed foods sold on market - 43 kinds of ramyun, 67 kinds of bread, 104 kinds of cookies, 5 kinds of pizza, 28 kinds of sausage, 31 kinds of steamed fish cake, 4 kinds of tomato ketchup, 30 kinds of canned goods, 82 kinds of beverage and 4 kinds of danmoogi- to know mineral content such as p, Ca, Mg, Na and K. We used atomic absorption spectrophotometry for this study and the results were as follows; 1) P content was 204.24mg% in sausages, 101.80mg% in pizza, 671mg% in canned fish, 44.50mg in canned vegetable, 38.62 mg% in ramyun and 32.10mg% in steamed fish cake. Sausage had the highest P content showing almost 6 times as much as steamed fish cake. There was little difference between ramyun and steamed fish cake. 2) Ca content was 115.00 mg% in pizza, 106.94 mg% in steamed fish cake, 100.59 mg% in sausage, 91.25 mg% in canned vegetable, 79.84 mg% in bread and 78.97 mg% in ramyun, 3) Mg content was 555.16 mg% in steamed fish cake, 476.14 mg% in cookies, 436.75mg% in ketchup, 394.00mg% in canned vegetables 346.95mg% in ramyun and 341.40mg% in canned fish. Steamed fish cake was highest in Mg content and there was little difference between ramyun and canned fish. 4) Na content was 730.49mg% in ramyun, 680.25 mg% in danmoogi, 548.43 mg% sausage, 463.50mg% in canned vegetable, 449.25 mg% in ketchup, 401.29 mg% in steamed fish cake and 366.00 mg% in pizza. Ramyun had the highest Na content 5) K content was 302.30 mg% in pizza, 280.25 mg% in ketchup, 219.68 mg% in sausage, 219.2 mg% in canned fish, 183.75 mg% in canned vegetable, 166.49 mg% in ramyun and 122.77 mg% in cookies. Pizza had the highest K content.

  • This work is a further development of the method created by G. Krivoshiev in 1996 for elimination of peel interference and prediction of fruit flesh optical density. In this investigation, as it was earlier, the objects are observed as being structured by three successive layer “AlongrightarrowOlongrightarrowB” denoting “peel-flesh-peel”. In the first version of the method the transmittances of the surface layers A and B were measured according to Kubelka-Munk theory by means of their diffuse reflectance. At that the overall transmittance T was approximated in the form of a multiplication approximation being valid for plane-parallel layers of a non-scattering material. In this work this approximation was done away with applying the theory of discontinuum, respectively Benfor's equations. As a result two mathematical models were created for non-destructive prediction of fruit flesh optical density. These models are different from the ones based solely on Kubelka-Munk theory, the destruction being marked by the terms 1n (1 - $R_{A}R_{0}$) and 1n (1 - $R_{A}R_{B}$), where: $R_{A}$ and $R_{B}$ are reflectance values for the surface layers A and B; $R_{0}$ is the average reflectance of the internal layer that could be obtained empirically by means of a preliminary measurement of sufficiently large number of physically peeled fruits of a given species and variety.

Evaluation of the Quality of Canned Seafood with Added Spice-oil Extract

  • The influence of spice (cinnamon, allspice, black pepper)-oil extract on canned seafood quality was studied. During the processing of canned seafood, the substitution of spice-oil extract for vegetable oil (refined sunflower, corn, soybean and olive oil) resulted in a decrease in the heat resistance of spore microorganisms, making it possible to reduce the duration of sterilization for canned food to 5-10 min at $115^{\circ}C$. This reduction in the sterilization duration of canned seafood with spice-oil extract inhibited residual microflora in the product, thus reducing the deleterious effect of heating on the main food compounds while preserving protein digestibility.

담양권 대나무 이용 향토음식에 관한 연구 (A study on the redeveloping traditional foods with bamboo in Damyang)

  • Damyang is famous for the bamboo and various foods. It is urgently needed that native foods in this area are studied and modernized. Developing new foods and redeveloping local economy. Bamboo shoots can be raw materials for kimchi, canned goods, salted goods, Korean cookies, bread, tea, beverage, and so on. This study aims to invent new traditional foods using local product such as bamboo shoots will contribute to boost the recipe. to explore the new method of production and to modernize the traditional dishes. In the final analysis, economic and cultural consideration would be attached in this study.

시중 유통 가공식품 중의 중금속 함량에 관한 연구 (A Study on the Contents of Heavy Metals in the Commercial Processed Foods)

  • 본 연구는 가장 대중적인 가공식품이라 할 수 있는 통조림류, 청량음료류 등에 있어서의 중금속 함량을 분석하고 안전성과 오염 정도에 대한 기초자료를 제공하고자 2000년 3월에서 2001년 2월말까지 서울시내 대형 유통 매장에서 판매 중인 통조림, 청량음료 총 24종 120건을 채취하여 납(Pb), 크롬(Cr), 카드뮴(Cd), 주석(Sn)함량을 측정한 결과, 통조림에 있어서의 납의 평균 함량은 과일통조림이 0.041ppm으로 가장 높았고, 농산물통조림과 수산물통조림은 0.024ppm으로 나타났으며 청량음료류는 과일쥬스류가 0.043ppm으로 가장 높았으며 탄산음료(0.029ppm), 혼합음료 (0.017ppm)순으로 나타났다. 이와 같이 과일 원료인 제품에서 납 함량이 높게 나타난 것은 원료 자체에 의한 영향보다는 과일 유기산에 의한 산도의 증가에 의하여 중금속의 용출이 증가했다는 연구 결과와 일치하는 결과라 판단 되며, 또한 수산물 통조림의 납 함량이 과일, 채소류 통조림보다도 낮게 나타난 것은 시료로 사용된 참치, 꽁치, 고등어통조림의 경우 이미 가공과정에서 중금속 함량이 높은 내장과 껍질 부위의 많은 부위가 제거되었기 때문인 것으로 판단되었다. 크롬함량의 경우 납과 유사하게 과실 원료인 통조림과 과실쥬스류에서 높게 나타났으나 이것은 총 크롬 함량이므로 3가 크롬과 6가 크롬의 함량에 대한 구체적인 연구가 이어져야 할 것으로 생각되었다. 카드뮴 함량은 통조림과 청량음료의 경우 수산물 통조림을 제외하면 매우 낮은 수준을 나타냈는데 특히 청량음료의 경우 식품위생법상의 기준이 0.1ppm인 것에 비해 점반적으로 수ppb수준으로 나타나 기준으로서의 필요성에 대한 제고가 필요한 것으로 판단되었다. 통조림과 청량음료의 주석 함량은 과일 원료인 경우 가장 높은 함량을 나타내었으며 농산물 통조림의 경우 특히 죽순 통조림의 주석 함량이 매우 높아 최고 61.760ppm을 나타내었는데 죽순 자체의 산도가 높지 않은데도 통조림의 주석 함량이 높은 것은 죽순 가공과정에서 갈변을 방지하기 위하여 처리한 아황산염의 영향으로 산도가 낮아진데 기인한 것으로 판단되었다. 우리나라의 경우 외식과 가공식품의 섭취량이 과거에 비해 점차 증가하고 있으며 식생활에 미치는 영양도 급격히 증가하고 있는 추세이므로 보다 현실적인 접근방식에 의한 가공식품 전반에 걸친 영양학적 위생학적 평가가 수행되어야 할 것으로 생각된다.

연어 frame 통조림의 제조 및 특성 (Preparation and Characterization of Canned Salmon Frame)

  • This study was conducted to prepare canned salmon frame and to characterize its food components. In the preparation of high-quality canned foods, the boiling water generated in the pre-heating process should be removed, and then the pre-treated canned salmon frame should be sterilized for an $F_0$ value of 12 min. The proximate composition of the canned salmon frame prepared under optimal conditions (CSFP) was 58.4% moisture, 15.7% protein, 21.4% lipid, and 3.5% ash. Based on the results of volatile basic nitrogen and microbiological tests, the CSFP was acceptable. The sensory score for the color of CSFP was 4.1 points, which was higher than that of commercial canned salmon frame (CCSF). However, there were no significant differences in the sensory scores for flavor and taste between CSFP and CCSF. The total amino acid content of CSFP was 14.58 g/100 g, which was 4.9% lower than that of CCSF. The major amino acids in CSFP were aspartic acid (11.0%), glutamic acid (14.8%), and lysine (10.6%), which accounted for 36.4% of the total amino acid content. The CSFP was high in calcium and phosphorus, while it was low in magnesium and zinc. The major fatty acids in CSFP were 16:0 (15.2%), 18:1n-9 (17.0%), 18:2n-6 (16.7%), 20:5n-3 (9.3%), and 22:6n-3 (8.8%). Based on the results, CSFP is a high-quality canned food in terms of hygiene and nutrition.

대학생들의 가공식품 구매실태와 식품표시 인지 정도 (A Study on Utilization of Processed Foods and Recognition of Food Labels among University Students)

  • This study examined the utilization of processed food and the recognition of food labels among 257 university students (201 females and 56 males) in Seoul and Kangwon-do. The results of the study showed that the most important considered information on food labels are shelf life, nutrition facts, and price in sequential order. Female students' recognition of nutrition facts was significantly higher than that of male students (p<0.05). Female students more attentively checked the manufacturer, origin of the products, and shelf life information on food labels than did the male students. In checking out the food labels information, the most checked items on food labels were calories, trans fatty acid and cholesterol in that order and the least checked information was the sodium contents. Among processed foods, male students' consumption was dominant in instant noodles, frozen dumplings, and canned goods, while female students had more candies/chocolates. In selecting processed foods, male students showed strong preference for cheaper and quantitative products, while female students chose more tasty, brand new, well-known brand, and products of domestic origin. Frequency of canned and frozen food consumption showed a positive correlation with BMI, while candies/chocolates showed a negative correlations with BMI. Negative correlations were found in the attitude of selecting food with longer shelf life and BMI. The results of this study suggest that university students need to be well informed to make wise food choices that contribute to a healthy diet. Additionally, food manufacturers and government authorities concerned should make certain that consumers know how to use food label information more easily and effectively through proper education.

음료식품의 알루미늄 함량 (The Contents of Aluminum in Beverage Foods)

  • 여러 금속 원소 가운데 유해하지 않은 것으로 알려진 알루미늄 재질의 용기나 화합물의 사용이 증가하고 있어서 알루미늄의 허용수준에 대한 연구의 필요성이 대두되고 있으나 그에 대한 연구가 거의 없는 실정이어서 이의 기초자료를 얻고자 여러 가지 대중적인 음료식품 가운데, 유산균 음료, 탄산 음료, 과실 음료, 과실 통조림 등에 대한 알루미늄 함량을 원자흡수분광광도법으로 분석한 결과는 다음과 같다. 3개 제조사의 유산균음료중 액상요구르트는 161.667~173.333ppm, 호상 요구르트는 139.303~293.926ppm으로 호상요구르트 함량이 약간 높았다. 4개사의 캔 용기의 과실 음료와 탄산 음료는 각각 1,481~7,130ppm, 1,803~6,027ppm으로 이들 서로 간에 합량 차이는 크지 않았다. 3개사의 과실 통조림 중 포도 통조림은 5,661~5.927ppm, 복숭아 통조림은 4.600~7.053ppm의 범위였고, 3개 제조사의 차류 제품은 326.592~846.056ppm으로 그 중에서 녹차의 함량이 846.056ppm으로 제일 높았다.

캔 및 병 오렌지쥬스의 저장중 중금속과 비타민 C 함량의 변화 (Changes in Heavy Metals and Vitamin C Content during the Storage of Canned and Bottled Orange Juices)

  • 현재 국내에서 유통되고 있는 캔 및 병 오렌지쥬스를 20, 30, 40, $50^{\circ}C$에서 24주 동안 저장하면서 4주 간격으로 개봉하여 중금속(Sn, Fe, Pb) 함량, 비타민 C 함량, 갈색도와 pH의 변화를 조사하였다. 병쥬스에서는 Sn, Fe, Pb 모두 저장 중 그 함량 변화가 거의 일어나지 않았으나 캔쥬스는 중금속 용출에 대한 온도의 영향이 두드러지게 나타났다. 즉, Sn농도는 16주 후 저장 전의 $2.7{\sim}13.1$배로 증가하였고, Fe농도는 24주 후 $4.3{\sim}5.2$배로 증가하였으며 Pb농도는 24주 후 $1.1{\sim}2.9$배로 증가하였다. 캔쥬스의 총 비타민 C 잔존율은 24주 후 $20^{\circ}C$에서는 큰 변화가 없었으나 $30{\sim}50^{\circ}C$에서는 $13{\sim}76%$로 감소하였고, 병쥬스의 경우는 $4{\sim}80%$로 감소하였다. 캔쥬스의 갈색도는 24주 후 $40^{\circ}C$ 이하에서는 조금 증가하였으나 $50^{\circ}C$에서는 완전히 변색되었으며 병쥬스의 경우는 모든 온도에서 캔쥬스보다 좀 더 변색되었다. 오렌지쥬스의 pH는 $40^{\circ}C$ 이하에서 포장용기에 상관없이 저장 중 거의 변화가 없었으나 $50^{\circ}C$에서는 24주 후 캔용기의 팽창과 함께 pH의 급격한 증가를 나타냈다. 국내에서 유통되고 있는 캔쥬스의 품질유지를 위한 유통기한을 재검토해야 될 것이다.
