While ruling Chosun, with a view to making Chosun the primary supplier of food, Japan made the peasantry of Chosun go to ruin by leaving land from them through land enterprises, and the projects of increasing rice production. At the same time, Japan formed the higher classes comprising pro-Japanese capitalists, landlords and intellectuals, and protected them in order to carry out her colonial policies. Naturally there came into being a great gulf between the minority of high society and the majority of the poor in Chosun. As there was a great difference in food life between the two, I'm going to examine the literature of those days to grasp exactly the condition of their food intake. As for the staple food, out of thirteen provinces in Chosun, 13% lived on only rice and 27% on other minor cereals with no rice. As for the subsidiary food, about thirty percents did not take any animal protein. The examination of intake of nutrition by classes shows that the higher and middle classes took the necessary amount of calorie and protein and that the component ratio of calorie was comparatively properly distributed. The lower classes are defined as those whose monthly income was less than 100 won and the peasantry in general. And again the peasantry are classified into three-high, middle and low-according to their farming conditions. The tenant farmers in Kyeongguido and the peasants of Darli community took enough amount of calorie and protein, but much smaller amount of animal protein. Fire-field farmers led not less miserable food intake than the extremely poor peasants. They seldom lived on rice. Potatoes, oats and millets were their staple food. Lastly, Engel's coefficient for the Tomack-min (the residents in mud huts) who were among the three extremely poor classes, was 73.3%, which was much higher than that of the lower classes in then Japan. Rationed rice and barley were their staple food but the rationed amount was not sufficient to satisfy needs of physical labor. In conclusion, during the period of Japanese ruling of Chosun, the minority of higher and middle classes in Chosun generally took sufficient amount of nutrient, while the status of food intake with poor peasants, fire-field farmers and Tomack-min was extremely miserable.
서울시내 아파트중에서 경제적인 수준을 볼 때 상(上), 중상(中上), 중(中), 하(下)의 계등별 특색이 나타날 수 있는 한강 멘숀아파트, KIST 아파트, 문화촌 아파트, 북아현 시민아파트 주민의 일반적인 식새활 현황및 영양과 식품 섭취 실태 조사결과는 다음과 같다. A. 조사대상자(調査對象者)의 일반환경(一般環境) 세대주의 학력이 제일 높은 KIST 아파트가 한강 멘숀 아파트보다 식생활비는 오히려 적은 펀이었으나 가족영양 및 기타 영양문제를 항상 고려하고 계획성 있는 식생활을 하는 경향이었다. 고기류, 생선류의 섭취 빈도는 한강멘숀, KIST, 문화촌 아파트는 하루에 한번 섭취하는 경우가 많은 것으로 나타났다. 조리할 때 조미료나 식품의 양은 대부분 눈짐작으로 하지만, 계량컵, 제량스픈, 저울을 사용하는 경우는 KIST 아파트가 제일 많은 편이었고 식사할 때 개인접시 및 napkin의 사용은 한강 멘숀과 KIST 아파트에서 많은 편이었다. 먹고 남은 음식은 조금 남은 것은 버리는 경우가 대부분이고 냉장고에 식품을 보관할 때는 대개 뚜껑을 덮거나 싸서 넣는 경우가 많았다. B. 영양섭취실태(營養攝取實態) 1인(人) 1일(日) 열량 섭취량은 한강멘숀, KIST, 문화촌, 시민아파트 순으로 경제적인 생활수준과 거의 비슷한 경향을 보여 주었으나 총열량 섭취량중 탄수화물, 지방, 담백질의 비율은 이상 권장량인 탄수화물 65%, 지방 20%, 만백질 15%에 거의 비슷한 경향으로 나타났다. 대체적으로 단백질, Fe, Vit. A, Niacin의 의섭취량은 권장량 이상을 취하고 있으나 Ca, Thiamin, Riboflavin, Vit. C의 섭취량은 권장량에 미달되는 경향이 있었다. C. 식품섭취실태(食品攝取實態) 1인(人) 1일(日) 섭취하는 식품의 양은 북아현 시민아파트가 가장 많고 한강 멘숀아파트가 가장 적게 나타나 경제적인 생활수준 혹은 총 Calorie 섭취량과는 반대되는 경향을 나타내었다. 식품 총 섭취량에 대한 각 식품군의 섭취 비율을 보면 어느 아파트나 곡류의 섭취율이 $45{\sim}50%$로서 가장 높은 수치를 나타냈다. 그외의 식품군 중에는 한강 멘숀과 KIST 아파트는 육류의 성취율이 가장 높았고 문화촌과 북아현 시민아파트는 김치류의 섭취율이 가장 높았다. 채소류와 과일류의 섭취율은 한강 멘숀과 KIST 아파트가 높은 반면 저류의 섭취율은 한강 멘숀아파트가 가장 낮았다. 단백질 급원으로서 한강멘숀과 KIST 아파트는 주로 육류를, 문화촌 아파트에서는 곡류와 생선류를 그리고 북아현 시민 아파트에서는 주로 두류를 많이 섭취하는것으로 나타났다.
This study was performed to investigate the adequacy of dietary fat and protein intakes among female college students. Daily intakes of energy, fat, protein, major amino acids and other nutrients were measured in 52 female college students. Daily energy intake was 75.8% of the recommended intake. Fat and protein consist 19.2% and 16.7% of the total calorie, respectively. The average protein consumption per day was 105% of the recommended intake. Essential amino acids intakes were more than the recommended amounts which appears in the 6th edition of Recommended Dietary Allowances for Koreans. However, when the intake of each essential amino acid was compared to the recommended amino acid requirement pattern, these subjects did not meet the estimated requirements. There was a highly significant correlation between daily protein intake and lipid intake implying the major sources of protein in the diet were also major sources of fat. Daily intakes of dietary fiber, vitamin C, iron, and phosphorous were above the recommended levels of intake. However, blood hemoglobin concentration was marginal indicating dietary iron consumption is not a good marker for iron status. Also, calcium intake was only 63.5% of the recommended intake. Therefore, these results imply that main problems for these subjects are low energy consumption, low calcium intake, and the quality of protein. However, as opposed to the hypothesis, the main energy sources were not the food items high in saturated fats such as instant foods, which should be emphasized further.
For the purpose of implementing health and nutrition education for college women, we investigated changes in height, weight, and daily living schedule, as well as the relationship between energy intake and expenditure, and food and nutrients intake levels for the six years from 1977 to 1982. A special form of questionaires was prepared and distributed to well-trained subjects (total 213) in order to find out their general characteristics, daily living schedule and dietary intakes. The recovery of questionaires distributed to each subject was 90%. Then the quality of their living, energy balance, nutrient intake and food intake were evaluated and the F-test was used to test the statistical significances. It was found that : 1) The range of weights and heights of subjects were between 48-50 kg, 157-161cm respectively over the 6 year period. 2) In daily living schedule, that is, the average physiological activity time including sleeping ranged from 760 to 801 minutes. Free time decreased gradually, from 318 minutes per day in 1977 to 275 minutes in 1982. Average time for study and for house work was 196-280 minutes and 68 - 157 minutes respectively for 6 years, and study time was significantly varied in each year. 3) The energy intake of the subjects averaged 1762 Kcal, whereas the expended energy was 1892 Kcal. In the energy balance determined by the relationship between energy intake and expendituye, the ratio of subjects who maintained a negative energy balance gradually increased from 53% (1977) to 64%(1982). 4) The average nutrient intake was higher than the recommended dietary allowance except for calorie (1997 - 1982), calcium (1979) and iron (1979, 1980). The total calorie intake was composed of 59-63% carbohydrate, 19 - 24% fat and 15 - 18% protein Of the total protein intake the percentage of animal was 47 -51% for six years, showing acceptable nutritional status. 5) The average total food intake of the subjects increased from 1,080 g (1977) to 1,184g (1982), but this was not a significant difference. Cereal composed the highest proportion among the total food intakes, and rice intake was 58-78% of cereals. Cereal was followed in decreasing order by vegetables, dairy products, fruits, meat and fish products. The option available for the selection of cooking methods as well as the selection of food item was limited, so there were few changes over time.
This study was carried out to know the food habits of 200 persons, 89 males and 111 females, aged 60 years and over from June 13 to July 2, 1977 in Seoul. The results are summarized as follows: 1. Changes of the food preferences The preferences about foods after 60 years of age showed in lower scores of dislikes than those before and, however, were not significantly changed. Beef was the item which 75% of the subjects liked and was the highest in desire to eat, Likes for hot, salty, and sour taste except sweet were diminished but they generally liked hot or sweet food rather than sour or salty one and also warm dish rather than cold one. Intakes of foods The average consumptions of the basic food groups per capita per day were 475.5g of males .and 431.8g of females for cereals and grains, 119.6g and 103.6g for meats add legumes, 221.7g and 216. lg for fruits and vegetables, 52.6g and 39.4g for milk and small fishes, and 5.0g and 4.7g for fats and oils. 3. Intakes of calorie and nutrients The percentage contributions of three nutrients, carbohydrate, protein, and fats to the total amounts of calories were 75.9, 12.4, and 11.7% of mates and 75.6, 12.4, and 12.0% of females. Women had a slightly higher percentage of caloric intake to RDA than men who didn't satisfy RDA. The subjects revealed an insufficient protein intake as well as calcium. Therefore, many older people have to be convinced of the importance of milk for both nutrients. The mean ratios for iron, niacin, and thiamin intake were higher than RDA and on the contrary. those for riboflavin, vitamin A, and ascorbic acid intake were below RDA. It seems necessary, for the aged to maintain good state of health, to promote their appetite, and to take regular mealtime because difficulty of teeth, illness, irregular mealtime, and loss of appetite had influence on less intakes of calorie and nutrients.
The purpose of this study is to determine the effects of the aerobic exercise type on macronutrient self-selection. Male Sprague-Dawley rats were placed on a macronutrient self-selection diet for 4 weeks. For this purpose, mixed feeds were prescribed for the rats while they were forced to swim and run for 4 weeks. Animals were either swimming exercise or treadmill running exercised at 20m/min(60min/day). Cumulative daily energy and macronutrient intake were determined during this period. The running exercise group gained weight much more than the control group, while the swimming exercise group lost weight less than the control group. Such findings suggests that the former group took more feed. On the other hand, the dietary efficiency of the control group was higher, which implies that no physical exercise would result in a higher dietary efficiency. And there was significant difference of total dietary and calorie intakes among the three groups, Although insignificant in statistical means, it was found that the running group took feed most, which is attributable to the homeostasis requiring the supplementation of the calorie lost by exercise. Also, the running exercise group took the protein and carbohydrate most. while the control group took fat most. The decrease of fat intake by the running exercise group suggests the possibility that the in-body enzymes should adapt themselves to the changing in-body condition caused by the endurance exercise. In contrast, it is conceived that the more intake of the carbohydrate may be attributable to the need of supplementing the nutrient lost by the endurance exercise. As discussed above, the endurance exercise group took carbohydrate and protein and less fat than control group. In particular, it was found that the amount of feed intakes was affected much by types, intensity and duration of the exercises. All in all, such findings would apply to human beings. The purpose of this study was to Investigate the response of fasting serum glucose and basal insulin to dietary omega-3 fatty fish in normal subjects. Nineteen healthy female volunteer subjects were divided into two groups, depending on fish preference test. Low ap3 fatty acid group for 7 days received a experimental Inlet containing mackeral fish 100g. Calorie intake was 1780 kcal /day. The average 4ally u-3 fatty acid consumption from fish was 3.87g /day (1.03g EPA, 2.849 DHA) . High n-3 fatty acid group was given 7.74g maine u-3 fatty acid (200g mackeral fish) consisting of 2.06g EP45.68g DHA. Calorie intake was 1815 local /day Fasting blond serum glucose, insulin levels were measured at baseline, 7days after experimental diet. In the beginning the levels of fasting serum glucose, basal insulin were not different between both groups. There were no significant changes in fasting serum glucose, insulin levels by experimental diets. These data indicate that marine ar3 fatty acid consumption have no deleterious effect on glycemic control in normal subjects.
This study was carried out in order to investigate a suitable dietary guideline for athlets who need weight control. This dietary guideline will be a basic information to furnish further development of the computer program. The weight of Boxing and Judo players were diverse ranging from 49.5Kg to 95Kg whose overage age was 21. Also the quantity of energy expenditure during a day's activity depended on the indiviual's weight and physical conditions that will contribute to many factors among those surveyed, and the overall contribute to many factors among those surveyed, and the overall consumption of calorie per day was ranged from 3682Kcal to 7226Kcal. Underweight patients were studied with respect to changes in their nutritional status before and after administration of nutritional beverage. Patients with renal hepatic or endocrine disease gastrectomy malabsorption and weight gain over past 6 months were excluded. Ten patients were participated as controls and were allowed to eat ad libitu, Twenty patients were served as case and were administered in addition to their usual diet 400ml of nutritio-nal beverage(Greenbia) high in calorie and protein for 8 weeks. In the beginning of the study most underweight patients showed depressed nutritional status in terms of calorie intake quality of protein intake and the levels of visceral protein status and serum micronut-rients. The controls consumed less amounts of calories proteins vitamins and minerals while those given the nutritional beverage exceeded their estimated energy requirement(105%) and consumed a mean of 96g protein per day.
