브로콜리 줄기 분말을 혼합한 파운드 케익의 항산화 활성과 품질 특성에 미치는 영향 (Effect of Cake Improver on Antioxidant Activity and Properties Characteristics of Pound Cakes Prepare using Broccoli Stem Powder)

  • A study was undertaken to examine the antioxidative activity and the quality attributes of broccoli stem powder pound cakes. Broccoli stem powder was added to the batter at a ratio of 5, 10 and 15% respectively. The antioxidant activity was estimated by DPPH free radical scavenging activity, the total phenolic compounds content and flavonoid content in Broccoli stem powder and pounds cakes. Antioxidative activity was highly correlated with the total phenolic and total flavonoids contents of broccoli stem pound cakes respectively($r$=0.937, $r$=0.981). The effect of cake improver on quality characteristics of cake broccoli stem powder and pound cakes were estimated in terms of the specific load volume, hardness, hunter value of crumb and crust and sensory quality of cakes. The specific volume were increased significantly with increasing substitution level of cake improver and broccoli stem powder($p$ <0.01). The lightness were significantly decreased with increases in broccoli stem powder of pound cake crust and crumb($p$ <0.01, $p$ <0.01). The hardness, chewiness and gumminess and cohesiveness were tended to reduce in both of powder. The consumer acceptability score for 5~10% broccoli stem pound cakes ranked significantly($p$ <0.01) higher than those of the other groups in taste, flavor and overall preference. This results showed that cake improver & broccoli stem powder are a good ingredient to increase consumer acceptability and the healthy.

쌀가루 제분방법 및 입자크기에 따른 백설기 품질특성 (Quality Characteristics of Rice Cake(Backsulki) According to Millling Type and Particle Size)

  • 백설기 제조시 쌀가루 제분방법 및 입자크기가 백설기 관능특성과 품질특성에 미치는 영향을 조사하였다. 품질특성 측정결과 수분함량은 제분방법에 따라 $31.9{\sim}34.8\%$로 나타났다. L value는 W80(more than $180\;{\mu}m$ rice flour using wet milling)이 가장 높은 값인 92.5를 나타냈고, D80(more than $180\;{\mu}m$ rice flour using dry milling)이 가장 낮은 값인 79.0을 나타냈다. 호화도 측정결과 제분방법에 따른 유의적인 차이가 나타나지 않았다. 조직감 측정결과 탄력성(springiness), 응집성(cohesiveness), 씹힘성(chewiness), 껌성(gumminess)은 입자크기에 따른 유의적인 차이를 나타내지 않았고, 경도(hardness) 측정결과 입자크기가 작아질수록 낮은 수치를 나타내었다. 관능검사 측정결과에서는 W80으로 만든 백설기가 강도 및 기호도 검사에서 가장 높은 점수를 나타내었다.

청주박을 이용한 저식염 고추장의 양조 (Effect of Sake Cake on the Quality of Low Salted Kochuzang)

  • 전분질원의 일부로 청주박을 이용하고 식염의 일부를 알코올과 마늘로 대체한 저식염 고추장을 제조하였다. 숙성 중의 amylase 활성도는 청주박의 배합비가 증가할 수록 대체로 증가하였으나 protease의 경우는 25% 배합구에서 높았다. 청주박의 배합비가 증가할수록 고추장 숙성 중의 호기성 세균과 곰팡이수는 감소하였다. 또 숙성 중의 pH 변화와 환원당량의 증가는 적었으나 적정산도와 알코올 및 아미노태 질소량은 증가하였다. 70일 숙성시킨 고추장의 맛과 향기는 쌀 대신 청주박을 25% 배합한 구에서 우수하여 저식염 고추장 양조시청주박을 일부 배합함으로써 품질의 향상을 기대할 수 있었다.

연어(Oncorhynchus keta) 프레임육을 활용한 어묵의 개발 (Development of Fish Cake Using Salmon Oncorhynchus keta Frame Muscle)

  • This study aimed amount optimization of salmon Oncorhynchus keta mince (SM), threadfin bream Nemipterus virgatus surimi (TBS), natural tomato (NTC) and paprika colorants (PC) for preparation of fish cake using molding device and response surface methodology (RSM). The results of the RSM program for processing of fish cake indicated that the amount optimization of independent variables based on the dependent variables (Y1, gel strength; Y2, overall acceptance) for high-quality FC were 263.8 g for SM, 88.5 g for TBS, 0.11 g for NTC and 0.20 g for PC. Hunter redness and overall acceptance of fish (salmon) cake, which was prepared under the optimum amounts, were 13.82 and 8.33 score, respectively. The fish (salmon) cake was superior in sensory overall acceptance to commercial fish cake.

흑마늘을 첨가한 파운드 케이크의 저장 중 품질 특성 (Quality Characteristics of Pound Cakes Containing Various Levels of Aged Garlic during Storage)

  • The principal objective of this study was to develop a processed food using aged garlic. Pound cake samples were prepared with semi-solid aged garlic at levels of 0, 5, 10 and 15% ($25^{\circ}C$, 7 days). The pH of the batter prepared with the aged garlic ranged between 6.79 and 7.01 and the control pH was 7.21. The specific loaf volume of the pound cake prepared with the addition of 5~15% aged garlic decreased, from 2.78 to 2.51 cm3/g. The baking loss rate of the pound cake prepared with 0~15% added aged garlic also decreased by 6.91~6.42%. The lightness, redness, and yellowness values of the pound cake decreased with increases in the percentage of aged garlic. The adhesiveness, gumminess, and chewiness of the samples did not differ significantly with differing amounts of added aged garlic. DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging activity, however, was improved significantly via the addition of aged garlic. In the sensory evaluations, the pound cake prepared with 10% added aged garlic received higher acceptance scores for the properties of smell, taste, softness, moistness, adhesiveness and overall acceptability. Consequently, the optimal quality achieved in this set of experiments was with a pound cake to which 10% aged garlic had been added.

고추냉이 분말을 첨가한 병어 어묵의 품질 특성 (Quality Characteristics of Fish Cake Made with Silver Pomfret (Pampus argenteus) with Added Wasabi Powder)

  • This study was preformed to make high quality fish cake made with silver pomfret, which is one of the savory, soft and delicious fishes by adding wasabi powder (WP). WP as natural additives was added to the ratio of 0.6%, 1.2%, 1.8%, 2.4%, 3%, a color values, texture, folding test, sensory evaluation, peroxide value, TBA value, and viable cell count were analyzed. L and a value were decreased significantly by the increase of the ratio of WP. However, b value was increased. In the folding test to show the flexibility of fish cake, it was measured AA in the all samples. As the result of measuring texture, hardness was increased significantly by the addition of WP, cohesiveness was the highest in 1.8 WP and 0.6 WP, Springiness showed no significant difference among samples. However gumminess and chewiness of fish cake adding wasabi powder were significantly higher comparing with control group. In sensory evaluation, 1.8 WP had the best score in overall acceptability. Fish cakes had lower peroxide value, TBA value and viable cell count after frying compared to the one without WP. These results indicate that fish cake could be prepared by adding the WP for high quality and functionality. Consequently, wasabi can be applied as a food preservative or additive in fish cake.

당유자 껍질 분말을 첨가한 스폰지 케이크의 품질 특성 (Quality Properties of Sponge Cake containing Dangyuja (Citrus grandis Osbeck) Powder)

  • Dangyuja (Citrus gradis), a native citrus fruit of Jeju Island, has sour and bitter tastes. Dangyuja is rich in dietary fiber and enhance antioxidant activity. In this study, sponge cake was prepared by adding Dangyuja peel powder, and its quality characteristics were investigated. The freeze-dried Dangyuja peel powder was added to sponge cakes at a content of 0% (control), 2% (DP2), 4% (DP4), 6% (DP6) and 8% (DP8) of wheat flour weight. The specific gravity and baking loss of dough tended to increase with the amount of Dangyuja peel powder added, but the pH value as well as volume index of the cake were decreased. The symmetry index of cake tended to increase. Color values of sponge cake crust showed no significant difference, but L value and a value of crumb were decreased. The hardness and chewiness were increased with adding Dangyuja peel powder. Springiness was the highest at DP2 (91.79%). Cohesiveness did not showed significant difference among all samples. In a consumer preference test, cake groups with Dangyuja peel powder was higher than DP0 in color, texture, and overall acceptability. From these results, it was concluded that Dangyuja affects characteristics of sponge cakes. When making Dangyuja peel sponge cakes, it is suitable for adding 4% Dangyuja peel powder.

Hydrolyzed oat flour의 첨가량을 달리하여 제조한 저열량 레이어 케이크의 물리적 및 관능적 특성 (Physical and Sensory Characteristics of Low Calorie Layer Cake Made With Different Levels of Hydrolyzed Oat Flour)

  • 본 연구에서는 옐로우 레이어 케이크 제조시 쇼트닝 대신 탄수화물계 지방 대체물인 hydrolyzed oat flour가 사용될 수 있는지 그 가능성을 조사하고 여러 가지 비율로 대체하여 제조한 저열량 레어어 케이크의 특성을 평가하였다. 케이크 반죽의 비중과 점도는 지방 대체율이 증가할수록 비중은 감소하지만 점도는 증가하였다. 주사전자 현미경 측정 결과 지방 대체물이 증가함에 따라 air cell과 함께 지방구의 수와 크기는 감소하였고 점도는 높을수록 치밀한 구조를 보였다. 물성 특성 측정결과 대체율이 증가 할수록 hardness, gumminess, 및 chewiness는 감소하였고 springiness와 cohesiveness, resilience는 증가하였다. 관능적 평가에서 hydrolyzed oat flour 45% 첨가시 가장 우수한 것으로 평가되었고 지방 대체율이 크게 증가하여도 관능적 평가에서 우수한 것으로 나타났다. 따라서 지방 대체물인 hydrolyzed oat flour는 저열량 레이어 케이크 제조시 쇼트닝 대신 다량 첨가하여도 양질의 품질을 나타내는 지방 대체 소재로 사용될 수 있음이 시사되었다.

혼합물 실험계획법에 의한 쑥 첨가 찜 케이크의 최적화 (Optimization of Ingredient Mixing Ratio for Preparation of Steamed Cake with Mugwort (Pseudosasa japonica Makino) Powder)

  • This study examined the optimal ingredient mixing ratio for the preparation of steamed cake containing mugwort (Artemisia princeps var. orientalis) powder. After preliminary studies, the following ingredient ranges were determined; 110~129% sugar, 3~8% mugwort powder, 10~25% oil. Among the different mixture designs, the D-optimal design was chosen for analysis. The results of F-test, specific gravity, viscosity, volume and color values (L, a, b), hardness decided a linear model, while the sensory characteristics (color, taste, texture and overall acceptance) decided a quadratic model. The fitness analysis results showed that in all characteristic, the probabilities were significant within 0.05%; thus, the models were accepted as appropriate. The response surface and trace plot results showed that increasing amounts of mugwort powder decreased the brightness, and increased redness and yellowness. As the level of added oil increased, the softness of the cake increased. Cake samples received low sensory evaluation scores when sugar, mugwort powder, and oil were added above their optimal levels. The optimum formulations by the numerical and graphical methods, were similar, and with the numerical method presented as: sugar, mugwort powder, and oil at 120.7%, 5.1%, and 16.2%, respectively(flour weight basis). The above results demonstrate the feasibility of adding mugwort powder to sponge cake, and therefore, the commercialization of mugwort powder cake marketed as a functional food is deemed possible.

Effect of Feeding Olive Cake in Complete Diet on Performance and Nutrient Utilization of Lambs

  • Forty-five Najdi ram lambs were equally and randomly allotted to five dietary groups with three replications per diet to evaluate the effect of feeding olive cake in complete diet on nutrient digestibility, growth performance and carcass characteristics. The diets were: a whole-mixed control diet (C) containing 12% wheat straw and four diets; namely O, ON, OU and OUE, where crude olive cake, 3% NaOH-treated olive cake, 5% urea-treated olive cake (U) and ensiled U, respectively were incorporated to replace the wheat straw of C diet. The results showed that the digestibility of DM, CP, EE and NFE and TDN were higher (p<0.05) in OUE diet as compared to the control diet; there were no changes (p>0.05) in the corresponding values between O, ON and OU diets. The nutrient digestibilities, body weight gain, feed efficiency and Longissimus area were significantly (p<0.05) lower in ON diet as compared to other experimental diets. Average daily DM intake and weight gain were higher (p<0.05) in lambs fed O, OU and OUE diets than those fed C diet. The moisture and protein contents in the soft tissue from ON treatment were lower (p<0.05) than those tissues from C, O, OU and OUE treatments. In conclusion, these results indicated that crude olive cake is a better substitute of wheat straw when fed to growing lambs.
