Hydration and Cooking Properties of Brown Rice Scratched with a Knife (칼집을 낸 현미의 수화 및 취반 특성)

  • In order to improve the physical properties of brown rice by hydration and cooking, the amount of water absorption, hardness, reducing sugar, and minerals were measured for rice (NR), brown rice (NBR), and scratched brown rice (SBR). The amounts of water absorption were present in the order of NBR<0.07 SBR<0.20 SBR=NR after 210 min. The moisture contents of gelatinization rice were significantly different by degree of milling and scratch. The hardness of gelatinization rice were present in the order of NR<0.20 SBR<0.07 SBR

Quality Characteristics of Soy Reducing Sauce Made with Apple Concentrate (사과농축액을 이용한 간장조림소스의 품질특성)

  • The study showed test results of Teriyaki sauce produced by apple concentrate instead of sugar in order to reduce the sugar content. We created four batches of soy sauce for testing. The Control batch was normal soy sauce. S1, S2, S3, and S4 were sauces made with different amounts of apple concentrate. The test results for the moisture contents, color value, sugar content, salinity, viscosity, pH and sensory evaluation (QDA, acceptance test) of all the types of sauce are as follows. The moisture contents of the Control was 50.80%, and for S4 was 35.14%. In chromaticity results, the L value of the Control was 10.85 which was the highest compared to samples which were in the range of 8.35~8.55. The value of a and b was highest in S4 and was lowest in Control. The sugar content was 53.53 $^{\circ}Brix$ in the Control, and 43.73 $^{\circ}Brix$ in S1. S1 showed 6.77% salinity, and S4 showed 5.37% salinity. The viscosity of S4 was highest at 60.33 cp, and Control showed the highest pH value of 4.82. The QDA of S4 showed the most intense brown color, which was 5.36. For gloss and soy sauce scent, no significant difference was found between the samples. Control showed a mild apple scent which was 1.45, and S1 showed the saltiest flavor which was 5.18. The sweet flavor for Control was 4.64, and S3 showed the strongest aftertaste from the test. No significant difference of appearance and acceptance was found between samples. S2 showed a scent of 5.09, which was the best. The savory taste of S3 was best, and was worst for S1. S3 showed the best overall interest which was 4.55. According to these results, S3 had the lowest sugar content, at 4%, and therefore had the highest possibility of being produced.

Comparison of Dietary Fiber and Free Sugar Content Between Raw and Cooked Cereal Grains

  • Cereal grains are the dietary staple in many countries, including the Republic of Korea. These grains are usually consumed cooked. Korean grown raw and cooked brown non-glutinous rice (BNR), white non-glutinous rice (WNR), oats, and barley were analyzed to assess the effects of cooking on dietary fiber and free sugar content. The largest decrease in total dietary fiber (TDF) after cooking was observed in barley (11.62±1.26 to 2.96± 0.90 g/100 g), and the smallest decrease was observed in oats (8.1±0.34 to 8.1±0.32 g/100 g). Soluble dietary fiber decreased in oats (3.35±0.94 to 1.25±0.03 g/100 g) while insoluble dietary fiber increased (4.76±0.78 to 6.90±0.30 g/100 g) after cooking. TDF content was not changed. Of the six free sugars routinely assessed, only sucrose was detected in BNR and WNR. Sucrose decreased by about 0.6 g/100 g in BNR, and was not detected in WNR, after cooking. Fructose, sucrose, and raffinose were detected in oats (0.08, 0.83, and 0.19 g/100 g) and barley (0.09, 0.58, and 0.22 g/100 g) Maltose was also detected in barley (0.09 g/100 g). Total sugar content decreased in every cereal grain sample after cooking. This research reveals that dietary fiber and free sugar content can be reduced by cooking cereal grains.

Effect of Calcium in Nutrient Solution on Root Development and Freezing Tolerance of Mulberry (칼슘이 뽕나무 뿌리의 발육과 가지의 내동성에 미치는 영향)

  • Effects of calcium on mulberry growth and freezing tolerance were examined by water culture. Calcium was supplied by folar spray with the levels of 0, 5, and 40 ppm. Muberry stems developed by 130 cm at Ca2+ 40ppm, 82 cm at Ca2+ 5 ppm and 23 cm at Ca2+ 0 ppm. Muberry roots also developed vigorously at Ca2+ 40 ppm, but did poorly at Ca2+ 5 ppm and changed to brown in color, and died becoming necrosis at Ca2+ 0 ppm. Content of calcium in leaves and barks were increased at Ca2+ 40 ppm compared with at Ca2+ 5 ppm. Total sugar, RNA, proline and phospholipid at Ca2+ 40 ppm were also more increased than those at Ca2+ 5 ppm. Mulberry stems grown at Ca2+ 40 ppm showed a sufficient tolerance at -10 for 24 hours while stems grown at Ca2+ 5 ppm did a weak tolerance at the same conditions.

Studies on the Changes in the Carbohydrates and Color of Ginseng Extract during the Processing and Storage (인삼엑기스의 제조 및 저장중의 당류와 색도변화에 관한 연구)

  • This study was aimed at elucidating the composition and color in ginseng extracts during the processing and the long periods of the storage. The types of sugar were determined by using HPLC. In the model study with the fresh ginseng extracts stored at the elevated temperatures between 70-100$^{\circ}C$ for 24-96 hrs, it was shown an overall increase in the concentration of fructose and the overall reduction in the concentrations of sucrose and maltose with increase in the storage temperature and time. The concentration of glucose increased for 24 hrs of storage at all temperatures studied and then decreased with the storage time. Rhamnose in the extracts stored at 80$^{\circ}C$ for 72 hrs was identified and its concentration was increased at the higher storage temperature. The reduction of the concentrations of sugars related to the development of brown color during the processing and the storage.

Changes in Physicochemical Components of Ginseng Marc by Roasting Process (볶음처리에 의한 인삼박의 이화학적 성분변화)

  • This study was carried out in order to utilize ginseng marc (GM), a byproduct produced during the preparation of ginseng extract. For the utilization of GM as coffee-replacing beverage, GM was roasted at 140-23$0^{\circ}C$, for 10-30 min to generate coffee-like flavor and taste. The physicochemical changes in GM induced by roasting process was measured. Weight and moisture contents of GM abruptly decreased while roasting at various temperature and period of time, and the amount of water-extracted solid substances decorated beyond 23$0^{\circ}C$. Among the proximate components, total and free sugar decreased remarkably, while crude fat content increased. Crude protein content did not change by the roasting process. pH derides to pH 4.9 after 30 min at 20$0^{\circ}C$, but increased at higher temperatures. Hunter color L value of the GM powder decreased, whereas a and b values, increased up to 10 times as compared to that of the control. The brown color(O, D 490 nm) in 50% ethanol extract of the roasted GM was 46 times higher than that of the control.

Chemical Property and Macrophage Stimulating Activity of Polysaccharides isolated from Brown Rice and Persimmon Vinegars (현미식초 및 감식초 유래 다당류의 대식세포 자극활성 및 화학적 특성)

  • To elucidate the novel biological function of Korean traditional vinegars, crude polysaccharides were isolated from vinegars manufactured at home and abroad, and their chemical properties and immuno-stimulating activities were examined. Three kinds of polysaccharides from Korean brown rice vinegar (KBV-0), Japanese brown rice vinegar (JBV-0) and Korean persimmon vinegar (KPV-0) showed higher immuno-stimulating activity. Component sugar analysis indicated that KBV-0 and JBV-0 mainly consisted of mannan, whereas KPV-0 existed as pectic materials. Three polysaccharides did not show any cytotoxicity to RAW 264.7 cell, whereas RAW 264.7 cells stimulated with KBV-0, JBV-0 and KPV-0 showed enhanced production of various cytokines such as IL-6, IL-12 and TNF-${\alpha}$ in dose-dependent manners. However, the activity of KPV-0 was more potent than that of KBV-0 and JBV-0. Also, only KPV-0 augmented FcR II expression related with phagocytosis of macrophages. The results suggest among the tested vinegars, that the Korean persimmon vinegar has the most potent immune-stimulating activity, and it could possibly serve as industrial applications as functional materials.

Quality Characteristics of Brown Rice Dasik added with Chia Seed according to Different Types of Sweetener (감미료의 종류를 달리한 치아씨 첨가 현미다식의 품질 특성)

  • The present study was performed to develop healthier sweeteners for brown rice Dasik with chia seed powder. The quality features and sensory evaluation were tested for brown rice Dasik with chia seed powder added with five different sweeteners and the results are as follows. The Dasik (DS) with isomalto-oligosaccharide and starch syrup received the highest scores on moisture content tests. The results from hardness tests identified the DS with agave syrup as the hardest, and the results from the adhesiveness test verified that the DS with agave syrup as well as the DS with starch syrup produce the most adhesive DS. The results of the springiness test show that the DS with starch syrup has higher springiness than other sweetners. The highest score for the chewiness and cohesiveness tests was the DS with starch syrup, while the DS with isomalto-oligosaccharide received the highest score on the gumminess test. The results of the chromaticity measurement test found that the DS with starch syrup showed the highest score of 'L' and the lowest score with fructo-oligosaccharide. In addition, the highest score of 'a' was DS with isomalto-oligosaccharide and the lowest score of 'b' was the DS with starch syrup. The results of sugar content displayed that the DS with starch syrup was the highest and the DS with fructo-oligosaccharide was the lowest score. The results of sensory evaluation verified that color did not influence evaluators' preference investigation. The results of sweet flavor test found that the DS with honey and the DS with agave syrup had the most preferred by participants, but there was no statistically significant difference among all five different sweeteners from the sweet taste test. Furthermore, the DS with agave syrup received the highest score while the DS with agave syrup scored the lowest from the hardness preference test. General preference evaluation identified the highest score with the addition of fructo-oligosaccharide and the lowest score with the addition of isomalto-oligosaccharide. Thus, the findings of the present study provide the meaningful results to demonstrate the DS with fructo-oligosaccharide is the most suitable sweetener to manufacture brown rice DS added by chia seed powder, and this result will help marketers with creating meaningful strategies and with developing similar products using chia seed powder.

A Study on the Preference of Hobakjook upon Material & Mixing ratio Change (호박죽의 재료와 배합비 변화에 따른 기호도 연구)

  • Determining the optimal mixing ratio of pumpkin, water, glutinous rice powder, red bean, kidney bean in preparing Hobakjook has been attempted and on the basis of it, Hobakjook with glutinous rice powder was set to be A group, and the one that glutinous rice powder was replaced by brown glutinous rice powder for the purpose of enhancing preference and nutrition was set to be B group. A group and B group with additional 0%, 5%, 10%, 15% perilla powder of pumpkin weight was labeled as Al-A4 and Bl-B4 respectively, and then analyzed nutritionally. Optimal material mixing ratio and preference was investigated by use of sensory evluation and instrumental test. As a result, the optimal material mixing ratio was determined as pumpkin 400 g, water 60 cc, glutinous rice powder 40 g, red bean 30 g, kidney bean 30 g, salt 4 g, sugar 10 g. In sensory evaluation significant difference (P < 0.05) was shown among the samples in color., flavor.1, falvor. II and overall quality. And A3 in viscosity, A2 in color, A4 in sweetness, B2 in flavor 1, Al and B2 in flavor 11, and B2 in overall quality was preferred most. Instrumental measurement shows that B4 in viscosity and A4 in sweentness was highestly recorded and showed significant difference (p<0.05). As the addition of perilla powder increased, the viscosity and sweetness was increased. In color measurement A4 in L value, A3 in a value, and Bl in b value was highestly recorded. And as perilla powder was added, L value and a value was increased while b value was decreased. Color in sensory evaluation was significantly correlated to b value in instrumental measurement. In summary, Hobakjook with brown glutinous rice was superior to the one with glutinous rice in preference and proximate composition, and as the addition of perilla powder was increased, proximate composition was increased but preference was rather decreased, and Hobakiook with 5% addition of perilla powder to brown glutinous rice powder was preferred most.

Occurrence Tendency and Decrease of Fruits Brix According to Increasing Grapevine Leaf Spot Disease Caused by Pseudocercospora vitis (포도나무 갈색무늬병의 최근 발생 동향과 다발생에 의한 과실의 당도저하)

  • Grapevine leaf spot caused by Pseudocercospora vitis also called leaf Isariopsis spot which is one of the most important disease in Korea. Spots on the leaves are irregular to angular. They are brown, measure 2${\sim}$20 mm in diameter. Campbell Early, the major grape cultivar in Korea, is very susceptible to this disease. Leaf spot of grape is outbreak about 95% in ratio of diseased leaves according to the areas and management state of orchards in Korea. The diseased grapevines have some difficulty in raise of the trees by early defoliation and decrease the quality of fruits by disadvantage of assimilation products accumulation. Severe outbreak of the grapevine leaf spot is one of the factors that decrease of sugar content of the fruits about 20%. The strong negative correlation was observed between disease increase of grapevine and decrease of sugar content of the fruits. The correlation equation between relative sugar content of fruits and accumulated percentage of diseased leaves was Y = 0.0009$X^2$ - 0.3717X + 116.45($r^2$= 0.98).
