The edible natural pigments extracted from plant organs become steadly popular to consumer because of those physiological functions desirable for food preservation and human health in recent years. There are a number of colored rice genotypes from light brown to blackish purple via reddish brown and purple. Some researchers reported their results on extraction recipes and identification of chemical structure of the pigments from the colored rice. The pigments extracted from colored rices can be largely divided into two types of anthocyanin and tannin pigments. Anthocyanin pigments are mainly contained in purple or blackish purple rice while tannin pigments are mainly contained in brown or reddish brown rice. Some brownish purple rices showed two peaks of tannin and anthocyanin pigments simultaneously. Purple rices showed better extraction of pigments in $0.1\%$ HCl-contained $80\%$ methanol or $0.5\%$ malic-acid-contained $80\%$ ethanol, while red rices revealed better extraction of pigments in $0.01\%$ citric-acid-contained $80\%$ ethanol. The anthocyanin pigments are generally unstable to heat, light and acidity of solution. The pigments extracted from colored rice can be preserved stably under the dark and cool(<$5^{\circ}C$) condition and at pH $2.0\~4.0$. The anthocyanin pigments of purple rice are mainly composed by cyanidin-3-glucoside (chrysanthemin). The other pigment fractions in purple rice were identified to peonidin-3-gluco-side, malvidin-3-galactoside(uliginosin) and cyanidin-3-ramnoglucoside(keracyanin). The pericarp coloration of purple rices is controlled by three complimentary genes C (anthocyanin), A(activator) and $Pl^{w}$(purple leaf) genes, while the red rices are expressed by complimentary interaction between Rc(basic substance of pigment) and Rd(distribution of pigment) genes or C and $Pl^{w}$ genes. Recently, the antioxidation and antimutagenic activity in main component of anthocyanin pigments extracted from colored rice were identified. The natural pigments from colored rice can be useful for beverages, cakes, ice scream, cosmetic and so on.
The Rutile - type brown pigments doped with chromium were synthesized. Samples of $Ti_{1-x}Cr_xO_2$ ($0.02{\leq}X{\leq}0.08$) were synthesized by the solid state method. Solid solution limit of Cr contents to the rutile structure and its coloration were studied. Optimum composition was investigated accordingly. The characteristics of synthesized pigments were analyzed by XRD, SEM, Raman spectroscopy and UV. As a result, single phase of Rutile was observed from $1000^{\circ}C$ by XRD. The maximum limit of solid solution was 0.06 mole $Cr_2O_3$. The glazed sample showed brown color, and the value of CIE $L^*a^*b^*$ was $L^*$ 33.27, $a^*$ 10.64, $b^*$ 20.84.
This study was carried out to analyze deterioration characteristics of color-pigments painted Hanji to preserve and restore the cultural properties. On the traditional painting technique, glue was used with pigments in various ways for painting, but it eventually caused the deterioration of paintings. Thus, five colors were selected and analyzed for this study for investigating their characteristics of deteriration. Three kinds of glues (Wugyo, Nokgyo, and Togyo) and two kinds of pigments (Chinese and Gilsang) were painted on the Hanji for the accelerated aging test. And then color fastness of pigments and tensile strength of painted Hanji were measured for the estimation of deterioration degree. The results of SEM-EDS showed that Chinese pigments including blue, yellow, green, and red were composed of inorganic substances but the brown was organic substance. Gilsang pigments were composed mainly of Si and Ti ions. Color fastness of the Gilsang pigment blue, yellow, green, and brown were better than those of Chinese. Chinese pigment brown with organic substance showed the worst color fastness. Generally, Chinese pigments painted Hanji showed higher tensile strength than Gilsang in the accelerated aging test. Hanji treated with Chinese pigment and Nokgyo (antler glue) blends and Gilsang pigment and Togyo (rabbit pelt glue) blends showed higher tensile strength than the others. And Andong Hanji showed the highest tensile strength.
The color change of lead-containing pigments is one of the most serious diseases in watercolor, oil paintings and wall paintings. These pigments have a tendency to darken or brighten. It was proved that oxidation of lead containing pigments in the formation of brown-colored lead dioxide is a photochemical reaction under high humidity conditions. Therefore, we carried out some analogic experiments on the color change of three typical lead containing pigments ; $Pb_3O_4$, Pbo and $PbCo_3{\cdot}Pb(OH)_2$ at the conditions of illuminations under the high humidity ($2PbCo_3{\cdot}Pb(OH)_2$ R. H.). The reason for the chemical reactions are discussed and the results of these experiments are shown in some spectrograms, micrographs and X-ray micro-diffraction patterns. Important conclusions were drawn in our research. Due to the formation of brown $PbO_2$, red lead $(Pb_3O_4)$ and massicot (PbO) turned brown or dark when they were illuminated light under high humidity. We noticed that the brightening of red lead occurred d to admixture with chalk or lead white in egg yolk or linseed oil medium on exposure to light. Lead white used in oil paintings turned yellowish on dark.
In this work the antioxidant effects of browning reaction products prepared by xylose-tryrtophan reaction system were discussed. The antioxygenic brown pigments were separated by solvent extraction, and column chromatography and isolated by gel filteration. The functional groups of the brown pigments which had antioxidant activity were examined. The brown pigments extracted with methanol showed antioxidant effect and were fractionated in 5portions on DEAE-cellulose column. The elutes with methanol: acetic acid(10:30 v/v sol n(A), methanol: chloroform(95:5 v/v) sol n(C), and chloroform: acetic acid(10:30 v/v) sol n(E) only showed antioxidant activity and their compositions were 22.43, 21.51 and $34.43\%$ respectively. When each fraction on DEAE-cellulose column was reseparated on Sephadex LH-20 column, 2 fractions were obtained from portion A and C respectively. Molecular weights of A, C and E fraction of brown pigments were from 2,600 to 3,700. By elucidation of IR spectra, the pigment fractions which showed a strong antioxidant activity were tearing the indole group. It is suggested that the antioxidant function of the brown pigment is due to hydroxy and amino group. A higher activity of the brown pigment fraction E might be attributed to carboxylic acid or carboxylic ester compounds.
The purpose of this study was to determine the optimal firing condition and composition for $Al_2TiO_5$ crystal, which is suitable for stable coloration in glazes at high temperatures, using $Cr_2O_3$ as chromophore for the synthesis of $Al_2TiO_5$ system pigments. $Al_2TiO_5$ has a high refractive index and good solubility of chromophore in the $Al_2TiO_5$ lattice, making this structure a good candidate for the development of new ceramic pigments. Pigments were synthesized by using $Al_2O_3$ and $TiO_2$ mainly. Various amounts of $Cr_2O_3$ such as 0.01, 0.02, 0.03, 0.04 and 0.05 mole were also added. Each compound was synthesized at $1300^{\circ}C$, $1400^{\circ}C$, and $1500^{\circ}C$ for 2 hours and cooled naturally. The crystal structure, solubility limit, and color of the synthesized pigments were analyzed by XRD, SEM, Raman spectroscopy, UV and UV-vis. The changes in color as the result of applying 6 wt% of the synthesized pigments to lime barium glaze were expressed as CIE-L*a*b* values. A $Cr_2O_3$ 0.03 mole doped $Al_2TiO_5$ brown pigment was successfully synthesize at $1400^{\circ}C$, and the values of CIE-L*a*b* parameters were L* = 44.62, a* = 3.10, and b* = 17.25. In the case of the pigment synthesized at $1500^{\circ}C$, the brown color was obtained at 0.01 mole and 0.02 mole $Cr_2O_3$, and the CIE-L*a*b* values were 55.34, 1.73, 28.64, and 49.39, 0.51, 21.33, respectively. At $1500^{\circ}C$, the maximum limit of solid solution was 0.03 mole $Cr_2O_3$. The glazed sample showed green color, and the values of the CIEL* a*b* parameters were L* = 45.69, a* = -0.98, and b* = 20.38.
[ $V_2O_5$ ]doped Karrooite pigments were synthesized by the solid state method to get stabilized brown pigment in oxidation and reduction atmosphere. Optimum substitution condition and limited dopant with $V_2O_5$ for Karrooite pigment was investigated. With calcination at $1250^{\circ}C{\sim}1400^{\circ}C$, compositions were designed varying $V_2O_5$ molar ratio by increasing 0.02mole to the formula $Mg_1-xTi_2-xM_{2x}O_5$(x = 0.01~0.09 mole). Synthesized pigments were analyzed by XRD, Raman spectroscopy and UV-vis. When $V_2O_5$ was doped from 0.01 to 0.05 mole, single phase of Karrooite was observed at temperature $1300^{\circ}C$ and soaking time 4h by Raman spectroscopy. However, it was found that excess $VO_2$ peak appeared with 0.07 and 0.09 mole of $V_2O_5$ doped to $MgTi_2O_5$. This result indicated that the maximum limit of solid solution is 0.05 mole $V_2O_5$. Karrooite pigments were applied as a ceramic pigment to achieve brown colors in lime magnesia glaze and lime barium graze at both of oxidation and reduction atmosphere. CIE color coordinates are $L^*$ = 40.34, $a^*$ = 9.94, $b^*$ = 21.40 in lime magnesia glaze.
Synthesis and characterization of pigments by using $Fe_2O_3,\;CoO,\;Cr_2O_3\;and\;MnO_2$ were undertaken. The resulting pigments were characterized by using XRD, SEM, FT-IR and UV-Vis spectrophotometer. The color of glazed tiles containing 6 wt% pigment changed from dark green to black depending on the compositions of used materials. Pigments were calcined with mixed materials at $1350^{\circ}C$, and the dark green and dark brown color were obtained. Pigments were used to determine possible interactions between a pigment and a glaze.
Roasting ginseng marc was roasted at different temperatures (140, 170, 200, 23$0^{\circ}C$) and for different periods (10, 20, 30 min) produced aqueous soluble brown pigments, gel filtration of which over Sephadex G-50 yielded 3 fractions A, B, C. The treatment at higher temperature and for longer time lead to increase of peak A and decrease of peak C. The contents of the brown pigments and the degree of brown color increased about 4 times and over 6 times, respectively, by roasting at 23$0^{\circ}C$ and for 30 min as compared to the control. 5-Hydroxymethyl furfural in aqueous and 50% ethanol extracts of treated samples at 23$0^{\circ}C$ and for 30 min was increased to 3.6 times and 8 times, respectively, and carbonyl compound in both aqueous and 50% ethanol extracts was increased 3 times. Also pyroxene-like substance was increased apparently in both aqueous and 50% ethanol extracts of treated samples.
당이나 단백질등의 식품성분이 지질의 산화와 갈변에 어떤 영향을 미치는가를 알아보기 위하여 각종 식품성분에 조기유, 대두유 및 난황유를 각각 9 : 1의 비율로 혼합하여 건계의 실험구를 조성하고 건계에서의 실험결과 지질산화가 촉진되었던 starch구와 억제되었던 casein구에 각각 물을 20% 첨가하여 습계의 실험구를 조성하여 $40{\pm}1^{\circ}C$보존중의 과산화물가, 카아보닐가 및 갈변도의 변화를 조사한 결과는 다음과 같다. 건계에서의 지질산화와 갈변은 조기유 혼합구의 경우는 대두유와 난황유 혼합구에 비해 과산화물가, 카아보닐가 및 갈변도가 월등히 높았다. 식품성분별로는 glucose, sucrose 및 starch구에서 높게 나타났고 cellulose, albumin 및 casein 구에서는 낮게 나타났다. 대두유 혼합구에서는 전 구분 공히 과산화물가가 낮았으며 카아보닐가와 갈변도는 glucose, sucrose 및 starch 구에서는 높게 나타났고 albumin과 casein구에서는 낮게 나타났다. 난황유 혼합구에서는 과산화물가가 대두유 혼합구에서보다 낮았으며 특히 albumn과 casein구는 보존9주까지 과산화물가가 측정되지 않았다. 카아보닐가와 갈변도는 대두유와 동일한 경향이었다. 습계에서의 지질산화와 갈변은 각 지질을 starch에 혼합시킨 경우 조기유 혼합구에서는 과산화물가와 카아보닐가가 건계에서 보다 낮았으며 난황유 및 대두유 혼합구에서는 높은 경향을 나타내었다. 갈변도는 건계에서와 비슷한 값을 나타내었다. 각 지질을 casein에 혼합시킨 경우 과산화물가와 카아보닐가는 각 지질 공히 건계에서보다 낮았으나 갈변도는 오히려 높은 값을 나타내었다. 이상의 실험결과에서 지질의 산화와 갈변도와의 상관관계를 검토해 본 결과 갈변반응은 건계에서보다 습계에서 잘 일어나며 지질의 산화정도가 낮은 식품계에서 생성된 갈변반응물질은 지질의 산화에 억제효과를 나타내나 지질의 산화가 격심한 식품계에서는 효력을 발휘하지 못하거나 상승효과를 나타내는 것으로 판단되었다.
