한국산 쌀의 맥주 부원료로서의 특성 (Quality Characteristics of Korean Rice as Brewing Adjunct)

  • 국내에서 생산된 쌀 6품종의 맥주제조특성을 국내 및 미국의 맥주회사에서 사용되는 쌀과 비교해 볼 때 국내 쌀의 수분함량은 $11.4{\sim}12.6%$로 미국 맥주회사에서 사용되는 쌀의 수분함량 10.7%보다 높았다. 장립종(long grain)이며 Indica품종인 IR36은 전분량이 적으나 단백질 함량이나 amylose함량이 높았다. 맥아 60%에 쌀 40%를 혼합하여 맥즙을 제조한 결과 색, 점도, pH, 수용성 단백질, 추출물함량(% extract), 당의 소성에서 Indica품종은 Japonica품종과 큰 차이를 나타내지 않았다. 국내에서 생산되는 쌀로 제조된 맥즙은 수용성 단백질, pH, 점도 등에서는 미국산 쌀로 제조된 맥즙과 큰 차이를 나타내지 않았으나 추출물함량은 약간 낮은 것으로 나타났다. 쌀을 혼합하여 제조한 맥즙의 glucose와 maltose함량은 맥아만으로 제조된 맥즙보다 더 낮았다.

"홍씨주방문"의 양조에 관한 분석적 고찰 (A Study on the Brewing in "The Hong's Zu Bang Moon")

  • The Hong's-Zu-Bang-Moon, although it is not know when and by whom it was written, is estimated to have written in the middle of 1800, but has not been published yet. In general, other cooking books in Yi's Dynasty were on the cooking methods of a variety of foods. But the book deals solely with brewing, which is the trait of it. The book comprises a total of 36 items, among which So-Gog-Ju wine was excluded because only a part of it was recorded. Another item deleted, written vaguely and difficult to understand was, on a closer analysis of its content, 'Song-Soon-Ju wine'. According to the analysis of this book, the cereals used for brewing were 59 percent of regular rice and 41 percent of sticky rice including other 12 kinds of special materials. As for the processes, the precesses using Jee-Ae-Bop was dominant. The processing technique whose special words and expressions were analyzed in this study, were divided into 18 preparation methods, 45 processing ones, and 7 heating ones. The temperature processing whose expressions were analyzed here were divided into 6 cooking processes, 7 medium ones and 3 heating ones. The measurement unit of 'Doe' was most often used. It tried to show relatively accurate measurements but showed just approximate ones. There were 19 kinds of brewing utensis. Urns were most often used, but it was impossible to discern and kind. As for the tast of the wines, the writer showed his subjective expressions. The margianal point in this study is that it was very difficult to interpret the book. The closing up of twings of on azaled over the urn had no scientific base but said something of korean folkways at that times.

한국의 민속주에 관한 고찰(II) -전라도.경상도.제주도 지방을 중심으로- (Study on Traditional Folk Wine of Korea -In the Southern Region of Korea-Chulla-do, Kyungsang-do and Cheju-do-)

  • This study aims at exploring the nature of the traditional Korean wines brewed throughout the Southern Region of Korea-Chulla-do, Kyungsang-do and Cheju-do describing their varieties and brewing methods and also comparing the similarities and differences of their features. When compared with the wines produced in the Central Region, the Southern varieties are very fastidious and complex in their brewing methods, which in turn show a wide range of diversity. First of all, all the 29 kinds of wines investigated, not a single one shows any resemblance to any one of the remaining, each exhibiting peculiar and particular characteristic features of its own. Especially, the distilling methods demonstrate very complex processes. Secondly, the majority of the Southern spirits are made from grains, added with fragrant flavor of pine tree, wormwood, chrysanthemum leaves and other medicine herbs such as Chinese matrimony vine and tankui. Thirdly, they are brewed with yeast made from wheat into kodupap(steamed rice) type of spirits, emerging as in the form of blended liquor. Fourthly, in brewing, different fermenting temperature and duration are required. Typewise, the temperature required for the basic spirit is $15{\sim}20^{\circ}C\;or\;25{\sim}30^{\circ}C$ : in the case of blended secondarily fermented liquor, from the minimum of $0{\sim}5^{\circ}C$ to the maximum of $75{\sim}80^{\circ}C$. The brewing duration is $3{\sim}5$ days for the basic spirits. In some cases, from the minimum of 3 days to the maximum of 100 days are consumed for fermenting. Fifthly, the wine extraction gadgets are yongsu (wine strainer), the sieve, filter paper, Korean traditional paper, the utilization of which implies that the brewers endeavor to observe and preserve the traditional and indigenous methods of wine making.

유색보리의 제맥 및 양조 특성 (Malting and Brewing Quality of Colored Barley)

  • 유색보리를 맥주의 원료로 이용하기 위하여 맥아 및 양조 특성을 검정한 결과를 요약하면 다음과 같다. 1. 자색 겉보리, 자색 쌀보리 및 청색 쌀보리의 안토시아닌은 침맥 20시간 후 약 30%, 22% 및 80%가 잔존하였다. 2. 일반적인 제맥 조건으로 제조된 자색보리 맥아는 안토시아닌 성분이 거의 소실되었으나 청색보리는 58% 정도 잔존하였다. 3. 흑색보리는 일반적인 제맥 및 당화 조건에서 색소성분이 손실되지 않았으며, 맥즙의 색도는 종피색의 농담이 아니라 가용성 질소 함량이 많아짐에 따라 진해지는 경향을 나타내었다. 4. 자색과 청색보리 맥아로 제조된 맥주에는 안토시아닌 성분이 존재하지 않았으나, 호품보리 맥아로 만든 맥주보다 색도가 높았다.

전통주의 제조방법별 발효 특성 및 숙성후 품질변화 비교 (Comparison of Fermentation Characteristics of Korean Traditional Alcoholic Beverages Prepared by Different Brewing Methods and Their Quality Changes after Aging)

  • Fermentation characteristics and quality changes of the typical Korean traditional alcoholic beverages (Kwahaju, Sokokju, Baikhaju, Samhaeju and Hosanchun) were investigated during fermentation and after aging, respectively. They were prepared by their own brewing methods with respect to the same contents of rice and Nuruk (Korean-style bran koji). The consumed total sugar content of the alcoholic beverages (Sokokju, Baikhaju, Samhaeju and Hosanchun) which were brewed with the multiple input steps of seed mash and raw material (ABMIS) was higher than that of the alcoholic beverage (Kwahaju) which was brewed with the single input step (ABSIS). The pH values of all the beverages were similar and were ranged from 3.2 to 3.6. The acidity of ABMIS were lower than that of ABSIS, but alcohol concentration of ABMIS were higher. The fermentation period of the alcoholic beverages with triple input steps was the longest among them. The inner temperature and microbial growth in all the beverages increased at each of input steps of the raw materials. Fusel oil content of ABMIS was lower than that of ABSIS. Major components of the fusel oil were iso-amyl alcohol, iso-butanol, n-propanol, ethyl acetate and acetaldehyde, and its minor components were methanol and n-butanol. The results on quality changes of the alcoholic beverages after aging showed increase of alcohol in ABMIS, but decrease of sugar and acidity. Fusel oil contents of Kwahaju and Samhaeju decreased to be ranged from 3.1% to 13.9% after aging, but those of Sokokju, Baikhaju and Hosanchun increased to be ranged from 10.9% to 23.0%. Sensory evaluation of ABMIS showed better scores than that of ABSIS. It was suggested that the brewing method with multiple input steps of seed mash and raw material was one of the methods to increase fermentation efficiency for brewing the Korean traditional alcoholic beverages.

Functional Characterization of khadi Yeasts Isolates for Selection of Starter Cultures

  • Yeasts play an important role in spontaneous fermentation of traditional alcoholic beverages. Our previous study revealed that a mixed-consortia of both Saccharomyces and non-Saccharomyces yeasts were responsible for fermentation of khadi, a popular, non-standardized traditional beverage with an immense potential for commercialization in Botswana. Functional characterization of isolated fermenting yeasts from mixed consortia is an indispensable step towards the selection of potential starter cultures for commercialization of khadi. In this study, we report the characterization of 13 khadi isolates for the presence of brewing-relevant phenotypes such as their fermentative capacity, ability to utilize a range of carbon sources and their ability to withstand brewing-associated stresses, as a principal step towards selection of starter cultures. Khadi isolates such as Saccharomyces cerevisiae, Saccharomycodes ludwigii and Candida ethanolica showed good brewing credentials but Lachancea fermentati emerged as the isolate with the best brewing attributes with a potential as a starter culture. However, we were then prompted to investigate the potential of L. fermentati to influence the fruity aromatic flavor, characteristic of khadi. The aroma components of 18 khadi samples were extracted using headspace solid phase micro-extraction (HS-SPME) and identified using a GC-MS. We detected esters as the majority of volatile compounds in khadi, typical of the aromatic signature of both khadi and L. fermentati associated fermentations. This work shows that L. fermentati has potential for commercial production of khadi.

발효 인삼주에 관한 연구 (Studies on the Ginseng Wine)

  • To develop a ginseng wine, the brewing conditions and sensory evalution of the wine were studied. The ginseng, ginseng marc and red ginseng marc can be made into wine by ethanol fermentation with Saccharomyces cerevisae. The results showed that the higher ginseng concentration was, the faster the brewing velocity became. The ginseng marc wine brewed with 10% ginseng marc and 25% sugar was a great favorite The results from the mixture of ginseng and ginseng marc revealed that the mute the content of ginseng was, the faster the velocity of brewing became. It took 27 days for a wine from 10% ginseng marc to be brewed Into 12% ethanol, 10% ginseng took 10days and red ginseng took 15 days. Among these, a wine from 10% ginseng was superior to others in flavor, color and taste. And the wine from 6.7% red ginseng was favorite. Contents of the favorite wine from ginseng marc were 80mg/ml of reducing sugar, 2.6 of acidity, 12% of ethanol, 28mg/ml of saponin, and it's pH was 3.5. Contents of the favorite wine from red ginseng marc were 58mg/ml of reducing sugar, 2.8 of acidity, 12% of ethanol, 44mg/ml of saponin, and it's pH was 2.8.

효모의 종류에 따른 탁주의 품질특성 변화 (Quality Characteristics of Takju by Yeast Strain Type)

  • Investigation of the quality characteristics of Takju brewing mashes prepared with several different yeasts was carried out during the 42-day brewing process, including examination of titratable acidity, amino acid content, sugar contents, alcohol contents, pH, reducing sugar, yeast population, lactic acid bacteria, and sensory evaluation. Fermivin yielded the highest titratable acidity, while la parisienne had the lowest. Fermivin also had the highest value of amino acid content (14.33%), while other yeasts shows period tended to increase over exclude Instaferm and Song chun. The amount of sugars in instaferm ($11.33^{\circ}Bx$) and instaferm red ($10.53^{\circ}Bx$) were higher than those in La parisienne red and Song chun ($9.57^{\circ}Bx$). The alcohol contents of instaferm was the highest value (15.20%) while the alchol content of the other yeasts tended to increase the fementation period. Fermivin had the highest pH at $12^{th}$ day among the yeasts(4.02), Instaferm red had the lowest pH among the yeasts (3.87) while safbrew wb-06 had the highest reducing sugar content(117.60 mg/mL). Instaferm obtained the highest preference in the sensory evaluation for all items.

개량누룩에 의한 탁주양조중 미생물과 중요성분 변화 (Changes in microorganisms and Min Components during Takju Brewing by a Modified nuruk)

  • To evaluate the characteristics of modified nuruk made by inoculation and cultivation of Rhizopus jap-onicus T2, Aspergillus oryzae L2 and hansenula sp. BC26 three different Takju mashes were made with modified Nuruk commercial Nuruk and rice koji and the changes in microorganisms and major compon-ents of mashes were investigated uring brewing. The numbers of yeast kept higher in the mash of mod-ified Nuruk or rice koji. The numbers of lactic acid bacteria were high in mash of commercial Nuruk but those were not in mash of modified Nuruk or rice koji. all mashes showed stable pH in a day and the pH kept higher in mash of modified Nuruk than in that of commer-cial Nuruk or rice koji. Increase in the content of total acid was moderate in mash of modified Nuruk or rice koji but it was too much in that of commercial Nuruk. increase in the content of amino acid was much highr in mash of modified Nuruk or commercial Nuruk than in that of rice koji. Increase in the content of alcohol was more rapid in mash of modified nuruk or rice koji than in that of commercial Nur-uk. The content of reducing sugar kept highter in mash of commercial Nuruk or modified Nuruk than in that of rice koji. A small amount of modified Nuruk accomplished favorable fermentation showing nor-mal patterns in microbiological and physicochemical changes during brewing.

한국 전통 약주의 제조시 반숙미의 사용효과 (The Effect of Medium-Cooked Rice on the Production of Korean Traditional Yakju)

  • This study was carried out to investigate the effect of medium-cooked rice on brewing of yakju which was a traditional rice wine in Korea. The influences of cooking temperature of rice on hydrolysis of rice starch and rice protein were tested, and experimental brewings were done according to the traditional brewing method of Bangmunju in which some medium-cooked rice was used. The results obtained were as follows The hydrolysis of starch and protein in medium-cooked rice at 60~$65^{\circ}C$ was easier than that of full-cooked rice at 80~10$0^{\circ}C$. The amounts of saccharides, total amino acids and extracts In Yakju brewed with the combined use of medium-cooked rice and full-cooked rice were twice as much as those brewed with full-cooked rice only. The results of sensory test of Yakju brewed with the combined use of medium-cooked rice and full-cooked rice were better in taste, color and flavor than those brewed with full-cooked rice only. It was thought that our ancestor's traditional brewing method of Yakju in which medium cooked rice and full-cooked rice were used combinedly was excellent Judging from zymological point of views.
