Quality Characteristics of White Pan Bread with Different Water Types (물의 종류에 따른 식빵의 품질특성)

  • The purpose of this study was to examine the quality characteristics of white pan bread according to the different types of water (tap water (still water), purified water, still water, light water, classical water, and bold water). Pan breads were statistically analyzed using texture profile analysis, fermentation, texture, suitability, image analysis, color, moisture content, and statistical analysis. This result will contribute to the commercialization of pan bread using various kinds of water. Ultimately, we analyzed the quality characteristics of various kinds of water, depending on the carbonic acid content on the dough and the pan bread, and to derive the optimum kinds and ratios of the water to be applied to the pan bread. As a result of the study, the best findings were obtained with water containing carbonic acid content more than the classical water according to overall characteristics, durability (Width of Tail and Integral), foot efficiency, softness, volume and preference check. Therefore, when white pan bread is produced by using water containing a carbonic acid content (5~7.5 mg/L) or more of the classical water, it affects the quality characteristics and a good obtains positive response to from consumers. In this study, the quality characteristics of pan bread based different kinds of water which were not available in the past, and the quality characteristics of pan bread, which can be used as the basic data for future research, were well analyzed.

Determining of Risk Ranking for Processed Foods in Korea (국내 주요 가공식품에 대한 위해순위 결정)

  • The risk ranking of food groups included the Korea Food Code is a potentially powerful means to prioritize food safety management strategies. Although the interest in risk ranking of food groups has been increasing worldwide, there was, until recently, no standard system in Korea for the risk ranking of food groups. This study was conducted to rank food groups using theoretically estimated comparative risk scores of 101 food groups included the Korea Food Code. These scores were estimated using the risk evaluation model, which focuses on 3 aspects, namely, exposure assessment, severity assessment, and consumption part. The results of this study revealed that the risk was the highest in the case of ready-to-eat (RTE) food items, followed by fish products and breads. Using this ranking system, we can identify the food with high risk scores and design risk management strategies targeted specifically at these items.

A Survey on the Relation between Depressive Trends, Stress and Attitudes of Food Intake in Adults (성인의 우울경향 및 스트레스와 식생활 태도와의 관계)

  • A Survey was carried out to investigate relation between depressive trends, stress and attitudes of food intake in adults. In the assessing of Body Mass Index (BMI), the normal weight was 80.1%, overweight was 19.1%, obese was 0.7% in men, but normal weight was 90.3%, overweight was 9.4%, obese was 0.3% in women (p<0.001). It was represented increasing trends of obesity by the increasing of ages. Women thought their health condition was worse than men (p<0.001) 15.1% of all women tried to weight control. In changes of food intake by stress, 37.8% was increased to eat, 33.7% was reduced in women. It seems that women was significantly influenced by stress than men (p<0.01). In changes of food intake by stress in ages, 39.7% was increased of 20 years but over the 30 years was decreased or no changes of food intake (p<0.0001). All subjects wanted hot and sweet taste when stress-induced eating. 56.1% of men preferred to alcohol and beverages but 33.5% of women preferred to chocolate, cookies and breads of carbohydrate foods at the stressful conditions. But stress-induced eating dose not seems to be helpful for coping with stress in adults. In the distribution of depressive trends, the level of depression was higher in women (50.7%), whereas 34.3% in men (p<0.001). The most of 3li subjects represented attitudes of food intake below 60 scores that was needed improve and counseling of professional nutritionist. It was represented inferior to attitudes of food intake by the increasing of depressive trends and stress in women. It was higher level of overweight and obese in the below 60 scores of attitudes of food intake and higher depressive groups.

Utility of Post-Mature Kiwi Fruit Powder in Bakery Products (과숙된 키위 파우더의 Bakery 제품에의 이용성)

  • Utilities of kiwi fruit powder prepared from post-mature kiwi fruit in bakery products such as bread and cookie were investigated. The characteristics of bread and cookie with different amounts of kiwi fruit powder were examined through physical measurement (color specific volume, crumb firmness, spread ratio, and extensibility) and seneory evaluation. In baking performance of frozen dough with kiwi fruit powder, $L^{*}$, $a^{*}$, and $b^{*}$ values of crust and specific volume gradually decreased as the concentration of kiwi fruit powder increased. Crumb firmness had significant difference compared to bread without kiwi fruit powder, and sensory characteristics of breads with kiwi fruit powder were more poor than bread without kiwi fruit powder. In a cookie with kiwi fruit powder although specific volume was not significantly different, the spread ratio of cookie and cookie toughness significantly decreased; furthermore, cookie extensibility significantly increased as an amount of kiwi fruit powder increased. Hardness and moistureness of cookies in sensory evaluation had a similar tendency as toughness and extensibility of cookies. Therefore, post-mature kiwi fruit could be utilized to improve the cookie qualities.ies.s.

Effects of Salicornia herbacea L. Powder on Making Wheat Flour Bread (함초 분말 첨가가 제빵적성에 미치는 영향)

  • This study was carried out to investigate the effects of Salicornia herbacea L. on baking properties of white breads. Crude fiber and crude ash contents of Salicornia herbacea L. powder were 70.02% and 25.6%, respectively. Fe and Ca contents of Salicornia herbacea L. were 176 ppm and 1,175 ppm, respectively. The pH of dough with Salicornia herbacea L. powder was similar to that of control. Salinity contents did not show any significantly differences between bread added Salicornia herbacea L. powder and control. L (lightness) and b (yellowness) value of the dough were decreased by the addition of Salicornia herbacea L., but a (redness) value was increased. The volume of dough during fermentation and the baking loss did not show significant difference between treatments and control. The weight of bread was increased by the addition of Salicornia herbacea L. but the volume was not.

Food and Meal Preference of Workers in the Chonnam Yeosu Industrial Area (전남 여수지역 산업체에 근무하는 근로자의 식품 및 음식의 기호도 조사)

  • This study was conducted to investigate food and meal preference of workers (435 male and 212 female) in the Chonnam Yeosu industrial area. The results of the survey were analyzed by principal components analysis. The results were obtained as follows: 19.3% of the subjects were twenties, 28.3% were thirties, 28.8% were forties and 23.7% were fifties. Females liked rice rolled in dried laver, rice cakes, janchi-noodle and breads, on the other hand males liked thick beef soup, loach soup, an eel stew and soju. The young liked instant noodles, fried chicken, sweet and sour pork, pork cutlet, pizza, hamburger, ham, sausage and fruit beverage, on the other hand the old liked a fish pot stew, loach soup, eel stew, fish boiled in soy with spices, panfried fish, sea slug, ascidian, bunder, green laver and boiled burdock-lotus root in soy. Females who are young liked hamburger and sweet and sour pork whereas males who are young liked instant noodles, pork cutlet, ham, sausage and fruit beverage. Aged females liked fish boiled in soy with spices, panfried fish, bunder, green laver, boiled burdock-lotus root in soy whereas aged males liked a fish pot stew, loach soup, eel stew, sea mussel and oysters. Boiled rice was located within the middle irrespective of age and sex, but noodles, wheat flour meal, fast foods and fruits were situated at the young female side. Aged males liked soup and pot stew. Young males liked meats and eggs whereas fish and shellfish and kimch were located at the aged people side. Aged females liked sea weeds and most people disliked vegetables but females liked some vegetables irrespective of age. Processed foods, salted foods, and alcohol were generally disliked foods by subjects but males liked those foods. Recognition and Usage of Nutrition Labeling for Processed Foods and Restaurant Meals according to the Effort Level of Healthy Dietary Behavior in 5th Grade Elementary School Girls (초등학교 5학년 여학생의 올바른 식습관 노력 정도에 따른 가공식품과 외식 영양표시의 인지도 및 활용도 조사)

  • The purpose of this study is to investigate 5th grade elementary school girls' effort to recognize and use nutritional labels on processed foods and restaurant meals to encourage dietary behavior. The subjects (n=976) were divided into three groups (effort group, n=711; normal group, n=193; and no-effort group, n=72) depending on level of effort for the healthy dietary behavior such as eating balanced meals, eating three meals regularly, and eating meals slowly. In the effort group, the frequency of food intake for breads, ramen, noodles and fast foods was significantly lower, while frequency of food intake for fruits and vegetables and salad was significantly higher than in the other two groups. In the effort group, the ratio of the respondents that perception of nutrition labeling on processed foods and restaurant meals was 80.5% and 31.4% and the ratio of girls who checked the nutrition labeling at their point of purchase was 71.1% and 24.7%, respectively. Reasons given for not reading nutrition labeling for restaurant meals were 'not interested' for 34.6% of the effort group, and 52.2% of the no-effort group. Therefore, it is necessary to create an educational program on healthy dietary behavior, including how to read nutrition labeling and establishment of proper body image perception for elementary school girls.

Effect of Certain Additives on Bread-Making Quality of Wheat-Purple Sweet Potato Flours (밀 및 자색고구마 가루의 제빵성에 대한 첨가제의 영향)

  • The effect of oxidants, gluten and gums on breadmaking quality of wheat-purple sweet potato(Ipomoea batatas) composite flour were studied. Alveograph tests of doughs showed that all additives increased the P, L and W values. Of these additives, L-Ascorbic acid, gluten, carboxy methyl cellulose have a significant effect on alveogram indexes. SEM showed that the dough added with additives changed some what in appearance when compared with the control. When oxidants was added, the doughs discontinuous gluten film were observed. No significant differences ,were evident in bread crumb color among the additives. And textural characteristics of bread crumb were influened by adding additives. Breads containing additives showed an increase in max weight, strength and hardness and a decrease in springness and cohesiveness. Average enthalpy values for all bread crumb after 7days increased with storage time. However, addition of additives decrease the rate of staling slightly more than that of the control. Addition of L-Ascorbic acid, L-Cystine, carboxy methyl cellulose and hydroxy propyl methyl cellulose increased the loaf volume significantly, and with except potassium bromate bread scores were acceptable.

Effect of Sourdough Starter on the Characteristics of Rheological of Barley bread (Sourdough 첨가 보리식빵의 물성적 특성)

  • To investigate the effect of sourdough on the quality characteristics of barley bread, sourdough starlet with Lactobacillus plantarum, Lactobacillus sanfrancisco and Enterococcus mundtii was used for baking after 48 hours incubation at 37$\^{C}$. The specific volume of the bread containing sourdough starter was greater than that the control. Retarding of the firmness was observed in the bread with Lactobacillus sanfrancisco compared with the control and other breads. Above results suggest that sourdough starter fermented by Lactobacillus can be used as natural bread improver.

Study on Quality and Blood Glucose Response of Roll Breads for Diabetes Mellitus (당뇨환자를 위한 롤빵의 품질과 혈당반응에 관한 연구)

  • In order to develop the roll bread for diabetes mellitus patients, the roll bread mixed with soybean and barley flour to wheat flour was prepared and followed investigation of physical properties, sensory evaluation and blood glucose response of subjects. When soybean and barley flour was added more than 30%, hardness of mixed roll bread increased more than two times comparing to wheat flour. The roll bread mixed with 10% soybean flour was same in physical properties but was superior in sensory evaluation to wheat flour. While the blood glucose response after intake of roll bread mixed with soybean flour increased more slowly than that after intake of barley or wheat flour, glycemic index of soybean flour decreased. When roll bread was mixed with 10 to 30% soybean flour. the preference was almost same but control ability of blood glucose has improved comparing to adding barley or wheat alone.
