The Study of Acceptance and Physicochemical Characteristics of Beef Consomme by Boiling Time (가열시간에 따른 Beef Consomme의 기호도 및 이화학적 특성에 관한 연구)

  • This study was conducted to investigate the sensory and physicochemical properties of beef consomme made with different boiling times (1, 2, 3 and 4hrs). The sensory properties were evaluated with respect to both the acceptability (color, smell, mouth feel, taste, overall acceptability) and intensity characteristics (color, smell, clarify, taste). From the results, the 3hr treatment was most favored for color, smell, mouth feel, taste and overall acceptability, from the sensory evaluation tests. According to a quantitative descriptive analysis of the sensory evaluation for the product, the color, smell and taste gave higher scores with increases in the boiling time. As for the physicochemical characteristics, the pH was increased with increasing boiling time. The reducing sugars, turbidity and viscosity increased with increasing boiling time. The colorimetric lightness values (L) decreased, and redness (a), yellowness(b) and color difference values (ΔE) increased with increasing boiling time. There were 18 free amino acids identified; the alanine, glutamic acid, arginine and leucine contents were high in the free amino acids of the consomme made with different boiling times. There were 3 free sugars identified, glucose, fructose and sucrose. The free sugar contents increased with increasing boiling time. There were changes in the mineral contents of the consomme made with different boiling time; with high K, Na and P contents. The mineral contents increased with increasing, boiling time. The results showed the consomme made by boiling for 3hrs was superior in both its sensory and physicochemical qualities.

The Study of Chicken Consomme on Quality Characteristics by Boiling Time (가열시간에 따른 Chicken Consomme의 품질특성에 관한 연구)

  • It was investigated to study the sensory and physicochemical properties of chicken consomme made with different boiling time(1, 2, 3, and 4 hr). The mineral contents increased with increasing boiling time. Especially, the 3hr treatments was more highly increased than rest of the treatments in all characteristics. The results showed the chicken consomme made by boiling far 3hr was the most preferably in the sensory and physicochemical quality.

A Mechanistic Model for Forced Convective Transition Boiling of Subcooled Water in Vertical Tubes (수직관내 미포화수의 강제대류 천이비등에 대한 역학적 모델)

  • A mechanistic model for forced convective transition boiling has been developed to predict transition boiling heat flux realistically. This model is based on a postulated multi­stage boiling process occurring during the passage time of an elongated vapor blanket specified at a critical heat flux condition. Between the departure from nucleate boiling (DNB) and the departure from film boiling (DFB) points, the boiling heat transfer is established through three boiling stages, namely, the macrolayer evaporation and dryout governed by nucleate boiling in a thin liquid film and the unstable film boiling. The total heat transfer rate during the transition boiling is the sum of the heat transfer rates after the DNB weighted by the time fractions of each stage, which are defined as the ratio of each stage duration to the vapor blanket passage time. The model predictions are compared with some available experimental transition boiling data. From these comparisons, it can be seen that the transition boiling heat fluxes including the maximum heat flux and the minimum film boiling heat flux are nil predicted at low qualities/high pressures near 10 bar.

Electrohydrodynamic (EHD) Enhancement of Boiling Heat Transfer of R113+WT4% Ethanol

  • Nucleate boiling heat transfer for refrigerants, R113, and R113+wt4% ethanol mixture, an azeotropic mixture under electric field was investigated experimentally in a single-tube shell/ tube heat exchanger. A special electrode configuration which provides a more uniform electric field that produces more higher voltage limit against the dielectric breakdown was used in this study. Experimental study has revealed that the electrical charge relaxation time is an important parameter for the boiling heat transfer enhancement under electric field. Up to 1210% enhancement of boiling heat transfer was obtained for R113+wt4% ethanol mixture which has the electrical charge relaxation time of 0.0053 sec whereas only 280% enhancement obtained for R113 which has relaxation time of 0.97 sec. With artificially machined boiling surface, more enhancement in the heat transfer coefficient in the azeotropic mixture was obtained.

Quality Characteristics of Jungkwa Made with Carrot, using Different Manufacturing Methods (제조 방법을 달리한 당근 정과의 품질 특성)

  • The traditional food - jungkwa of Korea, is difficult to manufacture. In this study, jungkwa with carrots was made in a rice cooker to simplify preparation. The boiling times for red color, chewiness and overall acceptability of jungkwa with carrots in a rice cooker as compared to the traditional method were 135 minutes, 150 minutes, 165 minutes, 180 minutes and 195 minutes, respectively. The rice cooker produced a lower moisture content in jungkwa with carrots when cooked for a longer time period, whereas the sugar content increased significantly. The color value of jungkwa with carrots was reduced at a longer boiling time as compared to the traditional method, yellowness increased when boiling time was longer than 195 minutes, whereas it remained the same with the traditional method. The hardness of jungkwa with carrots increased and candied jungkwa's result increased significantly when the boiling time was longer than 165 minutes. The rice cooker created a similar chewiness even when boiling time was over 165 minutes, although not consistently. The sensory evaluation scores of jungkwa made with carrots in terms of appearance, smell, taste, texture and overall preference were highest at 150 minutes and 165 minutes. Boiling jungkwa for 150 minutes in the rice cooker is the traditional method which simmers jungkwa at a lower timethan the preference time. Therefore, the best time for boiling jungkwa in the rice cooker highest was 165 minutes. After storage for 15 days chewiness and moisture content of jungkwa made with carrots at different boiling times, increased and decreases respectively. Therefore, the rice cooker can used to achieve comparable jungkwa without the traditional method.

Changes on Mineral Contents of Vegetables by Various Cooking Methods (조리방법에 따른 상용채소의 무기질 함량 변화 -무청, 콩나물, 취나물을 중심으로-)

  • This study was conducted to investigate the changes of mineral contents in radish leaves, soybean sprout and chwi namul by cooking method(boiling, steaming, sauting) and cooking time(1, 3, 5 min.). The residual rate of minerals(such as Calcium, Sodium, Potassium, Iron and Magnesium) in radish leaves, soybean sprout and chwi namul by 1 minute sauting was the range of 83.2 to 99.1%. It was shown that sauting was desirable method for all three vegetables. The residual rate by the cooking method was sauting, steaming, boiling, in that order, but boiling in radish leaves and chwi namul were more desirable method than steaming for Calcium use. At the cooking method and cooking time, Potassium content in soybean sprout was reduced remarkably in 5 minutes boiling. Boiling of radish leaves and soybean sprout showed that Sodium was reduced remarkably after 5 minutes of boiling, 54.4% for radish leaves and 19.9% for soybean sprout, respectively.

  • This study attempts to find an optimized amount of soy sauce, sugar and boiling time for the best soy-sauce-based Teriyaki sauce, using the Response Surface Methodology(RSM). The following is the summary of the study. The amount of soy sauce, sugar and boiling time were set as independent variables to study the sensory characteristics of soy sauce. As a result, significant differences in appearance, taste and overall acceptance of soy sauce were observed. In appearance, boiling time was the most effective factor, followed by sugar and soy sauce. The taste was affected most by sugar, followed by boiling time and soy sauce in order. Overall acceptance, ranked in ascending order, is as follows : soy sauce, boiling time and sugar. So based on the study, the best results are: soy sauce 1,182.76 g - 1,210.11 g, sugar 843.97 g - 851.17 g, boiling time 174.49 mins - 181.46 mins. Among them, optimum points are: soy sauce 1,196.44 g, sugar 847.57 g, boiling time 177.98 mins.

Changes in Taste Components of Marsh Calm Soup as Affected by Boiling Time (재첩국 제조시 가열시간에 따른 맛성분의 변화)

  • The marsh calm soup was prepared with 2 volumes of boiling water and heated for 0, 5, 10, 30, 60 and 120 minutes. As the boiling time prolonged, water content decreased gradually, while protein content increased. Free amino acid content was the highest with 30 minutes of boiling showing 103.1 mg/100g, and decrease showly thereafter. Among the free amino acids, alanine was the most abundant followed by proline, glutamic acid and glycine. Degree of protein hydrolysis increased as boiling prolonged. In the non-volatile organic acids, succinic acid was the highest(137.08 mg/100g with 30 minutes of boiling), followed by oxalic acid, magic acid and lactic acid. The optimum boiling time for marsh calm soup was evaluated to be 30 minutes.

  • This study was examined the contents of calcium, phosphorus, magnesium, sodium, potassium, total nitrogen (total N) and free amino acid in shank bone stock as results of boiling for eight, twelve, sixteen and twenty hours. The results were as follows. 1) Contents of calium, sodium and potassium were increased according to boiling time, Content of calcium was more than two times after boiling for twenty hours as compared with eight hours. The contents of potassium and sodium were increased slightly but that of magnesium was constant in the course of boiling. The content of phosphorus was showed maximum value after toiling for eight hours and was decreased after boiling for twelve hours. 2) The content of total N was increased according to boiling time and showed moximum value after boiling for twenty hours. Total N was extracted more than two times after boiling for twenty hours as compared with eight hours. The content of free amino acid was little at various boiling time. The contents of glycine, glutamic acid and serine were increased according to boiling time. Glycine was the most abundant free amino acid and was followed in order of glutamic acid. alanine and serine.

The Effect on the Nutritional Value of Beef Leg and Rib Bone Soup by Boiling Time (가열시간이 소 사골과 갈비뼈의 영양성분 용출에 미치는 영향)

  • This study was examined the contents of solid, calcium, phosphorous, magnesium, protein, amino acid and collagen in beef leg and rib bone soup by various boiling time(1, 2, 4, 8, 12 hours). The results were as follows; as the boiling time increased, contents of solid, calcium, phosphorous, magnesium, protein, amino acid and collagen were increased. However, the boiling time increased, cloudiness (T%) was decreased. When we compared beef bone leg with the rib bone soup, rib bone soup was much nutritional contents than leg bone soup. In sensory evaluation of the soup boiled for 12 hours, added with 0.8% salt, rib bone stew was highly evaluated than leg bone soup.
