식품 포장재에 대한 가식성 필름의 응용성에 관한 연구 (Application of Edible Films to Food System Packaging)

  • 본 실험은 라면 스프 포장재에 대한 가식성 필름의 응용성을 조사하였다. 기본 실험으로서는 라면 스프의 등온흡습곡선 및 BET 단분자막 수분함량을 조사하였으며, 응용성 실험으로서는 가식성 필름의 인장강도, 신장률, 수분 투과도 및 용해도를 대하여 조사하였다. 가식성 필름으로서는 methylcellulose, sodium caseinate 및 K-carrageenan을 사용하였으며, 가소제로서는 glycerol과 polyethylene glycol (MW 400)을 사용하였다. 인장강도의 경우, methylcellulose 필름의 수치가 68.56 MPa로 가장 크게 나타났으며, sodium caseinate 필름이 가장 낮은 수치인 7.11 MPa로 나타났다. 신장률에 대한 실험 결과, sodium caseinate 필름이 가장 높은 수치인 115.41 %를 나타냈으며, methylcellulose 및 K-carrageenan 필름은 각각 23.79% 및 0.60%로 나타났다. 상대습도 50% - 70%사이에서 methylcellulose와 sodium caseinate 및 K-carrageenan 필름의 측정된 수분 투과도 값의 범위는 각각 $0.25-0.38ng\;m/m^2{\cdot}sec{\cdot}Pa$$0.62-0.84ng{\cdot}m/m^2{\cdot}sec{\cdot}Pa$$0.31-0.55ng{\cdot}m/m^2{\cdot}sec{\cdot}Pa$로 나타났다. 가식성 필름의 용해도에 대해서는 sodium caseinate film의 경우 뜨거운 물에 대한 높은 용해성을 나타내어 5초 이내에 이 필름은 물에 용해되었으며, K-carrageenan film은 높은 팽윤율을 나타내어 150초 이후에 필름의 붕괴 현상이 일어났다. Methylcellulose film의 경우는 물에 대한 용해도가 떨어지는 것으로 나타났다.

국내 가공식품 중 검질의 사용 현황 (Investigation on the Use of Gums in Korean Processed Foods)

  • The use of gums in processed foods manufactured in Korea was investigated in this study. The information about gums added to each food was collected from the ingredient claimed on the food packaging. A total of 272 food items were found to use gums as a thickener, stabilizer, and/or emulsifier. Among them, carrageenan was the most frequently found in 110 items (40%), followed by xanthan gum in 87 items (32%), guar gum in 67 items (25%), arabic gum in 50 items (18%), and gellan gum in 28 items (10%). Application of more than two different gums to food items was also observed, presumably based on the synergistic interaction between gums for a specific physical property. Of nine food categories classified by the Korea Food Code, gums were used most frequently in beverages, noodles, and meat products. Foods for children which include confectioneries, beverages, and chocolates were found to frequently use arabic gum, carrageenan, xanthan gum, guar gum, or gellan gum. These results indicate that gums have been widely using in a variety of Korean processed foods in order to improve their physical properties. Considering potential health concern of some gums such as carrageenan, further study to estimate daily intake of gum is needed.

식초 음료의 품질평가지표 개발에 관한 연구 - 델파이 및 AHP 기법을 중심으로 - (The Development of Quality Evaluation Index of Vinegar Beverage - Using Delphi Method and Analytical Hierarchical Process(AHP) -)

  • 본 연구에서는 건강 음료로써 식초 음료 시장의 확대에 기여하고자 전문가들을 대상으로 설문하여 델파이와 AHP를 적용하여 식초 음료의 주된 요소들을 유형화, 계층화하였다. 따라서 문헌 연구와 전문가들의 브레인 스토밍을 통해 상위 개념인 원료, 생산방법, 제품특징, 기능성, 패키지 디자인의 5가지에 대해 개방형 설문으로 1차 델파이를 실시하였는데, 그 결과 하위 개념 50개를 도출하였고, 상위 개념으로 마케팅 1개를 추가하였다. 이렇게 1차 델파이에서 도출된 50개의 개념을 폐쇄형 설문으로 2차, 3차 델파이를 실시하였고, 의견의 일치성을 객관적으로 파악하고자 켄달의 W 검증을 실시한 결과, 2차 델파이에서는 11개 항목이 제거되었고, 3차 델파이에서는 16개 항목이 제거되어 총 23개 문항을 도출하였다. 마지막으로 델파이를 통해 도출된 23개 문항의 상대적 중요도를 파악하고자 쌍대 비교를 실시하여 각 항목 간 우선순위를 도출하여 식초 음료의 품질 평가 시, 중요하게 고려해야할 항목을 구성하였다.

Recent Advances in the Chemobiological Upcycling of Polyethylene Terephthalate (PET) into Value-Added Chemicals

  • Polyethylene terephthalate (PET) is a plastic material commonly applied to beverage packaging used in everyday life. Owing to PET's versatility and ease of use, its consumption has continuously increased, resulting in considerable waste generation. Several physical and chemical recycling processes have been developed to address this problem. Recently, biological upcycling is being actively studied and has come to be regarded as a powerful technology for overcoming the economic issues associated with conventional recycling methods. For upcycling, PET should be degraded into small molecules, such as terephthalic acid and ethylene glycol, which are utilized as substrates for bioconversion, through various degradation processes, including gasification, pyrolysis, and chemical/biological depolymerization. Furthermore, biological upcycling methods have been applied to biosynthesize value-added chemicals, such as adipic acid, muconic acid, catechol, vanillin, and glycolic acid. In this review, we introduce and discuss various degradation methods that yield substrates for bioconversion and biological upcycling processes to produce value-added biochemicals. These technologies encourage a circular economy, which reduces the amount of waste released into the environment.

국제 경쟁력을 위한 술 포장디자인 연구 - 국내소주 및 일본 Sake 중심으로 - (A study on the liquor package design of international competitive advantage - Focused on Soju and Sake -)

  • 21세기의 정보화 시대에는 국가간, 지역간 무역의 장벽이 사라지고 다변화하는 무한경쟁시대로 변모하게 될 것이다. 포장산업은 판매부터 폭넓은 시장에서 모든 계층의 소비자 욕구를 충족시키는 기업위주의 마케팅 활동이 가능하였다. 따라서 이 시대에 요구되는 술 포장디자인은 시장구조가 양적, 질적으로 다양해지면서 제품이미지를 계획적으로 통제, 운영하지 않으면 자사 브랜드의 시장력이 저하될 수 밖에 없는 현실이다. 이제 술 포장디자인은 물질적, 생산지 1차 기능의 충족을 위한 수단으로만 존재하는 것이아니라 인간의 만족과 정서적 풍요로움을 가능하게 해줄 수 있어야만 한다. 그러한 가치 형성의 배경은 여러 가지 다각적 측면으로 분석되어진다. 술 포장디자인 그 시대의 기초와 취미 소비자의 질서가 가장 적절하게 표현되는 대중문화를 선동하는 사회적, 문화적 파급효과에 이르고 있다. 그리한 변화에 따라 소비자의 의식구조, 라이프 스타일 변화 시장 구조 계층을 변화시켰으며 술 시장의 세분화를 더욱 더 촉진 시켰다고 할 수 있다. 이에 본 논문은 세분화된 소비계층의 중심인 술 포장디자인의 커뮤니케이션 할 수 있는 효율성을 도모하고 술 소비자의 계층구조에 대한 이론적 고찰을 하고자한다. 또한 술 포장디자인의 전략의 특성을 파악하고, 술 포장디자인이라는 매개체를 통하여 상호유기성 통하여 보다 효율적인 소비자 커뮤니케이션에 접근토록 하는 새로운 전략적 방안을 제시하고자 한다.

한국과 일본여성의 식문화 의식과 전통식품 소비실태 비교 연구 (A Comparative Study on the Dietary Culture Consciousness and Their Consumption Attitude of Traditional Foods between Korean and Japanese Women)

  • We conducted a survey on Japanese women's consciousness of food culture and their traditional food consumption by self filling-out questionnaire during January, 2000 for the period of a month, For the survey we selected 250 women residing in Kyoto, Japan. For the statistic work we used SAS package system, and t-test, $\cal{X}^2-test$ and Duncan's multiple range test were also used to verify the results significance. The purpose of this survey lies in gathering a basic data on the comparative direction of Korean and Japanese women's food culture in the future 1. Comparing the preferred food purchase place, In case of Korean women, traditional market was comparatively more preferred while Japanese women relatively preferred convenience store (p<0.001). 2. In case of Japanese women, they answered there is no difference from ordinary days on New Year's Day (71%) and Christmas (40%) while 38% answered they prepare food at home. 40% said they prepare food on parents-in-law's birthday, and 41% said no difference from ordinary days. 52% said they prepare food at home on husband's birthday. For their own birthday, 32% said yes to preparing food at home while 45% said no difference and 22.3% said eating out. For children's birthday 65% said preparing at home, 16.3% said no difference and 14.9% said eating out. 3. Comparing the conception on traditional food, Korean women answered 'complicated' (77%) most while 'simple' (5%) least, which indicates their demands for simplified recipes. In case of Japanese women, 'complicated' (44%) was most while 'scientific' (6%) was least which indicates their demands for scientific way of recipes. There were differences shown by age (p<0.001) and the older the more said 'simple' or 'logical' (p<0.01). 4. As the reason for the complicity of traditional food recipes, Koreans said 'too many hand skill' (60%) most while 'too many spices' (8%) least. For Japanese, 'various kind of the recipe' (55%) was most while 'too many hand skill' (7%) was least. There were significant differences shown by academic background (p<0.01) and income(p<0.01), and the lower the academic background, the more said 'too many spices' as the reason for the complicity in making traditional food. Generally, the lesser the income, the more tendency to say 'various kinds of the recipe'. 5. In case of Koreans, 'the recipe is difficult' (56%) was high while 'uninterested' (9%) was low in answer which showed differences by academic background (p<0.05), and in case of Japanese, 'no time to cook' (44%) was high while 'uninterested' (7%) was low. 6. The following is the reasons for choosing traditional food as a snack for children. In case of Koreans, they answered as 'traditional food' (34%), 'made from nutrious and quality materials' (27%), 'for education' (22%) and 'suites their taste' (17%) revealing 'traditional food' is highest. In case of Japanese, it was revealed in the order of 'made from nutrious and quality materials' (36.3%), 'traditional food' (25.2%), 'suites their taste' (22.6%), 'for education' (12.8%) and 7. Comparing the most important thing for the popularization of traditional food in the world, Koreans answered 'taste and nutrition' (45%) most while 'shape and color' (6%) least. In case of Japanese, 'taste and nutrition' (75%) was answered most while 'hygienic packaging' (4%) was least. Both considered 'taste and nutrition' as most important thing for the popularization of traditional food in the world. 8. In case of Koreans, they answered they learn how to make traditional food 'from mother' (47%), 'media' (18%), 'school' (15%), 'from mother-in-law' (14%), 'private cooking school' (4%) and 'close acquaintances' (2%). In case of Japanese, they said mostly learn 'from mother', but it was also shown that the lower the academic background the lesser the tendency of learning 'from mother' but 'from school' (p<0.001). 9. About the consumption of traditional fermented food, Koreans said they make kimchi (90%), pickled vegetables (39%), soy sauce (33%), bean paste (38%), salted fishery (12%) and traditional liquors (14%) at home while 67% for salted fishery and 48% for traditional liquors answered they buy rather than making at home. On the other hand, Japanese answered they mostly buy kimchi (60%), soy sauce (96%), bean paste(91%), natto(92%), salt fermented fish foods (77%) and traditional alcoholic beverage (88%) to eat. This difference was shown very distinct between Korean and Japanese women (p<0.001). 10. About the most important thing in food, Koreans answered in the order of 'liking and satisfaction' (33%), 'for health' (32%), 'for relieve hunger' (18%) and 'convenience' (17%). In case of Japanese, it was revealed in the order of 'for health' (61%), 'liking and satisfaction' (20%), 'to relieve hunger' (16%) and 'convenience' (3%). This shows that Japanese women take comparably more importance to health than Korean women. The conception of food was shown different between Korean and Japanese women (p<0.001), and Koreans showed level 4-5 of food culture while Japanese showed level 5.
