This study evaluated the effect of four different feeds on the larval weight and survival rate of Protaetia brevitarsis seulensis (PBS) over five weeks. Four different types of feed (self-fermentation medium, RM medium, Samsung livestock medium, and bean-curd dregs medium) were given to third-instar larvae of PBS. Weight changes and survival rates of PBS larvae were measured weekly for five weeks. During the experimental period PBS larvae showed the highest growth in Samsung livestock medium, followed by bean-curd dregs medium, RM medium, and self-fermentation medium. Survival rate of PBS larvae were the lowest in bean-curd dregs medium, and then in the Samsung livestock medium. Using the Samsung livestock medium can shorten the delivery period of PBS larvae by approximately 40 days based on the larva shipped on average 75 days. Therefore, this study provides information and data on insect farming techniques useful for insect industrialization.
Bean sprouts have been one of the vital food for our ancestor for a long time. They were also hardy wild plants or first-aid medicine for needy people. Even nowadays they are served at table. For examples, bean curd, bean-curd dregs, bean sprouts, soybean paste, fermented soybeans, hot pepper paste, and soy are our daily food. Moreover bean sprouts are widely favored at the age of the well-being. Bean sprouts for a recover from a hangover, soybean paste for the prevention of cancer, beans leaf as the best well-being food for a diet, and so on. Thus the paper explains the origin of bean sprouts and their application as a food or medicinal stuff with the analysis of the various and wide-spread records.

The purpose of this study was to evaluate the potentials of food wastes as an animal feed. The food wastes from the Inha University and Hanyang University Hospitals were used for this fermentation study. As the additive, approximately 40~50% of dry bean curd dregs and sawdust was mixed for moisture adjustment, certain amount(l/300 of the total content) of inoculum was added into the 140L volume fermenter and fermented for 40~48 hours with the temperature of $46{\sim}52^{\circ}C$ maintained. Fermentation product with the dry bean curd dregs had the lower content of crude protein, crude ash, calcium and phosphorus than the commercial pig feed. Fermentation product with sawdust had the lower content in most components than the commercial pig feed except crude fiber content. Based upon these findings, it was considered that only the fermentation product with dry bean curd dregs as the additive could be used for the animal feed aid.
This study was conducted to determine the effects of total mixed fermentation (TMF) with bean curd dregs on body weight gain, feed intake and body size of growing Hanwoo heifers. Thirty Hanwoo heifers, 6 months of age and weighing $125.9{\pm}12.0$ kg, were randomly allocated to 3 experimental groups of 10 animals each for a 6-month feeding trial. The groups were T1 (rice straw offered ad libitum with restricted (1.7% BW/day) concentrate), T2 (TMF only offered ad libitum) and T3 (TMF and rice straw offered ad libitum with restricted (1.0% BW/day) concentrate). TMF feeds were composed of 60% bean curd dregs, 16.5% corn meal, 10.4% wheat bran, 5% rice straw, 7% rice hulls, 0.5% urea matter, 0.5% magnesia lime and 0.1% lactic acid bacteria. The chemical composition and pH value of TMF feeds were measured at 0, 24, 48 and 72 hr after storage. In TMF with bean curd dregs, there were no differences in concentrations of DM, EE, and CF according to storage periouds. The ADF and NDF at 72 hr of storage time showed a significant decrease (9.52 and 3.15 %, respectively) compared to 0h of storage time (p<0.05). The value of pH was gradually decreased during the storage periods. Body weight gain, feed intake and average daily gain were higher in the TMF groups (T2, T3) compared to the T1 group (p<0.05). Changes in body size were also higher in the TMF groups compared to the T1 group (p<0.05). Thus, the present results indicate that TMF with bean curd dregs may help improve growth performance in growing Hanwoo heifers.

This study was performed to investigate the effective components of media of Pleurotus eryngii for bottle cultivation and several alternative material for reducing cost and smooth supply. The results show that Potato starch, Cocoa shell, Corn gluten feed, Soybean flour(solvent extracted), Cottonseed hull, Poultry manure can be replaced in Bean curd dregs of basal substrates. Especially addition of Soybean flour at 2~8% and Poulty manure at 2% in place of Bean curd dregs is effective for mycelial growth of P. eryngii, Also Pine sawdust appears that can be replaced by Softwood sawdust and addition of softwood sawdust at 25.2% is most effective. Addition of $CaCO_3$, at 2~3%, $K_2CO_3$, at 0.2%, $MgSO_4{\cdot}7H_2O$ in 0.1%, $MnSO_4{\cdot}5H_2O$ in 0.05% is effective for mycelial growth of P. eryngii, Activation materials used in this study have not enough benefit for mycelial growth in the financial aspect.
This study was intended to examine the continuance and transformation of food culture during the enlightenment and Japanese ruling era by analyzing the novel of "Toji". In the novel "Toji", the chaotic political and economic situation is reflected, along with the peoples' hard lives in the latter era of the Choson Dynasty. After the full-fledged invasion of China by the Japanese, the shift to a wartime posture was accompanied by an increased need for food. This led to a rationing and delivery system for rice in the late 1930s. While it was hard for people to obtain even brewer's grains and bean-curd dregs, food distribution officers were well off. Another distinctive feature of the food culture during the enlightenment and Japanese ruling era was that foreign food and recipes were introduced naturally to Korea through the influx of various foreigners. The industry of Choson was held by Japanese monopolistic capital, as a result, Choson had equal to the role as a spending site and was only gradually left destitute. In the Japanese ruling era, there were new type of business including such as patisserie of the types of civilization in the town, and those tempted Korean people. However, the Japanese and pro-Japan collaborators dominated commercial business. Being urbanization through the modernization, it was became patronized fast food in the populous downtown, and the change of industry structure and life style greatly influenced into our food culture. Acceptance the convenient Japanese style fast food such as Udong, pickled radish made was actively accepted with a longing for the advancement civilization. After the enlightenment, many Japanese exchange students went to Tokyo to get advanced civilization and provided urban mood according to their consumption of bread, coffee, Western food, which were considered a part of the elite culture.
Korea supposed the place of origin of soybean. Although it is speculated that it was edible in the era of the Three Kingdoms(A.D. 5-9C), there is no documentary evidence. The first record about the edibility of tofu was written down in the Goryeo dynasty, and there was several documents that tofu was exported to China and Japan in the Chosun dynasty due to excellent manufacture skills for tofu. Tofu has been a good source of protein as a food for the common people, though there were not many traditional kinds. Especially, tofu has been an important vegetarian foodstuff in a Buddist temple, and has been used for vegetable soup and skewered greens necessary for the sacrificial rites of the humbler class as well as of the royal court. We frequently made sliced raw tofu and fried tofu, and it was used for broil, stew, and casserole as well as stuffing. In addition, tofu and its bean-curd dregs were applied of making soy. In China it is assumed that tofu has been eatable since the time of the Han(AD. 1C). Chinese tofu and its products are various and generally 20 different varieties are used. There are many dishes applied of tofu. salted and plain tofu were used as Chinese appetizer dishes. Plain, salted, skinned or deep-fried tofu was stir-fried in an hot oiled pan with vegetables, meats and fishes. Additionally, there are a variety of tofu dishes utilized stewing, frying, steaming, and soup cookeries. Tofu first appeared in the era of the Nara(8C) of Japan and was come into wide use in the era of the Aedo(Tokyo). In Japan tofu and its products are various and introduced in Shojin cookeries prevalent in the Buddist temples. It is especially noticeable that frozen or skinned tofu was used for these. Japanese tofu cooking is more delicate than Korean and Chinese ones, and Japanese people do not use oil. Instead, they in general utilize steaming and broiling cookeries. In the western countries the history of tofu edibility is short. However, their practical application of tofu in the dietary life is very positive.
In this study, by-products of rice bran, rice hull, bean curd dregs and food waste were fermented with different ratios of 26, 26, 34 and 14% respectively and the experimental diets were prepared mixing it with various ratios of commercial diets (fermented feed commercial feed : A 80 : 20, B 70 : 30, C 60 : 40, D 50:50). In Experiment I, feed intake, nutrients digestibilities and nitrogen retention were investigated and body weight gain in Experiment 1. For chemical composition of experimental diets, crude protein contents were 13.73, 13.78, 14.45 and 15.14% in A, B, C and D respectively and the contents of crude fat and crude fiber were highest in A as 8.66 and 27.82% respectively. 2. Dry hurler intakes were significantly higher (P<0.05) in A(362.06g/d) and C(358.49g/d) than B and D. Intakes of crude protein and crude fat were not significantly different (P>0.05) among treatments however those of crude fiber and crude ash were significantly higher (P>0.05) in A(101.47g/d). 3. Dry matter digestibilities in the range of 53.38∼68.81% in all treatments have shown the highest value in C of 60% fermented feed plus 40% commercial diet but the lowest in A of 80% of fermented feed plus 20% commercial diet (P<0.05). 59.85% of digestibility of crude protein in A was also lowest among all treatments (p<0.05), 4. 8.47g/d of nitrogen intake in C was recorded highest (P<0.05) however the highest nitrogen retention was marked in B of 50% fermented feed plus 50% of commercial diet due mainly to lower excretion of nitrogen through feces. 5. The data of live weight gain in Experiment II has not been shown as a result since the proper daily gain of body weight was achieved only in D as 88.89g/d and the goats in other treatments have shown frequent diarrhea. However, neglecting the animals with diarrhea, higher amounts of concentrates in the diets (C and D) showed the tendency of higher weight gain. 6. In this study, feeding 60% fermented feed manufactured with domestic agricultural by-products of rice bran, rice hull, bean curd dregs and food waste to Korean native goats have shown satisfactory results of intake and digestibility and it indicates that utilization of domestic agricultural by-products in goats could be improved by the process of fermentation. However it's effects on body weight gain and nitrogen retention were below than expected. Different sources of feedstuff for fermentation may result in different performances of animals. However, to draw overall conclusion from this study, 50∼60% of fermented feed can be recommended in the case of mixing with concentrates.
This study investigated the probiotic properties and physiological activities of Korean fermented foods such as sikhae, young radish kimchi, and bean-curd dregs. Among the isolated lactic acid bacteria, Pediococcus inopinatus BZ4, Lactobacillus plantarum SH1, Lactobacillus brevis SH14, Pediococcus pentosaceus YMT1, and Leuconostoc mesenteroides YMT6 demonstrated a greater than 60% survival rate at pH 2.5, along with an excellent survival rate even at 0.3% bile acid. These five bacteria showed strong flocculation ability in autoaggregation and coaggregation tests, indirectly clustering useful micro-organisms and inhibiting the attachment of pathogenic bacteria. In a cell surface hydrophobicity test, these bacteria showed adhesion to three solvents (ethyl acetate, chloroform, and xylene) and high hydrophobicity, thereby indicating excellent indirect cell adhesion to intestinal cells. The cell-free supernatants and intracellular extracts of the five lactic acid bacteria showed antioxidative activity in the form of 2,2-Diphenyl-1-picrylhydrazyl and 2,2'-Azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging ability and lipid peroxidation inhibition. Antimicrobial activities were also observed in four pathogenic bacteria, namely E. coli KCTC 2571, H. pylori HPKCTC B0150, L. monocytogenes KCTC 13064, and S. aureus KCTC 1916. These results demonstrate that these five lactic acid bacteria could be used as probiotics with antioxidant and antimicrobial properties.
This study was carried out to investigate the artificial cultivation of Pleurotus eryngii on the optimal medium vessel, periods of cultivation and the optimal method of pinheading for both yield and quality of fruiting body were also performed. The optimal composition of sawdust medium in polypropylene(PP) bottle was combination of sawdust(70%) and corncob(30%) but increased amount of corncob delayed the period of mycelial growth. The mycelial growth and the yield of fruiting body in the medium with beat pulp were worse than that without beat pulp. The optimal composition of nutrients for both yield and quality of fruit body tuned out to be a combination of rice bran(12%), wheat bran(12%) and cottonseed cake(6%). Additions of zeolite, shell lime and bean curd dregs were not effective in mycelial growth and yield of fruit body. When testing size of PP bottle for cultivation, the larger of bottle mouth is, the more pinheading number found, but the number of available fruit body is not significantly different. The culture in $1100\;ml-{\phi}75\;mm$ bottle is the best in the yield and quality of fruit body than those in $555\;ml-{\phi}50\;mm,\;850\;ml-{\phi}58\;mm,\;850\;ml-{\phi}65\;mm\;and\;1100\;ml-{\phi}65\;mm$ bottle. Using the PP bag for cultivation, a square shaped bag was better than a round shaped and black square shaped in mycelial growth and yield of fruit body. The most suitable period of incubation was 35 days after inoculation at $22{\pm}2^{\circ}C$. When the incubation periods was decreased less than 35 days, the pileus formation and yields were very bad but a pinheading condition looked similar, For an optimal pinheading, turning upside down was better than standing and covering.
