저장온도에 따른 바나나의 유리당과 유기산 (Changes in Free Sugars and Organic Acids of Banana Fruit at Various Storage Temperatures)

  • 시중에서 구입한 출하 3일된 바나나를 5, 15, $25^{\circ}C$로 10일간 저장하면서 당과 유기산을 측정한 결과는 다음과 같다. 바나나 중의 유리당으로 glucose, fructose, sucrose가 확인되었다. 저장초(0일)의 각 유리당은 $0.30{\sim}0.36%$의 미량으로 sucrose가 다소 높았다. 저장기간의 경과에 따라 유리당 총량이 증가되었으나 저장온도에 따라 각 유리당 함량은 많은 차이를 보였다. $5^{\circ}C$ 저장구에서 각 유리당의 함량은 거의 변화가 없었고 유리당 중 sucrose가 다소 높았다. $15^{\circ}C$$25^{\circ}C$ 저장구에서 sucrose는 감소하고 glucose와 fructose는 현저히 증가하였으며 glucose는 fructose 보다 함량이 다소 높았다. $25^{\circ}C$ 저장구에서 총당, 환원당, glucose, fructose 및 유리당 총량이 시험구 중 가장 높았다. 유기산으로 citric acid, malic acid, lactic acid, acetic acid가 확인되었다. 저장 3일에 citric acid의 함량이 가장 높았으나 이후 현저히 감소되었고 acetic acid는 저장 초기보다 다소 증가되었다. 유기산 총량은 저장초 $305{\sim}373.3$ mg%였으나 9일에는 $45.9{\sim}67.9$ mg%로 현저히 감소하였고, $25^{\circ}C$ 저장구에서 감소가 컸다.

과일류의 염소 소독 농도 및 세척 횟수에 따른 미생물 제거 효과 (Anti-microbial Effects of Washing and Chlorine Treatments on Fresh Fruits)

  • This study examined the anti-microbiological effects of chlorine treatment on the surface of fresh fruits, in order to improve microbiological safety in school foodservice operations. Non-peeled fruit(strawberries) and peeled fruit(bananas) were treated with different concentrations of chlorinated water and rinsing numbers, followed by microbiological testing. The fruits were immersed at different concentrations of chlorinated water(0 ppm, 50 ppm, and 100 ppm) and durations(3 min and 5 min), and were then rinsed with tap water(one time, two times, or three times). The total viable cell counts of both the strawberries and bananas ranged from $10^3$ CFU/g to $10^4$ CFU/g, and coliform levels ranged from $10^2$ CFU/g to $10^3$ CFU/g. As the chlorine concentration, immersion time, and rinsing number increased, anti-microbiological activity increased. The largest microbial reduction was shown with immersion for 5 min in 100 ppm chlorinated water and three rinsings. In the strawberries, this treatment reduced the initial population of total viable cells and coliforms by 3.29 log CFU/g and to an undetectable level, respectively, no total viable cells or coliforms were detected on the banana surface following this treatment. However, after a sterilization treatment with immersion for 5 min in 50 ppm chlorinated water and three rinsings, the total viable cell counts and coliform counts of the strawberries and bananas decreased to acceptable levels, based on the microbiological standards for ready-to-eat foods. Overall, it was shown that the sterilization treatment of 50 ppm chlorinated water, soaking for 5 min, and three rinsings provided an effective reduction in surface microbes, and enhanced the microbiological safety of the fruit.

  • Strawberry which is the genus Fragaria under family Rosaceae is one of the most important fruit plants for both fresh consumption and food processing in the temperate and subtropical countries. Propagation of strawberry is achieved either through runners or by in vitro micropropagation. Meristem tips, generally obtained from runners of virus-free plants, are commonly used to establish in vitro cultures, which are employed for mass propagation or as a source of plant material for regeneration and transformation experiments. This study was conducted to determine the optimal natural additives strength to improve sprouting shoot rate of apical meristem of strawberry 'Seolhyang'. Strawberry apical meristem at size (0.2 mm to 0.3 mm) with leaf primordials were cultured on the 1/3MS(Murashige & Skoog) medium supplemented with five natural additives such as coconut milk, maple sap, banana powder and peptone. The sprouting ratio and growth characteristics were evaluated after eight weeks after in vitro culture. Shoot ratio of 'Seolhyang' apical meristem was 72.9% in 1/3MS medium supplemented with maple sap. On the other hand, the low shoot ratio was observed 47.7% in 1/3MS medium supplemented with banana powder. Shoot length was different as natural additives but numbers of leaf was not significantiy different among the natural additives. As a result, the sprouting ratio and plant growth were enhanced effectively in 1/3MS medium with maple sap compared to the others.

Understanding Phytosanitary Irradiation Treatment of Pineapple Using Monte Carlo Simulation

  • Purpose: Pineapple is now the third most important tropical fruit in world production after banana and citrus. Phytosanitary irradiation is recognized as a promising alternative treatment to chemical fumigation. However, most of the phytosanitary irradiation studies have dealt with physiochemical properties and its efficacy. Accurate dose calculation is crucial for ensuring proper process control in phytosanitary irradiation. The objective of this study was to optimize phytosanitary irradiation treatment of pineapple in various radiation sources using Monte Carlo simulation. Methods: 3-D geometry and component densities of the pineapple, extracted from CT scan data, were entered into a radiation transport Monte Carlo code (MCNP5) to obtain simulated dose distribution. Radiation energy used for simulation were 2 MeV (low-energy) and 10 MeV (high-energy) for electron beams, 1.25 MeV for gamma-rays, and 5 MeV for X-rays. Results: For low-energy electron beam simulation, electrons penetrated up to 0.75 cm from the pineapple skin, which is good for controlling insect eggs laid just below the fruit surface. For high-energy electron beam simulation, electrons penetrated up to 4.5 cm and the irradiation area occupied 60.2% of the whole area at single-side irradiation and 90.6% at double-side irradiation. For a single-side only gamma- and X-ray source simulation, the entire pineapple was irradiated and dose uniformity ratios (Dmax/Dmin) were 2.23 and 2.19, respectively. Even though both sources had all greater penetrating capability, the X-ray treatment is safer and the gamma-ray treatment is more widely used due to their availability. Conclusions: These results are invaluable for optimizing phytosanitary irradiation treatment planning of pineapple.

제5기 국민건강영양조사(2010년, 2011년) 자료를 이용한 뇌졸중 유병 경험자들의 과일 및 채소 섭취 관련 요인 분석 (Factors Associated with Fruit and Vegetable Consumption of Subjects Having a History of Stroke: Using 5th Korea National Health and Nutrition Examination Survey (2010, 2011))

  • Objectives: Intake of fruits and vegetables has protective effects against stroke attack. This study intended to examine the status of consuming fruits and vegetables and to find out which factors may influence the frequency of consumption of fruits and vegetables in individuals with a history of stroke. Methods: The data of 208 subjects from 5th (2010, 2011) Korea National Health and Nutrition Examination Survey (KNHNES) who reported a stroke diagnosis was used for analysis. To identify major factors influencing the consumption of fruits and vegetables, a classification-tree analysis was carried out. Results: Among those who reported a stroke diagnosis, the frequencies of consumption of fruits and vegetables were influenced by their age, place of residence (urban or rural), economic status, educational level, occupation, number of family members, frequency of eating out, and having meals (breakfast or lunch) with family members. Two factors from fruits and three factors from vegetables were generated by exploratory factor analyses. Urban residents ate fruits and vegetables more frequently in all factors than rural residents. Eating frequencies of 'seasonal fruits (orange, apple, strawberry, melon, pear and watermelon)', 'easily-accessible fruits (persimmon, tangerine, grape, peach, banana)', and 'Western-style vegetables (cabbage, mushroom, carrot, tomato, spinach)' were influenced by the socioeconomic status. Eating frequencies of 'Korean-style vegetables (bean sprout, radish leaves, pumpkin/squash, sea weed)', 'preserved vegetables (Korean cabbage, radish, laver, cucumber)' were influenced by having breakfast with family members. Conclusions: The results of this study suggested that by eating more fruits and vegetables, more preventive effects against secondary stroke attack are expected in stroke patients who live in the rural areas and who do not eat breakfast with family members. In addition, more outreach and education programs are needed for them.

  • A research collection of Pseudomons solanacearum bacteria, a pathogen causing ‘bacteria wilt’ disease of more than 265 plant species, represented for northern provinces of Vietnam has recently been established and was saved for examination of antifungal activity in their culture fluids. All strains used in this work have been isolated from infected tomato, potato, and groundnut collected from production fields and they express different levels of virulence on their host plants. Cell-free culture fluids of these strains were tested for antifungal activity (to inhibit growth of mycelium and to destroy germination tube of fungal spores) on a number of fungi that either infect or associate with vegetable crops of Solanaceae family (tomato, potato, pepers...), fruit plants (banana), and even well-known by Vietnamese traditional medicine herbal plants belonging to Trifoliatus, Schefflera, Homalomena and Panax genera (Araliaceae family) of which roots are used as a resource of the herbal material. The antifungal activity was found in nearly all strains tested. Result of study on chitin, CMC, tween 80 and casein degradation abilities of the latter suggested that antifungal activity of positively-found strains may be due to their ability of extracelluar chitinase's excretion that destroy fungal cell wall.

유통 중인 과일류의 중금속 모니터링 (Monitoring of Heavy Metals in Fruits in Korea)

  • 국내에는 과일류 중 중금속의 기준규격은 없으나, Codex에서는 과일류 중 납 함량 규격을 0.1 mg/kg으로 설정하여 관리하고 있다. 이에 따라 우리나라에서 유통 중인 과일류의 중금속 함량 규격을 설정하고자 일일 섭취량이 많은 과일 8종(오렌지, 사과, 바나나, 배, 감귤, 감, 망고, 키위), 927건을 수거하여 납, 카드뮴, 비소 및 수은 함량을 수은분석기 및 ICP-MS를 이용하여 분석하였다. 표준용액첨가법에 의한 회수율은 납 86.0-110.4%, 카드뮴 81.0-104.0%, 비소 82.0-104.7%를 얻었으며, 수은분석기를 이용한 수은의 회수율은 106.5%이었다. 조사결과 국내유통 중인 과일류의 중금속 평균함량은 납 8.3, 카드뮴 0.7 비소 1.4, 수은 $0.3{\mu}g/kg$으로 조사되었다. 중금속의 주간섭취량을 FAO/WHO에서 안전성 평가를 위해 설정한 PTWI와 비교한 결과, 납, 카드뮴, 수은이 각각 0.17, 0.013 및 0.006%로 그 수준이 매우 낮아 우리나라에서 유통되는 이들 과일로부터 섭취하는 중금은 매우 미미하여 안전한 수준으로 판단된다.

전통 제사상차림의 규범과 강릉지역(江陵地域) 제사상차림 관행의 비교 연구 (A Study on the Comparision of Religious Diet in Kang-Neung Area to Traditional Standard and Habitual Practice)

  • The purpose of this study was to understand the arrangement of the religious food and religious diet in Kang-Rung region which was recogniged as cultural region. Investtigation was done by interview person to person, and the results are as follows. 1. The arrangement of religious food and regious diet in Kang-neung region were differed from home to home. 2. In Kang-neung region, Chu-suk religious ceremonies and religious diet were setted much religious diet than memorial service which was held on an anniversary of their's death. 3. At first line, they have arranged Hynbab and Kuk, or Papbaab and Miyegkuk or Paogikuk. On the other hand, Songpyen was placed in traditional standard setting. At second line, they have arranged Songpyen, Kijung, Aegeok, Yukgeok, Nurumgeok, DonBaegigeok, Memilgeok, and cooked octopus(muneo) on the Aegeok. They have also arranged fishes which were the cooked Alaska pollack(rnyongtai), codfish(daeku), flatfish (kajami), yellowtail(bangeo), salmon(yeoneo), trout(songeo) and Saegsunjeon, Dubujeon, Wanjajeon, Kokumajeon. At third line, they have arranged Yuktang, Sotang, Eotang, Altang which is boiled eggs. Altang was arranged instead of steamed chicken. At fourth line, they have arranged Bukeopo, Cuttlefish(dried Ojingeo), Gajamisikhe, Myungtaeposikhe. On the other hand, Sikhe was necessarily placed on the setting of traditional standard service for the ancestor. They have arranged also Chinese bellflower(Doragi), Fernbrake(Kosali), Spinach, Osmund (Kobi), Greenbean Sprouts, Leopard plant(Komchwi), Gourd(Pak), and Lentinus edodes (Pyokjo), but Kimchi was omitted. At fifth line, they have arranged Date, Chestnut, Persimmon, the fruit of Actinidia arguta(Dare), Heron, Banana, Kwajeul and Kangiung were considered as dishes. Dasik and biscut were also used for setting dishes.

Antimicrobial Activity of Some Essential Oils Against Microorganisms Deteriorating Fruit Juices

  • Seventeen microbial species including 10 fungal taxa, two yeasts and five bacteria, were isolated from freshly prepared orange, guava and banana juices kept in open bottles at room temperature for 7 days. Eight different essential oils, from local herbs, were tested for their antimicrobial activity against these test organisms. The essential oils of Cymbopogon citratus, Ocimum basilicum and Origanum majorana were found to be highly effective against these microorganisms. Aspergillus niger, A. flavus and Saccharomyces cerevisiae, the most prevalent microorganisms in juice, showed the highest resistance against these essential oils. GC-MS analysis showed that while e-citral, a'-myrcene, and z-citral represent the major components (75.1 %) of the essential oil of Cymbopogon citratus; bezynen,l-methyl-4-(2-propenyl), 1,8-cineole and trans-a'-bisabolene were the main components (90.6%) of Ocimum basilicum; whereas 3-cyclohexen-l-0l,4-methyl-l(l-methylethyl)-(CAS), c-terpinene and trans-caryophyllene represent the major components (65.1%) of Origanum majorana. These three essential oils were introduced into juices by two techniques namely, fumigation and direct contact. The former technique showed more fungicidal effect than the latter one against A. flavus, A. niger, and S. cerevisiae. The essential oil of Cymbopogon citratus by comparison to other test oils showed the strongest effect against these fungi with a minimum inhibitory concentration of $1.5\;{\mu}l/ml$ medium and a sublethal concentration of $1.0\;{\mu}l/ml$. The antimicrobial activity of this oil is thermostable at $121^{\circ}C$ for 30 min.

2016년 제7차 국민건강영양조사를 이용한 이상지질혈증 유무 및 형태에 따른 식품섭취행태 차이 분석 (Analysis on the Difference of Dietary Intake Behavior in Subjects with/without Various Types of Dyslipidemia from the Seventh (2016) Korea National Health and Nutrition Examination Survey (KNHANES))

  • This study examined the difference of dietary intake behavior between groups of adults aged >20 years with or without dyslipidemia, and comparing the various types of dyslipidemia, based on the Seventh (2016) KNHANES. Men showed higher rate for triglyceridemia and LDL-cholesterolemia than women and subjects in the age group 50-59 years exhibited the highest incidence of triglyceridemia, total cholesterolemia and HDL-cholesterolemia. The ratio of obese people was higher in most types of dyslipidemias. The top five foods in each group of cereal & grain, meat, vegetable, and fruit were selected for analysis, based on the food frequency. The dyslipidemia group showed higher intake frequencies for mixed grains, cabbage kimchi and leafy vegetable than the no-dyslipidemia group, and the group with high blood total cholesterol for mixed grains, apple, and cutlassfish-croaker. Group with high blood triglyceride showed higher intake frequencies of rice and mackerel-mackerel pike than the other groups of high blood triglyceride. No food showed significant difference in the frequencies between groups of LDL-cholesterol. Group with high blood HDL-cholesterol showed higher intake frequency of bibim-fried rice, deep fried chicken, stir fried chicken, apple, tangerine, banana and butter-margarine. These results indicate that people with high levels of blood total cholesterol are more concerned with food having health benefits than those with abnormal levels of other blood lipid. More information on dietary benefits need to be provided to patients having high levels of triglyceride, LDL-cholesterol and HDL-cholesterol.
