This study was undertaken to identify factors affecting school food waste generation using a questionnaire. The subjects were 254 high school students (male; 156, female; 98) in Sacheon, Gyeongnam divided into three groups of low (${\leq}1/week$), moderate (2~3/week), and high (${\geq}4/week$) according to the frequencies of food waste. The questionnaires consisted of general characteristics, anthropometric values, dietary habits, health-related behaviors, self-perceptions of food waste, snacking patterns, and nutrition knowledge. The main reasons behind food waste were 'too much food' in the low (20.9%) and moderate (32.2%) groups, and 'no appetite' in the high group (p<0.01). The main types of food waste were rice (44.2%) > fish (18.6%) > vegetables (14.0%) in the low group, rice (54.2%) > Kimchi/vegetables (15.3%) in the moderate group, rice (56.0%) > vegetables (20.0%) > Kimchi (16.0%) in the high group (p<0.01). School food waste was significantly affected by age, gender, monthly allowance, school grade, weight, BMI, regularity of meals, time of meals, type of breakfast, starting age of smoking, and cost for snacking.
This study investigated recognition of food labeling of high school students (males 94 and females 85) in Yongin region. Recognition of food labeling was very high at 81.6%. For checking food labeling at the time of purchasing, 53.6% of the respondents always checked and the main reason was healthier food choice (49.2%). Satisfaction of food labeling was very low at 18.4%. In spite of very low satisfaction, 70.9% of respondents recognized necessity for education of food labeling. In terms of education method, respondents preferred 'school lecture' the most with 48.6%, which are in the following order: TV/newspaper/journal/book (37.4%) > internet lecture (10.1%) > education from parents (3.9%). Moreover, 83.2% of respondents answered 'positive change (ex. checking food labeling)' after getting education. Consequently, high school students had low level of utilization of food labeling at the time of purchasing. However, they showed high level of perception and educational need of food labeling as well as possibility of positive change after receiving education. Therefore, appropriate school education for food labeling may be able to lead a healthy eating habit of high school students.

Objective: Curdlan has been widely used as a gelling agent in various food systems. This study was performed to evaluate the rheological properties of pork myofibrillar protein (MP) with different levels of curdlan (0.5% to 1.5%) and its application to low-fat model sausages (LFS). Methods: MP mixtures were prepared with 0.5%, 1.0%, and 1.5% of curdlan. Cooking loss (%), gel strength (gf), shear stress (Pa), and scanning electron microscopy were measured. Physicochemical and textural properties of LFS containing different levels of curdlan were measured. Results: The shear stress of MP mixtures increased with increasing levels of curdlan. MP gels with increased levels of curdlan decreased cooking loss and increased gel strength (p<0.05). The MPs with 1.0% and 1.5% of curdlan were observed more compact three-dimensional structure than those with 0.5% curdlan. Increased curdlan level in LFS affected redness ($a^{\star}$) and yellowness ($b^{\star}$) values. Although expressible moisture of LFS did not differ among curdlan levels, LFSs with various levels of curdlan decreased cooking loss as compared to control sausages. Hardness values (2,251 to 2,311 gf) of LFS with 0.5% and 1.0% curdlan was increased and differ from those (1,901 gf) of control sausages. Conclusion: The addition of 1.0% curdlan improved the functional and textural properties of LFS.
Objective: The present study aimed to survey seasonal changes in reproductive performance of local cows receiving artificial insemination (AI) in the Pursat province of Cambodia, a tropical country, to investigate if ambient conditions affect the reproductive performance of cows as to better understand the major problems regarding cattle production. Methods: The number of cows receiving AI, resultant number of calving, and calving rate were analyzed for those receiving the first AI from 2016 to 2017. The year was divided into three seasons: cool/dry (from November to February), hot/dry (from March to June), and wet (from July to October), based on the maximal temperature and rainfall in Pursat, to analyze the relationship between ambient conditions and the reproductive performance of cows. Body condition scores (BCS) and feeding schemes were also analyzed in these seasons. Results: The number of cows receiving AI was significantly higher in the cool/dry season than the wet season. The number of calving and calving rate were significantly higher in cows receiving AI in the cool/dry season compared with the hot/dry and wet seasons. The cows showed higher BCSs in the cool/dry season compared to the hot/dry and wet seasons probably due to the seasonal changes in the feeding schemes: these cows grazed on wild grasses in the cool/dry season but fed with a limited amount of grasses and straw in the hot/dry and wet seasons. Conclusion: The present study suggests that the low number of cows receiving AI, low number of calving, and low calving rate could be mainly due to poor body condition as a result of the poor feeding schemes during the hot/dry and wet seasons. The improvement of body condition by the refinement of feeding schemes may contribute to an increase in the reproductive performance in cows during the hot/dry and wet seasons in Cambodia.

Background: A recent WHO data report on mortality attributable to tobacco use including cigarette smoking indicated a very high burden of deaths in Asia and that people often initiate smoking as early as young adolescents. The objectives of this study were to systematically review peer-reviewed articles on cigarette smoking initiation among Asian adolescents and to develop a conceptual model of factors influencing smoking initiation by integrating all relevant factors based on existing data. Materials and Methods: Following a PRISMA guideline, a systematic review of articles published between 2005 and June 2015 was conducted using 5 databases on cigarette smoking initiation among adolescents (aged 10-19 years) living in Asia. We summarized the main findings of each study according to our research questions and data that emerged during the data extraction process. Analysis and categorization were based on the TTI and TPB models and classification of factors extracted from the study, were as follows: personal factors, social factors, broader environmental factors, mediators, and intention to initiate smoking and smoking behavior. Results: Of 1,227 identified studies, only 20 were included in this review. Our findings found that the mean age of cigarette smoking initiation ranged from 10 to 14 years and those who are more likely to initiate smoking are male, older adolescents, adolescents with low parental SES, individuals with low parental monitoring, low parental education level and having no discussion on smoking at home, those living in public housing and those exhibiting health-risk behavior. Our study also revealed that the risk of smoking initiation increased when they are exposed to smokers, influenced by peers, exposed to tobacco advertisements, receive pocket money, have lack of knowledge about smoking, have poor school performance, have a family conflict and have psychological problems. The conceptual model developed demonstrated complex networks of factors influencing initiation. Conclusions: This systematic review presents various factors influencing smoking initiation of the Asian adolescents and provides a conceptual framework to further analyze factors. Future studies should have a standard measure of smoking initiation, should analyze interactions and the intensity of relationships between different factors or variables in the conceptual model. This will in turn consolidate the understanding of the different factors affecting smoking initiation and will help to improve interventions in this area.
This research is performed to investigate the changes in the physicochemical properties and microbial growths of seasoned anchovies with various packaging materials (PET/CPP : polyethylene terephthalate/cast polypropylene, PET/EVOH : polyethylene terephthalate/ethylene-vinyl alcohol, PET/AL/LDPE: polyethylene terephthalate/aluminum/low density polyethylene), which are stored at various temperatures (25, 35, $45^{\circ}C$) for 60 days. Generally, it is being observed that changes in physicochemical properties (i.e., moisture content, color, brown intensity, TBA value, TMA, VBN etc) of seasoned anchovies are significant when stored at higher temperatures. Particularly, the packaging materials are found to influence substantially on the physicochemical properties of seasoned anchovies. With packaging materials of high oxygen transmission rates and moisture vapor transmission rates (i.e., PET/CPP), the changes in physicochemical properties of seasoned anchovies are significant, while being low with low oxygen transmission rates and low moisture vapor transmission rates (i.e., PET/EVOH). In addition, results of microbial growths in seasoned anchovies show that significant increases in total aerobic bacteria counts (about 100-fold after 60 day of storage) are observed in samples with packaging materials of high oxygen transmission rates and moisture vapor transmission rates (i.e, PET/CPP), while with only small increases for samples of low oxygen transmission rates and low moisture vapor transmission rates (i.e., PET/EVOH). Based on the changes in the physicochemical properties and results of microbial growths, it is being concluded that PET/EVOH film is suitable for the packaging of seasoned anchovies.

This experiment was conducted to determine the effects of a low-protein diet supplemented with DL-methionine plus L-cystine (Met + Cys) on the growth performance and fat accumulation of female broiler chicks during the growing period (3-6 wks old). A low-protein diet (17% CP; 3,200 ME kcal/kg) was supplemented with Met + Cys (1.1 : 1.0) at levels 0.75, 0.94, 1.25, 1.31 or 1.50% of diet, respectively. Another diet with 21% CP and 3,200 ME kcal/kg served as the control group. All essential amino acids were adjusted to meet the National Research Council (1984) requirement for chicks. Feed and water were given ad libitum. Body weight of the chicks fed the low-CP diets supplemented with Met + Cys were heavier than those of the control birds. Feed conversion ratio and feed intakes were not significantly different between and among the treatment groups. Similary, abdominal fat content was not significantly different among the various treatments except that of the chicks fed the low CP diet with 1.25% Met + Cys which was higher than that of the control group. Fatty acid synthetase (FAS), acetyl-CoA carboxylase (ACC) activities and carcass protein content were not influenced by dietary treatments. Carcass fat content was lowest in chicks fed low CP diet with 0.75% Met + Cys and highest in the group that received 1.50% Met + Cys supplementation. Liver triglyceride increased as Met + Cys supplementation level increased. Various lipid fraction concentrations (cholesterol ester, free cholesterol, and phospholipid) in the serum went up as Met + Cys increased up to 1.25% after which it levelled off. Results of this experiment suggest that it is possible to reduce dietary protein level from 21% to 17% for growing broiler chicks by the supplementation of Met + Cys when other EAA were sufficient.
This experiment was conducted to determine the extent to which susceptibility to cortisol-induced follicle shutdown is influenced by fleece phentotype. Twenty Finewool (10 sheep low fibre diameter, low coefficient of fibre diameter-LL and 10 low fibre diameter, high coefficient of variation of fibre diameter-LH) and twenty Strongwool (10 low fibre diameter, low coefficient of variation of fibre diameter-HL and 10 high fibre diameter and high coefficient of variation of fibre diameter-HH) sheep of 9 months of age were individually penned in an animal house and were injected intramuscularly with an aqueous suspension of hydrocortisone acetate at a rate of 1.42 mg/kg body weight for a period of two weeks. Fibre diameter was measured from clipped tattooed patch wool samples. Follicle activity was measured by histological changes in skin biopsies taken weekly. Blood samples were collected at two-week intervals and plasma cortisol measured. Increased plasma cortisol concentration significantly (p<0.05) reduced clean wool production and mean fibre diameter dropped to its lowest level four weeks after commencement and two weeks after the cessation of cortisol injection. Elevation of plasma cortisol concentration significantly (p<0.0001) increased the percentage of inactive follicles two weeks after injection started. High fibre diameter groups (Strongwool sheep; i.e. HL+HH) had significantly (p<0.0001) higher percentage of follicle shutdown than low fibre diameter groups (Finewool sheep; i.e. LL+LH). Average percentage of shutdown follicles for Finewool (LL+LH) and Strongwool (HL+HH) Merino sheep was $9.8{\pm}0.9$ and $13.5{\pm}0.9$ respectively. Shutdown of primary follicles was more pronounced in Finewool than Strongwool sheep. There was no significant effect of coefficient of variation of fibre diameter on propensity to follicle shutdown induced by exogenous cortisol. It is concluded that elevation in plasma cortisol concentration is inhibitory to the normal activity of follicles in Strongwool sheep but that variation in fibre diameter has little or no effect.
There exists considerable evidence that steroid hormones are involved in the regulation of ovulation rate and oviductal development in poultry. However, the effect of steroid hormones on egg productivity of Korean Native Ogol Chicken (KNOC) has yet to be studied. Therefore, this study was performed to relate the expression of steroid hormones, especially progesterone ($P_4$) and estradiol ($E_2$), with egg productivity during the laying period. Egg production and egg weight of 70 KNOC were recorded from 20 to 60wk. Blood was taken every 10 wk and serum $P_4$ and $E_2$ were measured by radioimmunoassay. Based on egg productivity and steroid hormones levels up to 60 wk, chickens were divided into two groups, high and low. Compared to the low egg production group, a significantly higher expression of $P_4$ at 30 wk was detected in the high group. Moreover, egg production in the high $P_4$ group significantly differed from that in the low group at 30 wk. On the other hand, a Significant difference (p<0.05) in $E_2$ expression was found between high and low egg weight groups at 30 wk. Although a significant difference in egg weight between two groups by $E_2$ was not detected, the high $E_2$ group showed a higher level of egg weight than the low $E_2$ group except for 25 wk. In the comparison of ovary weight and small yellow follicle number, the group with high egg productivity and steroid concentration showed greater levels than the low group. Taken together, the results indicate that $P_4$ is related to egg productivity whereas expression of $E_2$ is associated with egg weight in KNOC.
